Fresh salmon served over grains and vegetables, finished with a generous drizzle of Blenders Green Goddess Dressing. A vibrant, herb-forward bowl that works perfectly for café menus, healthy lunch offers and modern deli counters.
Ingredients
1 salmon darne
10ml olive oil
60g prepared quinoa
100g Green Goddess slaw mix (see recipe)
25g baby spinach
100g classic carrot & mixed seed salad
20g charred broccolini
½ avocado
10g pomegranate seeds
40g Blenders Green Goddess Dressing
COOK TIME 20 MIN PREP TIME 15 MIN

Method

1.Pan fry the salmon darne in olive oil for 5-6 minutes, turning halfway through.
2.Place Salmon in the oven for 10-15 mins at 140 degrees C.
3.Assemble the bowl: Place spinach as base, top with quinoa, green goddess slaw; classic carrot and mixed seed salad; broccolini and halved avocado. Add salmon darne and top with pomegranate seeds.
4.Serve with Green Goddess Dressing on the side or drizzled over top.

½ head white cabbage, finely chopped
½ cucumber, finely diced
2 avocados, peeled, destoned and diced
3–4 spring onions, finely chopped 140ml Blenders Green Goddess Dressing

Method

1.On a large chopping board, finely chop or dice all ingredients and place in a large bowl.
2.Mix through the blenders Green Goddess Dressing and chill until ready to serve.

Ingredients
2 heads romaine lettuce
200g cooked chorizo, sliced
2 avocados
1 large cucumber
120g feta
4 spring onions
200ml Blenders Green Goddess Dressing
Method

1.Remove the stem of the romaine lettuce and place leaves in a large salad bowl.
2.Slice cucumber and chorizo, Cube the feta cheese and add to the bowl.
3.Peel and de stone the avocados, slice and add to the bowl
4.Finely chop the spring onions and add to the bowl.
5.Finish with Green Goddess Dressing and ensure that it is evenly spread through the salad.

A fresh, vibrant take on a deli classic. Crispy chicken, Green Goddess slaw and creamy mozzarella layered in a soft baguette, finished with Blenders sauces for a balanced, herb-forward flavour.
Ingredients
1 demi baguette
1 breaded chicken fillet
30g tomato, sliced
10g iceberg lettuce, shredded
10g Green Goddess slaw
15g buffalo mozzarella slices
10g red onion, sliced
15g Blenders Green Goddess
Dressing
15g Blenders Light
Mayonnaise
Method
1.Place the breaded chicken fillet on a tray and cook in a preheated oven at 180°C for 20 minutes until hot and crispy.

2.Slice the baguette lengthways and spread Blenders Light Mayonnaise evenly on both sides.
3.Layer the lettuce, Green Goddess slaw, sliced chicken fillet, mozzarella, tomato and red onion.
4.Drizzle with Blenders Green Goddess Dressing, close the roll and serve immediately.
