Summer Corn Chowder

Method

Working over a bowl, cut the corn kernels from the cobs. Then, using
6 strips of Lepp’s Double Smoked Bacon, cut into 1/2-inch pieces

1 medium poblano pepper, finely chopped. (You can roast the poblano on the grill ahead of time, and it gives the chowder a wonderful smoky kick.)
In a large saucepan, fry the bacon over moderately high heat, stirring paper towels to drain. Crumble and reserve.

Add enough olive oil to the bacon fat, if necessary, to make about

Cover and cook, stirring occasionally, until the potatoes are tender, 35 to 45 minutes. Stir in the cream and milk and bring just to a boil. Remove from heat and season with black pepper to taste. Ladle the chowder into bowls and garnish with the

The Farmer and the Foodie Corn season is here, and it’s time to clear up a few misconceptions. “Chilliwack” corn is not a variety, it’s merely corn grown in Chilliwack! Peaches and Cream was the first bi-colour available years ago, and the name stuck. These days the seed catalogue features countless varieties of bi-colour corn, none called Peaches and Cream, and we choose those best suited for our climate and soil. Jubilee corn also suffers from a similar identity problem as now it simply refers to an all-yellow cob. Familiar to people my age, the name evokes fond memories but would be starchy and tasteless compared to today’s corn. The old advice of running from your garden to your pot with freshly picked cobs for the sweetest corn no longer applies. New varieties have been hybridized (not genetically modified) to hold their sugar content long past harvest. And while you may argue that you prefer

Fat can be confusing as it pertains to diet. If asked to describe fat in a single word, many people might be inclined to say, “Bad.� However, fat is more complicated than that and is actually an essential component of a healthy diet. What is saturated fat? According to the online medical resource Verywell Health, saturated fats have no double bonds in their chemical structure. It’s because of that structure that saturated fats have a solid consistency at room temperature. Saturated fat can be found in various foods, including animal meat, coconut oil, cheese, butter, milk, and processed meats, such as bologna and sausage.
