ust take a glance at this year’s Kids Camp and right away you’ll understand why a camp experience is so important for your child... and how it can be so much fun. These camps give kids the chance to learn about the world, make new friends and build stronger bonds with their existing pals. Camps allow kids the space and freedom to explore curiosities, learn new skills and ask important questions, in many instances without digital devices acting as an aid or a distraction. Summer camps can give our future generation the opportunities to not only explore, but also deepen almost any niche interest, be it chess, costume design, gardening, archaeology, soccer or music. What better way to learn about old Nordic myths and legends than to write and reenact your own at camp? CAMP CHOPALOTABASIL

Kids sauté their way through summer at Food Lab

by John Lehndorff

T

he first time you watch your 7-yearold cut a cherry tomato with a knife by themselves, you hold your breath and resist the urge to help. When your kid is learning how to slice — not to mention sauté over flames and roast in a 375-degree oven — at a Food Lab summer camp, you learn to exhale and exit the building. Girls and boys are taught to dry off the slippery tomato and hold it with a “bear claw” so their fingers are away from the sharp blade of a French knife. Downtown Boulder’s Food Lab hosts summer cooking camps for kids May 28 to Aug. 9. The Monday through Friday morning or afternoon sessions focus on a specific cuisine or skill with weeks devoted to Mexico and Beyond, Asia, Italy and Baking. The current generation of Boulder kids are far more food-savvy than their moms and dads at the same age. “They have traveled more and eaten at ethnic restaurants. They’ve also watched a lot of the cooking and food competition shows on TV,” says chef Casey Easton, owner of Food Lab. She stresses that all camps are open to children 6- to 12-years-old with no cooking skills required. Activities are sometimes divided by age but the kids mingle and eat together. “The older cooks learn how to help the younger ones,” Easton says. These camps are interactive and not watchand-be-fed cooking demonstrations. Every camp and cuisine requires a variety of skills, including dough work, knife skills, sauté, baking and roasting. Older kids get to try more advanced techniques. During the camps there is a strong emphasis on safety, hand washing and especially kitchen etiquette. “One of the things we stress with the campers is that the kitchen is an adult environment, not a place to play,” she says. Every camper dons an apron and sets up at a cutting board. They get a step stool if they aren’t tall enough to reach. Each group of campers receives a tray of ingredients, grownup tools and spices for each dish they are making. Campers have fun learning what thyme smells like, how to microplane a garlic clove or chiffonade basil, what fresh mozzarella tastes like and what happens when you cook bread BOULDER WEEKLY

Easton hadn’t originally planned on offering kids summer cooking camps but they have only gotten more popular since Food Lab opened three years ago. Some kids attend for multiple weeks. “Baking is probably the most popular camp. It includes quick breads, cornbread, YMCA OF NORTHERN COLORADO SUMMER CAMPS brownies, crepes and take-and-bake pies. The parents are a little less excited about the mess it creates at home,” Easton says. But then, that’s the point. The kids want to come home and try to cook. At the conclusion of every daily session and sometimes halfway through for a snack, the campers serve whatever they are making on china dishes with real silverware. They are taught to plate the food so it looks tasty. Most importantly, everybody sits down to eat together after the collective effort. “The big thing parents tell us is that the kids tasted this food or tried this dish that they never would have if they didn’t go to camp,” she says. Easton reports that some summer campers have graduated to Food Lab’s adult classes. Not every camper will become a chef or end up on Chopped Junior on the Food Network. Kids do start helping in the kitchen, and parents like the camps because cooking skills are the kind that stay with you the rest of your life. Kids learn where food comes from and gain the satisfaction of feeding other people. Parents should note that just because their offspring spend the summer learning how to cook, it doesn’t mean they’ve absorbed At Food Lab’s summer cooking the lessons about cleaning up after themselves, camps, kids learn according to Easton. “We have everyone help skills they’ll use all their lives. but some kids are better at that part than others. It takes time,” she says with a laugh. John Lehndorff writes Nibbles for the Boulder Weekly’s and hosts Radio Nibbles on KGNU. rom learning specific outdoor skills to nurturing wild play, every week-long session at Thorne Nature Experience is centered on building an ecological understanding of the world. With programs for children as young as three, Thorne’s goal is to instill in children the ability, “to weigh the impacts of their own actions on the natural world and make choices that cultivate a thriving, healthy environment that supports all life.” Already locally celebrated as an exceptional camp, in 2018, Thorne Nature Experience received the Out-

standing Service to Environmental Education award from the Northern Association for Environmental Education. Thorne was particularly commended for “helping drive a county-wide collaborative effort” and for launching a $10-million enterprise “to provide holistic, comprehensive [environmental education] to 1,500 underserved youth.” Through scholarship funds, Thorne’s Nature For All initiative addresses the growing deficit of access for the “community’s lowest income and Latino youth” by providing financial aid for low-income students to attend summer courses. In addition, these initiatives extend well beyond summer into the school year as Thorne visits low-income and highly diverse schools across the county to teach on life and energy cycles, Colorado ecology, climate change, and other nature-centric subjects. Nature For All is Thorne’s answer for those who “do not receive the many benefits provided by nature and time spent outdoors, including improved academic achievement and physical, social and emotional well-being.” For Thorne’s educators and the students they influence, the summer camp season is when everything taught about nature in the classroom can come together via first-hand experiences along trails, creeks and lakes. Students are encouraged to ask questions, use their imagination and utilize their wonder as a foundation for stewardship. This is based on Thorne’s belief that “developing feelings for the natural world leads to a desire to care for the Earth,” and that kids particularly learn best when having fun. “I’m always looking for an opportunity to teach,” says Thorne educator Patrick Hodge. “Like finding scat, tracks, or spotting animals and talking about how they all fit into this bigger picture of nature. When we’re out exploring, we open our senses and focus on these special moments. The kids love it.” With consistency and mentorship, these local nature initiatives will have a lasting impact across the globe as every new generation is encouraged to carry an awareness and wonder into adulthood. “My child has always loved nature,” a parent wrote to Thorne, “but taking a walk with him after his Thorne experience is even more fun. He notices absolutely everything around him and loves chatting about how each creature lives and eats.”

How sailing helps kids overcome negative thought patterns

by Giselle Cesin

ummer camps are all about fun and enjoyment — a muchneeded break when school is out. But for some kids, camps have the potential to bring about positive mental and behavioral changes. ABLE to Sail is a next-door option that combines fun and skill-building

through sailing to master the negative mental chatter of low self-esteem while creating a sense of belonging. ABLE to Sail is a day camp for 11- to 18-year-olds, held for four days at Union Reservoir in Longmont. Campers learn the basics of sailing from a U.S. Sailing certified instructor who also inspires and empowers at-risk kids. In January, the camp was recognized with the Outstanding Creative Innovations in Programming Award by the U.S. Sailing Association in Florida. Diane McKinney founded ABLE to Sail in the summer of 2013 because, “Every kid is at-risk, no matter which part of town they come from.” McKinney was raised in

a successful family, with good education and high expectations for her future. She had a life that “looked good on paper,” yet she ended up becoming a drug addict, who often felt that nothing she did was ever good enough. Once she found a way out of addiction, she moved to a stereotypical “not nice side of town” in Longmont, where she became sort of a “cool” neighbor. And her house became an oasis for kids to hang out — until some of the kids told her they got stoned. “It occurred to me, Oh my God, what if they fall down the road of addiction?” McKinney says. “Because when I wanted to get clean, I made a list: I want to climb mountains again. I want to ride horses again. I want to sail again. I’m going to play my guitar again and to try and motivate myself. And it occurred to me that the kids on this side of town couldn’t make a list. They’d never done any of those things.” In response, she decided to expend all of her life savings and inheritance and start ABLE to Sail, remembering the feeling of empowerment she learned from sailing herself. The ABLE to Sail curriculum is aimed at changing negative, self-defeating thought patterns and beliefs. It seeks to inspire and empower youth to realize the infinite possibilities that lie within each of them. Every lesson in sailing is a chance to change perspectives and address depression and anxiety, and to limit screen-time and the effects of social media, which plays a part in the negative self-image children may develop

and which can lead them to participate in high-risk behaviors like drugs, alcohol, self-harm, isolating and suicidal ideations. For Izaiah Reed, 21, sailing a boat by himself gave him the confidence he needed to understand that it was OK to be on his own. Both his parents were drug addicts; by the time he was a teenager he was an addict, too. His adopted mother didn’t know how to help him break the addiction cycle and sent him to ABLE to Sail, hoping McKinney could help. It was not a magical solution. The first summer he went, nothing really changed, and he stayed on the path of addiction. But during his second summer, his perspective changed when he realized that McKinney cared. He felt she truly believed he could do better. And so he did. “She taught me how to sail alone, how to control the boat,” Reed says. “To feel the wind, concentrate and to do something on my own. I was hanging out with the wrong crowd because I did not want to be alone.” Nowadays, Reed is in college and he occasionally goes to work as a counselor at ABLE to Sail. He credits his positive outcome — against all odds — to the influence of McKinney and sailing because it taught him how to be OK and feel powerful on his own. For the second year, ABLE to Sail will have a special LGBTQ+ week in 2019, following the same four-day adventure therapy of empowering youth and raising self-esteem through sailing. For McKinney, this week is especially meaningful since she has also struggled with the challenges, both internally and socially, as a lesbian. In addition to sailing, ABLE to Sail provides daily motivational discussions to apply the lessons kids are learning out on the water to real-life experiences and struggles.Throughout the years, McKinney has helped more than 1,000 children and teenagers to navigate through the inevitable storms of youth in a positive empowering way. As she says, “You can’t run from the wind, but you can adjust your sails.” BOULDER WEEKLY
