A Merry Christmas for all
Pending arrival of some Syrian refugees to this community, plus early registration of at least 70 new local families, organizers of the Langley Christmas Bureau are bracing for a busier than ever year. Consequently, more than ever before, any efforts made by local individuals, organizations, or companies to help raise money for the bureau are going to be gratefully appreciated, said Leigh Castron, co-coordinator of the bureau. To help ensure there is enough food for an anticipated 900-plus families, and toys for more than 2,000 kids, the Langley Advance and Real Canadian Superstore are stepping up to help in a new way. Partnering on the creation of this popular Cookies & Carols songbook, every cent from the sale of these books will be donated to the local Christmas bureau. “It is efforts like this that make a difference so that we can make sure that the families have what they need for Christmas – not just for the

day, but the holiday season,” Castron said. “This is everything for us. We couldn’t do it without that,” she added, thankful for all the different donations and fundraising efforts that people in town offer. Last year, thanks to the generous giving spirit of so many Langleyites, the bureau was able to ensure 803 families (including 1,750 kids) were given a Christmas. That kindness comes in a few different forms. First up, three-quarters of the families helped in 2014 were sponsored — meaning sponsors supply not only a Christmas meal but about a week’s worth of food. Gifts are optional, with the bureau providing each child with toys. Each kid receives two toys/gifts from the bureau, as well as a new book from Langley Literacy, a stocking, and a $40 gift certificate to Superstore. That’s why, in addition to family sponsorship, donations of cash and toys are so integral, Castron explained.
“What we really need is toys and gifts for tweens and teens this year,” she said, explaining that kids 10 years and older account for more than half the children registered for aid, but most donated toys and gifts are for younger kids. Recognizing the potential shortfalls the bureau could be facing this year, Superstore general manager Joe Viana is pretty excited to be part of the Cookies & Carols project and any efforts aimed at helping local families in need. “I think, as a grocery store, we have a responsibility to reach out to the community and be involved,” he said, happy to help ensure every family in need in Langley will have a brighter holiday season. - makes about 10 dozen Load about 1/3 of batter into cookie press. Press cookies onto large cookie sheet, spacing about 2 inches apart. Bake 12 to 18 minutes or until deep golden brown around edges. Cool on
cookie sheet on wire rack 10 minutes. With spatula, transfer cookies to rack to cool completely. Repeat pressing, baking and cooling with remaining dough.
Directions Preheat oven to 375° F. With mixer on medium-high speed, beat butter, cream cheese, sugar and salt until creamy. Beat in egg yolk and vanilla, scraping down side of bowl. With mixer on low speed, beat in flour just until combined. Tint with food coloring as desired.

Aunt Martha’s Nutmeg Bells
(Makes 5 1/2 dozen)
Ingredients - 2 c. sugar - 1 c. butter (no substitutions) - 2 large eggs - 2 tsp. vanilla extract - 3½ c. all purpose flour - 4 tsp. baking powder - 1 tsp. salt - 1 tsp. ground nutmeg - Ornamental Frosting (optional) Directions In large bowl, with mixer at medium speed, beat sugar and butter until creamy, about 2 minutes. Reduce speed to low; beat in eggs and vanilla until blended. Gradually beat in flour, baking powder, salt, and nutmeg until well blended, occasionally scraping bowl with rubber spatula.
Divide dough in thirds; flatten each into a disk. Wrap each disk in plastic wrap and refrigerate 2 hours or until dough is firm enough to roll. (Or freeze for 30 minutes.) Preheat oven to 350° F. On lightly floured surface, with floured rolling pin, roll 1 piece of dough 1/8-inch thick. With floured 3 1/2-inch bellshaped cookie cutter, cut dough into as many cookies as possible; wrap and refrigerate trimmings. Place cookies, 1 inch apart, on ungreased large cookie sheet. Bake cookies 10 to 12 minutes or until lightly browned. Transfer cookies to wire rack to cool. Repeat with remaining dough and trimmings.
When cookies are cool, prepare Ornamental Frosting if you like; use to decorate cookies as desired. Set cookies aside to allow frosting to dry completely, about 1 hour. Store cookies in tightly covered container (with waxed paper between layers if decorated) at room temperature up to 2 weeks, or in freezer up to 3 months.

Walnut Balls
- 6 1/2 dozen cookies
Ingredients - 1 c. butter (no substitutions) - 6 tbsp. granulated sugar - ½ tsp. vanilla extract - 2 c. all-purpose flour - 1/3 tsp. salt - 1 bag walnuts - 1¼ c. confectioners’ sugar Directions Preheat oven to 325° F. In large bowl, with mixer on medium speed, beat butter, granulated sugar, and vanilla until creamy, occasionally scraping bowl with rubber spatula. Reduce speed to low; gradually beat in flour and salt just until blended, occasionally scraping bowl. Stir in walnuts. Shape dough by rounded measuring teaspoons into 1-inch balls. Place balls, 1 inch apart, on ungreased large cookie sheet. Bake cookies 13 to 15 minutes or until bottoms are lightly browned.
Place confectioners’ sugar in pie plate. While cookies are hot, with metal spatula, transfer 4 or 5 cookies at a time to pie plate with confectioners’ sugar. Gently turn cookies with fork to generously coat with sugar. Transfer cookies to wire rack to cool completely. Repeat with remaining dough and confectioners’ sugar. Store cookies in tightly covered container at room temperature up to 1 week or in freezer up to 3 months. Dust with additional confectioners’ sugar before serving if you like.

Ingredients Cookies: - 2 c. all-purpose flour - ½ c. unsweetened cocoa - 1½ tsp. baking powder - 1 tsp. ground cinnamon - ¼ tsp. ground cloves - ¼ tsp. salt - ¾ c. granulated sugar - ½ c. butter or margarine - 1 large egg - ½ c. whole milk

Christmas Fruit Drops Ingredients - 2½ c. all-purpose flour - 1 tsp. baking soda - ½ tsp. salt - 1 c. butter or margarine - ¾ c. granulated sugar - ½ c. dark brown sugar - 1 tsp. vanilla extract - 3 large eggs - 2 c. toasted rice cereal - 1 c. walnuts - ½ c. red candied cheries - ½ c. green candied cherries - 1½ c. white chocolate chips

Rudolph The Red Nosed Reindeer You know Dasher, and Dancer, and Prancer, and Vixen, Comet, and Cupid, and Donder and Blitzen But do you recall, the most famous reindeer of all… Rudolph, the red-nosed reindeer had a very shiny nose and if you ever saw it you would even say it glows.
Then one foggy Christmas eve Santa came to say: “Rudolph with your nose so bright, won’t you guide my sleigh tonight?”
All of the other reindeer used to laugh and call him names They never let poor Rudolph play in any reindeer games.
Then all the reindeer loved him as they shouted out with glee, Rudolph the red-nosed reindeer, you’ll go down in history!

Spumoni Icebox Cookies Ingredients - 2¾ c. all-purpose flour - ½ tsp. baking soda - pinch of salt - 1 c. butter or margarine - 1 c. sugar - 1 large egg - 1 tsp. almond extract - 1/3 c. shelled pistachios - Green paste food coloring - 1/3 c. red candied cherries - Red paste food coloring
Add egg and almond extract and beat until well blended. Reduce speed to low; beat in flour mixture just until blended, occasionally scraping bowl.
Directions Line 9-inch by 5-inch metal loaf pan with plastic wrap, letting wrap extend on all sides. On waxed paper, combine flour, baking soda, and salt.
Evenly pat pistachio dough into bottom of prepared pan; freeze 10 min. Pat plain dough on top of pistachio layer; freeze 10 min. Pat cherry dough on top. Cover pan with plastic wrap and refrigerate 4 hours or overnight, until dough is firm enough to slice.
In large bowl, with mixer at medium speed, beat butter and sugar 4 minutes or until light and fluffy, occasionally scraping bowl with rubber spatula.
Transfer 1 rounded cup plain dough to medium bowl; with spoon, stir in pistachios and enough green food coloring to tint dough bright green. In another bowl, place 1 rounded cup plain dough; stir in cherries and enough red food coloring to tint dough bright red.
Preheat oven to 350° F. Remove dough from pan; discard plastic
wrap. With serrated knife, cut dough crosswise into 1/4-inch-thick slices. Cut each slice crosswise into 3 cookies. Place cookies, 2 inches apart, on ungreased large cookie sheet. Bake cookies 10 to 12 min. or until firm and golden brown at edges. Cool cookies on cookie sheet on wire rack 2 minutes. With wide spatula, carefully transfer cookies to rack to cool completely. Repeat with remaining dough. Store cookies in tightly covered container at room temperature up to 2 weeks, or in freezer up to 3 months.

Frosty the Snowman Oh, Frosty, the Snowman, was alive as he could be; and the children say he could laugh and play, just the same as you and me.
Frosty the Snowman, was a jolly happy soul, With a corn cob pipe and a button nose, and two eyes made of coal.
Thumpety thump, thump, thumpety thump, thump, look at Frosty go.
Frosty the Snowman, is a fairytale, they say. He was made of snow, but the children know, how he came to life one day.
Thumpety thump, thump, thumpety thump, thump, over the hills of snow.
There must have been some magic in that old silk hat they found, For when they placed it on his head, he began to dance around!

Peppermint Swirl Meringues - 4 dozen cookies Ingredients - 3 large egg whites - pinch of salt - ¼ tsp. cream of tartar - ½ c. sugar - ¼ tsp. peppermint extract - ¼ tsp. vanilla extract - Green (or red) gel food coloring Directions Arrange oven racks in top and bottom thirds of oven. Preheat oven to 225° F. Line 2 large cookie sheets with parchment paper. In medium bowl, with mixer on medium speed, beat egg whites and salt until foamy. Add cream of
tartar; beat on mediumhigh speed until soft peaks form. Add sugar 1 tablespoon at a time. Beat until meringue stands in stiff, glossy peaks. Beat in extracts. Using small brush, lightly paint 3 to 4 stripes of food coloring inside large piping bag fitted with 1/2-inch tip. Transfer meringue to piping bag. Pipe meringue into 1 1/2-inch rounds onto cookie sheets, spacing 1 inch apart. Bake 1 hour. Turn oven off. Leave meringues in
oven 1 hour with oven door closed. Remove from oven; cool completely. Meringues can be stored in airtight containers at room temperature for up to 2 weeks.

Christmas Macarons Ingredients 1 c. slivered almonds 2 c. confectioners’ sugar 3 large egg whites ¼ tsp. salt 7 drop green liquid food coloring ¼ tsp. almond extract 4 oz. bittersweet chocolate Directions Preheat oven to 300° F. Line 2 large cookie sheets with parchment paper. In food processor with knife blade attached, process almonds and 1 cup sugar until finely ground and powdery, occasionally scraping bowl with rubber spatula. Add remaining sugar; pulse until combined. Transfer to large bowl.

In mixer bowl, with mixer on medium speed, beat egg whites and salt until soft peaks form. Beat in food coloring and almond extract. Increase speed to high and beat just until stiff (but not dry) peaks form when beaters are lifted. With rubber spatula, fold egg whites into almond mixture until blended. Batter will be just pourable and sticky. Transfer batter to pastry bag fitted with 1/2-inch round tip. Holding bag about 1/2 inch above parchment, pipe 1-inch rounds spaced 1 1/2 inches apart (batter will spread). Let stand 20 minutes. Bake, one cookie sheet at a time, 18 to 19 minutes or until bubbles around bases of macarons are firm to
the touch but tops are not browned. Cool on wire rack. Repeat with second cookie sheet. When cookies are cool, spread chocolate on bottoms of half of macarons, using about 1/2 teaspoon for each. Top each with another macaron, bottom side down. Let stand until chocolate hardens, about 45 minutes.
