around each smokie. Put in pan, cut side down. Melt butter and sugar and stir well. Pour over smokies and bacon. Then drizzle maple srup over top of smokies. Bake for 15-20 minutes at 375

Holiday Recipes Sweet Potato Souffle 4-5 large sweet potatoes, peeled and boiled until tender 3 eggs ½ cup canned evaporated milk 1 tsp. Vanilla ½ cup sugar ½ tsp. Salt ¼ cup butter, melted Topping 3 Tbsp. butter

1/3 cup flour 1 cup brown sugar 1 cup chopped pecans 1/2-1 cup cranberries (optional) In a mixing bowl, mash the sweet potatoes. Add all other ingredients and mix together well with a hand mixer. Pour into greased 9x13” baking dish.

Holiday Recipes Gail’s Cranberry Orange Salad 1 envelope Knox unflavoured gelatin 1 can (10oz.) mandarin orange sections 1 Tbsp. lemon juice 1 can (14 oz.) whole berry cranberry sauce

2/3 cup celery ¼ cup slivered almonds Sprinkle gelatin over liquid drained from oranges. Place over low heat and stir constantly until gelatin dissolves, about 3 minutes. Remove from heat. Stir in lemon

Holiday Recipes Christmas Potato Salad 6 medium potatoes 1 medium carrot 4 or 5 green onions 1 Tbsp. margarine 1 ½ cups mayonnaise Peel and cook potatoes, when cooked, mash in a bowl, cool.

Peel and grate carrot, very small grated, add to mashed potatoes. Cut up green and add to potatoes, then mix in margarine and mayonnaise. Let cool in fridge for 1 hour. Place your mashed potato mixture on lettuce leafs with an ice cream scoop, green chives or

radishes on top, then sprinkle chives or radishes on top then sprinkle parsley or paprika for garnish on top of potatoes. Cover lightly with waxed paper or tin foil, place in fridge until ready to serve. ~ Joyce Walker

Holiday Recipes Main Courses Never Fail Crab meat Spaghetti Casserole 8 oz. Pkg. Spaghetti 1 can Cream of Mushroom soup 2 Tbsp. butter or margarine 1 cup milk 2 cups grated sharp cheese ¼ cup finely minced onion 2 diced hard boiled eggs ½ Tsp. Salt dash of pepper and hot sauce

1 ½ cups flaked fresh or canned crab meat (I use imitation crab) Cook spaghetti in boiling water, salted, until barely tender. Drain and rinse in cold water. Heat mushroom soup, stirring until smooth. Add butter or margarine and milk. Stir in cheese, onion,

Holiday Recipes Turkey Chow Mein 2 cups cooked turkey, cut up 1 green pepper 1 medium onion 2 stalks celery 3 cups fresh bean sprouts 1 can sliced mushrooms, save juice 1 Tbsp. corn starch 1 cube chicken bouillon garlic salt to taste 1 pkg. Chow mein noodles

Chop and fry pepper, onion and celery until soft. Put in casserole dish. Toss in chopped turkey. Fry (steam) sprouts until soft and put in dish. Dissolve bouillon in 1 cup mushroom juice, (add water if necessary) and thicken over low heat with corn starch. Add garlic salt. Reserve 1 cup of chow mein noodles. Toss the rest of the

package with the ingredients in the casserole dish. Sprinkle with remaining cup of noodles. Pour thickened mushroom juice over everything. Bake at 350 degrees until warm throughout and noodles on top are crispy. ~ Wendy Mercier

Holiday Recipes Grilled Jerk Chicken Wings ½ cup Caribbean Jerk seasoning 18 fresh chicken wingettes (2-3 lbs.) 2 cups honey barbecue sauce 1/3 cup packed brown sugar 2 Tsp. Prepared mustard 1 Tsp. Ground ginger Coast grill rack with non-stick

Holiday Recipes Chicken or Turkey Pie 1/3 cup butter or margarine 1 cup sliced mushrooms 1/3 cup chopped onion 1/3 cup flour 1 ½ cups chicken stock 2 cups diced tomatoes ½ cup celery 1 ½ cups diced chicken or turkey ½ cup ripe olives ½ Tsp. Salt 1/8 Tsp. Pepper Pastry, using 1 cup flour or biscuit topping Melt fat, add mushrooms and onion, cook until limp. Stir in flour, add chicken stock, tomatoes and celery. Cook until slightly thickened. Add chicken, olives,

salt and pepper. Place in 1 ½ qt. casserole. Cover with pastry rolled to 1/8” thickness and trim; turn under and flute edges or used biscuit topping rolled out to fit casserole. Note: If you don’t like olives, you can use a cup of frozen peas and carrots or mixed vegetables and cook all the vegetables in the casserole in a microwave oven. Also, leftover gravy can be used (thickened a bit if necessary) instead of butter, flour and chicken stock. Either way it’s delicious! I use a 2 qt. casserole and biscuit topping. Bake at 400 degrees for 25-30 minutes or until browned.

Topping: 2 cups all purpose flour 3 Tsp. Baking powder 1 Tsp. Salt 1/3 cup salad oil 2/3 cup milk Sift flour, baking powder and salt together. Add oil to milk and quickly stir into flour mixture. Mix lightly. Place dough on floured board and roll out to fit casserole. To prevent dough from getting soggy on the bottom, lift carefully into a non-stick frying pan and brown a little on medium heat before lifting it out carefully and placing it on the mixture in the casserole dish. ~ Shirley Weatherston

Holiday Recipes Shrimp Pasta in Garlic Tomato Cream Sauce 2 tbsp. olive oil 1 pound shrimp, without shells, and deveined crushed red pepper for taste paprika for taste salt for taste 1 small onion, finely chopped 4 garlic cloves, minced 2 cups canned crushed tomatoes ¼ cup water half a cube chicken bouillon, I use Knorr 1 tbsp. basil ¼ tsp. oregano ½ cup heavy cream 8 oz penne pasta (for gluten free version, use brown rice penne by Tinkyada)

Heat olive oil in a large skillet on medium-high heat. Add shrimp and cook on one side for about 1 minute. While it cooks, sprinkle the top of shrimp with crushed red pepper, paprika and salt to cover every single shrimp. Turn shrimp over to the other side and cook for about 2 more minutes. Remove shrimp to a plate, being careful to leave all the oil in the skillet. To the same skillet, add chopped onion and minced garlic and cook on medium high heat. Cook for about 2 minutes, occasionally stirring, until onions soften. Add crushed tomatoes and chicken bouillon cube dissolved

in 1/4 cup boiling water. Add basil and oregano, mix, bring to boil and reduce to simmer. Simmer for about 10-15 minutes, mixing occasionally and crushing all tomatoes into very small bites, until the sauce reduces just a bit. In the end, while on simmer, add heavy cream, mix it in, and immediately remove from heat. Add back the shrimp and pasta. Mix everything well to combine. Reheat on low simmer, if needed. Do not bring to boil or high heat as it might affect the sauce texture. Add more salt and pepper if necessary. ~ Penticton Western News

Holiday Recipes Candy Cane Cookies 2 ¾ cups flour 3 tsp. Baking powder 1 tsp. Salt ¾ tsp. Cinnamon ¼ tsp. Nutmeg ½ cup butter 1 ½ cups sugar 1 egg 1 tsp. Vanilla ½ cup milk (approx – may use more or less to get the cookie

dough pulled together) Mix all ingredients, add baking powder last. Divide dough into two equal amounts. Leave one plain. Add food colouring to the other dough in a bowl, adding a little flour (¼ to ½ cup) to get the dough so it can be handled. Roll our pieces of plain and coloured dough into long strips.

Put together and roll together to form candy cane shapes. Place carefully on cookie sheet, setting the candy cane cookies out in rows well separated from each cane. Set oven to 350 and bake for 7-8 minutes. Let cookies cool before removing from cookie sheet. ~ H. Stengel

White chocolate (9 squares) 2 cups miniature marshmallows 1 cup halved red glazed cherries (not maraschino) Line 8” square pan with foil. In large saucepan combine sugar, milk and butter, cook over medium heat, stirring until mixture comes to a full boil. Boil for 5 minutes, stirring constantly, reduce heat to low. Add white chocolate, stir until completely melted. Remove from heat. Add marshmallows, stir vigorously until melted and smoothly combined. Stir in cherries. Pour into prepared pan. Holiday Recipes Pumpkin Roll Preheat oven to 375 degrees. Line 15x10” baking pan with wax paper. Grease and flour pan and the top of the paper. 3 eggs (separate egg yolks and egg whites) 1 cup sugar, divided in half 2/3 cup pumpkin ¾ cup flour 1 Tsp. Baking soda ½ Tsp. Cinnamon ¼ Tsp. Salt In a large bowl, beat egg yolks until thick. Gradually add ½ cup sugar and the pumpkin. Beat mixture until the sugar is almost

dissolved. In a smaller bowl, beat egg whites until soft peaks form. Gradually add remaining sugar and beat until stiff peaks form. Fold the egg whites into the pumpkin mixture. In a smaller bowl, sift together flour, baking soda, cinnamon and salt. Gently fold into pumpkin mixture. Spread into pan. Bake at 375 degrees for 13-15 minutes or until cake springs back when touched. Cool 5 minutes. Turn cake onto kitchen towel, sprinkled with powdered sugar. Gently peel off waxed paper. Roll up cake in the towel starting with the shorter side.

Cool completely before adding the filling. Filling: 8 oz. Softened cream cheese 2 Tbsp. butter, softened 1 ½ cup powdered sugar ½ Tsp. Vanilla In bowl, beat cream cheese, butter, powdered sugar and vanilla until smooth. Unroll cake and spread filling. Roll up again and cover with plastic wrap. Refrigerate for 2 hours before serving. Holiday Recipes Banana Cranberry Bread baking spray 1 cup fresh or frozen cranberries 2 Tbsp. sugar 2 Tbsp. water 1 ¼ cups white whole wheat flour ¾ tsp. Baking soda ¼ tsp. Salt 2 Tbsp. butter, softened ½ cup light brown sugar (not packed) 2 large egg whites 3 ripe medium bananas, lightly mashed 1 ½ tsp. Vanilla extract ½ Tbsp. turbinado sugar In small saucepan, combine

cranberries, water and sugar. Bring to a boil. Simmer over medium heat until cranberries burst, about 4 minutes. Preheat oven to 350 degrees. Lightly spray a loaf pan with baking spray. In a medium bowl, combine flour, baking soda and salt with a wire whisk. Set aside. In a large bowl, combine flour, baking soda and salt with a wire whisk. In a large bowl cream butter and brown sugar with an electric mixer. Add egg whites, bananas and vanilla and beat at medium speed until thick. Scrape down sides of the

bowl. Add flour mixture. Blend at low speed until combined, do not over mix. Fold in cranberries. Pour batter into the prepared pan. Sprinkle top with turbinado sugar. Bake in the the center rack for about 60 minutes or until a toothpick inserted in the center comes out clean. Transfer pan to a wire rack and let cool at least 25 minutes. Set aside. In a large bowl, cream margarine and 1 cup sugar. Beat in egg and stir in water and molasses. Gradually stir in dry ingredients. Cover and set in fridge for at least 20 minutes. Shape into walnut sized balls. Toss in a small bowl of white sugar until lightly coated. Flatten cookies to about ¼ inch with a fork or use the bottom of a drinking glass with a neat design. Holiday Recipes Pumpkin Pie Squares 1 28 oz. Can pumpkin 1 13 oz. Can evaporated milk 3 eggs 1 Tsp. Salt 2 Tsp. Pumpkin pie spice (or 1 Tsp. Each ginger, nutmeg, cinnamon & 1/8 cloves)

1 yellow cake mix 1 cup butter, melted 1 cup pecans or walnuts, chopped Mix pumpkin, eggs, milk and spices together and beat well. Pour mixture into un-greased 9x13” pan. Cover with dry cake mix.

Drizzle melted butter over the top until completely covered. Sprinkle with chopped nuts. Bake at 350 degrees for 50 minutes. Chill and serve with whipped cream. ~ Shirley Weatherston
