ITALIAN FOCACCIA SANDWICH
A loaded Italian focaccia layered with mortadella, salami and prosciutto, finished with rocket, provolone and Blenders Pesto Mayo. Rich, savoury and packed with flavour, it’s perfect for deli counters, cafés and sandwich menus.
Ingredients
4 Focaccia
80g Blenders Pesto Mayo
40g Rocket Leaves
120g Mortadella
120g Italian Salami
75g Prosciutto
30g Fresh Tomatoes, sliced Pinch of Maldon Salt
2 Slices of Provelone Cheese
80g Roasted Red Pepper

Method

1.Slice the focaccia bread in half.
2.Spread the pesto mayo on both sides of the bread.
3.Add mortadella, salami, prosciutto to the bottom half of the bread.
4.Add the tomato and sprinkle a pinch of Maldon salt.
5.Top with Provelone cheese, rocket and roasted red pepper.

A simple, flavour-packed side dish combining crispy roasted potatoes with fresh herbs and Blenders Pesto Mayo. Ideal for deli counters, hot holds or as a versatile accompaniment.
Ingredients
400g baby potatoes, halved
Salt and pepper to taste
20g spring onion, finely diced
5g parsley, chopped
20g red onion, sliced
80g Blenders Pesto Mayo

1.Boil the baby potatoes in salted water for 20 minutes until tender.
2.Drain and transfer to a tray. Roast in a preheated oven at 200°C for 10 minutes until lightly crisped.
3.Layer the warm potatoes with red onion, spring onion and parsley.
4.Top with Blenders Pesto Mayo and serve warm.

A vibrant pasta salad with cherry tomatoes, pancetta, mozzarella and olives coated in creamy Blenders Pesto Mayo. Fresh basil and sundried tomatoes bring bright flavour, making it ideal for deli counters and sharing salads.
Ingredients
320g cooked fusilli pasta
100g Rainbow cherry tomatoes
20g pancetta, diced
15g Pine Nuts
20g Red onion, diced
10 mini mozzarella balls, halved
5g basil leaves, chopped
80g Blenders Mayonnaise
50g Olives
50g Sundried Tomatoes

Method

1.Boil your pasta according to pack instructions and allow to cool.
2.Sautee the pancetta in a pan for 8 mins. Remove and set aside.
3.Throw in cherry tomatoes and salt to taste, and sautee for about 6 mins minutes.
4.Toast the pine nuts until slightly golden.
5.Stir in Blenders Pesto Mayonnaise, mix again, and serve.
