POTATO COCONUT CURRY
INGREDIENTS 2 potatoes (33p)
1. Wash your potatoes and cut them into small chunks. Put them into a saucepan with enough water to cover and some. Boil the potatoes for 5 minutes.

3. Warm the pan to a medium heat and allow the onions and garlic to cook. When the potatoes have been boiled, drain them and add them to the pan with the garlic and onion.

4. Add the Curry powder to the frying pan and mix it all together, allow this to become fragrant.
5. Put your rice into a saucepan and add half a mug of water. Season with some salt. Bring to the boil and then allow it to cook on low for 10 minutes. 6. Add the Coconut milk to the vegetable mix. Give it all a good mix and allow it to simmer until the rice is cooked. 7. When the rice is finished, fluff it with a spoon and serve onto a plate/bowl. Serve the curry onto the rice. 8.
