A transplant from the Okanagan, I am now celebrating my third West Shore summer, and I must say I love it here! HEN CLAIRE FLEWELLING-WYATT ISN’T RUNNING, HIKING, GOLFING, OR EXPLORING WITH HER DOGS AND HUSBAND, YOU’LL FIND HER HARD AT WORK MANAGING THE PEMBERTON HOLMES PROPERTY MANAGEMENT PORTFOLIO FOR HER CLIENTS. “I’ve been working for Pemberton Holmes since 2005. In 2007 we moved our offices to the West Shore,” Claire explains. “My job is different every day, which makes it both challenging and rewarding. I’ve been doing the same job for over 20 years now, because I love the people and the challenge of seeing different properties and finding the right tenants to fit each one. I currently hold four licenses: Strata Manager, Property Manager, Real Estate Agent and Managing Broker. Pemberton Holmes Ltd. handles residential, commercial and strata management.” “Managing the human factor is unpredictable, especially when dealing with people’s homes. It makes the job extremely interesting. I wear many hats and solve varied problems.” As a Licensed Property Manager, Claire needs to know about building maintenance, construction, how the law works, and how to deal with people in sensitive situations. Claire loves working and exploring the West Shore. “They are so pro-development here. I love the growth I’ve seen. I have seen some of the first purpose-built rentals being approved out here, and it’s been 30 years or so since this was a reality in Victoria.” After work, you can usually find Claire outside. “The West Shore has so much to offer outdoor enthusiasts and everything is close and convenient. It’s still pretty untapped as to all the

different adventures you can go on. My husband and I are both outdoor enthusiasts. We love to golf, hike and do extreme running, like the Ultras. I do it for the challenge. It’s also a great stress relief. I love pushing my body and my mind to the limit.” Claire’s constant companions, Johnny and Ginger, are mini Australian Shepherds. “They run with us all the time,” she said. “We love going to the beach and playing ball. They keep us super active.” When it comes to running, Claire has a few favourite places, too. “I love Gowlland Tod Provincial Park and Thetis Lake Regional Park. I’ve been running around Thetis since I started with Pemberton Holmes. It’s a challenging little trail and it only takes a half hour to go around. It’s an easy way to get a trail run in from the office. “Gowlland Tod is where I’ve done a lot of training. It’s super challenging and the views are spectacular. We also run the Sooke Park trail, where we can actually see whales.” Claire also loves to give back to her community and to causes dear to her heart. “With Pemberton Holmes we serve breakfasts at Our Place. I have also worked a lot with the West Shore Rugby Football Club, where I managed the women’s team for a couple of years. My husband and I continue to be big supporters of the club and its members.” And then there’s the Run2Revive. “Every year we run across the Grand Canyon,” Claire explains. “Every fall, Run2Revive supporters take on the ultimate challenge and run across the Grand Canyon to raise funds for crucial research in support of ALS and Alzheimer’s. We wouldn’t miss it.” When it comes time to fueling her body for all these runs, Claire usually eats at home. “We don’t eat out often, but when we do, we go to Browns and Tumeric. They are our favourites.”

HEF ADAM GUTHER KNEW FROM A YOUNG AGE THAT HE WANTED TO LEARN HOW TO MAKE GREAT TASTING FOOD. He took the

culinary program at Spectrum high school and received a scholarship to Camosun College. While still in school, he started working in kitchens. “I worked in different restaurants in downtown Victoria, before I found myself at the West Coast Grill at the Prestige Oceanfront Resort. I was hired as the banquet chef and was then appointed sous chef. Once I had my red seal I was promoted to executive chef and then to corporate culinary leader, which involved a lot of travel. I recently got married and now have a family. I wanted to spend more time with my wife and kids, so now I am back as the executive chef at the West Coast Grill in Sooke.” Chef explained how he’s evolved in the kitchen. “Learning how to be a chef, comes mostly through doing,” he said. “In school you learn how to cook. In the kitchen, you really learn how to be a chef. I have learned some great values from the chefs I have worked with. Learning from mistakes is also a great teacher.” Chef’s job goes further than creating great dishes. He also loves to teach. “I love teaching staff who are eager to learn. It’s wonderful, watching them understand the whys and hows of a particular dish. After all, this is my team, my family. I call them my wolf pack.” Being head of the wolf pack is not an easy task. “We started with a pretty green crew this year,” he said. “It was challenging, but now we are geared up for the summer. I love our brand new open kitchen concept. Once the 12 hour work day is done, we head out to play basketball to blow off steam.” Chef’s favourite food isn’t one of his own creations, it belongs to his wife Aubrey. “She makes this keto pizza that is so good. I love the crust with cream cheese and fresh herbs and almond flour.” When it comes to his work kitchen, there are a few things chef can’t live without. “I love my 8” Shun handcrafted Japanese knife. “I feel naked without it,” he said. “That and fresh ingredients. I love working with locally sourced ingredients.” With things in place for the busy season, Chef is thinking of the future. “I want to try making Turkish ice cream. It’s different because it’s stretchy and doesn’t melt very fast.” In the meantime, Chef will be preparing the most ordered dish on the menu, fish and chips, with an exotic flair. “We make it with sumac raita, fresh coleslaw and pair it with our famous clam chowder. I was tired of beer batter. So we made it with pakora batter. I call it fish with a twist.” Something to consider for the next time you dine at the West Coast Grill in Sooke. WS

You’ll find Beach Food Fridays and Saturdays happening from 5 to 7 pm now through Sept. 7, with live local music accompanying the festivities. In addition to food truck offerings from Songhees Seafood, Dead Beetz Burgers, Greek on the Street, L’Authentique Poutine, Kebab Me Crazy, Mama Rosies Filipino Food and Taco Revolution, there is an exciting lineup of local bands including SweetLeaf, The New Souls, Cities and Eagle Eyes. The Victoria Beer Society is hosting a craft beverage garden featuring an array of local brews. A beach street market showcases a wide range of locally made arts and

crafts and an exhibition of driftwood art will be on display. ARCY JOINS MAYOR KEN WILLIAMS FOR A COFFEE AND A CHAT ABOUT THE DISTRICT OF HIGHLANDS AND HIS LIFE BEFORE BECOMING MAYOR. What do playing bass with the New Vaudeville Band, having Henry Winkler/ the Fonz as your boss and preserving a national legacy have in common? These are just a few of the things that Victoria born Ken Williams, the musical mayor of the District of Highlands, has accomplished. Williams moved to Highlands in 1988 and was inspired by the high level of volunteerism in the community. So much so that he ran for, and was elected, councillor. “Seeing so many wonderful people giving their time and energy to make things better really moved me to do my best to contribute,” he said. After three years as a councillor, he had an immense appreciation and understanding of local government. “I wanted to be the Highlands mayor as I felt I could do a good job as a consensus builder, facilitate the will of council and represent all the people of Highlands.” His love for Highlands is evident when he speaks about it. “A large portion of Highlands is now protected as municipal, regional, and provincial parkland. The creation of the Gowlland Tod Provincial Park really protected a wonderful resource for the region. With the additions to Mount Work and Thetis Lake Parks, the District of Highlands is close to 40% parkland which is key to preserving a natural legacy for future generations.” With a population of 2,225, Highlands is a unique West Shore community. “There are a lot of talented people here in

Highlands. The people who move here are very selfreliant and love their peace and quiet,” Williams said. “We are dedicated stewards of the forests in which we live.” Highlands isn’t all rural living, parks and forest trails. The Bear Mountain development is partially located in Highlands. “The clay tennis courts are in Highlands as are 17 of the 18 holes of the golf course designed by Jack Nicklaus. We have a master development agreement with them and they do have the potential to develop parts of the Highlands that are in the urban containment boundary. Our community vision is that we are a rural municipality and we protect our rural way of life.” The Highland’s mayor has led, and continues to lead a very full life. “I’ve had an extensive career composing scores for film and television,” Williams explains. “I started out as a nightclub musician when I was eighteen. I had a stint playing bass with the New Vaudeville Band of “Winchester Cathedral” fame when they were the house band at the Barbary Banjo on Wharf Street. I also did studio sessions at Mushroom Records in Vancouver when

Heart was breaking out and I toured with Rick Springfield.” Williams, along with Karel Roessingh, Tony and George Moskal and Cliff Lowe formed Legacy Music which specializes in original music creation. “After the success of Sundance winner, In the Company of Men, I was signed to Artists’ Management in Hollywood and worked on projects such as Police Academy, for Warner Bros., So Weird, for Disney (Henry Winkler was the executive producer) and The Magician’s House for the BBC. All in all, I’ve worked on more than 800 shows for broadcast television.” When he’s not creating music, you’ll find Williams out on a hike in one of the several parks in the area, watching golden age movies and stand-up comedy, or eating his favourite dessert, strawberry rhubarb pie. ATHRYN FUDGE HAS BEEN MAKING HER OWN CLOTHES, COOKING, DRAWING, PAINTING AND OTHER CREATIVE ACTIVITIES SINCE SHE WAS 10 YEARS OLD. Her

creativity blossomed into an earlier career as a seamstress. It also came in handy when she helped her husband with renovations on their family home. From the mid-1990s until 2006 she worked in a studio and taught classes in tole painting. In early 2008 she learned about a class in Paverpol. “I signed up, took the class, loved it and called the instructor and asked what was next. It was the instructors course, so I did that and ran with it,” Fudge said. “I’ve never been one for colouring inside the lines and with Paverpol I really had to let go. I had to learn how to work with it and not control it. I love Paverpol because it’s non-toxic, environmentally friendly and easy to work with. Plus it air dries and it’s soap and water cleanup.” Paverpol is a liquid polymer used as a textile hardener and can be used as a mixed media medium. It works with natural materials like, cotton, silk, linen, wool, hemp, and wood. Paverpol requires natural material so it can be absorbed into the fibres. Fudge asks her students to bring upcycled 100% cotton T-shirts to her classes, so they too can create fun sculptures. The front, back and side yard of the Fudge home have strategically placed Paverpol creations scattered throughout. “Mostly I create sculptures of women,” she said. “But I do have a 7’ giraffe and a few fairies.” When she’s not teaching classes at the Coast Collective, she’s involved in her duties as the acting Executive Director there.

“Creating art is so ingrained in me,” Fudge said. “Some people go to the beach to relax and unwind. I can spend a day in my studio creating and time stops. It’s so fulfilling and satisfying, and I come out rejuvenated. I go downstairs, start working on something and before I know it – it’s dark out!” When it comes to the Coast Collective, she loves how it brings art and community together. “We do a kids’ show and a student art’s show every year. It’s really important to have art in the community, in your life, in your house, in your yard. It all starts with the kids, if you don’t expose them to it early on, they don’t do it. But it’s easy to get them involved.” Her dream is to have an arts centre on the West Shore. “I’ve lived on Vancouver Island since 1992 and in Colwood since 1995. The arts scene on the West Shore needs serious support from the councils and the communities in general. Are my friends and I in a high-end gourmet restaurant? No, we’re in Langford at the home of Chef Shirley Lang. She stands in the kitchen, her black hair contrasting an elegant, red chef’s jacket, with the next course arrayed before her. Dining at Chef Shirley’s home, I realize, is far more comfortable than at a high-end restaurant. The atmosphere is relaxed and there are no extraneous noises, no crowding or desperately flagging the wait staff. Everything moves smoothly. Often the greatest treasures are hidden right before you, if you only look. Chef Shirley and her companies, Kitchens of Distinction and Spirit Culinary Excursions, are such gems. A Cree woman, her early life was spent in the prairies before she moved to Toronto and established several hair salons and a talent agency. She was successful, working with music stars such as the Nylons, Colin James, Doug & the Slugs and many, many more.

ANGFORD CITY COUNCILLOR, MATT SAHLSTROM, HAS BEEN IN LOVE WITH CARS SINCE HE WAS A TODDLER. “My

parents have always maintained my first word was car. When I was around three years old, we lived next door to my Uncle Richard, a car collector, on what is now Knockan Hill in Victoria. Matt’s first classic car was a 1965 Mustang. “I had a 1968 Ford custom, 2-door post, but when I owned it, it wasn’t a classic yet. My first stock car back in 1977 was a 1956 Ford,” Matt bought his Mustang from a family friend. It had sat in his garage for 10 years when Matt bought it. “I’ve owned the 1965 Mustang for about 19 years now. It’s special to me because it comes with a history that

is close to me. The previous owners knew I would take good care of it. We still call it “Josh” as the previous owner had requested. Matt’s other car is a 1984 Ford Thunderbird Fila. This car is as unique as it is classic as there were only 500 made. Of those, only two of these rare birds came to BC. Matt was able to purchase it from the original owner about 10 years ago. “Everything on the T-bird Fila is 100% original,” he said. “I always regretted selling my 1986 Thunderbird years ago. My younger brother Robert, a Ford mechanic at Suburban Motors, found the Fila Thunderbird online and alerted me right away. He knew it would fill the gap the ’86 left in my heart and my garage.” The Thunderbird has some interesting options including: a kidnap latch in the trunk, white leather

I love the fresh air, the peacefulness, the winding left and right turns. Most of the time it’s like I’m the only person on the road. No one tailgating me or rushing me. I just get to take it all in, the scenery and the pleasure of

driving these cars.” Matt would also love to get his hands on a 1959 Cadillac. “I’m the same age as the car,” Matt said. “I love the huge fins and the characteristic front grill. My Mom and Dad gave me a 1959 Cadillac Bourbon Decanter on my 50th birthday.” In a perfect world, he’d also have a 1935 Chrysler 2 door businessman coupe. “My uncle Richard had one of those too. It was kept in a heated garage on its own and covered in blankets. I used to sit in that car for what seemed like forever, dreaming of owning it and driving it on the streets. RECIPE SUMMER SALMON

Caramelized Salmon with Cherry Salsa INGREDIENTS 1 ½ lbs salmon with skin 3 Tbsp brown sugar 1 Tbsp grated orange peel ½ tsp coarsely ground black pepper 1 ripe mango or papaya – seeded, peeled, and chopped 1 cup cherries – drained and halved (pits removed) 2 Tbsp chopped fresh mint, and basil or cilantro 2 tsp balsamic vinegar ¼ tsp crushed red pepper

Thaw fish if frozen. Stir together brown sugar, orange peel and pepper. Place fish, skin side down, in a shallow pan. Rub sugar mixture over fish. Cover and refrigerate 2 – 8 hours. Remove fish from pan, draining off any juices. Place salmon skin side down on grill over medium heat. Grill for 15 – 25 minutes or until salmon flakes easily. Do not turn fish. Toss together mango or papaya, cherries, mint, basil or cilantro, vinegar and red pepper. Spoon fruit salsa over warm salmon, serve immediately. Serves 4 Salmon, rich in Omega-3 fatty acids, teams up with cherries for a healthy entrée.
