Since 2004, Ashley Chisham has been a part of the Bacchus team, becoming an Executive Chef in 2008. Unlike many restaurants, the team at Bacchus Bistro—from the front of house’s attentive wait staff, to the kitchen’s sous chefs — have been together for years, creating a tangible atmosphere of rootedness. Ban Chok Dee Thai Cuisine Parinya Loptson is the co-owner and executive chef of Ban Chok Dee Thai Cuisine, one of the most popular Thai restaurants in the Lower Mainland. She originally learned to cook growing up in Thailand, and has been passionately developing and sharing her culinary talents through restaurants in Langley and Maple Ridge as well as through her unique cooking class and event venue, BCD Culinary Academy. Last summer marked the 10 year anniversary of the Langley location of Ban Chok Dee, and it continues to gain in reputation as one of the top Thai restaurants in the Lower Mainland. Chef Parinya regularly participates in fun restaurant challenges put on by the Vancouver Foodster blog including first place finishes in the past year for the Eggs Benedict; Sandwich; and Bowl challenges. These special creations are only available for a limited time during the challenges, so keep your eyes open and you might be able to experience one of these challenges first-hand.

Ban Chok Dee is currently one of two Thai Select Premium restaurants in Western Canada which is a special designation awarded by the by the Thailand Ministry of Commerce. Chef Parinya’s latest enterprise is Food by Fanta which is named for Parinya’s nickname (Fanta) and is located next to the Academy. “It will be a unique menu there,” she notes. “More experimental and high-end, including modern cooking techniques and fusion cuisine, but still rooted around traditional Thai flavours.” Food by Fanta is in its final stages of renovations and should be open for business by the end of April. “We ran a trial brunch menu for Food by Fanta last summer at the Academy and got some very positive feedback.” says Parinya. “The menu featured our twist on several unique favourites such as Crème Brûlée Soufflé Pancakes; Chicken & Waffles; Smoked Salmon Bagels; and Pulled Pork Paninis, to name just a few.” Chef Parinya is constantly learning and experimenting with new methods and techniques, including her last trip to
