Almond Roca 2 cups butter 2 cups brown suga r 8 1-oz. chocolate squares 1/4 cup water 2 Tbsp. light corn syrup 2 cups slivered alm onds Melt butter in sauc epan over low heat . Add sugar and stir cons tantly. Add water and corn syrup, cooking ov er low heat until ha rd crack stage. Stir frequent ly, remove from he at. Stir in 1 1/2 cup al monds. Chop rem aining almonds. Pour in to pan. Melt choc olate and cool. Pour a thin layer over base. Sp rinkle half the nuts and then chocolate. R epeat ‘til done. Store in frid ge.

1 (8 oz.) cream ch eese, softened 1 cup grated ched dar cheese 1 small onion, min ced (or green onio n) 1 garlic clove, crus hed 1 tsp. soya sauce Vegetable seasonin g or seasoning sa lt Almonds, whole or chopped Mix up all ingred ients and roll into a ball or a yule log. You ca n either roll the ba ll in the chopped nuts or pu sh almonds into th e ball. Place on a plate an d chill until ready to serve (1-2 hours). Easy Peanut Butte r Chocolate Fudge 1 12-oz. pkg. Pean ut butter chips 1 14-oz. can Eagle Brand milk 1/4 cup butter 1/2 cup chopped peanuts (optional) 1 6-oz. pkg. semi-s weet chocolate chips In large saucepan , melt peanut butter chips, 1 cu p sweetened condensed milk an d 2 Tbsp. butter. Stir occasional ly. Remove from heat. Stir in peanuts. Spread mixture into wax ed paper lined 8” square pan. In small saucepan, melt chocolate an d remaining condensed milk an d butter. Spread chocolate mixture on top of peanut butter mixture . Chill 2 hours. Turn fudge on cu tting board. Peel off paper and cut into squares. Tightly cover any leftovers.o

Frosty the Snowman

Frosty the Snowman was a jolly happy soul, With a corn cob pipe and a button nose And two eyes made out of coal. Frosty the Snowman is a fairy tale, they say, He was made of snow but the children know How he came to life one day. There must have been some magic In that old silk hat they found, For when they placed it on his head, He began to dance around. Oh, Frosty the Snowman was alive as he could be. And the children say he could laugh and play Just the same as you and me.

Take a look in the five and ten, Glistenin’ once again, With candy canes and silver lanes aglow. It’s beginning to look a lot like Christmas, Toys in every store. But the prettiest sight to see, Is the holly that will be, On your own front door. It’s beginning to look a lot like Christmas, Everywhere you go. There’s a tree in the Grand Hotel, One in the park as well, The sturdy kind that doesn’t mind the snow. It’s beginning to look a lot like Christmas, Soon the bells will start. But the thing that will make them ring, Is the carol that you sing, Right within your heart.

Rudolph the Red-nosed Reindeer You know Dasher, and Dancer, Prancer and Vixen, Comet, Cupid, Donner and Blitzen, But do you recall the most famous reindeer of all . . .Rudolph, the Red-nosed Reindeer, Had a very shiny nose, and if you ever saw it, You would even say it glows! All of the other reindeer used to laugh and call him names; They’d never let poor Rudolph Join in any reindeer games. Cranberry-Chip Cookies 1/2 cup (125 mL) sugar 1/2 cup (125 mL) vegetable shorten ing 2 eggs 1 tsp. (5 mL) vanilla 1 cup (250 mL) all-purpose flour 1 cup (250 mL) uncooked quick-coo king oats 1 tsp. (5 mL) baking powder 1 cup (250 mL) vanilla baking chip s 1/2 cup (125 mL) dried cranberries 1/2 cup (125 mL) flaked coconut Heat oven to 350ºF (180ºC). In larg e mixing bowl, combine sugar, shortening , eggs and vanilla. Beat at medium speed of electric mixer until light and fluffy. Add flour , oats and baking powder. Beat at low spe ed until soft dough forms. Stir in chips, cra nberries and coconut. Drop dough by heaping teaspoons 2 inches (5 cm) apart onto ungreased cookie sheets. Bake for 9 to 11 minutes, or until set. Cool completely before storing.

Brunch Egg Bake 3 Cups shredded cheddar cheese 3 cups shredded mozzarella cheese 1 can drained sliced mushrooms 1/3 cup sliced green onions 1/2 medium red bell pepper chopped 1/2 medium green bell pepper chopped 1/4 cup melted butter 1/2 pound ham sliced julienne strips 1/2 cup flour 1 3/4 cups milk 2 tbsps chopped parsley 8 beaten eggs In a large bowl combine cheeses. Sprinkle half the cheese into ungreased 9” x 13” pan. In a skillet cook mushrooms, green onions, peppers in the 1/4 cub butter until onions and peppers are tender. Arrange vegetables over cheese then arrange ham strips over vegetables. Sprinkle remaining cheese over ham. Lightly spoon flour into measuring cup then into large bowl. Blend flour, milk, parsley and eggs. Pour over layers in baking dish. Bake at 325 degrees for 35 to 45 minutes. Let stand 10 minutes. Cut into squares. Makes a good Christmas Brunch. ~ Marlene Brandow

Sleigh-bells ring, are you list’nin’? In the lane, snow is glist’nin’, A beautiful sight, we’re happy tonight, Walkin’ in a winter wonderland! Gone away is the blue-bird, Here to stay is a new bird, He sings a love song, as we go along. Walkin’ in a winter wonderland! In the meadow we can build a snowman, Then pretend that he is Parson Brown; He’ll say “Are your married?” We’ll say, “No, man! But you can do the job when you’re in town!” Later on, we’ll conspire, As we dream by the fire, To face unafraid, the plans that we made, Walkin’ in a winter wonderland!
