King’s BierHaus shares modern twist on tradition, culture By Christina Martinez

Christina@theleadernews.com

When Johann “Hans” and Philipp Sitter started their first business venture, they had no idea what they were doing. They opened up a hand-wash car wash, and passed out free beer and bratwurst to customers, even without permits - because they didn’t know any better. Today, however, they do know better - with their second bier garden concept opening this month in Shady Acres, King’s BierHaus. The father-and-son duo are from Vienna, Austria – transplanting to the states in 1996. The two came over with restaurant, butchery, and vineyard knowledge – all crafts for their family name. The two came over with an idea to share their culture and make a buck, the Houston permit system just welcomed them with (probably) a couple of fines. Lessons learned, the Sitters went to work. “It was our dream to make a little bratwurst stand, or shack for the customers at the car wash,” Philipp Sitter said. “My dad and I raised money by selling classic cars, got a loan and built a 45 seat shack that was called King’s Biergarten. It was just supposed to be something for the customers to grab a brat and beer while getting their car washed.”

The shack started with a word document menu that had photos and accompanied descriptions, something Sitter notes that wasn’t supposed to be serious. Then came the fan following. In a four year span, the shack expanded into a concept 13 times, investing into the business to match the needed growth – expanding the menu, beer list, and offerings. “Our expansion took us from 45 seats to 350 plus seats,” Sitter said. “This is year six and a half for us, and we’ve added on King’s BierHaus, which is a sister concept to the Biergarden. The difference is [King’s BierHaus] more modern, more fusion, more open beer house seating options, and the ordering style is different.” From the menu, Sitter explains items being all based from family recipes that date back for decades. A few standout items that lead more on the traditional side are the Giant Beer Pretzel, Liptauer Spread, Oma’s Fried Chicken and the Vienna Goulash. Sitter also mentions the term “fusion” and by this means there’s something on the menu for just about anyone, even those who don’t feel like trying something German – a Greek salad, pretzel grilled cheese, burger, schnitzel, sausage plate, or even loaded fries. Behind the bar, there are

31 taps and 26 of those taps are German beers; four being from German monastery breweries; two German beers that King’s has exclusive rights to sell - Weltenburger Dopplebock and Andechs Weissbier Dunkel. There are also German and Austrian wines on the menu, or wines from the states on tap. There is a full

By Jennifer Layer For The Leader Roughly three years ago, a man named Even Turner had a dream of opening a Greek restaurant. Everyone told Even he was crazy, everyone except a chef named William Wright. “The real reason I decided to push for it was because it was interesting to me,” said William Wright, Executive Chef. Before I got into cooking I was studying anthropology. But I dropped out of that and went to culinary school instead because that was closer to my interest. But I promised myself that I would still try and focus on and learn about different aspects of the world. So this idea was cool to me because I got to learn about the culture while also learning about the food.” This mutual love for Greek Culture and food was the foundation of the success of Helen Greek Food and Wine in The Village. It wasn’t until later that the idea of expanding to the Heights came about. “The two restaurants have slightly different menus,” said Wright. “The one in The Village is more experimental and sort of pushing the limits of what people think of when they think of Greek food. While the one in the Heights is more iconic Greek cuisine

and comfort food.” I went to Helen in the Heights this past weekend to get a taste of Greece. The first thing I noticed as I walked in, was that my flip flop and T-shirt attire may have been a little too causal for the classy atmosphere. However, I did not feel unwelcomed or uncomfortable at all, as the greeters quickly greeted me, shook my hand, and sat me down at the bar. I had the pleasure of trying two meze style dishes, the Cheese Saganaki and the Spiced Meatballs. The first dish to come out was the Cheese Saganaki, with a side of pita bread. The dish was splendid and would work well as an appetizer for a larger table rather than just one person. Being a cheese fanatic myself, the experience was exciting as it showed me a whole different side and texture of cheese I have never tried before. “The cheese used is halloumi cheese, which is made from goat milk,” said Beverage Director Josh Bearden. “The cheese is thrown on the grill ever so quickly, and the liquid that renders out of the cheese is what’s mostly in there. Right before it comes to you, we will dress it with ouzo, and the ouzo is what gives it that sweet flavor. It is served with the side of pita bread because some peo-

ple like to spread it on the bread, but, I myself, just eat it straight.” I tried both ways of eating with and without the pita bread and found it to be more flavorful without the pita but more filling with. The next dish to come out was the Spiced Meatballs. The meatballs were one of the most savory and flavorful foods I have had in a while. They are made with slow cooked lamb meat and were spiced with roasted garlic and toasted cumin. I would highly recommend this dish as a personal entrée for an individual or as an appetizer for a couple. With my meal I was served a cocktail drink called Tears of Chios, which is made with a Greek liqueur called Skinos Mastiha. The Mastiha is made from the sap resin that drips from trees found only on the Greek island of Chios. The drink was minty and flavorful, and had an interesting yet wonderful contrast with the savory meal I was scarfing down. “We named the restaurant Helen Greek Wine and Food because of the way wine and food naturally go together,” said Wright. “But getting cocktails to go with food is

bar for cocktails, and even a strong schnapps program – with schnapps flights readily available. And if you’re feeling beer-adventurous, a 2.5 Liter beer called “Das Boot,” yes you get to keep the boot. For dessert, only two things are listed and for reason. The first being house made strudel with two options: apple and

cream cheese. The next offering being gelato, hand-made by Hans himself. “[My dad] makes all of his gelatos from scratch, it’s hilarious to watch,” Sitter said. He turns on Italian music while he makes them. He wanted to make them himself, so he went to California for two weeks to a creamery to learn how.”

When it comes to sharing their culture, Sitter said his family is not a purist in any sense. In fact, he said they are trying to show a modern version of their culture, even if that makes them cliché. “We’re playing up to the clichés because we enjoy it,” he said. “We’re very cliché in everything we do.”

Step into India, Hare Krishna culture at Govinda’s restaurant By Kim Hogstrom For The Leader

For years, residents in near north Houston have complained about living in an Indian food desert. We enjoyed an abundance of other fare: Italian, Mexican, barbecue, Chinese, even Thai - but no Indian. In 2016, that changed with the addition of Govinda’s at the ISKCON Temple on 34th Street. Today, we have at hand, what may be the best Indian restaurant in Houston - a definite competitor for our area. Govinda’s, which means “one who brings pleasure to the senses,” is located on the property of the Hare Krishna temple on the edge of Garden Oaks. The structure’s beautiful blue and gold spires reach 90 feet skyward, making it impossible to miss. The vegetarian and vegan cuisine served at Govinda’s is

and serves heavenly lunch and dinner all-you-can-eat buffets daily. Krishna values and traditions guide the chef ’s hand in the creation of each meal - good food, good friends, and healthy dining are at the core of every dish. The recipes represent an 8,000year-old collection of multicultural melding, similar to India itself. “When we first visited Govinda’s, it was mostly out of curiosity,” stated Oak Forest resident Patrick McDougle. “I thought ‘How good can a vegetarian restaurant really be?’ We were completely blown away by the flavors. It was that good. The saag paneer (cooked spinach, milk and cheese) and roti with ghee (flat wheat bread with butter) alone are worth the visit.” “We are proud that we can offer something so healthy to the community,” General Manger Das said. “People like

Krishnas believe then reaches to the human spirit. Attainment of peace and harmony are at the very foundation of Krishna teachings. ISKCON is a neighbor in our community. The temple serves 600 local, under-privileged children’s lunches each week. And Govinda’s recently added a new program. Schools are welcome to bring children in for a field trip to tour the temple and gardens, then have lunch at the restaurant at a 40 percent discount. It’s a trip to India in one afternoon. Govinda’s customers are also encouraged to stroll the temple when visiting. Take a moment to enjoy the murals and colors in the grand hall, and the lush gardens. There is a boutique in the main building offering affordable books, art, figurines, toys, and natural fiber clothing perfectly suited to a Houston summer.

created from the freshest possible local ingredients under the care of the husband and wife team of chefs, Joynitai and Jamuna Dasadhikari. The couple bring years of experience with other restaurants to the table. Amar Singh Bishwakarma is the former executive chef at 5-star Bombay Brasserie in India and works as Govinda’s chef de cuisine. General Manager and President of the ISKCON temple, Syamsunder Das keeps a warmful watchful eye over all. The restaurant is spotless,

our food, and our welcoming attitude. We first thought we would rotate the types of fare: Italian one day, Mexican the next, and so on, but our customers asked us to serve Indian food everyday. They really enjoy it. We have some who visit three or four times a week.” The restaurant operates as a non-profit, and the recipes are the result of thousands of years of holistic study and practice. Each is a blend of flavors and spices designed to create health and harmony in the body, a balance that

“We are proud to be here, and we want the community to get to know us. After all, if one cannot afford a trip to the Taj Mahal, we are the next best thing,” Das said with a smile. Lunch at Govinda’s is served from 11 a.m. to 2:30 p.m. coming in at $10.95. Dinner is served from 5 to 9 p.m. and will cost $12.95. Both are available seven days a week. The menu is normally 75 percent vegan. On Sundays, it is all vegan. There is no alcohol, but there are three housemade beverages available.

Art Valet: the ballots are in and the juror has spoken When you pursue a goal, often you end up doing things you never expected to do. Recently, I had the honor (or horror) of being invited to be the sole juror for an art show, and though I’ve done this before, I’m always surprised by the invite. If you’re scratching your head, let me explain. Art galleries and other art organizations send out a call for art, generally with specific criteria they are seeking, like Texas artists, work done within a certain time frame, 2D works depicting a theme; in this case, Galveston. To ease the burden of the selection process and more likely to drum up additional attention, a well-known or prestigious member(s) of the community or art world is invited to select the art to be displayed.

Mitch Cohen Art Columnist

For this Galveston themed show there were about 150 entries that had to be narrowed down to 70 works. I take this very seriously, hence my earlier horror comment. To ease the the minds of those rejected, I wrote a statement about my process. That really boiled down to my personal experiences with the island. “This was a particularly difficult show to jury,” I said. “There were a high number of amazing pieces that didn’t make the cut, and that was probably more due to my vision of the theme and limited entries allowed, than whether or not I liked the art.” There you go, I’ve reached the pinnacle of success, I am invited to important positions in the art world, as well as quoting myself in my own newspaper column. Good thing I’m going to Galveston for the show this weekend, sounds like I may need a break … from myself. Affaire d’Art presents

Ching Po Leung soup yields health benefits

G

inger and Fork restaurant owner Mary Li was born in Hong Kong, China. Her mother and grandmother were born in Canton, China. Li was raised in Hong Kong until the age of 10, eventually moving to Los Angeles where she was brought up. Opening her own Cantonese inspired restaurant and bar in 2016, Li recalls a specific recipe that her family made on a weekly basis - Ching Po Leung, a herb pork-bone soup. “In the Cantonese cuisine, we drink a lot of soup,” Li said. “They all have individual health benefits. One of the most popular soups in the Cantonese cuisine is the Ching Po Leung.” While different family recipes may have a slightly different herbal ingredient list, the soup at Ginger & Fork includes goji berries, Chinese yam, pearl barley, and dates -- all of which are combined to nourish the body’s blood and essential fluids to promote good health. Coupled with the healing properties of pork bone broth, Ching Po Leung is a traditional decoction that is taken at all ages to encourage healthy aging. The direct translation of the soup is defined by three Chinese characters, according to Li. Ching: clearing, cleansing of the body. Po: tonifying, putting nutrients, supplements back into your body to make you strong and healthy. Leung: cooling – a lot of the food we eat, like fried food, has heat – Cantonese believe you drink this soup to give the body and diet balance, said Li.

“I watched my mother, and my grandmother, make the soup growing up,” Li said. “We have so many different types of brothy soups in my culture, but this Ching. is one I remember from watching them make it so regularly.” The soup has a bone base, boiling pork bones for the nutrients stored within the marPo. row, and incorporating nine different herbs and spices. The soup is roughly a five hour recipe. The Ching Po Leung is one family recipe Leung. that can be found on the menu at Ginger and Fork restaurant, conveniently located near North Shepherd and Interstate 10, at 4705 Inker. Li said many of the featured recipes and dishes at Ginger and Fork are a culmination of the health benefits she so dearly admires of her culture, and the dishes she enjoyed growing up – like the Ching Po Leung. “Some of my fondest memories are dinners shared with my family, that were made by my family,” Li said. “That’s what I want to share with those who come to Ginger and Fork.” This was a paid-for article, as a part of The Leader’s advertorial program.

Craft Chronicles

Brash Brewing Co. is true to their name, brand Self-assertive in a rude, noisy, or overbearing way. Yep, you guessed it! I visited Brash Brewing for the May installment of Craft Chronicles. Hidden behind some townhomes off of Crosstimbers/ 43rd, it could be easy to miss, but you would do yourself a disservice if you didn’t stop in. With metal music playing on the jukebox and an awesome selection of vintage arcade games spread around the edges of the large open warehouse, I rolled in and plopped down at a picnic table adorned with “artwork” that some guests must have spent lots of time on. There is absolutely nothing fancy about the establishment and that’s one of the things that seems to give it even more charm. Another definition for the word brash is strong, energetic, or irreverent. This definition describes the flavors that this brewery proudly injects into each of its offerings. You’ll find dank, bitter, bold, clean and assertive are very recur-

rent themes to each of their beers. Along with the boldness of flavor you’ll find boldness in beer names: Vulgar Display of Power and Hammer Smashed Face to name a couple. I made my way up to the bar and selected several pints because you gotta try them all. On tap Photo by Landon Weiershausen was EZ7 (Pale), Fancy Sauce Brash Brewing Co.’s EZ7. The first swig followed through with an overload of hop flavor, but somehow without being overbearing. It had a very nice clean bitterness followed by a dry finish. Truly a great all around beer. Basically, you need to stop what you are doing and head to Brash. There’s no other brewery quite like it, and it’s right in your backyard.

Helen from P. 1B much more difficult. So Josh has worked hard to create cocktail drinks that work well with the food.” Bearden explained his science behind the cocktail menu. “Classic cocktails typically have two ounces of a high spirit in them, meaning the drink you’re having with your food is about 30% alcohol. That in itself can make a drink extremely overwhelming and cause it to clash with the food. And so at this restaurant we focus on what’s most important and that is full experience of the food with the drink rather than the drink by itself. And Greek food in particular has a lot of flavor, so I needed to make a menu that was going to tone down the alcohol and focus on the taste. So that’s how the recipe for drinks like the Tears of Chios were inspired.” The entirety of the menu, from the food to the wine to the cocktails, is all focused on authentic Greek recipes. I would highly recommend this restaurant to anyone wanting to have a taste of the Greek life. Get a taste of the Greek life at Helen in the Heights.

Fine Food and New Friends: The Women at Work Luncheon By Kim Hogstrom For The Leader Last Friday, 70 women from the community met to enjoy some great food and each others’ company at Ginger & Fork in the Houston Heights. The occasion was the first annual Woman at Work Luncheon presented by Memorial Hermann. It was so interesting and rewarding that several in attendance requested to register for next year’s luncheon that afternoon. The fare consisted of steamed dumplings, followed by heavenly stir-fried beef and and fresh green beans in a ginger-soy sauce, then fluffy fried rice full of treats such as green onions, slivers of pork, and scrambled eggs. But the high-

light of the meal was dessert. Each person enjoyed a cup of a cream cheese-based custard layered with sugar and ginger dust. While all the food was exceptional, the dessert alone warrants a visit to Ginger & Fork. The Leader Newspaper’s owner/publisher Jonathan McElvy opened with a warm greeting and “thank you” from the podium. He explained that his newspaper organized the event to support women in the community, as so many choose to support The Leader. McElvy also took the moment to recognize The Leader Newspaper’s “Leading Ladies,” the hard-working, intelligent, funny team of women who keep the paper coming each week. Next in the speaker lineup

was Tonya Frye, Director of Development for The Mission of Yahweh, one of the only shelters for homeless women and children in the area. The work of the mission includes operating a 12-building campus and a partnership with Houston Community College to help these moms secure the education that leads to higher paying jobs – and homes. When Frye concluded, Lakeisha Catley, the Director of the Operating Room for Memorial Hermann Greater Heights Hospital, took the podium. The dedicated professional shared some of the developments at the hospital that plays such an important role in the community. “We know women are the backbone of the family,”

Catley stated. “We at Memorial Hermann Greater Heights have added new services to better care for the women who care for so many others.” A short list of the additions includes a dedicated doctor available 24/7 who specializes in labor and delivery. There is a Breast Care Center providing a full range of the most advanced screening and diagnostic services available. The facility also hosts Level III neonatal intensive care services bringing cutting-edge healthcare to newborns and children, and a very recent development involves the introduction of robotic surgery. Robotics allow for procedures that are less invasive and faster recovery. The keynote speaker for the

afternoon was Michol Ecklund, Deputy General Council, Operations Law and Corporate Communications, for the Marathon Oil Company. The slight, blonde woman turned out to be a true powerhouse: Ecklund holds degrees from both Harvard and Rice Universities, and if that’s not impressive enough, she is also the mother of twin, teen girls. Ecklund shared some of the tribulations of life in the corner office while raising kids. She touched on many subjects

– husbands, healthcare, mentoring, and a nagging sense of “not doing enough” - subjects to which nearly every woman in the room could relate. With her eloquent honesty, and authentic “glimpse behind the curtain,” Ecklund’s speech was nothing short of inspiring. Keep your eyes on The Leader for next year’s Women at Work Luncheon. The rewarding sense of sisterhood that comes with it is worth the wait.

Memorials in Robert Johnson’s honor were sent to this church, and at the request of his parents and two younger sisters (Ginny Martin is still a very involved member of the JMS School Board!), these gifts were directed to establishing a school for little children. This Thursday, JMS students celebrated Military Appreciation Month and honored the 50th anniversary of Robert Johnson’s passing by wearing camo, creating artful thank

Aspirations now reality for Heights senior Zeno credits his mother as his inspiration. “She has instilled in me the importance of determination and focus to achieve what you want,” he said. He has put her lessons to work and can now say that through his persistence and grit, he has made his vision a reality. “Amazing,” Zeno said emphatically of how it feels to be able to continue to play football and go to college. “To see my dreams coming true is a feeling I cannot describe.”

By Jonathan Valadez For The Leader

There is no better feeling than when a chain of events is set off and the actions result in positive, and often life-altering, changes. Just ask Heights High School senior Davion Zeno, whose post-high-school existence became crystal clear in a rather quick succession of occurrences. Zeno had dreams of playing college football ever since he started playing in his neighborhood as a kid. This year, the idea became more concrete, as he had received offers from the University of Arkansas at Monticello, Earlham College in Indiana and had drawn interest from the likes of Princeton University and Houston Baptist University. While he was grateful for the buzz that he was garnering, he wasn’t quite ready to commit just yet. And then something happened. In late January, Zeno was awarded a full-tuition scholarship to the University of Virginia from an institution called the Posse Foundation, which has a branch in Houston. “Posse is an organization that is partnered up with multiple colleges around the country,” Zeno said. “Posse helps colleges find high school seniors who are leaders, involved in the community and in multiple clubs and organizations.” With tuition covered, Zeno figured that he could get the rest paid for through additional scholarships and finan-

cial aid, but he was still a bit uncertain since the choice to head to Virginia would leave his football future unanswered, at least for the moment. A few weeks later, it happened again. Zeno was presented with a preferred walk-on spot to play Division-I football at Virginia, and while that doesn’t grant him any scholarship money through athletics, it’ll at least guarantee him a spot on the roster next season. As everything started to line up, he made the decision to head to Charlottesville, Virginia this fall. “I felt that it was the perfect fit for me,” he said. “The program is getting on their feet, and the education is great.” He said the decision was also appealing because UVA is an ideal size university – not too small, not too big. a receiver but said he is willing to play whatever position he can to ensure that the Cavaliers have the best chance of winning. As he prepares for the continuation of his playing career, Zeno is wise beyond his years and knows that his football journey will come to an end at some point, which is why an education is extremely important to him. Although he hasn’t made up his mind, he plans to major in either environmental engineering or in pre-pharmacy. Whatever he decides to do,
