HALLS
1/4 cup butter 1/2 cup vegetable shortening 1/2 cup sugar 1 - 3 oz. pkg. Jell-O, (my favourites for the Christmas season are the lime and the raspberry) 2 large eggs Colourful and fun! 1 tsp. vanilla This recipe is excellent 2 1/2 cups flour for cookie exchanges, 1 tsp. salt kids’ school or sports 1 tsp. baking powder teams! Directions: Cream the butter, shortening, sugar and Jell-O. Add the eggs and vanilla and beat on medium speed until well mixed. Sift the flour, salt and baking powder. On slow speed, add the dry mixture, adding a little at a time. Mix well.

The dough will be fairly soft, but not sticky. You do not need to refrigerate the dough before rolling. Preheat over 400 F. Roll dough into 1/4” ball. Press the top of the ball into a chunky coloured sugar then place on baking sheet. Take a flat bottomed glass and slightly press down on the cookie to flatten it. Bake the cookie for 6 to 8 minutes, (more on the 6 side)! Cool on rack. Store in an airtight container. You will get 30 to 36 delicious, tasty cookies.

DELICIOUS HOME-MADE CHRISTMAS MARSHMALLOWS
HARK THE HERALD
ANGELS SING
Ingredients: 2 cups white sugar 3 packages unflavoured gelatine pinch salt 2 cups boiling water 2 cups icing sugar 2 teaspoons vanilla 2 teaspoons baking powder Method: Put sugar, gelatine and salt in a sauce pan. Stir in boiling water. Boil very slowly for 10 minutes. Remove from heat, add icing sugar. Stir and cool. Add vanilla. SECRET: Beat for a significant length of time until the mixture becomes very thick. Add baking powder and beat again. Pour onto a greased (buttered) wax paper covered pan. Put wax paper over top of marshmallow mixture. Set overnight. Turn onto a cutting board. Using a hot knife, cut into squares Roll marshmallows in any of the following: • Shredded coconut with food-colouring mixed into it e.g. red or green • Browned coconut shreds (browned in fry pan on low heat) • Icing sugar • Or just leave as is.

BUTTERSCOTCH COOKIES Ingredients: 1 cup butter 2 cups light brown sugar 2 eggs beaten 3-1/2 cups flour 1/2 tsp. salt 1 tsp. baking soda 1/2 tsp. baking powder 1 tsp. vanilla
WE WISH YOU A
Sift flour with salt, baking soda and powder. Then mix as usual. Chill mixture overnight as dough is soft and must be cold. Make rolled or icebox cookies rolling or cutting dough thin. Place on greased cookie sheets. Bake in moderate hot oven 375-400 F. FOR XMAS COOKIES: 1/2 cup glace cherries, walnuts, and raisins 1/4 cup mixed peel and candied ginger. Put all of the above ingredients through a mincer or a meat grinder. Mix well with dough.

CHRISTMAS OR SUNDAY MORNING WIFE SAVER 16 slices bread, crusts removed Slices of bacon or ham Cheddar cheese, grated 6 Eggs 3 Cups Milk, skim, 1% , etc. 1/2 tsp. each: Salt, Pepper, Dry Mustard 1/2 Cup each: Finely chopped Onion and Green Pepper 1-2 tsp. Worcestershire Sauce Dash Tobasco Sauce Special K or Corn Flakes, crushed In a 9 x 13 inch buttered glass baking dish, put in 8 slices of bread, covering bottom completely. Cover bread with bacon or ham, then grated cheese, and cover with remaining bread. Beat eggs in a bowl. Add milk and remaining ingredients. Pour over sandwich. Cover and let set in fridge overnight. In the morning, melt 1/4 cup margarine. Cover top with corn flakes, and pour margarine over top. Bake uncovered for 1 hour at 350 degrees. Allow to sit for 10 minutes before serving. Serves 10-12.

BOTERKOEK (MOIST SHORTBREAD LIKE) Do Not Convection Bake 3250 • 20 - 25 minutes • 3 small pie plates 1 c. sugar 1 c. butter 1 egg
1 tsp. almond flavouring 2 c. flour 1 tsp. baking powder
Cream together sugar and butter with mixer. Add egg and flavouring. Sift flour and baking powder. Add to creamed mixture and mix well with dough hooks or by hand. Place batter in 3 small pie plates. Smooth with wet icing spreader or spatula. Bake until a light golden brown at the edges.
This is a recipe that is so simple yet really loved by many. My motherin-law gave me this recipe 46 years ago. Every Christmas when I make this I think about what a wonderful sweet woman she was.
VARIATION FOR THICK BOTERKOEK 1 egg white 1 tsp. sugar per pan ¼ cup shaved almonds per pan Thick Boterkoek (more cake like texture) - Double the recipe and divide between three small pie plates. Smooth with wet spatula, brush with egg white, sprinkle top lightly with sugar and press shaved almonds into dough. Bake at 325 for 35 minutes or until a light golden brown at the edges.

SPINACH SALAD WITH CANDIED PECANS, PEARS & BRIE 1/3 cup pecan halves 1/4 cup icing sugar 1/4 tsp. cinnamon 1/8 tsp. allspice 1/8 tsp. nutmeg 8 cups baby spinach leaves 1 cup diced radicchio 1 large ripe pear, peeled, cored & diced
2 oz. Brie cheese, diced 2 Tbsp. thawed orange juice concentrate 2 Tbsp. olive oil 1 Tbsp. balsamic vinegar 1 tsp. minced garlic 1/2 tsp. liquid honey 1/2 tsp. Dijon mustard
Preheat oven or toaster oven to 350 F. Spray a baking sheet or toaster oven pan with cooking oil. Rinse pecans with cold water. Drain, but do not let dry. In small bowl, combine icing sugar, cinnamon, allspice and nutmeg; dip pecans in mixture to coat well. Spread on prepared baking sheet. Bake for 10 minutes. Cool and chop. In large bowl, combine spinach, radicchio, pear and Brie. In small bowl, whisk together orange juice concentrate, olive oil, vinegar, garlic, honey and mustard. Pour over salad; toss to coat. Garnish with candied pecans. Serves 6.

Add: 2 cups large flake oats 1 1/2 cups whole wheat flour 1 cup flaked coconut 1 tsp. baking soda 1 tsp. salt 1 1/2 - 2 cups chocolate chips Drop onto greased cookie sheet. Bake at 350 F, for 12-14 minutes until nicely browned. Cool & enjoy.

DOUBLE CHOCOLATE ZUCCHINI LOAF 3 eggs 1/3 cup honey 1/2 cup veg. oil 1/2 cup brown sugar 1 tsp. vanilla 1/2 tsp. salt 1/2 cup chopped walnuts 1/2 tsp. baking soda
1/2 tsp. baking powder 1 tbsp. instant coffee 1/3 cup cocoa 1-2/3 cup whole wheat flour 2 cup shredded zucchini 1 cup chocolate chips 1/2 tsp. each of cinnamon, cloves, allspice
Beat eggs, honey, oil, sugar and vanilla. Combine salt, baking powder, baking soda, coffee, cocoa, flour, cinnamon, allspice and cloves. Add to wet ingredients. Stir in zucchini, chocolate chips and walnuts. Prepare pans and pour in batter. Bake for 60-65 mins. at 375 F or until done. Let cool. Yields one large loaf.
Yummy and freezes well!

Recipe

FRUIT COOKIES 3 cups flour 1 ½ cup white sugar 1 cup shortening Mix the above together like pastry and add: 1 cup raisins 1 cup chopped dates 1 tsp. cinnamon 1 tsp. ginger ½ tsp. cloves pinch of salt
“My Mom would bake these every Christmas and put them in the pantry in the basement. We kids would sneak in and steal cookies, thinking that Mom didn’t know. In hindsight I realize she factored in the fact that 5 kids would be sneaking cookies prior to Christmas, thus she made many to see us through the holiday season!!!” “I taste Christmas memories in these cookies ,,,,”
Mix the above and then make a hole in the center and add: ½ cup molasses 2 eggs beaten 1 tsp. soda in 1 Tbsp of hot water
Up on the rooftop the reindeer pause, Out jumps good old Santa Claus. Down thru the chimney with lots of toys, All for the little ones, Christmas joys.
Mix well in the center and then gradually mix together. Form into balls and press with fork. Bake at 350 degrees for 12 to 15 minutes. (check for doneness - don’t over bake as will become crunchy instead of chewy and moist)

TOURTIERES 1 lb. pork, minced 1 small onion, chopped, 1/2 tsp. salt 1 small clove garlic,minced 1/2 tsp crumbled dried savory 1/4 tsp ground cloves 1/2 cup water 1/4-1/2 cup bread crumbs pastry for a two crust pie Bring pork, onion, salt, garlic, savory, cloves and water to a boil and cook uncovered over medium heat 20 minutes. Remove from heat, add a few spoonfuls of bread crumbs and let mixture stand uncovered 10 mins. If fat is not absorbed by the crumbs add more. Let cool. Use pastry to line tart pans or make a 9 inch pie. Pour in cooled pork mixture and cover with pastry. Bake in a 400 oven until the tops are browned. Freeze if you wish, and put frozen into a 3500 oven about 20 minutes to reheat.

DRESSING 1/4 cup 1% or 2% plain yogurt 1 tbsp. white vinegar 1 tbsp. olive oil 1 tsp. minced fresh tarragon or 1/4 tsp dried 1/2 tsp. each Dijon mustard, salt and pepper #1 dressing: in bowl, whisk together yogurt, vinegar, oil, tarragon, mustard, salt and pepper #2 slice cheese into 8 rounds: dip in egg then in bread crumbs to coat all sides #3 toss lettuce with dressing : divide among 8 salad plates #4 in nonstick skillet, heat oil over medium heat. Cook cheese, turning once for 3 to 5 minutes or until crisp & golden outside & slightly melted inside. Place each round on salad. Make ahead: through step 2 cover and refrigerate up to 2 hours MY NOTES: serve any lettuce you like or any dressing you desire, the bread crumbs can be any crumb - fine ground worked best ENJOY!
