THE

Egg Roll in a Bowl

This easy dinner comes together in 30 minutes or less, making it faster and healthier than takeout. It has all the delicious elements of an egg roll, minus the deep-fried wrapper. It’s extremely versatile, as you can vary the amount of soy sauce and heat to your liking. If you want to add more vegetables, then adding a handful of chopped snow peas would also be delicious. Shichimi Togarashi is a Japanese 7 spice blend with heat and “ocean” flavours, while Chinese 5 spice blend has warmer spices. Either can be found in the spice aisle of large grocery stores, but even without them, you’ll still have a great-tasting dish. Serve as is for a low-carb meal, or over rice or noodles. To finish the sauce, use Little Saigon’s Chili Oil, either on its own or mixed in with mayonnaise and soy sauce.

Ingredients

• 2 tbsp. vegetable or olive oil, divided • 1 lb Lepp’s ground pork • 1 small onion, chopped • 16 ounce bag coleslaw mix OR 4 cups shredded cabbage (using savoy cabbage helps the cabbage melt into the mix) • 2 carrots, grated or thinly sliced • 2 tbsp. soy sauce • 1 tsp. sesame oil

DISH

• 2 tsp. freshly grated ginger • 2 cloves garlic, minced • 1 tsp. Shichimi Togarashi spice or Chinese 5 spice blend (optional) To finish: • Sliced green onions • Toasted sesame seeds • Rice or noodles

Method

Heat 1 tbsp. vegetable or olive oil in a large skillet, add ground pork and brown the pork until no longer pink. Remove from pan, setting aside while you saute the veggies. Return skillet to heat, add 1 tbsp. oil and sesame oil. Add the cabbage and carrots or coleslaw mix, soy sauce, ginger, garlic, optional spice mix and saute until desired tenderness. You can add a little water if you need more liquid to saute the coleslaw down. Return the pork to the pan, and stir to combine. Serve over rice or noodles; sprinkle sesame seeds and sliced green onions for garnish. Optional drizzling sauce: Mix ¼ cup mayonnaise with 1 teaspoon rice wine vinegar, 1 teaspoon soy sauce and ¼ tsp. Little Saigon Hot Chili oil. Taste and add more chili oil, if desired. You can also add 1 tsp. Sriracha instead of chili oil. Provide additional soy sauce, hot chili oil, or sesame oil for topping bowls.

The Farmer and the Foodie We purchased our 11-acre orchard in Osoyoos in early 2010, shortly after we opened the market. It’s perfect for growing fruit, as it gets lots of warm sunshine, has excellent drainage, receives very little frost due to the slope, and was already planted with a variety of fruit trees by the Castanhos, the original owners, in the 1970’s. We knew we’d have to replant it one day, as many of the trees were already very old with reducing yields, and they were also very big, making picking the fruit a difficult task. In the meantime, we recently purchased a second orchard so that once we started the replanting project, we’d still have a steady supply of fruit to bring to you at Lepp Farm Market. Two years ago we began the project by replanting 3 acres of nectarines and cherries, and we’ve already harvested some delicious nectarines from those trees this past summer! They will be in full production in two years. This fall we embarked on the remaining 6 acres, and tearing out those first trees was done with much fear and trembling! It’s a twophase task, as right now Rob and a few others on tractors have taken out the old trees, and

we are now preparing the soil for the new replant, due to happen in spring. We only get one chance to amend the soil and level the land, as we won’t touch it again for another thirty years, so we want to make sure we get it right. Many semi-truckloads of compost are being added to amend the sandy Osoyoos soil. Farmer Rob is like a little boy in a sandbox, as nothing gives him more joy than to work on a tractor all day long, especially on these gorgeous, warm fall days. This project also gives us the opportunity to plant trees that will provide early, mid and late-season varieties of fruits to extend the seasons, as well as newer, more diseaseresistant trees. Many of the new varieties of trees grow much smaller than the grand old Bing cherry trees, making picking the fruit a much easier job for our farmworkers. We’re excited about the future when we can begin harvesting again from this beautiful orchard and share with you the tastiest Okanagan grown fruit! Stay tuned for part two of this project in March or April, the exciting replanting phase!

HEALTH

weight loss myths debunked

Successful weight loss requires hard work and patience. Still, many myths abound, and people may think there are quick fixes to shedding a few extra pounds. Debunking some of those myths can help people adopt more realistic weight loss strategies. Myth #1: Avoid carbs to lose weight. A healthy diet is composed of a mix of foods that include carbohydrates. Dietary guidelines indicate that carbohydrates, such as those found in vegetables, fruits and whole grains, are a foundation of healthy eating. Carbs also provide much-needed fibre. Myth #2: You can target specific fat loss. Exercising and eating healthy can produce overall weight loss and diminish fat concentrations in certain parts of the body, indicates

the healthy eating source Eat This, Not That. But each body is unique, and where people lose fat varies. Gender is one factor that can affect people’s figures. Exercise can tone muscles in key areas to help make a person appear thinner in those regions, but it will not necessarily make fat go away in one place over another. Myth #3: Eating fat makes you fat. Fat is very calorie-dense and common in junk foods, which is why it can get a bad rap. However, as long as calorie intake is within a healthy range – even if some calories are from fat – weight gain will not occur from fat alone, says Healthline. The body needs healthy fats to function properly. Myth #4: Crash diets will make weight fall off. Dramatically cutting calories can lead to nutri-

tional deficiencies and have an adverse effect on weight loss. The body may slow its rate of metabolism to conserve calories, as a crash diet may fool your body into thinking you are starving. It’s better to stick to a gradual decrease in calories while still consuming the daily recommended amounts based on your age and other factors. Myth #5: Tons of exercise will make the pounds disappear. Research has repeatedly indicated that exercise can help boost weight loss. However, the real way to shed pounds is primarily linked to diet. According to Shawn M. Talbott, PhD, a nutritional biochemist, weight loss is generally 75 per cent diet and 25 per cent exercise. People see the biggest short-term results when they eat smart.
