Pie in the sky? Recipe tweaks can make Thanksgiving treats healthier Aside from beZarah ing grateful for what we have, Parker Managing Thanksgiving is Editor all about food: turkey, stuffing, sides and rolls. More importantly, perhaps, you can’t have Thanksgiving without pie. “Pies are the best part of dinner,” local resident Sharron Sanborn said. It’s against Sanborn’s personal rule to buy a pie for the holiday, no matter what store it is from. She said all the pies at her house are homemade. “We always have an apple pie; I prefer crumb topping but my hubs prefers double crust,” Sanborn said. “I’ve also often made a cranberry pie. And usually a spiced pumpkin pie.” Sanborn bakes some of the most popular pies in America or the classic pies most people have tried at least once. In a local Facebook group, other area residents chimed in with their favorite pies to end -- or start -- Thanksgiving dinner. Some locals shared how they bake a classic pie, which is far from a health-conscious dessert, and put a healthier twist on it. “Pecan is my favorite,” Sarah Walker said. “I like to only eat it on Thanksgiving because, like the full Thanksgiving meal I only have once a year, it’s something else I can look forward to.” When baking pumpkin pie, Gina Holland makes little changes to cut the calorie count. “I buy a store-bought crust, but roll it out so it’s thinner,” Holland said. “It’s just a little change, but it makes it where I’m not eating as much crust. I also use fat-free milk when making the filling.” Another area resident cuts down on the calories in pecan pie, which gets most of its unhealthiness from butter and corn syrup. Martha Tilney uses neither of those ingredients and instead finds alternatives like coconut oil. “I let the natural sugar from the apples

sweeten my apple pie,” Tilney said. “That way I don’t have to use any added sugar.” Other ways to make a pie healthier is by switching a few ingredients, including using yogurt in place of butter while making a crust, using whole wheat flour over white flour or just using nut flours for crusts. Bakers also can choose fruits that are naturally sweet to combat the use of scoops of sugar. Without having to change ingredients in the pies, one resident said she tends to just choose fruit pies. While she knows they are not necessarily healthy, she feels less guilty about eating a blueberry pie than anything

with a load of whipped cream. It’s hard to think healthy on a holiday that is all about food, food and more food, so one resident said she doesn’t even try. She said she doesn’t want to have to worry about making small changes to make a pie healthier when Thanksgiving day and the week leading up to it is busy enough. “A part of the fun of eating on Thanksgiving is not caring about calories,” Sandy McCann said. “As for pie, I’ll usually eat a slice or two of my favorite, apple, with a scoop of ice cream.”

candied Texas pecans and put into a graham cracker crust. It’s topped with house-made pralines crunch, pecan halves and caramel sauce. “We truly wanted to make it a fun, boozy pie for the holidays,” Chida said. The inspiration behind the Chocolate Turtle Cheesecake Pie stemmed from the love

Chida’s team had for the Turtles candies while growing up. Chocolate Cheesecake gelato is scooped into a graham cracker crust and topped with caramel, Texas candied pecans and house-made chocolate whip cream. The Dirty Coconut sorbet at SweetCup was first created in memory of Chida’s trip to

Hawaii many years ago, where she met a street vendor that sold a coconut pie that paid homage to two cultures, German and Hawaiian. “I starting thinking I could actually make that pie I had in Hawaii,” Chida said. “So I did the Dirty Coconut sorbet with a dairy-free graham cracker crust.” The Dirty Coconut Sorbet Pie is dairy-free and topped with house-made coconut whipped cream and semisweet chocolate chips. Available for only a limited time is the seasonal flavor, Pumpkin Spice Toasted Meringue Pie. “It’s our Pumpkin Spice gelato with our gingersnap crust,” Chida said. “We tried to make it very true to having a pumpkin pie, but upped it a notch and added toasted meringue on top.” The pies are available to order by email at info@sweetcupgelato.com.

Pick your pie at Flying Saucer By Zarah Parker zarah@theleadernews.com

Flying Saucer Pie Company is known for having lines during the Thanksgiving week, and while I’ve never braved that line myself, I’ve eaten pies from there most my life and know that the people waiting in line are doing it for a quality pie. Recently, a family get-together warranted buying pies from Flying Saucer. The go-to pie for my family is the chocolate cream and apple pie. So I grabbed those, plus two that I haven’t tried from the pie company yet, the banana cream and pecan pie. The latter, I usually bake myself during the holidays, which made me more curious how this classic stood out. I wasn’t disappointed. Over the course of the day I cut a slice from each pie to reacquaint my palate to pies I’ve loved and to introduce it to the new pies. My first slice was of the apple pie. I didn’t even have to cut into it to have a waft of cinnamon and apple hit my senses. The double crust pie was filled with apple slices so

SweetCup scoops out frozen pies Why have a scoop of ice cream with your pie when the filling itself could be the cold and creamy treat? With that in mind, Jasmine Chida, owner of SweetCup Gelato & Sorbet Originale, 3444 Ella Blvd. Ste. B, created four new gelato pies, available just in time for the holidays. “You get the same texture as a pie in a sense,” Chida said. “The toppings and the whipped cream will be true to pie, but it will be frozen.” The pies feature some of SweetCup’s signature gelatos, with house-made toppings and crusts. The Texas Whiskey Butter and Pecan Praline Pie takes SweetCup’s Whiskey Butter gelato, made with Texas whiskey from Whitmeyer’s Whiskey, and enhances its key components. full of the spice that the aftertaste left a tingling. The apples slices in the filling were soft and balanced well with the crust. From the flakiness of the pie crust I could believe Flying Saucer when it says it bakes the pies fresh daily. When I first cut out a piece of banana cream pie I will admit that the bright, sunny yellow filing threw me off. When I think of banana-centered desserts, I expect the light yellow of banana pudding. My worry was unfounded. The bright yellow banana pudding was creamy and

tasted fresh from the kitchen. Thick chunks of fresh banana were layered into the pudding, which was smooth, consistent and not gooey. The whipped cream that topped the pie was light and airy and pretty much the best whipped cream I’ve had on a pie, and since it’s used on the chocolate cream pie as well, I got to enjoy it twice. The banana cream pie is considered a “24-hour pie,” meaning you should get it and then eat it, because the fresh bananas won’t last long. Chocolate cream pie is just

what the name suggests: chocolate in pie form with whipped cream on top. The chocolate filling is like pudding, and the consistency of it is creamy, but stays in its shape when cutting out a piece. The first thing I noticed about the pecan pie was that instead of half slices of pecans in the pie, there were broken up pieces of pecan on the top layer. That was a little detail I enjoyed. Sometimes with pecan pie filling, I find it too goopy or too runny, and this pie was neither. The crust on the pecan pie was easy to cut through with a fork and it fell apart in my mouth. It’s probably not a good sign for my health that I have leftover pie at home. Flying Saucer Pie Company Address: 436 W. Crosstimbers Rd. Art Valet: Hardy & Nance Studios holds THE BOOK SCENE special place in Houston area’s art scene Your neighborhood Bookstore Mitch Cohen Art Columnist

There is no question that Houston has a huge presence of art and artists. Artist studio space is a booming business and as a result, artists seeking studio spaces have many options from which to choose. With Houston’s 27th Annual ArtCrawl just a week away, I wanted to profile one of my favorite Houston studio spaces: Hardy & Nance Studios. Hardy & Nance Studios (H&N) is one space I’ve mentioned in this column on many occasion. In fact, Brandi Untz, the digital artist I profiled in last week’s column, has a studio at H&N. H&N is located in Houston’s downtown Art Warehouse District at 902 Hardy St. One of the many things that makes H&N unique is that it’s located in an old building in an area that has been home to artists for nearly 70 years. According to the studio website, that puts it among the oldest remaining urban art colonies in America. The building is charming and has that lived-in feel. And it has been. Artists go there to create their art as much as offer it for sale at the many events hosted under its roof.

Ronald L. Jones at Hardy & Nance Studios.

Work by current artists adorns the walls outside the studios. Permanent gallery space has rotating solo and group exhibits year-round. The artists at H&N are a community, too. On a recent visit, I spoke with Claire Richards, a studio artist and managing director, about availability at H&N. She told me they take leasing space very seriously. They want someone who will be a contributing artist in this community. H&N has something not often found in the artist studio landscape of Houston, a residency program. Those chosen for the Artist-In-Residence program get their own studio space to show, sell and create art for three months. In exchange,

artists commit to opening their studio to the public for every Third Saturday Open Studios and encouraged to take part in other events. There is no fee and the artist keeps proceeds from personal sales. The Artist-In-Residence application is still available for February-April. The deadline to apply is Dec. 15. Earlier, I mentioned that H&N is participating in the 27th Annual ArtCrawl on Saturday, Nov. 23. This year, more than 50 resident artists will take part in the event. Rather than opening the gallery space to outside artists, H&N is again breaking the mold and invited one artist, Ronald Llewellyn Jones, to create a site-specific art installation. Jones is also a winner of the 2020 Six Month

Zocalo Residency. Third Saturday Open Studios is a great time to meet the resident artists in their studios (purchasing art is encouraged!). It’s a great time to spend quality time at just one space. You’ll find painters, illustrators, photographers, potters, jewelry designers, sculptors and more. Visit hardyandnancestudios.com for an artist roster, event calendar and the Artist-In-Residence application. H&N is a 7-minute drive from the Heights. I must mention the founder of H&N, Donald Tucker, a longtime artist, friend and tremendous influence to many people, but especially other artists. Tucker specialized in a rare art form, Ferrocement Faux Bois. The simple definition is sculpted “false wood out of concrete or cement. After battling a long illness, Tucker died earlier this year, but not before insuring Hardy & Nance Studios would continue to serve the Houston arts community. He also left behind a comprehensive reference to his chosen art form, of which his own history is as fascinating as the secretive nature of all the masons before him for 200 years or more! Read more at thegardenartforum.com. Cohen is an artist and founder of First Saturday Arts Market and the Market at Sawyer Yards. Find him at ArtValet.com.

By Betsy Denson Friends for Life Executive Director Salise Shuttlesworth said the organization thought it got a lot of online love when it did the first cohabitated shelter for humans and animals during Hurricane Harvey. Then Friends for Life shared the story of Quilty, an escape cat who would not stay in his room. What followed was an explosion on social media. “We were completely blown away, Shuttlesworth said. “Quilty (crashed) our Instagram app. Quilty’s story has now been shared in Time and Newsweek as well as a spate of other publications in Germany, Australia, the United Kingdom and India. The decision to first put him online was not an obvious one, according to Shuttlesworth. “Weird stuff consistently happens here, she said. “We try to remember that it’s not normal. Quilty lived at Friends for Life some years ago and was adopted. Recently, his owner was moving and could not take him with her, so she brought him back per the organization’s policy. After Quilty was back at Friends for Life, Shuttlesworth got a notice late one night that the motion detector in the lobby had been set off. When she reviewed the video feed, she saw a number of cats in the reception area. Several feet up in the air, where the camera was placed, there was an ear in the frame -- Quilty’s ear as it turned out. Shuttlesworth called him a true “cat burglar. “He had actually let the other cats out and then went back to his bed, said Jennifer Hopkins, who does communications work for Friends for Life. “He wanted his own room. Quilty’s further escapades were documented and photographed for the adoration of his growing fan base. “Quilty will not be contained. And he has no shame, read a post from Friends for Life. “Quilty loves to let cats out of the senior room. Repeatedly. Several times a day. Apparently this

is not a new skill he learned here at the shelter; he used to let out his dog sibling in the house at his old home. If someone out there is looking for a clever cat that gets along with dogs but does not get along with closed doors, we have someone they really need to come and meet. Please. Come meet him. And take him home. Please. The label of “spicy ahole that Friends for Life bestowed on Quilty struck a chord. The Instagram account @free_quilty has more than 20,000 followers and then there are the hashtags: #QuiltyNotGuilty, #FreeQuilty and #NoMoreDoors. “People have told me that they just wanted to watch Quilty and laugh, Shuttlesworth said. Ironically, the family who took Quilty home for a trial period last Saturday put in an application for him before he blew up the Internet. “They just liked him, said Shuttlesworth, who added that since the application process takes a while, Quilty had time to get famous. During the interim, Friends for Life got adoption requests from as far away as Canada and the UK.

The family came to collect him in their Christmas cat blazers and a car painted with Quilty sayings and hashtags. His homecoming was streamed live on Instagram. “They’re the right type of people (for him), Shuttlesworth said. A recent update from the family said Quilty hasn’t put his Houdini skills to work as of yet and is instead working on his snuggling. One of the ways that Friends for Life is capitalizing on Quilty’s popularity is to classify its existing adoptable cats. Of course there’s a hashtag for that: #QuiltyRecommendsCats. There is Quilty swag available to the public for purchase and one woman, Carolyn Levy, is sponsoring a promotion that if someone adopts a cat from Friends for Life between now and the end of November, they get a #FreeQuilty shirt for free. For more information about the other animals behind the doors at Friends for Life, visit https://friends4life.org/ or the Don Sanders Adoption Center at 107 E. 22nd St.

Are senior pets trainable? Also, you’re in luck, because the old adage, “You can’t teach an old dog new tricks” just doesn’t hold water for most dogs. In fact, there are even some basic commands that you can teach your older dog at home that will greatly help him to interact more favorably at home as well as out and about. “The first few commands are usually basic obedience commands such as sit, down, stay, walking on leash and most importantly, to come when called,” said Elizabeth Bachle, a technician at the Texas A&M College of Veterinary Medicine & Biomedical Sciences pharmacy and an agility instructor at Puppy Love training. “These are a great foundation to training more complex behaviors and can keep your pet out of harm’s way. “Training your dog not only rewards good behaviors, but can also prevent unwanted behaviors before they begin. I would highly encourage new puppy owners to attend a group class to socialize and create a strong

Dear Tabby, We’re interested in adopting a senior dog soon, but are concerned about bringing an animal into our home who might have long-held bad manners that can’t be reversed (due to old age). foundation of learning, but dogs of all ages benefit from a new challenge.” Training helps dogs of all ages During training, it is important to use positive reinforcements when they’re showing progress. Rather than punishing your old man for all the things you don’t want him to do, concentrate on teaching him what you do want him to do. When your dog does something good, convince him to do it again by rewarding him with a treat or a nice, long tummy scratch. “One of the most important decisions you can make for your dog is the training method you decide to use at home or in group classes. There are many methods out there, but I highly encourage the use of positive reinforcement techniques such as clicker training and discourage the use of punishment when training any dog,” Bachle said. “Punishment can have a lot of negative effects, including fear, aggression or distrust, while

Zuvie’s Brews: Area beer scene continuing to evolve Adam Zuvanich Editor

Kristen Schapson had been a regular visitor to 5301 Nolda St., where Buffalo Bayou Brewing Co. began crafting beer in 2011 and served it to the public three days per week. The Heights resident enjoyed an elevated experience for her birthday Monday night, and not just because she was sipping suds on a rooftop with her husband and three friends. One of Houston’s most popular craft breweries built a three-story, 28,000 square feet “Brewtopia” at 2101 Summer St. in Sawyer Yards, where Buffalo Bayou Brewing Co. reopened Nov. 1. The signature feature is a rooftop bar and patio and on the third floor, where there is a view of Downtown Houston that resembles the brewery’s longtime logo. “This is awesome,” Schapson said. “We go to Karbach and Saint Arnold and those places. This feels like they’re coming into the game, like they’re here to show up and be part of that brewery scene.” Damien Franco, a Shepherd Forest resident and the marketing manager for Buffalo Bayou Brewing, said the move was multiple years in the making and will allow the company to meet demand by brewing four to five times as much beer as it did before. The brewery has nine beers that it makes year-round – including the Crush City IPA, 1836 red ale, Wake ‘N Bake

coffee blonde ale and Great White Buffalo witbier – along with nearly 40 seasonal offerings. Buffalo Bayou’s massive storage tanks are visible to visitors as part of what Franco calls an “immersive experience.” Customers are greeted by a bar and row of taps upon entering on the first level, which will include indoor seating as well as a dog patio by the end of this month. On the second story is another bar with taps as well as a restaurant led by Chef Arash Kharat, whose offerings include pizzas made with dough that ferments for three days. Buffalo Bayou was limited to having food trucks at its original location. Franco said the brewery also has enlisted Houston artist Voltaire to paint a custom mural for the building. “We consider ourselves Houston’s most creative brewery,” Franco said. “Attaching ourselves at the hip to the Sawyer Yards area with all these artists was sort of a no-brainer.” New Magnolia upcoming While one area craft brewer is expanding, another is about to get off the ground. New Magnolia Brewing Co. plans to open to the public Nov. 22 at 1616 Bevis St. in Shady Acres. The brewpub started as a joint venture between Shayn Robinson and his father-in-law, John Ferguson, and two months ago they enlisted another beer maker with an impressive pedigree. Sean Spiller, a Houstonarea native who previously worked for Buffalo Bayou Brewing Co. and 8th Wonder Brewery, most recently was

Jester King has a reputation as one of the best breweries in Texas. “When Sean came back to Houston and accepted the offer here, it made a pretty big splash locally,” Robinson said. “We needed somebody who had great industry experience, and we needed to kind of energize the whole process.” New Magnolia plans to offer 10-12 beers from the start, including an ESB, hazy IPA, hefeweizen, kolsch, pale ale, pilsner, porter, stout and a Grodziskie, which is an oak-smoked wheat beer. Spiller said the brewery also wants to provide a communal atmosphere, similar to what he experienced in Austin. Robinson said it will be kid-friendly and pet-friendly with spacious seating inside and on both the front and back patios. “Being able to provide something for the neighborhood here is really what we’re after,” Spiller said. “We’re interested in making small quantities and high-

quality beer for our immediate area.”

SPORTS ROUNDUP:

Local football teams primed for postseason By Landan Kuhlmann landan@theleadernews.com The Heights Bulldogs have built a culture of playoff contention under head coach Stephen Dixon, having qualified the high school football postseason every year since 2010. Now they are looking to build a new culture of playoff success and advance past the bi-district round for the first time since 2013. Heights (4-6) squared off with Houston Memorial (64), which finished fourth in District 17-6A, in a Class 6A Division II bi-district playoff game Thursday. Go online to theleadernews.com for results. The Bulldogs defeated Westbury 39-19 last Thursday night to finish off a strong regular season, which saw them place third in District 18-6A behind Lamar and Bellaire. Heights went 4-2 in district play. With a playoff spot clinched prior to the game, Kendric Rhymes got the start at quarterback in place of

Jalen Morrison and did not disappoint. The junior completed 8 of 12 passes for 151 yards and three touchdowns while adding 154 yards and three more scores rushing to pace the Bulldogs’ attack. St. Thomas (7-3, 4-0 TAPPS District 3) polished off an undefeated district run with a 47-21 triumph over St. Pius X in the schools’ annual rivalry game last Friday night. Maddox Kopp threw for 283 yards and five touchdowns in the victory for the Eagles, who won five straight to end the regular season and will host Addison Trinity Christian (0-10) in a TAPPS Division I first-round game at 1 p.m. Saturday. Despite a loss to Bay Area Christian last Friday night, Lutheran High North (6-2) still finished with its best record since 2016. The Lions, who finished third in Division III, District 4 under first-year head coach Shaun Stephens, looked to advance past the first round of the postseason for the first time since 2009 when they played at Texas School
