Among the ingredients that should always be available in a busy mum’s kitchen are the ones used for this simple recipe: chicken, milk – and frozen peas, which are unjustly regarded as the kitchen’s enemy of promise. Children, babies and toddlers adore this dish, and its taste is so delicate that even the most exacting husband will eat it ungrudgingly. This is a very versatile recipe, and you can replace the peas with any other vegetable you can dig out from your fridge, such as asparagus, courgettes or carrots.
4 x skinned chickenbreast fillets (300g) 2 tbsp white flour Olive oil ¼ onion, finely sliced 250g frozen peas ½ vegetable stock cube Sea salt 150ml milk
Cut the chicken breasts into slices about 1cm thick and toss them in flour, shaking off any excess. Heat some olive oil in a saucepan and sauté the onion until it becomes translucent. Add the frozen peas and stir with a wooden spoon. Now add a glass of water (about 150ml), the half vegetable stock cube and a pinch of sea salt. Cover with a lid and leave to cook for about 7–8 minutes, checking now and then that the water has not totally evaporated, otherwise the peas will get burnt. Meanwhile, heat up 2 tablespoons more olive oil in a frying pan and add the chicken fillets coated in flour. Cook them on both sides until they start to turn golden. Check that the chicken is cooked, then sprinkle some salt and pour in the milk. Let it simmer for a few minutes, until the milk has almost totally evaporated. At this point add the peas to the chicken in the pan and leave to cook for another 2–3 minutes, so that all the flavours can blend together. Serve hot.

The period from March to early May is often called the ‘hungry gap’. When people had to rely on what could be grown locally, this was the time of year when they were tired of stodgy winter food and longing for the first shoots of spring to blossom into something edible. Sprouting broccoli and a handful of frozen peas transform this from a winter broth into something fresh and invigorating – if you have any fresh herbs to add, all the better. Just make sure you sweat the roots and onion in butter until they are caramelised and keep the green stuff as green as possible. Three-quarters of a celeriac 3 medium potatoes 4 carrots, peeled or well scrubbed 2 sticks of celery White part of a leek or half an onion 4 tsp salted butter 1 bay leaf 1 litre chicken stock (see page 159)
Fondants were one of the first desserts I mastered after going gluten free. Chestnut flour makes the chocolate seem even chocolatier. Although some professional chefs would have you believe that there is something stressful and tricky about making these, there isn’t; simply take care when you prepare your moulds and keep checking on them as they cook. 125g unsalted butter 125g dark chocolate 4 medium eggs (200g) 75g light muscovado sugar 40g chestnut flour 25g gluten free white flour or rice flour pinch sea salt butter, for greasing cocoa, for dusting
350g shredded cooked meat (chicken, turkey, beef, lamb, pork, ham, rabbit, venison) 125g purple sprouting broccoli tops 1 mug of frozen peas Black pepper Sea salt

Melt the butter and chocolate in a bowl suspended above simmering water and then set aside to cool a little.
Peel and chop the celeriac, potato and carrot into 1cm dice. Chop celery into 1cm dice. Thoroughly wash and finely chop leek or onion.
While the chocolate melts, generously butter the moulds and coat the inside completely with cocoa. Put in the fridge to chill.
In a large saucepan, melt the butter and add the celeriac, potato, carrot, celery, leek or onion and bay leaf and sweat for about 10 minutes gently until the celery is translucent and the vegetables smell sweet. Stir occasionally with a wooden spoon.
In a bowl, whisk the eggs, sugar and salt until thick, pale and mousse-like using a balloon whisk or electric hand whisk.
Add stock, bring to the boil and cook until the vegetables are tender.
Beat in the melted chocolate mixture in a thin stream until thick, smooth and glossy.
Add diced meat and bring back up to the boil. Then add broccoli and peas, bring back to the boil and simmer just until the broccoli stems are al dente.
Sift in the flours and fold gently using a spatula or metal spoon until completely incorporated.
Season with black pepper and sea salt to taste (if you use ham or salted stock you won’t need any). Add more stock if you think it needs it. Serve straight away while the peas and broccoli are still bright green.
Pour evenly into moulds and refrigerate if not baking straight away. You can make the mixture up to 24 hours in advance, just add a couple of minutes to the baking time if cooking from chilled. Bake at 175°C for 10-12 minutes until risen and firm on the top, but still wobbly if pressed. The top should look like cake, not glossy at all. Check after 8 minutes just in case your oven is fierce. Tip each fondant out onto a plate almost immediately and tuck in! Whipped cream makes an excellent companion.

MAKES 6 LARGE OR 12 STANDARD-SIZED MUFFINS 250g plain flour 2 teaspoons baking powder 125g caster sugar ½ teaspoon ground cinnamon 25g ground hazelnuts 2 eggs 200 ml whole milk 125g unsalted butter, melted 150g grated carrot
For the lemongrass ganache 260g whipping cream 25g lemongrass, chopped 190g good-quality white chocolate, broken into pieces 2.5g gelatin powder
Line a 6-hole deep muffin tray or a 12-hole standard size muffin tray with baking parchment or paper cases. Preheat the oven to 200ºC/ Gas Mark 6. Sift the flour and baking powder into a medium bowl. Add the sugar, cinnamon and ground hazelnuts.
Fill the muffin cases three quarters full and bake the muffins in the oven for 20–25 minutes if making large muffins or 10–15 minutes for standard size. They are ready when risen, firm to the touch and a skewer inserted in the centre comes out clean. Transfer to a wire rack to cool before eating.

Pass the mixture through a sieve, then place back in the pan and warm it to 60ºC. Remove from the heat and add the gelatin, then the white chocolate. Mix well, until smooth, then cover the surface with cling film and transfer to the the fridge for at least 8 hours. Preheat the oven to 150ºC/ Gas Mark 2. For the macaron shells, you need to start by making an Italian meringue. Using a stand mixer, whisk the egg whites and 15g of the caster sugar until soft peaks form. When the eggs reach about halfway up the bowl, start to make a sugar syrup. Place the remaining 175g sugar and the water in a pan over a high heat until the syrup reaches a temperature of 120ºC. As soon as it reaches this temperature, carefully pour it over the whisked egg whites in a thin stream, whisking all the time and being careful not to pour it over the beaters to avoid burning yourself. Continue to whisk until the
Whisk the eggs and milk in a large bowl, then add the melted butter. Add the dry ingredients to the milk mixture and mix with a spoon or spatula until just combined (be careful to not overmix or the muffins will be tough). Fold in the grated carrot until just combined.

Start by making the ganache. Bring the cream to the boil in a small saucepan, add the chopped lemongrass and blitz with a stick blender. Remove from the heat and leave to infuse for 8 minutes.

mixture cools to 50ºC and is smooth and shiny. Mix the ground almonds, icing sugar, and the 45g of egg whites with a wooden spoon until you have an almond paste. Add a drop of green food colouring, then two drops of yellow colouring and mix to get a nice pastel colour, then fold in the Italian meringue a quarter at a time, mixing well after each addition. Line a baking tray with non-stick baking paper and draw sixteen 4cm rounds on to the paper. Transfer the mixture to a large piping bag fitted with a round 5mm nozzle and pipe the mixture into the rounds, starting at the centre and working outwards to fill them. Bake in the oven for 12 minutes. Carefully lift the baking paper onto a cold tray to allow the shells to cool before filling. To assemble the macarons, spoon or pipe some ganache into half the macaron shells, then top each with an empty shell. Press down gently to seal – you should have about a 5mm layer of ganache sandwiched between the shells. Serve immediately.

When Dennis Kimetto became the first person to run a marathon in under 2 hours 3 minutes in Berlin in 2014, knocking nearly 30 seconds off the previous record, there was a lot of excitement about whether the two-hour mark could be in sight.
So there is the possibility that we are at the end of a great era for the marathon, and are now about to enter a period of stagnation in terms of improving the world record. We may see a few seconds shaved off every decade or so, but not a continuation of the current pace.
A two-hour marathon would be a huge achievement – a mark that seems as fantastic as the four-minute mile once did. Several commentators have suggested that at the current rate of record setting, we will see the two-hour mark broken in sometime around 2030.
There is another indicator for the marathon: we can look at what the half-marathon tells us.
But we aren’t learning from the past. If we extrapolated the marathon records set in the 1960s, we would have expected the twohour mark to be broken back in 1977. Clearly, extrapolation isn’t everything. So what is behind the current improvements in the marathon world record? As Ross Tucker of the University of the Free State points out, marathon runners are no longer 10k runners past their prime – the distance has become more glamorous and lucrative. In fact, the current improvement in the marathon time corresponds with a stagnation in the 10k record. With marathon in the spotlight, and better training methods, you would expect a few records to fall, but not for ever – runners will hit their limit.
If we look at the half-marathon world record compared to the full marathon since 1970, the ratio climbs from 2 to 2.1. In effect, the halfmarathon showed marathon runners what could be achieved. Since the mid-1980s, the marathon world record has constantly been just over 2.1 times that of the half-marathon. The ratio should always be above 2. Assuming that the ratio maintains a level of around 2.1, this suggests that for the two-hour mark to be broken in the marathon, the half-marathon record should be close to 57 minutes. And it’s nowhere near that. A look at the half marathon record progression shows a more consistent pace of improvement. It also shows that to get to 57m, we are looking at many decades, if ever. This might simply tell us that the half marathon isn’t taken as seriously by runners. Or, it might give us a warning sign not to expect the 2-hour marathon for many years to come.
Don’t pity England: other countries have far more long-suffering football fans England fans tend to think that they are hard-done by when it comes to World Cups. Despite the deep angst caused by dodgy or disallowed goals, usually against Argentina or Germany, they should get over it – when it comes to football’s biggest prize, England aren’t a bad team to support. The real pain lies elsewhere. When we look at a country’s overall World Cup record in terms of total games played, won, tied and lost, one country stands out for all the wrong reasons: Mexico. No country has lost more games at the World Cup than Mexico – with 25 losses in 53 games, that’s just about 1 in every 2 games played. Other countries have a worse losing record in percentage terms, but most of these are countries that are happy just to have qualified. The only other teams with a worse losing record that have played a comparable number of games are the US (19 losses in 33 games), Bulgaria (15 in 26) and South Korea (17 in 31). Switzerland and Czech republic are close, with 16 losses in 33 games. Put another way, Germany has played twice the number of games as Mexico, with 106, but lost 20 to Mexico’s 25. It’s not as if Mexico is all-out, boom-or-bust football, either – it ties lots of games as well. Mexico has won 14 World Cup games, and drawn 14. That puts it into the group of countries that have drawn as many or more games at the World Cup than they have won; and all of those have played significantly fewer games than Mexico.
Nor can Mexico take any solace in being a small country. According to Fifa, it has more registered players than Argentina. The chart shows points per game (3 for a win, 1 for a draw) at all World Cups, compared to total overall matches played. The two countries that stand out from the trend line are Mexico, and at the top, Netherlands. The different bubble sizes show the number of registered players in each country. Up the top end of the chart are Brazil and Germany, with the group of other World Cup winners trailing in their wake. The team with the best record never to win the trophy is the Netherlands – it has better win percentage (54 per cent) than Spain, England and France (all one-time winners) from a high number of games (50). On a points-per-game basis the country is behind only multiple winners Brazil, Germany, and Italy. It is ahead of double winners Argentina. Among the winners, Uruguay stand out as having a relatively poor overall record, with just over a third of matches won. That’s due to the country winning in the early years, 1930 and 1950, and doing little since bar a few fourth-place finishes. For neutrals who like a result, Portugal is a good team to watch: in 26 World Cup matches, they have drawn only 4 times. (Hungary and Austria have similar records, but haven’t qualified for a long time.)

Then there is the science. Long distance running comes down to oxygen capacity vs running economy. No runner has the combination of both at this point to do a sub-two-hour marathon.
Long distance runners don’t scale up perfectly – a 10k runner isn’t always the best marathon runner – but the correlation is close.

n ‘it was the perfect situation, the perfect day, the only stage i had been given a free role in by the team during the race. it was stage 13 of the 2009 Tour de france. Months before the tour started i had that particular stage in the back of my mind as a potential target. i train in those areas a lot so i knew all the roads. The stage started and it began raining straight away. right from the gun there was an attack and i jumped on the wheel and followed. Another five guys bridged across and joined from behind and formed the day’s breakaway. Then our group split, myself and two others broke away from the breakaway. As we started to climb, it just got colder and colder, which i sensed was playing to my advantage. The day before had been 38 degrees heat so the change was a huge shock. We were 1400 m up and the other two riders didn’t handle the cold as well as i did, i could just tell. i could feel they weren’t as strong. Then one guy got dropped and my confidence soared. With 50 km to go i attacked and rode the last 50 km solo. i was riding scared as i thought i was going to hunger flat and the peloton would catch me or that i’d crash on the descent, but at the same time i could sense the win. in the final kilometre, it all hit me that
i’d win. it was the best day of my career, of my life to that point, and i was crying like a baby. All my friends and family were there, they had come out as they knew it would be my only chance that tour. As i crossed the line i had all these flashbacks, all my childhood dreams of riding the Tour de france, riding when i started at six years old, waiting up late at night to watch the tour highlights. i knew my parents would be watching and going crazy; inside i was going crazy too and that was my Cycling nirvana.’

Mortons neuroma What is it?
A neuroma is an abnormal growth of nerve tissue. Nerves are the motor and sensory carrying structures of the body. This means that in order for us to move, or feel, we need nerves to send the messages with the relevant information to the required muscle groups. This information to and from the brain provides immediate information back and forth to create and moderate movement, touch, temperature, and sensation. A Mortons neuroma can be described as a thickening or swelling of the tiny little nerve that passes between your toe joints. Tibia Usually it’s the joint between the 3rd and 4th metatarsals but can Cuneiforms also be between the 2nd and 3rd metatarsals (the big toe is always Metatarsals number 1, the little toe number 5 – The same with the thumb and Phalanges little finger in the hand). The pain radiates along the two affected toes and is sore on the underside of the foot at the location of the neuroma.

11 When a nerve develops a neuroma there is greater surface area of the nerve, an increased likelihood of entrapment and constant pressure reducing the ability for the nerve to slide efficiently between neighboring structures. Not overly common but significant numbers of people have foot pain in this area and so let’s discuss the signs and symptoms so you don’t overlook this possible diagnosis.

COMMON REASONS FOR INJURY • Wearing tight or pointed footwear • High heel shoes • Repetitive movements such as running or racquet sports • Injury or trauma to the foot • Foot abnormalities such as bunions, flat foot or over flexible feet.
It should be noted that not all pain in the toes can be linked to a neuroma, however as a runner this would be one to watch out for. Of course not all forefoot pain is due to a neuroma but it is this click when squeezed that is a good clinical way of defining this as the leading diagnosis until your foot can be scanned.

I’m now into the second decade of my therapeutic career and spend my days working with runners, so I know there is more to helping someone than simply applying the latest ‘paint by numbers’ scientific fix. For example, if through treatment of an injured ligament, physiotherapists will often use 2 minutes of deep transverse frictions (DTF) to gain a numbing of the ligament, then 10 minutes of the same for therapeutic effect. The point being, that it is written down countless times what to do, where to do it, once you have your diagnosis. Physiotherapy isn’t like that, you can’t just diagnose and then provide a card from your folder on the latest rehabilitation protocol. There are some scary statistics for practitioners who choose this route, only 7% of clients will follow your exercises to the letter, less than half will do some of the prescribed programme and a whopping 50% don’t do any at all. A patient spends 24 hours a day living with themselves, if they are not going to take on some of the responsibility for their rehabilitation this leaves a therapist just 30 minutes each week to fix a problem. The role of the good therapist is to motivate, engage and educate the patient, to drive that 7% closer to 75% and to provide a treatment package that is both personalised and relevant to the end user. This requires experience and taking the time to understand your client.

PROGRESSION OF THE INJURY The injury will start very slowly, often just removing your shoes and rubbing your foot is enough to alleviate the symptoms in the early days. There may be significant breaks in the symptoms leading you to believe that it’s just a problems with a certain pair of shoes. The symptoms will then worsen over time and become more consistent. The temporary changes to the nerve begin to become more permanent. TREATMENT As with all injuries, early detection is very important. The sooner a specialist can diagnose mortons neuroma, the less likely the need for surgery. Treatment is not normally through physiotherapy. Initially orthotics can be used (insoles) to hold your foot in a specific position

Take a mechanic with you when you view. If you can, take someone with you who can give the vehicle a good going-over when you view any vehicle for the first time. That means looking at it properly inside and out, underneath and on top. If you are looking at a classic or vintage camper, take a checklist and look at each item in turn carefully. 5 Follow your instinct. Look at the seller. See how their body language is. How do they seem to you? Honest? Above board? Are they willing to let you give the vehicle a good goingover? Does it feel good? If it doesn’t, don’t let your excitement get the better of you. Take some time to think about it. 9 Never assume it will be alright. Assume the worst. Sometimes, ‘it’ll be grand’ isn’t enough. Trusting to luck can leave you out of pocket and with a very red face if things go wrong. 5 Lower your expectations and be pleasantly surprised. You might want it to be perfect, but don’t expect it to be so. If you think it’s going to be a crock, then if it isn’t you’ll be pleasantly surprised. 9 Ask questions. Ask lots of questions about everything. Be relentless. Ask about history, cost of ownership, MPG, anything you can think of. Get as much info as you can from the seller. In your cookpot (over the fire or on the hob) brown the chicken with the lardons in a splash of olive oil for 5 minutes or so. Remove from the pot and put aside, leaving the juices. Add the carrots, onions, celery, garlic, bay leaf and thyme to the pot and soften for a few minutes, stirring from time to time. Add the stock cube and stir. Add the chicken and lardons to the veg and stir. Sprinkle the flour over the top and mix in well. Now add the wine and up the heat a bit. Bring to the boil then add the water and bring to the boil again. Allow to simmer with the lid on for around 30 minutes. Add the mushrooms and potatoes and allow to simmer again for another 30-40 minutes. Serve with the crusty bread straight from the pot.

It’s brilliant with a delicate, pale, pink rosé, unimpeachable with a gin & tonic and a fine accompaniment to pastis. If you have access to fresh basil, use it, but a pinch of dried thyme will suffice. It’s usually blitzed in a food processor but I love this chunky version chopped finely by hand. Traditionally it’s made from the small black olives so beloved in Provence, but I also like the addition of an astringent kick of green. I sometimes add 3 or 4 chopped sun-dried tomatoes when I have them, and a teaspoon of sailor’s favourite rum, which adds a balancing sweetness. Avoid rubbery pitted olives in brine if you can, instead prize out the stones with a sharp knife.
Makes 1 smallish bowl (a little goes a long way) 100g whole black olives (preferably Niçoise or Kalamata) 100g whole green olives 3 tbsp capers, well-rinsed if packed in salt 3 anchovy fillets 1 fat garlic clove, crushed ½ tsp dried thyme juice of ½ lemon 5 tbsp extra virgin olive oil pepper
Remove olive stones with a sharp knife. Chop, and then chop some more until you get a chunky paste. Chop capers, anchovies and garlic and stir into the olives. Add a pinch of thyme, squeeze over the lemon juice and stir in the oil. Add pepper to taste.

Highly proficient with their axes, the Evenk swiftly splint the kindling needed from dead, dry spruce, larch or birch. thoroughfares comprise a cross. thus, symbolism took precedence over accuracy. once Jerusalem had been lost anew to islam in 1187, the city was depicted as the necessary goal for christian Europe. the early 14th-century Liber Secretorum Fidelium Crucis, or The Book of The Secrets of the Faithful of the Cross, by the Venetian historian Marino Sanudo, presented to Pope John XXii in 1321, was a call for a crusade to regain the Holy Land. this work, which belongs to a genre known as ‘recovery literature’, includes maps by Genoese cartographer Pietro Vesconte that depict the former crusader cities of Jerusalem and Acre. cities were largely rendered pictorially in these early maps, as with the depiction of London by the St Albans’ monk Matthew Paris in the itinerary from London to Jerusalem that prefaces his Chronica Majora of c.1252. Few pilgrims will actually have carried such a map on the journey, using it instead at home as a devotional tool for pious contemplation.

A cognitive change has occurred and the paddler is less confused about how the paddle works. They start to relax and the stance becomes a little more upright. The eyes are more levelled ahead and at the horizon, promoting instinctive balance. The stroke is still almost entirely powered by the arms. Breathing is becoming steadier, lactic acid is being removed from the muscles, the heart rate is slowing and less energy is burned up.
By now proprioception has improved enough for the paddler to forget about trying to balance and to concentrate more on developing technique, and the neuromuscular pathways that run to the powerful core muscles of the erector spinae and external oblique abdominals are becoming entrenched. The ability to summate (fire a lot of impulses in target muscles all at once) is improved and there is now some power behind that paddle!
The first glimmer of increased muscle fibre size and tone is starting to show in the power houses of the glutes, quads, core and upper back muscles. The timing of contractions becomes more co-ordinated as a result of repeated efforts to meet the force generation required to move the board fast from a standing start. The legs are stronger now (able to maintain a bit of flex to work like shock absorbers) and the righting reflexes are sharpened up, giving a smoother experience in choppy water, and reducing the energy sapping overcompensating wobbles.
Three months later and the VO2 Max (aerobic capacity) has taken an upward swing; the paddler is now liberated to travel further and paddle harder. Balance becomes even more instinctive, clearing the way for the ‘shoulder stack’ with the leading shoulder dropped and the trailing shoulder high. This promotes loading the bodyweight onto the paddle during the catch phase (and a bit of shaft flex) for a profound, powerful stroke. Tendons, ligaments and muscles have steadily become adapted to the increased workload meaning less aching and soreness after longer efforts.
The paddler is physically well adapted to paddling in a wide range of conditions, with good mobility in the legs and lower back. So it’s time for a learning phase again. The centre of mass is brought closer to the deck of the board by dropping the hips and bringing the hands lower down on the paddle and challenges come in the way of paddling in stronger winds, upwind, downwind, cross wind, in faster tides and bumpier seas. Slow twitch fibres (muscle fibres good for endurance) are becoming increasingly dominant.

The basic element we need in order to fly a kite is wind. Once we have this fundamental source of power we can generate some other vital components that will work with this energy. Let’s start at the beginning and build the elements up one by one to gain a full understanding.
HOw DOEs A kITE fly? DRAG Provided there is some airflow/wind we can get things to fly. The most simplistic form of kite is a diamond shape made from a framework of two crossed sticks with some material stretched over it. When placed in a current of air, this shape generates drag if it is restricted by a line, which we can also hold and use to control the kite. Wind hits the windward surface of the kite, which is prevented from blowing away by the flying line. The opposing forces create tension on the line, which is ‘drag’. The larger the kite the greater the dragging force created. These kites are frequently people’s first experience of a kite and, as generations of children can testify, they are both simple to use and safe. The streamer often attached to the bottom corner is there to create stability and extra drag, which keeps the kite facing up, as well as looking good. The main restriction with these kites is that there is no real steering potential and they are extremely inefficient, so their use is restricted to play.
LIFT Once drag has been achieved, lift can be generated by refining the shape of the kite: the more efficient the shape, the greater the lift. Perhaps the best example of an ideal shape for creating lift is an aeroplane’s wing profile. Lift is generated because air flows over the upper and lower surfaces of a wing at slightly different speeds. The airflow on the upper surface has further to travel and therefore ‘spreads out’ as it travels faster, creating a lower pressure relative to that of the airflow over the lower surface of the wing. Hence ‘lift’ is generated upwards, from the area of greater pressure to the one of lower pressure. This lift can be maximised in a number of ways: by speeding up the airflow rate (which basically is wind speed); increasing the surface area of the object; accelerating the object’s own speed through the air (which can often generate much more lifting force than that which can be created by the existing wind speed); and finally by modifying the object’s shape. We only have to look at the differing designs for aeroplane wings to realise that although the basics are generic, there is no optimum shape yet.
The design of a modern-day kite is based on analogous principles and works in a similar way, although the ability to easily relaunch aeroplane wings is not top of the design specifications at Airbus, unlike at Naish and other kite manufacturers. Countless variations on this principle are invented, adopted, evolved and cast aside as we learn more about aerodynamics. However, whereas most wings, spoilers and air-efficient items deal with wind coming mainly from the front – as can be seen in racing cars and bikes, aeroplanes and even most types of vessel – kiteboarding has taken the ‘engine’ (the kite) and allowed it to be thrown across the sky from side to side, rotated through 360 degrees and more, and even being momentarily positioned below its own anchoring axis. These factors have sparked some interesting theories and push the laws of aerodynamics in new and exciting directions.
ANGLE OF ATTACK Once a kite has airflow going over it, creating both drag and lift, it will fly in the wind window (see page 26) and naturally sit at the zenith or 12 o’clock secure position in the right amount of laminar wind (streamlined wind
flowing in parallel layers) for its size. In order to position the kite correctly to achieve this, the pilot can alter the angle of attack, which refers to the angle of the kite’s canopy in relation to the wind flowing over it. This has a big effect on the performance of the wing. A kiteboarder does this by using a control bar to fly their kite. The trimming system on the bar allows the pilot to push the bar away, decreasing the kite’s angle of attack and depowering it, or pulling it in, which increases both the angle of attack and the level of power. Get it wrong, however, and the kite may crash, stall or even fly backwards. The major breakthrough for kiteboarding came about, as we have already discovered, in 1999, when the 4-line control bar system was first introduced to Leading Edge Inflatable (LEI) or tube kites. This allowed the pilot to very easily alter the angle of attack with much more precision, just as the pilot of an aircraft can modify the surface of wings. Anyone who has watched the wings of a landing plane after touchdown will tell you they change shape quite dramatically; from a smooth wing profile for flying they segment at the back after landing,
pART 1 NEED TO kNOw with some sections pointing down at an angle of 45 degrees and others pointing up at the same angle. This breaks up the smooth profile and helps to slow the plane down by creating extra drag once it is on the ground. A kiteboarder can create a similar effect on their kite by trimming the bar in or out. On LEI kites specifically, pulling the bar towards the pilot increases the angle of attack and therefore generates more lift and consequent power, provided the trim angle is set correctly and the kite is moving first. By releasing the bar, the angle of attack is reduced, along with subsequent power and lift. This advancement suddenly meant a pilot could ‘sheet out’ during a ‘gust’ (increased moment of wind speed) and spill excess power rather than incurring the inevitable wipeout that would previously have occurred. All sailing craft have the same capability through their mainsail halyard, which allows them to increase and decrease the sail’s angle to the wind. Kites however,

being supported entirely by the wind, must get this angle right at all times or risk the kite crashing to the ground. The angle of attack at its optimum produces the most speed, lift and power from the kite. Reducing the angle of attack correspondingly reduces the speed, power and lift it can generate. Increasing the angle of attack beyond a certain point – which is different for all kites and wind strengths – creates inefficiency over the canopy that can negate the power, lift and speed, and the flow of air can also reverse, creating a ‘stalling’ effect. For LEI kites, this is a negative effect and results in loss of momentum and control. A skilled pilot can generate the greatest possible amount of speed and efficiency from a kite and use these to jump, head to windward or simply go fast without stalling the kite. This is a fine balance and a good skill to gain.

In order to generate power in the right direction the kite must be flown through the correct zone of the wind window at the right time. Steering is very straightforward and logical. If you wish the kite to turn right, pull on the right side of the bar and vice versa to turn left. The harder the bar is pulled the faster the kite reacts and the more aggressively it turns. In practice this is easy both to comprehend and to execute with a range of kites. It is, however, useful to understand exactly what happens in technical terms, especially for those wanting their kite to perform better, for instance in competitions or to go faster or higher. Steering results from a localised alteration of the angle of attack. The motion of pulling on a sideline at the control bar results in an increased angle of attack over the tensioned wing tip. This increased angle creates more drag and slows down this side of the kite.
The opposite wing tip has not been subjected to the same angle change; in fact the angle of attack on the opposing side can be slightly reduced. This allows the opposing side to continue at the same speed or even slightly increase in speed, so turning the kite. Whatever the conditions, there is inevitably a time lapse between moving the bar and the kite turning. This delay can be very small with strong winds, small kites and positive pilot inputs to the bar. However, the lighter the winds, the larger the kite and the more diluted the inputs, the slower the reaction time of the kite and the corresponding output power and turning speed. ‘Averse yaw’ is a further factor that is apparent when a kite turns. This phenomenon can be explained as a momentary shift of load towards the non-tensioned side of the kite before the real loading effect occurs on the tensioned line. riting in his journal on October 21st, 1492, Christopher Columbus described ‘little birds … so different from ours it is a marvel’. Minute in size and with brilliant plumage, these captivating creatures, which are native to the New World and not known in Europe, have given rise to many colourful legends. Huitzilopochtli, the ‘hummingbird of the south’ was, to the Aztecs, a god of sun and war. All warriors slain in battle, according to Aztec tradition, rise to the sky and orbit the sun for four years. They then become hummingbirds, feeding on flowers in paradise. In Mojave Indian lore, the bird was sent from the Underworld to find the sunlit world where men could live. In Pueblo Indian legend, after losing his bet with the sun a demon is blinded and in anger spews out lava from the earth. As the earth catches fire the hummingbird saves it by gathering the clouds and producing rain. According to Mayan tradition, the hummingbird is the sun in disguise; he is constantly trying to seduce a beautiful woman (the Moon). In one Navajo tale, the hummingbird – once as large as a crow – was shrunk to its tiny form by the Great Spirit as a punishment for its destruction of flowers; its bright colours were the only consolation granted. The birds appear to evoke universally positive human emotions – a tribute to their beauty and dainty agility. In a flash of colour, they fly as fast as 34 mph, their wings beating more than 50 times per second, creating an audible hum. Watching the Ruby-throated Hummingbird (Archilochus colubris), which he later illustrated (right), the 19th-century French-American ornithologist, naturalist and painter John James Audubon wrote of ‘this glittering fragment of a rainbow … advancing on fairy wings, carefully visiting every opening flower-cup and, like a curious florist, removing from each the injurious insects that otherwise would ere long cause their beauteous petals to droop and decay’.

or certain tribes in New Guinea, the cassowary is a female ancestor who has come back to life in avian form; for others, the strange, ostrich-like bird is the primal mother from which they were once created. One local legend explaining this genealogy tells of a hunter who watched in amazement as five cassowaries shed their feathers to reveal themselves as beautiful sisters. He took the feathers of the youngest as she bathed, then seized her, carried her to his home and married her. In time, his wife bore him a son but one day she found the hidden feathers and escaped – never more to be seen, except in her original feathered form. Another curious tale from the Kewa people of the island relates how the birds got their red-and-blue neck feathers – a reward from an old woman whose stomach they kicked to release the large ‘taro’ (root vegetable) she had eaten, which was causing her great pain. Cassowaries do indeed have a powerful kick and can be dangerous; though attacks are rare, at least one person has been killed and others seriously injured. The birds are big, weighing around 58kg (128lb) with a mop of black/brown coarse feathers, brightly coloured neck and throat, and a large, bony protuberance on their heads which may help them to penetrate dense vegetation. Their strong legs enable them to run at up to 30 miles an hour and jump 1.5m (5ft) in the air, and their claws are long and extremely sharp. Besides New Guinea, the Southern Cassowary (Casuarius casuarius) can also be found in Indonesia and Queensland, Australia – and probably reached there as a result of trading; live cassowaries, and their meat and feathers, have been used in ceremonial exchange, and bought and sold throughout Asia for at least 500 years. SHORT-BEAKED COMMON DOLPHIN
Short-beaked Common Dolphin
In the mid-1990s, the Common Dolphin was officially separated into two distinct species, the Short-beaked Common Dolphin Delphinus delphis and the Long-beaked Common Dolphin D. capensis. Europe is outside the normal range of the Long-beaked Common Dolphin, which occurs nowhere nearer than the northern end of the Red Sea and West Africa, so it is not included in this guide. All common dolphins have a distinctive hourglass pattern of white, grey, yellow and black on their sides, which forms a dark V-shape below the dorsal fin and looks almost like a reflection of the fin itself. They show many differences within this basic framework and it can be extremely difficult to tell the two species apart. As their names suggest, the most distinctive feature is their beaks: the Short-beaked has a relatively shorter, slightly stubbier beak with more open facial markings than the Long-beaked. It also has a brighter, more contrasting body pattern and a more rounded melon, and it is more likely to have variable amounts of pale pigment in the centre of its dorsal fin. There are distinct forms of the Short-beaked Common Dolphin in the Black and Mediterranean Seas.

Distribution: worldwide in warm temperate, subtropical and tropical waters; mainly (but not exclusively) offshore. World population: no reliable global estimate, but possibly several million. Sperm Whales occur mainly along the Hellenic Trench, which runs from the Ionian islands along the western and southern coasts of Greece all the way to southern Crete and beyond. Six hundred kilometres long, and passing by the west coasts of Kefallonia, Zakynthos, Peloponnese and Kythira, as well as south-western and southern Crete, the trench is a critical habitat for deepwater cetaceans. It drops to a maximum depth of 5,300 metres, but three-quarters of all Sperm Whale encounters are within 3 kilometres of the 1,000-metre depth contour. Sperm Whales are also found as far east as Karpathos and Rhodes, in the Myrtoan Sea, and in the Aegean between the Northern Sporades and the Chalkidiki Peninsula. They may pass through shallower waters around the Cyclades Islands while travelling from one area of steep underwater relief to another. The Sperm Whales in Greek waters are believed to be unique. This is the only known place anywhere in the world where females, calves and solitary males co-exist, feeding, mating and calving year round. There are no confirmed population figures, but there are probably no more than a few hundred individuals in the eastern Mediterranean (the Hellenic Trench is core habitat). Numbers may be declining as there has been a decrease in the number of sightings and strandings over the past decade. Cuvier’s Beaked Whales have a broadly similar deep-water distribution to that of Sperm Whales and are also present year round. They are believed to occur along the length of the Hellenic Trench, from Corfu to Rhodes, but there are only two areas where they can be seen predictably: southern Crete and western Lefkada. They are also found over deep depressions in the Aegean Sea, especially in an area north of the National

Marine Park of Alonissos Northern Sporades. As is the case with Sperm Whales, there have been fewer sightings in recent years. Risso’s Dolphins are relatively common in the Myrtoan Sea south to north-western Crete and north to the Northern Sporades and Chalkidiki Peninsula. Bottlenose Dolphins are present in many coastal areas and gulfs, as well as between islands, throughout the Aegean, Ionian and Cretan Seas. Striped Dolphins are common in all areas where the water depth is greater than 500 metres (including the Gulf of Corinth), less common where it is 200–500 metres and mostly absent in water shallower than 200 metres. Short-beaked Common Dolphins are found in many parts of the Aegean Sea, from the Thermaikos Gulf and Thracian Sea south to the Dodecanese, including the Pagasetic Gulf and the southern Evoikos Gulf. On the other side of Greece they are also found in the Inner Ionian Sea and the Gulf of Corinth; once abundant, they have become much rarer in recent years. Harbour Porpoises are seen fairly frequently in the Thracian Sea and surrounding areas of the northern Aegean Sea (they may also be present in the Themaikos Gulf). Believed to be in Greek waters year round, they do not occur anywhere else in the Mediterranean, apart from as rare occurrences around the Strait of Gibraltar. Five other species have been recorded once or a handful of times: Minke Whale, Humpback Whale, False Killer Whale, Sowerby’s Beaked Whale and Roughtoothed Dolphin. It is possible that Longfinned Pilot Whales and Orcas also occur in Greek waters from time to time, but they have not been recorded. There is a motley selection of cruises between Greek islands, of course, and while
