Y
ou know Dasher and Dancer and Prancer and Vixen, Comet and Cupid and Donner and Blitzen., But do you recall? The most famous reindeer of all? Rudolph the Red-Nosed Reindeer Had a very shiny nose, And if you ever saw it, You would even say it glows. All of the other reindeer Used to laugh and call him names; They never let poor Rudolph Join in any reindeer games. Then one foggy Christmas Eve, Santa came to say, Rudolph with your nose so bright, Won’t you guide my sleigh tonight?

Peanut Butter Chocolate Chip Shortbread Cookies 1 stick (1/2 cup 4 ounces) unsalted butter, at room temperature 1/3 cup creamy peanut butter 1/2 tsp vanilla extract 1 1/4 cups (156 grams) all purpose flour 1/4 cup (31 grams) confectioner’s sugar Scant 1/2 teaspoon sea salt 3/4 cup milk chocolate chips 1. Cream the butter and peanut butter together in a stand mixer, with a hand mixer or wooden spoon. Make sure to get the butter and peanut butter completely combined and creamy. Beat in vanilla. 2. Whisk the dry ingredients together and add to the butter mixture. Mix until the dough comes together and is no longer crumbly. 3. Stir in chips and turn the dough out onto a piece of waxed paper. Gently pull the dough together and form into a log. If it is still crumbly, work it with your hands until it holds together smoothly. Roll it up in the paper, smoothing the shape as you go. Twist the ends securely and refrigerate for at least a couple of hours. The log will be about 7 1/2 - 8 inches long. 4. While the dough is chilling, pre-heat oven to 350° F. 5. Slice log into slices with a sharp knife. If dough crumbles, press back together. 6. Bake on baking sheet at 350° for about 12-14 minutes, depending on how thick your cookies are. 7. Dipped Gingersnaps 2 cups sugar 1 1/2 cups vegetable oil 2 eggs 1/2 cup molasses 4 cups all purpose flour 2 packages vanilla baking chips 1/4 cup shortening 4 teaspoons baking soda 1 tablespoon ground ginger 2 teaspoons ground cinnamon 1 teaspoon salt additional sugar In a mixing bowl, combine sugar and oil; mix well. Add eggs, one at a time, beating well after each addition. Stir in molasses. Combine dry ingredients; gradually add to the creamed mixture and mix well. Shape into 3/4 inch balls and roll in additional sugar. Place 2 inches apart on ungreased cookie sheets. Bake at 350째F for 10-12 minutes or until cookie springs back when touched lightly. Remove to wire racks to cool. Melt chips with shortening in a small saucepan over low heat. Dip the cookies halfway; shake of excess. Place on waxed paperlined baking sheets to harden. Chocolate Cream Chesse Cupcakes Mix together in separate bowl and put aside. 1 pkg cream cheese 1 egg 1/3 cup sugar Pinch of salt Chocolate chips (optional) This cream cheese mix can make 24 to 30 muffin cups (keep left over at the fridge) In separate bowl, combine: 1-1/2 cups flour 1 cup sugar 1/4 cup cocoa 1 tsp baking soda 1/2 tsp salt Mix well together. Add: 1 cup water 1/3 cup of oil (cooking oil) 1 tsp vanilla 1 tsp vinegar Mix together until no lumps and smooth. Line 12 large muffin cups, scoop 2 tbsp of chocolate batter into muffin papers - divide any remaining batter equally between the 12 muffin cups. Top with just a little under 2 tbsp of cream cheese mixture (keep left over refrigerated), bake at 350째F for 15 - 20 minutes. ~ Luz Wells

Nanaimo Bars 6 oz. Baker’s Semi-Sweet Chocolate, divided 3/4 cup plus 1 Tbsp. butter, softened, divided 1 egg 1 tsp. vanilla 2 cups Honey Maid Graham Crumbs 1 cup flaked coconut 1/2 cup chopped walnuts 2 tbsp. Bird’s Custard Powder 3 tbsp. milk 2 cups icing sugar Heat oven to 350°F. Microwave 2 oz. chocolate and 1/2 cup butter in large microwaveable bowl on MEDIUM 2 min. or until butter is melted. Stir until chocolate is completely melted. Blend in egg and vanilla. Stir in graham crumbs, coconut and nuts. Press onto bottom of 9-inch square pan. Bake 8 min.; cool completely. Mix custard powder and milk in medium bowl with whisk until blended. Add 1/4 cup of the remaining butter; mix well. Gradually beat in sugar until blended. Spread onto crust. Refrigerate 15 min. Microwave remaining chocolate and butter in microwaveable bowl 2 to 3 min. or until butter is melted. Stir until chocolate is completely melted. Spread over custard layer. Refrigerate several hours or until chilled before cutting into bars.

Nuts & Bolts For the Snack Mix 4 cups corn chex 4 cups wheat chex 3 cups rice chex 3 cups skinny bite-sized pretzels 2 cups cheerios 1-1/2 cups salted nuts
For the Butter Seasoning 10 tablespoons unsalted butter, melted (or vegetable oil) 3 tablespoons Worcestershire sauce 2 heaping teaspoons seasoned salt 1-1/4 teaspoons garlic powder 3/4 teaspoon onion powder 3/4 teaspoon dried thyme Instructions
Preheat oven to 250 degrees. Combine all of the snack mix ingredients in a large disposable aluminum pan.Combine all of the butter seasoning ingredients in a small bowl and whisk until well combined. Pour slowly over snack mix, stirring as you go, to coat evenly. Continue stirring until snack mix is well coated with seasoning. Bake for 1-1/2 hours, stirring every 15 minutes. Let cool, then serve or store in an airtight container. Note: You can omit any of the snack mix ingredients as long as you substitute something else. The idea is to keep the ratio of snack mix to butter seasoning the same. Also, be sure your oven is fully preheated before you put the snack mix in. The initial surge of heat to preheat the oven will burn the snack mix in a heartbeat.

Twix Cookies If you love Twix, then you will LOVE these cookies! Shortbread cookie, caramel filling and chocolate topping- they are INCREDIBLE! Shortbread Cookies 1½ cups butter, softened 1 cup powdered sugar 1 teaspoon vanilla 3 cups flour ¼ teaspoon salt Chocolate Layer 2 cups milk chocolate chips 2 teaspoons shortening
Caramel Layer 15 oz of caramel (I use Peter’s caramel that comes in a 5 lb. block because I can simply just melt it down in the microwave as is and its ready to go, no evaporated milk required, but you can use Kraft caramels as well. Just follow package directions for melting) 2 Tablespoons evaporated milk
1. Preheat oven to 350 degrees F. 2. In a large bowl, cream butter and sugar together. Add vanilla, flour and salt and mix until well combined. 3. Dump dough onto a lightly flour surface. 4. Roll dough out to ½ inch thick. 5. With a small biscuit cutter, cut out cookies and place on greased cookie sheet. 6. Bake at 350 degrees F 14-16 minutes. 7. Remove from oven and let cookies cool completely. 8. Melt caramel according to package directions. Spread over cooled cookies. Let caramel cool completely before spreading on the chocolate. 9. In a small microwave safe bowl, melt chocolate chips and shortening in 30 second increments, stirring in between each increment until melted and smooth. Spread over the tops of cooled caramel. 10. Let chocolate set before eating and serving. I popped mine in the fridge/freezer to get the chocolate to set faster. ~ Lori Garret

1/2 teaspoons baking soda teaspoon water teaspoon vanilla 1/2 cups sugar cup water cup light corn syrup tablespoons butter or margarine pound shelled unroasted peanuts
Directions 1. Heat oven to 200°F. Butter 2 cookie sheets, 15 1/2 x12 inches, and keep warm in oven. Mix baking soda, 1 teaspoon water and the vanilla; reserve. 2. Mix sugar, 1 cup water and the corn syrup in 3-quart saucepan. Cook over medium heat, stirring occasionally, to 240°F on candy thermometer or until small amount of syrup dropped into very cold water forms a soft ball that flattens when removed from water. 3. Stir in butter and peanuts. Cook, stirring constantly, to 300°F or until small amount of mixture dropped into very cold water separates into hard, brittle threads. (Watch carefully so mixture does not burn.) Immediately remove from heat. Quickly stir in baking soda mixture until light and foamy. 4. Pour half the candy mixture onto each cookie sheet; quickly spread about 1/4 inch thick. Cool completely, at least 1 hour. Break into pieces. Store in covered container. ~ Simone Groundwater

Veronica’s Shortbread Cookies 1 cup butter, softened 1/2 cup confectioner’s sugar 1/4 cup corn starch 1 1/2 cups all purpose flour Directions 1. Preheat oven to 375°F. 2.Whip butter with an electric mixer until fluffy. Stir in the confectioner’s sugar, cornstarch and flour. Beat on low for 1 minute, then on high for 3-4 minutes. Drop cookies by the spoonful, 2 inches apart on an ungreased cookie sheet. 3.Bake for 12-15 minutes in the preheated oven. Watch the edges don’t brown too much. 4.Cool on wire rack. Dipped Gingersnaps
2 cups sugar 1 1/2 cups vegetable oil 2 eggs 1/2 cup molasses 4 cups all purpose flour 2 packages vanilla baking chips 1/4 cup shortening 4 teaspoons baking soda 1 tablespoon ground ginger 2 teaspoons ground cinnamon 1 teaspoon salt additional sugar In a mixing bowl, combine sugar and oil; mix well. Add eggs, one at a time, beating well after each addition. Stir in molasses. Combine dry ingredients; gradually add to the creamed mixture and mix well. Shape into 3/4 inch balls and roll in additional sugar. Place 2 inches apart on ungreased cookie sheets. Bake at 350째F for 10-12 minutes or until cookie springs back when touched lightly. Remove to wire racks to cool. Melt chips with shortening in a small saucepan over low heat. Dip the cookies halfway; shake of excess. Place on waxed paper-lined baking sheets to harden. Butter Tarts Ingredients pie pastry (enough to fill 16 muffin cups, your own or from a mix) 1⁄2 cup raisins 1⁄4 cup soft butter 1⁄4 cup packed brown sugar 1 pinch salt 1⁄2 cup corn syrup 1 egg, lightly beaten 1⁄2 teaspoon vanilla Prepare muffin pans by rolling out pie dough and cutting 4-inch (approx) circles; fit dough circles into muffin cups; set aside in fridge until ready to fill. In a small bowl, place raisins and cover with hot tap water; let stand on the counter for 30 minutes. In a large bowl, using a wooden spoon, mix together the soft butter, brown sugar, salt and corn syrup; stir well until sugar is dissolved and butter is creamed. Add egg and vanilla and mix well. Drain raisins. Retrieve tart shells and divide raisins equally into all shells; then divide butter mixture into all tarts. Bake at 400F for 15-20 minutes; filling will be lightly browned but still bubbling. Canadians fall into two camps about butter tarts and are quite loyal to their favourite type: runny or firm. I like runny-- the type that dribbles when you bite into one; if you like firm, bake them for the full 20 minutes, even adding another minute or two if you wish. Let cooked butter tarts cool in pans for 10 minutes after removing from oven; then remove and place on racks until completely cool.
