Songs of the Holiday Season
T’was The Night Before Christmas
T’was the night before Christmas when all through the house Not a creature was stirring, not even a mouse. The stockings were hung by the chimney with care, In hopes that Saint Nicholas soon would be there. The children were nestled all snug in their beds, While visions of sugarplumbs danced in their heads, And Mamma in her kerchief and I in my cap Had just settled down for a long winter’s nap When out on the lawn there arose such a clatter, I sprang from my bed to see what was the matter. Away to the window I flew like a flash, Tore open the shutters and threw up the sash. The moon on the breast of the newfallen snow Gave a luster of midday to objects below, When, what to my wondering eyes
should appear, But a miniature sleigh, and eight tiny reindeer; With a little old driver, so lively and quick, I knew in a moment it must be St. Nick. More rapid than eagles his coursers they came, and he whistled, and shouted, and called them by name: “Now, Dasher! now, Dancer! now, Prancer! and Vixen! On, Comet! on Cupid! on, Donner and Blitzen! To the top of the porch, to the top of the wall! Now, dash away, dash away, dash away all!” As dry leaves that before the wild hurricane fly, When they meet with an obstacle, mount to the sky, So up to the house-top the coursers they flew With a sleigh full of toys, and St. Nicholas, too. And then in a twinkle, I heard on the roof The prancing and pawing of each little hoof. As I drew in my head, and was turning around, Down the chimney St. Nicholas came with a bound. He was dressed all in fur, from his head to his foot, And his clothes were all tarnished with ashes and soot; A bundle of toys he had flung on his back, And he looked like a peddlar just open-
ing his pack. His eyes how they twinkled! his dimples how merry! His cheeks were like roses, his nose like a cherry. His droll little mouth was drawn up like a bow, And the beard on his chin was as white as the snow. The stump of a pipe he held tight in his teeth, And the smoke, it encircled his head like a wreath. He had a broad face and a little round belly That shook, when he laughed, like a bowl full of jelly. He was chubby and plump, a right jolly old elf. And I laughed when I saw him, in spite of myself. A wink of his eye, and a twist of his head, Soon gave me to know I had nothing to dread; He spoke not a word, but went straight to his work. And filled all the stockings; then turned with a jerk, And laying his finger aside of his nose. And giving a nod, up the chimney he rose. He sprang to his sleigh, to his team gave a whistle, And away they all flew like the down of a thistle. But I heard him exclaim as he drove out of sight, “Happy Christmas to all and to all a good night.”

Frosty the snowman was a jolly happy soul, With a corn cob pipe and a button nose And two eyes made out of coal. Frosty the Snowman is a fairy tale, they say, He was made of snow but the children know, How he came to life one day. There must have been some magic In that old silk hat they found, For when they placed it on his head, He began to dance around. O, Frosty the Snowman, was alive as he could be. Season’s Greetings May your holidays be filled with love and joy!
Got Run Over By A Reindeer Grandma got run over by a reindeer. Walking home from our house Christmas eve. You can say there’s no such thing as Santa, but as for me and grandpa we believe. She’d been drinking too much eggnog, and we begged her not to go. But she forgot her medication, and she staggered out the door into the snow. When we found her Christmas morning, at the scene of the attack, she had hoof-prints on her forehead, and incriminating Claus marks on her back. Now we’re all so proud of grandpa, He’s been taking this so well. See him in there watching football, drinking root beer and playing cards with Cousin Mel. It’s not Christmas without Grandma, All the family’s dressed in black and we just can’t help but wonder: Should we open up her gifts, or send them back? Send them back!! Now the goose is on the table and the pudding made of fig and the blue and silver candles that would just have matched the hair on grandma’s wig. I’ve warned all my friends and neighbors better watch out for yourselves, they should never give a license to a man who drives a sleigh and plays with elves.

Christmas Crafts Rudolph the Red Red-Nosed Nosed Reindeer had a very shiny nose! Ev Eve Everyone very yone loves Santa’s lead reindeer, so how’s this for a bright idea – make your very own version of him using an old lightbulb!
WHAT YOU’LL NEED: • • • • • • • • • • • • •
Burnt out lightbulb White vinegar Paintbrush Acrylic craft paint: brown, white, black and red 1 small jingle bell 6” thin gold ribbon 3 brown chenille stems 1 black chenille stem Black thin tip marker Red or silver glitter glue Hot glue gun Scissors Sealer spray
HOW TO MAKE IT: • • • •

Rinse the lightbulb with white vinegar and let dry. Paint lightbulb brown and let dry overnight. Paint lightbulb with a second coat and let dry for 2-3 hours. Put a dot of hot glue on the screw cap where it meets the glass of the lightbulb. Place the end of a brown chenille stem on the glue (see image). Wrap the chenille stem around the screw cap, gluing as you go. Before continuing with the second chenille stem (it will take two full chenille stems to cover the screw cap of a standard light bulb), bend the black chenille stem in half. Glue the open ends of the black chenille stem onto the brown twists you just added (to create the ornament hanger). Now continue with the second brown chenille, wrapping around the ends of the black chenille, covering them up (see image). Bend the third brown chenille stem into the shape of antlers (see image). Squeeze the bends so that the bends are touching each other (see image). Glue the antlers to the back of the chenille covered screw cap (see image). Dip thumb in red paint and gently press onto the large end of the bulb for the nose. Dip your pointing finger into white paint and dot on the eyes. Let the nose and eyes dry before continuing (see image). Meanwhile, thread the jingle bell onto the gold ribbon. When the bulb is dry, turn it over and glue the ribbon to the back of the bulb, you want the jingle bell to hang down just below the bottom of the bulb so that it appears your reindeer has on a collar (see image). Use the handle end of a paintbrush dipped in black paint to dot on the blacks of the eyes. Put a little silver glitter glue on your finger and smear it over the top of the red nose. When dry, spray the entire lightbulb with sealer spray and let dry by hanging somewhere safe.

• Jingle bells are available at discount department stores and craft supply stores. • Watch for sales on ribbon after every holiday. • Save burnt out lightbulbs for these types of projects. If you save the packages they came in when new, mark the outside of the box “burnt out” and store them in there so they won’t break.

Christmas Crafts Feathery Angel Ornaments Materials:
• 20mm wooden beads. Be sure to buy ones with 2 holes in them. • white feathers - short ones or medium (about 6 inches) ones • Silver pipe cleaners cut into 2.5 inch pieces • String for the hanger, I used silver crochet thread • Paint Pens • Fine black marker • Pink Crayon • 10 inch piece of pipe cleaner (any color) folded in half • Glue (glue gun or strong craft glue)
Step 1: Put the folded end of your 10 inch pipe cleaner into the hole of a wooden bead. Hold onto the pipe cleaners while you create the angel’s face. Step 2: Create the angel’s face. Use paint pen for the hair, a fine marker for the face, and pink crayon for the cheeks. Step 3: Let your angel face dry. You can set it in a jar or glass. Step 4: Bend silver pipe cleaner into a circle. Glue it onto your angel’s head for a halo. Step 5: Squirt glue into the bottom hole of your angel’s head. Place two feathers in the hole with the glue.

Step 6: Take 7 inches of string, fold it in half and knot it. This will be the hanger for your ornament. Step 7. Squirt glue into the hole on top of your angel’s head being careful of the halo. Step 8: With a pin push the knot of your hanger into the glue filled hole. Step 9: Let dry!

Family Holiday Recipes
Appetizers ROSEMARY GOAT CHEESE TART 3 oz. goat cheese 3 tbsp. heavy cream 1 sheet frozen puff pastry, thawed 1 lemon 3 tbsp. fresh rosemary leaves Freshly ground black pepper Position a rack in the centre of the oven and heat the oven to 450 F. Add the cheese and crumble into a small bowl. Add the cream and mash together with a fork until combined and smooth. Cut the piece of puff pastry in half, fold the sides over a little to make a boarder. Dollop and spread the cheese mixture inside the borders of each pastry. Evenly grate the zest of the lemon over the cheese. Scatter the rosemary leaves and grind a little pepper evenly over the top. Bake the tarts until puffed and golden brown on the top and bottom, about 17 minutes, rotating the pan halfway through baking. Cut each tart into three or four pieces and serve hot.
JAPANESE FRIED CHICKEN WINGS 3 1 1 1
lbs. chicken wings egg cup flour cup butter( not margarine)
Wash wings and coat in egg then flour. Melt butter in a frying pan and fry chicken until golden brown. Place wings into large baking pan. 3 tbsp. soy sauce 3 tbsp. water 1 cup white sugar ½ cup white vinegar ½ tsp. walt Stir until sugar is dissolved. Pour over wings. While cooking, turn wings once or twice to coat evenly with sauce. Serve hot.
In the Kitchen Microwave garlic cloves for 15 seconds and the skins slip right off.

LAZY SAUSAGE ROLLS 2 cups biscuit mix 1 tsp. onion powder 1/2 cup water 1 lb. pork sausage meat, mild or hot 1/2 tsp. cayenne pepper Stir biscuit mix and onion powder together. Add water. Mix until it forms a ball. Turn out onto floured surface. Knead, roll out to 15x18 inches. Mash sausage meat with fork, mix n desired amount of cayenne pepper. Spread over dough. Roll up jelly-roll style. Slice into one-half inch slices. Arrange on greased baking sheet. Bake in 450 F oven for about 15 minutes.

Entrées ROAST GOOSE Potato stuffing: 3 medium potatoes peeled and quartered 1 cup milk 1/4 cup margarine 1 1/4 cups chopped onions 1/2 cup chopped celery 5 cups Croutons 2 tsp. parsley flakes 1 1/2 tsp. poultry seasoning or sage 1 tsp. each of salt and pepper 10-lb. goose Cook and mash potatoes, add milk. Melt margerine in frying pan, add onions and celery sauté until soft. Add mashed potatoes. Add croutons, parsley, salt and pepper. Toss well. Let stand for 30 minutes to moisten croutons. Prepare goose for stuffing. Stuff goose. Roast goose covered in 450-F oven for 20 minutes; reduce heat to 350 F for 3 1/2 to 4 hours. To brown goose remove cover for 10-20 minutes. Will have a lot of drippings.
BROCCOLI SALAD Mix enough of the following to fill a large bowl: Lots of croccoli cut into small sections Red grapes halved Slivered almonds, toasted Celery, chopped Green onions, chopped 1 pkg. chopped cooked bacon Dressing: 1 cup mayonnaise 1/3 cup white sugar 2 tbsp. white vinegar Mix dressing ingredients. Pour dressing over salad and mix well. Chill for one hour.

STUFFED PORK TENDERLOIN 4 tbsp. olive oil 1 yellow onion, finely chopped 1 16-oz. package fresh spinach 1 pork tenderloin 8 oz. feta cheese 1 roasted red pepper, diced 12 sundried tomatoes, chopped Salt and pepper 3 tbsp. Italian seasoning Preheat oven to 350 F. Heat two tablespoons of olive oil in a large skillet over med heat. Saute the onions until they begin to soften, about five minutes. Add spinach and saute until it is wilted down. Remove from heat and let cool. Cut through pork tenderloin lengthwise so it can open up like a book. Do not cut right through. Using a meat mallet, pound out each side until it is about one-quarter inch thick. Distribute the spinach and onion mixture over tenderloin and top with feta cheese, red pepper, and sundried tomatoes. Roll tenderloin from the long side (like a jelly roll) and tie with string or skewers so it holds shape.
Sprinkle the outside with salt, pepper and Italian seasoning. Heat the remaining olive oil in an ovenproof skillet over medium heat. Add tenderloin and let it sear on all sides for about five or six minutes. Place skillet in oven or transfer to an oven-proof baking dish. Roast the pork for about 35 minutes. Remove from oven and cover with foil to let the juices redistribute and to rest for 10 or 15 minutes. Remove string and skewers from the pork and cut into one-half-inch thick slices. I have made this numerous times and everyone loves it. They cant wait to have again and again. It is also good the next day so you can make it ahead and reheat and freezes well too.
In the Kitchen It’s important to let a roast — beef, pork, lamb or poultry — sit a little while before carving. That allows the juices to retreat back into the meat. If you carve a roast too soon, much of its goodness will spill out onto the carving board.

6 large potatoes 1/4 c. crushed garlic 1 c. chicken broth ½ c. sour cream 2 tbsp. butter ½ c. parmesan cheese Olive oil Salt and pepper Boil potatoes in broth with garlic and butter. Once cooked, mash using some of the liquid. Be careful not to use too much (about one-third cup). Beat in sour cream, butter salt and pepper until fluffy. Place in a casserole dish, sprinkle with cheese and olive oil. Bake at 350 F about 25 minutes.

PUFF PASTRY
1 sheet of unthawed puff pastry 1 8-oz. wheel of brie 1 beaten egg Preheat oven to 375 F. Roll out a sheet of puff pastry after you have let it unthaw for about 20 minutes. Place the round of brie in the center of your puff pastry and Top the brie with about half of the cranberry mixtur (recipebelow). Gather the edges at the top and brush the puff pastry with the egg wash. Bake for 20 or 25 minutes or until pastry is a nice golden brown. Serve with crackers and the other half of the cranberry mixture alongside.
AMAZING CRANBERRY SAUCE 1 lb. or 454-g bag of cranberries 1 cup water 1 cup sugar 1/4 cup of grand marnier 1 medium to large apple cored, peeled and chopped (granny smith) 1/2 lemon juiced 1/2 orange juiced 1 cup chopped walnuts 1/2 to 3/4 cup of raisins (how much you like) 1 tsp. cinnamon 1 tsp. nutmeg Bring water and sugar to a boil. Once boiling, add cranberries. Bring the mix to a boil again then reduce to a simmer. Add remaining ingredients in the mixture and cook 10 to15 additional minutes. Serve warm or cool.

CHRISTMAS MORNING PIE 1 lb. pork sausage, cooked and drained 1 cup swiss cheese, shredded 1 cup cheddar cheese, shredded 2 unbaked pastry shells (9 inches) 6 eggs, lightly beaten 1 cup milk 1/2 cup onion, chopped 1/3 cup sweet red pepper, chopped 1 1/3 cup green pepper, chopped
1 lb. ground ham 1 1/2 lbs. ground pork 2 eggs 3/4 cup milk 1 cup cracker crumbs 1 cup vinegar 1/2 cup water, cold 1 tbsp. dry mustard 1 cup brown sugar Preheat over to 325 F. Shape meats, eggs, milk and cracker crumbs into 20 balls. In a separate bowl mix vinegar, cold water, dry mustard and brown sugar. Cover the meatballs with sauce, bake for two hours. Cover dish for the first hour only.
In a large bowl, combine sausage and cheeses. Place half of mixture in each pastry shell. In a large bowl, combine eggs, milk, onion and peppers. Pour half of the mixture over sausage in each shell. Bake at 350 F for about an hour or until a knife inserted near the centre comes out clean. Let stand five minutes before cutting.

Desserts BOURBON BALLS 1 cup heavy cream 1/4 cup bourbon 1/2 tsp. pure vanilla extract 12 oz. bittersweet chocolate, chopped (about 2-1/2 cups) 8 oz. pecans, toasted and cooled (about 2 cups) 8 oz. plain homemade or storebought pound cake (thawed if frozen), cut into cubes (about 2-1/2 cups) 2/3 cup cocoa powder, preferably Dutchprocessed 1/3 cup confectioners’ sugar In a small saucepan, bring the cream just to a boil over medium-high heat. Remove from the heat and stir in the bourbon and vanilla. Sprinkle the chocolate evenly over the cream and let sit without stirring for 5 minutes. Meanwhile, pulse the pecans in a food processor until coarsely chopped. Add the pound cake and pulse until the nuts and cake are finely chopped. Stir the chocolate and the cream until smooth. Pour the chocolate over the pecan and pound cake mixture in the food processor and pulse until combined. Transfer to a medium bowl and refrigerate, stirring occasionally, until firm enough to scoop, about one hour. Sift the cocoa powder and confectioners’ sugar together into a medium bowl. Line a rimmed baking sheet with waxed paper or parchment. Scoop out a heaping tablespoon of the bourbon-chocolate mixture and roll it in your hands to form a ball. Transfer the ball to the cocoa-sugar mixture, roll it around to coat, and transfer to the baking sheet. Repeat with the remaining. Sift some of the remaining cocoa-sugar mixture over the bourbon balls just to dust them. Refrigerate the bourbon balls until firm, about two hours. For a nice presentation, you can put them in mini-muffin cups.

PISTACHIO CRANBERRY MARBLE FUDGE
ORANGE FLUFF DESERT
This fudge is great to add to a desert tray or pack up in small truffle cups in a small box for a hostess gift. Decadent with a slight crunch from the chewy cranberries
1 large container of cottage cheese 1 large container of Dream Whip 1 large package of orange Jello (dissolve and make Jello or just add crystals) 1 small can drained mandarin oranges
Preparation time: 10 minutes Set time: 6 hours
Mix all together and chill. Can be used with other fruit and Jello to coincide.
1 can (300-ml) sweetened condensed mil 2 cups dark chocolate 1 cup milk chocolate 2 tbsp. salted butter 1 tbsp. vanilla liqueur or 1 tsp vanilla extract 他 cup shelled pistachios and dried cranberries 2 oz. white chocolate, melted In saucepan, melt condensed milk, bittersweet and milk chocolates and better over medium heat, stirring occasionally. Stir in pistachios, cranberries and liqueur until well combined. Pour into parchment pape- lined eight-inch baking pan. Drizzle white chocolate over top and let stand for 6 hours until completely set and firm. Make 64 pieces.
CRANBERRY CONCOCTION 2 cups fresh cranberries, ground in food processor (chunky) 1 1/2 cups sugar 1 medium-sized crushed pineapple, well-drained 3 fups small marshmallows 1 cup whipping cream, whipped stiff In a large bowl combine all ingredients, fold in whipped cream. Let stand over night in fridge to blend flavors. Stir well before serving.

CHRISTMAS PIE 2 cups crushed Oreo cookies 1/4 cup butter, melted 1/4 cup green creme de menthe 1 7-oz. jar of marshmallow creme 2 cups whipping cream Maraschino cherries Mix together cookie crumbs melted butter. Press crumbs to bottom and sides of a nine-inch pie pan. Chill for several hours. Mix together marshmallow creme and creme de menthe until well blended. Fold in the whipping cream. Pour into pie pan over cookie crust. Top with maraschino cherries.

CANDY CANE BARK 2 cups dark, white or semi-sweet chocolate chips 1/4 cup crushed peppermint candies or candy canes, crushed (approx.) Line a rimmed baking sheet with wax paper. Place chocolate chips in a medium-sized, microwave-safe bowl. Microwave on medium for one minute; stir. If necessary, continue to microwave, 15 seconds at a time and stirring after each interval, just until chips are melted and smooth. Place candy canes into a sealed ziplock or between two pieces of wax paper, use cup, rolling pin, can of soup, to break up the candy canes — this is the fun part. Stir all but one tablespoon crushed candy into the melted chocolate. Pour chocolate mixture onto prepared baking sheet; spread evenly, about one-half inch thick. Gently tap the bottom of the baking sheet on the counter to even out the thickness of the mixture. Sprinkle the surface with reserved peppermint candy. Chill for 30 minutes or until firm (if snow or cold outside, leave it to sit out on a snowbank to chill).
Break into pieces. Store, tightly sealed, in a cool, dry place. Makes about three-quarters of a pound candy. Increase peppermint candy, if desired. It is a great way to get rid of all those candy canes!
PLAY DOUGH Fall 1971 — I was at Levette Lake near Squamish when my car died. It was dark, cold and an early snow storm. I walked to a house at the bottom of a long hill to Paradise Valley. A family who worked for CBC Radio was sitting around the kitchen table making playdough creatures with their small daughter. They gave me the recipe. The tow-truck could not come until the next day. 1 cup salt 1 1/2 cup flour 1/2 cup water 4 tablespoon oil Food colouring Knead all together. Let get cold in fridge. When it gets too soft to easily handle, put back in fridge.
