Hard Cider Pot Roast PAGE A30

Diet and heart health go hand in hand. A healthy diet and lifestyle are the best weapons to fight cardiovascular diseases, according to the World Health Organization. A diet that is rich in fruits and vegetables is a hallmark of a healthy lifestyle. And supplementing such a diet with other heart-healthy foods is a great way to reduce one’s risk for cardiovascular disease.

FRUITS AND VEGETABLES Fruits and vegetables are healthy whether they’re fresh, frozen, canned, and/or dried and should be eaten with every meal and snack. The American Health Association suggests replacing half the ground meat in recipes for burgers, meatloaf or

meatballs with cooked chopped mushrooms. They can then be mixed in with the lean meat, and the meal can be cooked as it normally would. At the breakfast table, add fruit to a bowl of cereal.

DAIRY When purchasing dairy stick to fat-free or low-fat options. Replace whole milk with fat-free or 1 percent milk and buy only fat-free or low-fat cheese. When snacking, reach for fat-free or lowfat plain yogurt or cottage cheese and add fruits or vegetables.

PROTEINS When choosing proteins choose chicken and fish over red meats because they have less saturated fat than red meat. Saturated fats

increase blood cholesterol levels and can worsen heart disease, while the unsaturated fats in fish like salmon can actually reduce the risk for cardiovascular issues like heart failure and ischemic stroke.

GRAINS Read the ingredients list on the package before purchasing grains. Make sure whole wheat or another whole grain is the first item listed in the ingredients list, and choose only those products that say 100 percent whole grain. Instead of preparing white rice as a side dish, serve brown or wild rice, quinoa or oats.

Add mushrooms, onions, and carrots to the pot and cook, stirring, until softened, about about 5-7 minutes and then pour in hard cider and beef broth. Stir to release browned bits on the pan bottom. Add bay leaf and thyme sprigs. Let mixture come to a boil, then return meat and any accumulated juices to pot, nestling the meat as deep into the liquid as possible. METHOD Allow roast to come to room temperature for about an hour before starting to cook and pat dry. Sprinkle roast generously all over with salt and pepper and preheat oven to 350 degrees. Coat the bottom of a 5 to 7-quart French oven with a thin film of olive or grapeseed oil and set the pot over medium-high heat, making sure turn your exhaust fan on! When the oil is shimmering, put meat in the pot and let it cook, without moving it, until it is deeply browned on the bottom and lifts easily from the pot when turned, about 8-10 minutes and continue to brown all sides of the

To serve, simply break apart the meat into big chunks with a wooden spoon, and serve over buttered egg noodles or creamy mashed potatoes.

The Farmer and the Foodie Of the many changes Covid-19 has brought, one of the most pressing is that we are faced with having to cook EVERY SINGLE MEAL! If you’re an accomplished cook, then this is your finest moment, as friends are likely calling you for advice and inspiration. If you’re new at this, you might be desperately asking Siri “how do I cook a roast?” or “is it easy to make my own pasta?” Either way, your family might soon be starting to complain about the same meals on repeat. In other words, you need fresh ideas. Shortly before physically distancing was part of our vocabulary, we held an after-hours cooking class for our meat and deli team, Market Chef Nick demonstrating best cooking methods for the market’s variety of available

meats. We compiled an informative Cooking Methods Handbook and realized this valuable resource should also be available for our guests. If you sign up for our weekly newsletter, you’ll receive our Cooking Methods Handbook as a free PDF to download. This month’s recipe is from the cooklet, a true comfort food and one of my favorite ways to prepare a roast. There’s nothing like a crisis to speed up innovation, and we now have grocery boxes for sale online, which can be picked up in our parking lot so you don’t even need to come inside the market. Visit leppfarmmarket.com and click “Shop Online” to view the options.

Every year, Sikhs around the world celebrate Vaisakhi in mid-April, one of the most important annual events for members of the faith. While COVID19 has impacted events, festivals and celebrations around the world for a number of months, we want to recognize Vaisakhi and share some information on its history. ■ Vaisakhi marks the day in 1699 when Guru Gobind Sing Ji founded the Khalsa fraternity, but it also historically serves as a harvest festival, during which farmers give thanks. ■ Vaisakhi officially falls each year on April 13 or 14. This year, it is on the 13th. ■ Throughout the month of April,

Vaisakhi and the birth of the Khalsa is celebrated around the globe.

HAPPY

■ Vaisakhi is an occasion of dancing, singing, music, the wearing of festive garments and religious praise. ■ Men dance the Bhangra and women dance the Gidda to celebrate this event. ■ During the Vaisakhi celebration, processions called nagar kirtan make their way along the streets as they sing hymns from a sacred book of worship know as Guru Granth Sabib. ■ Many Sikhs choose to be baptized during this holiday. ■ Canada is home to one of the largest Sikh populations in the world, and Abbotsford-Mission is itself home to a large concentration of Sikhs, with more than 30,000 people reporting the faith as their religion. ■ The B.C. legislature celebrated the holiday for the first time in 2019 that included a live performance of traditional Sikh music.

Wishing you all Happy Vaisakhi ! Honourable

Dye eggs with all-natural ingredients Colouring Easter eggs is a time-honoured tradition passed down from generation to generation. While there are many kits on the market that enable people to easily colour eggs, there also are plenty of all-natural foodstuffs, like fruits, vegetables, herbs, and spices, that can get the job done just as effectively. For those who plan to eat the eggs afterward, natural dyes may be preferable to dyes from kits.

duration to achieve light to dark blue eggs.

PERKY PINKS Use beets to create pink and red eggs. Take 1 or 2 beets and roughly chop them. Combine with 4 cups water and 1 tablespoon of salt in a saucepan. Bring it to a boil, then reduce and simmer for 30 minutes. Strain the mixture and allow to cool. Add 2 tablespoons of vinegar. Use the solution for red and pink eggs.

Cast a sunny glow on eggs with a common household spice and some tasty carrots. Turmeric is touted for its anti-inflammatory benefits, but it also makes a great dye. Bring 1 tablespoon of turmeric, 3 to 4 sliced carrots, 1 tablespoon salt, and 4 cups of water to a boil. Reduce heat and simmer for 15 minutes. Let cool, strain and stir in 2 tablespoons distilled white vinegar. Use the dye for a lovely yellow shade.

Below are a few tried and true methods for producing brilliantly hued eggs with items from the kitchen.
