‘Tis the season of giving to show thanks By Kim Hogstrom For The Leader

While it is a time of gratitude for many, not all are so fortunate. Members from the community have taken it upon themselves to organize a free fried turkey dinner for about 50 families in need on Thanksgiving day. Jennifer Figueroa, owner of Spaghetti Western Italian Café, teamed up with Manna Food Pantry, located in Oak Forest, and some big-hearted community members to serve hungry folks on Nov. 24, at T.C. Jester location. The popular restaurant will be closed to the public on Thanksgiving, but open to those Manna clients in need of a free meal, companionship or a place to share the holiday. “We will have two seatings and serve many holiday favorites,” Figueroa said. “The seatings are from noon to 2 p.m.; and 3 p.m. to 5 p.m. Manna Food Pantry is supplying much of the food and frying the turkeys, and we will cook the rest. This is our first year, but we feel that when we can give back to our community, we must.” Figueroa is donating everything necessary to the effort. She gives her crew Thanksgiving day off, so the people doing the cooking, serving and cleaning will be local volunteers. Harry Millirons played a starring role

pulling the turkey fry at Spaghetti Western together. Millirons is fondly known as “Harry the Curb Painter” by many; he is the artist behind the personalized, painted curb addresses seen throughout the neighborhood. Weeks ago, Millirons started collecting donations from local businesses.

“The business people in our area are wonderful,” Millirons said. “Shawn from Mytiburger, Billy from Hartman & Associates, Naro from Hartz Chicken, Jennifer from Spaghetti Western, they are all so generous. All I have to do is ask and they step up. They do it every year, they help those in our area who are less fortunate.” The Executive Director of Manna Food Pantry has her hands full with this holiday. Patricia Dornak understands how many hungry families there really are in the community; the non-profit agency is in its 28th year. Dornak decided Manna will fry 150 turkeys on Wednesday, before the holiday this year so qualified families can pick them up at the agency, and 30 more on Thanksgiving day for the dinner at Spaghetti Western. She estimates they will serve more than 1,000 people. “If members of the community would like to help, we still really need food,” Dornak said. “They can drop it off at our location at 2101 W 34th St. Or people can cook or volunteer time. Everyone is welcome. Anyone who is interested can email me at pdornak@gmail.com or call 713-504-5486. It’s a wonderful event.” Organizer Millirons agrees. “There is no better way to make it through the holidays, than helping make someone else happy. No better way,” he said.

Monday – Friday Lunch Hours Only

I stepped in the kitchen this week with my Tia Lupe and our recipe talk left me feeling thankful in more ways than one. If there is something that my family can agree upon, it’s Tia’s pie. And whatever the occasion – birthday, anniversary, good grades or Sunday morning breakfast – you can bet Tia has a fruit pie in the oven and there will be debates on who gets the last slice. This week, we made an old-fashioned cherry pie. A recipe just in time for Thanksgiving. The crust Ingredients 1 ½ cups sifted all-purpose flour ½ teaspoon salt ½ cup shortening 4 to 5 tablespoons cold water First, sift together your flour and salt. Next, to get the right texture, you’ll want to divide up the shortening measurement and not mix the shortening in all at once – thirds is ideal. Cut in your first bit of shortening and mix until the mixture looks like corn meal. Repeat until all shortening is added. My Tia Lupe notes that Crisco baking sticks - butter flavored - are ideal for shortening. Next, is our water. Again, we will want to avoid pouring the full measurement of water in all at once. Add a couple of tablespoons of water to your mixture at a time. My Tia Lupe notes that sometimes you might need more water than the recipe calls for. For our pie, we used more like eight tablespoons of water versus the five. Once your dough is nice and moist, form into a ball. Split your ball in two balls for your lower and upper crust. Lastly, on a lightly floured surface, roll one ball to roughly a ½ inch thick. Set the other ball aside for your top crust. Roll your crust out and place over your pie plate; adjust your crust to fit the plate. Cherry filling Ingredients 1 cup sugar ¼ cup all-purpose flour ½ cup juice from cherries 3 cups drained, canned, pitted, tart red cherries 1 tablespoon soft butter 4 drops almond extract Pastry for 9-inch lattice top pie Combine sugar, flour; stir in juice. Cook and stir over medium heat until thick; cook one minute longer. Add cherries, butter, extract, and 10 drops red food coloring. Let stand. This recipe can also add in ¼ teaspoon of salt to the filling, but we opt out of the salt because we don’t need the extra sodium, according to Tia Lupe. Out of all of Tia’s fruit pie recipes, this is the only pie she chooses to use canned fruit and the reasoning is simple – cherries are tedious to pit. So for this recipe, Lucky Leaf canned cherries work great. Add filling into your crusted pie dish See Pie P. 2B

Swiss gingerbread houses come alive in the Heights By Betsy Denson

betsy@theleadernews.com

Sylvia Lanz of Kindli Haus comes by her gingerbread house expertise honestly. From the 1960s to the 1990s her Swiss parents Roland and Lotti Lanz operated Roland’s Swiss Pastry on Del Monte Drive where they served up Black Forest cake, apple strudel, and gingerbread men, while Sylvia grew up and helped out. In 1992, the family sold Roland’s Swiss Pastry to Gerhard Schaefer and wife Elvira - the Schaefer’s retained the name - and until this year Roland, now in his 80s, was busy making gingerbread houses. Now, Roland’s Swiss Pastry is a wholesale bakery which supplies Sylvia with gingerbread houses and gingerbread men to use in her own business. Last year, she was stationed in a house on White Oak Avenue where she offered decorating classes and kits to go. This year, she’s at 4525 North Main St. in the same location as Mighty Sweet Mini Pies selling houses and premade decorating kits so you can do it yourself. Due to family illness, Lanz is not doing the classes on-site this year, but she will provide customers with the expertise and supplies to make a successful creation. “We’re here through Christmas,” said Sylvia. “This is turning into a seasonal thing for me.” What’s different about Sylvia’s Lebkuchen gingerbread houses is that they are 50 percent honey. The honey acts as a preservative so the decorated houses will keep

up to three months, although she recommends covering them at night to ward off bugs. The extralarge gingerbread men are a new addition to the line-up. Another advantage to the products in a box one might get in the grocery is that by the time you

A finished Kindli Haus gingerbread house.

get a Kindli Haus gingerbread house it is already assembled. “You can’t just put it together and start decorating,” Sylvia said. “The icing needs to sit for a day.” Another tip: placing your candy pretty soon after you squirt your icing as it does harden rather quickly. While Lanz does do decorated houses for banks and hospitals, she thinks that part of the fun is letting people do it themselves. That’s not to say she doesn’t have any ideas for you. Like pretzels make an excellent “bonfire” outside your house, and red hots are the perfect “flame”. Kindli is Swiss for Children and Sylvia says she loves to see what children come up with. She also loves reconnecting with former customers like the time a woman came into a class and was thrilled C

The Dead Rabbit’s educator advises Heights restaurant By Christina Martinez

christina@theleadernews.com

When it comes to a bar making or breaking it in the industry, Gregory Buda, director of education and training manager for the BlackTail and The Dead Rabbit bar in New York City, said it’s not the complicated things that count, it’s the basics. Before opening Ginger and Fork, a Cantonese and Hong Kong inspired restaurant in the Heights, owner Mary Li and her partners traveled to New York City to research the world’s best in her industry. She studied food, craft cocktails, building design, bar setup, ingredients, and she studied the people mixing drinks behind the bar. While studying, Li and her fiancée ventured into The Dead Rabbit, which was then the number one bar in the U.S., now the number one bar in the world, an esteemed nomination from Drinks International magazine. There, behind the bar, Li found Buda and began to study his technique, ex-

ecution and his setup. It wasn’t long after, that Li began telling Buda of her project plans. “They seemed very interested in what we were doing and why we did certain things,” Buda said. “Maybe six months later, they reached out to me to see if I wanted to have a conversation about getting involved in a project they had in mind.” A couple of weeks passed, a few meetings and flights

booked, eventually bringing Buda to the Heights earlier this year to help Li and her team establish the vision she set out for her esteemed cocktail program at Ginger and Fork. Just this week, Buda was back in the Heights to do a bartender training for Ginger and Fork’s program and to meet with Li to give his insight on how they have flourished. “The first bit of my training, I usually talk about bar etiquette: proper handling of bottles, glassware, how to pour a bottle properly,” Buda said. “A lot of it is very basic things, but in my opinion, it’s not the complicated things that make or break a bar, it’s the basics. I’ve been to some very highly awarded bars, we won’t name any names, they are really fun to watch – they can do great things with bottles, their presentation is beautiful – but they can’t shake properly; they don’t jigger accurately. At the end of the day, those are the bread and butter and the things you need to pay close attention to.” Buda notes that a lot of these key items are common sense,

As promised in last week’s column, here are my vacation plans for the weekend. In fact, it looks more like a marathon, with art, snacks and adult beverages. Artist John Runnels founded Artcrawl Houston 24 years ago this Saturday (open 10 a.m.-9 p.m.) to introduce the diverse group of artists living and working in Houston’s Downtown Warehouse district to the world. I have some suggestions for Artcrawl Houston if the scale is overwhelming. Start in the Nance Street area “A” on the map at Last Concert Cafe, 1403 Nance St. This is the epicenter of Artcrawl – a great walking area, with some of the historic buildings that

are from 1883 like the Fifth Ward Hotel. Don’t miss Mother Dog Studios, Hardy & Nance Street Studios or a bit further East: David Adickes Sculpture Studio, you know who that is, the “President’s Heads” sculptor. He’s an amazing painter, too, and quite charming. It’s a rare day that Adickes opens his studio, don’t miss that. Also on my to-do list are the Elder Street Artist Lofts, 1101 Elder Street and The Silo at 4601 Clinton Drive. The Silo has been an Art Car hot spot for years, you’ll wonder if you’re still in Houston. It’s amazing. Then move on to Fresh Arts 11th Annual WHAM aka Winter Holiday Art Market. WHAM is a three-day affair, from 6-10 p.m. on Friday, Nov. 18; resuming at 10 a.m. and

Pie from P. 1B and cover with a lattice-top crust or a whole pie shell. We went for the lattice cover. Bake in a very hot oven at 450 degrees for 10 minutes. Reduce heat to 350 degrees and bake about 45 minutes more. Finally, let cool. I have many things to be thankful for this year. One that resonates through this recipe is the value my family holds for education. Whether it be an academic education or learning the secret to pie crust, it’s something special to be thankful for. It’s something I’m thankful for. Thank you, Tia.

Waltrip athletics rebuild By Jonathan Valadez For The Leader When Todd Wright took over as head football coach and athletic director at Waltrip High School in 2014, he had a vision for the direction that he wanted the athletic program to head. “I wanted to grow the numbers and start getting more kids interested in all athletics, football included,” Wright said. Wright hired only one coach when he was brought in, so the athletics’ staff remained mostly the same with the exception of a couple of new hires this past year. Before he could build the program, though, Wright had to get the staff to buy in to his vision since the majority of the coaches were hired during the previous regime. Wright said he asked the coaches one question when he met with them for the first time. “Are you willing to do laundry?” he said. “It’s a lot of work. We wash 100 pairs of something everyday.” The coaches also have to help mow the fields, monitor kids off and on the field and pick up trash in addition to laundry duties. Once the coaches agreed, which they all did, they went to work building up the numbers in their respective programs. Many of the athletic programs were starting from scratch, so Wright and the staff made it a point to bring them up to speed. In fact, the football program as a whole was so small that they could barely field a junior varsity and varsity team. During his first year, Wright and his coaches started hitting the halls to gain interest, and because of their recruiting efforts, they were able to create a freshman team at the start of the 2015 season. Brantley Williams Sr. was

hired as the assistant football coach in 2013 but made the move to coach the Bulldogs’ running backs when Wright was brought in. Williams Sr. also took over as the freshman head coach last year. “In the last couple of years since Coach Wright has been here, we’ve had a freshman team, which is beneficial because when you can develop a freshman team, you can develop a program,” Williams Sr. said. “That’s been the biggest improvement that I have seen: we have more participation, especially at the freshman level.” The football program wasn’t the only group that saw growth, though. Golf, girls’ soccer, swimming and track have also seen their programs grow in size since the coaches started taking a more active approach to recruiting. Daniel Davidson is one of many at Waltrip who is involved in multiple sports and coaches the defensive line and the girls and boys’ golf team. He said he has seen the number of students participating in golf almost triple in the past couple of years.

Adam Ramirez trains the offensive line and the girls’ soccer program and has experienced a similar increase in student-athletes among the soccer team. “We had 17 girls when I first got here and last year we had forty-something girls come out,” Ramirez said. “This year, I’m looking at 40-50 girls that are interested.” Wade Thompson, who has been at Waltrip for two years, took over as head swim coach this year and has seen the team quadruple in size from just last season. He said that they started the year with over 30 kids but are now down to 21. He believes that the group that he was able to keep on the team is capable of making it to the state championship. Speaking of state, the track team had an athlete qualify for the meet last year for the first time since the early 1990s, according to head track coach Wayne Wheeler. Wheeler was the one addition that Wright made to the athletic staff and he serves as the assistant football coach in addition to track.

Neighbors: Helpful neighbors help Snickers find his way home By Elizabeth Villarreal elizasgarden@outlook.com On Oct. 28, the Houston World Affairs Council Club at Northside High School (formerly Davis HS) was excited to attend a luncheon at the Downtown Houston Club to hear from Ambassador Khalilzad, a former Ambassador for Iraq, Afghanistan and the United Nations. Students Adrain Martinez, Neida Martinez, Elianni Rodriquez and Maria Rodriquez were very honored to receive a personally autographed copy of Ambassador Khalilzad’s new book. Club sponsor and AP Economics teacher Barbara Falcon said the students especially loved the Ambassador’s story of growing up in Afghanistan. The Messina family of Oak Forest sends sincerest thanks to friends and neighbors for their amazing help in finding the Messina’s beloved

family pet, Snickers. Mom and dad Traci and Lee, together with their children Jake and Gia, found Snickers had escaped from their back yard on Oct. 15. Messina immediately posted the family’s dog on a couple of neighborhood Facebook pages and searched the neighborhood with family friend and neighbor Helena Pagola, but was unable to find a trace of Snickers. Many friends and neighbors in the community followed the story as it evolved over the course of several days and shared information to help find the missing pet. The family was advised to go door to door with flyers, make a sign for their yard, add posters to their car, post information on internet sites (Lostmydogorcat.com, Nextdoor, PawBoost), submit lost animal reports to Houston’s shelters, and to actually go out and check the shelters. The story had a happy ending

as one of the Messina family’s neighbors found Snickers wandering and took him into their home. The Messina family would like to send a big thanks to their GOOF neighbors, family, friends and the Slawinski family for keeping Snickers safe. They shared, “We are eternally grateful to have our fur baby back at home. The neighborhood really was such a blessing at a very stressful time.” Helpful neighbors and good Samaritans abound in our Leader community! Jennifer Tessin would like to thank her neighbors Kevin and Jody Garey for making a difference for her son one day recently. Tessin shared that when she and her children moved into their new home, she was pleasantly surprised to see there were children living next door just a little bit older than her own. Tessin’s 5 year old son and the neighbor’s son love

to stand on top of their play sets in their backyards and yell over the fence to each other to arrange instant play dates. So, one random Sunday, the family headed over to play. Garey pulled out one of his son’s old bikes without training wheels. In just one spin on the bike, he taught Tessin’s son how to ride a bike without training wheels! The Tessins went home that day with a new bike, new skills and a big smile. Harry “TheTexasFlagCurbPainter” Millirons would like you all to know that hidden in and among the Smiles for the Holidays toy, food and clothing drives are two very special groups. First, Frank Black Middle School’s Special Education Department has historically been sponsored at holiday time by Target and The United Way’s “Be An Angel” program; however, this year the program is too full to include FBMS.

One of the class parents sent Harry a message asking if he could help find another sponsor. Harry immediately called a few friends and business owners in the community to ask if they would consider the challenge of adopting these students and their families and bringing them some Smiles for the Holidays. Millirons, Shawn Salyers (Baskin Robbins/Mytiburger), Naro M. (Hartz Chicken Buffet), Doran Seiler (We Are One Fitness), Billy Hartman (Hartman & Associates), and Stephanie Koteras visited the class and had a wonderful time meeting the students and their teachers. Not able to attend were Joey Cox from Haum Salon and Tyler Moore from Oak Forest Veterinary Clinic. Additionally, the group is sponsoring some homeless families identified by an area elementary school as well as a family who lost their home in a fire this year. Next in their search for groups to

sponsor for the holidays, Millirons, Hartman and Koteras visited The Autumn Grove, a care home with 16 senior citizens located in Shady Acres. The group plans to spend an evening playing bingo with the Autumn Grove residents and also to bring the staff and seniors some very welcome Smiles for the Holidays! Folks, not only are these amazing neighbors of ours making a difference for area kiddos and senior citizens, their caregivers and families, too, but I promise you – they are making a difference for all of you who donate and participate. If you need help finding where to donate or how to get involved, feel free to email me at elizasgarden@outlook.com and I will connect you with the right person for sponsorship of these various groups. All of our community neighborhoods have families or children being served by this wonderful charity this year.
