Egg Nog Cheesecake BY CHEF HIRO TAKEDA
2 tbsp. olive oil ½lb ground sirloin Salt and pepper 1 jalapeno, diced 2 cloves garlic, chopped 1 tsp oregano 1 tsp ground cumin 3 tbsp tomato sauce 2 tbsp tequila juice of 1 lime ½ c kidney beans ¾lb bag tortilla chips 2 c Monterey Jack cheese 2 Roma tomatoes 3 tbsp diced red onion 2 tbsp. sliced black olives 3 tbsp diced Cubanelle (or banana) pepper 2 tbsp chopped cilantro
750 g Cream Cheese 2 oz Spiced Rum by ?? 6 Whole Eggs 10 ml Nutmeg 5 ml Cinnamon 10 ml Vanilla Extract 350-500 ml White Sugar
Soften cream cheese at room temperature for 2 hours. Set up a stand up mixer with the paddle attachment and add cream cheese to the bowl. Turn the mixer on low and mix cream cheese. Add spiced rum, and wait until fully incorporated before adding the eggs. Add the eggs one at a time, making sure that it is completely mixed in before adding the next egg. Add the nutmeg, cinnamon and vanilla. Slowly add in sugar. It’s up to you how much sugar you want to put in, depending on how sweet you would like your cheesecake. Once the mixture has completely combined, strain the mixture through a fine mesh strainer. Preheat your oven at this point to 300ºF. Pour mixture into mason jars, and place into a casserole dish, or another dish that has walls. You will be baking the cheesecakes in a water bath. Pour hot water into the casserole dish until the water reaches halfway up the mason jar. Place cheesecakes in the oven and bake for 25 minutes, or until the cheesecakes have set. To check if the cheesecakes are done, simply shake the pan. The cheesecakes should not be molten in the middle. Cool cheesecakes completely before serving. Serve with graham crumb and whipped cream.

All I want for Christmas is my Two Front Teeth Everybody stops and stares at me These two teeth are gone as you can see I don’t know just who to blame for this catastrophe! But my one wish on Christmas Eve is as plain as it can be! All I want for Christmas is my two front teeth, my two front teeth, see my two front teeth! Gee, if I could only have my two front teeth, then I could wish you “Merry Christmas.” It seems so long since I could say, “Sister Susie sitting on a thistle!” Gosh oh gee, how happy I’d be, if I could only whistle (thhhh) All I want for Christmas is my two front teeth, my two front teeth, see my two front teeth. Gee, if I could only have my two front teeth, then I could wish you “Merry Christmas!”

Jingle Bells Dashing through the snow On a one-horse open sleigh, Over the fields we go, Laughing all the way; Bells on bob-tails ring, making spirits bright, What fun it is to ride and sing A sleighing song tonight. Jingle bells, jingle bells, Jingle all the way! O what fun it is to ride In a one-horse open sleigh.
The world in solemn stillness lay To hear the angels sing. Still thru the cloven skies they come, With peaceful wings unfurled; And still their heav’nly music floats O’er all the weary world. Above it’s sad and lowly plains They bend on hov’ring wing, And ever o’er its Babel sounds The blessed angels sing. For lo! the days are hast’ning on, By prophets seen of old, When with the ever circling years Shall come the time fore told. When the new heav’n and earth shall own The Prince of Peace their King, And the whole world send back the song
Which now the angels sing.

Jolly Old Saint Nicholas
Rudolph The Red-Nosed Reindeer
Oh Come All Ye Faithful
Jolly old Saint Nicholas, lean your ear this way! Don’t you tell a single soul what I’m going to say: Christmas Eve is coming soon; now, you dear old man Whisper what you’ll bring to me; tell me if you can.
You know Dasher and Dancer And Prancer and Vixen, Comet and Cupid And Donner and Blitzen But do you recall The most famous reindeer of all?
Oh come all ye faithful, joyful and triumphant, Oh come ye, oh come ye to Bethlehem. Come and behold him, born the king of angels,
Rudolph the red-nosed reindeer Had a very shiny nose (like a light bulb) And if you ever saw it You would even say it glows (like a flash light) All of the other reindeer Used to laugh and call him names (like Pinochio) They never let poor Rudolph Play in any reindeer games (like Monopoly).
Oh come let us adore him, Oh come let us adore him Oh come let us adore him, Christ the lord.
When the clock is striking twelve, when I’m fast asleep Down the chimney, broad and black, with your pack you’ll creep All the stockings you will find hanging in a row Mine will be the shortest one, you’ll be sure to know. Bobby wants a pair of skates, Suzy wants a sled Nellie wants a picture book; yellow, blue, and red Now I think I’ll leave to you what to give the rest Choose for me, dear Santa Claus; you will know the best.
Then one foggy Christmas Eve Santa came to say (Ho Ho Ho) Rudolph with your nose so bright Won’t you guide my sleigh tonight? Then all the reindeer loved him And they shouted out with glee (yippee) “Rudolph the red-nosed reindeer You’ll go down in history!”

He sees you when you’re sleeping He knows when you’re awake He knows if you’ve been bad or good So be good for goodness sake!
He rules the world with truth & grace, and makes the nations prove the glories of His righteousness, and wonders of His love, and wonders of His love, and wonders, wonders of His love.

Silent Night
The Christmas Song
Silent night, holy night, All is calm, all is bright Round yon virgin mother & child. Holy infant so tender and mild, Sleep in heavenly peace. Sleep in heavenly peace.
Chestnuts roasting on an open fire Jack Frost nipping at your nose Yule-tide carols being sung by a choir And folks dressed up like Eskimos. Everybody knows a turkey and some mistletoe Help to make the season bright Tiny tots with their eyes all aglow Will find it hard to sleep tonight. They know that Santa’s on his way He’s loaded lots of toys and goodies on his sleigh And every mother’s child is gonna spy To see if reindeer really know how to fly. And so I’m offering this simple phrase To kids from one to ninety-two Although it’s been said many times, many ways Merry Christmas to you.
Silent night, holy night, Shepherds quake at the sight, Glories stream from heaven afar, Heavenly hosts sing alleluia; Christ the Savior, is born! Christ the Savior, is born! Silent night, holy night, Son of God, love’s pure light Radiant beams from thy holy face, With the dawn of redeeming grace, Jesus, Lord, at thy birth. Jesus, Lord, at thy birth.

Hear the snow crunch, see the kids bunch, This is Santa’s big scene, And above all this bustle you’ll hear: Silver bells, silver bells, It’s Christmas time in the city. Ring-a-ling, hear them ring, soon it will be Christmas day.
White Christmas I’m dreaming of a white Christmas Just like the ones I used to know, Where the tree tops glisten, and children listen To hear sleighbells in the snow. I’m dreaming of a white Christmas, With every Christmas card I write May your days be merry and bright, And may all your Christmases be white.

Place each quarter onto a baking sheet, forming a long strip about 9” long and 2.5” wide. Sprinkle with coloured sugar. Bake the loaves for 35 minutes, switching the position of the baking sheets halfway through. Remove from the oven and reduce the oven temperature to 300°F.Transfer the warm loaves to a cutting board and, cut crosswise into 1/2” slices. Line the baking sheets with new parchment paper. Arrange the slices (cut side down) on the cookie sheets and bake for another 18 - 22 minutes, again switching the sheets’ position about halfway through.
