Expanding your culinary skills in the New Year BY TANIS REID Red Deer Express Many people’s New Year’s resolutions revolve around eating habits, eating healthier, eating less or eating at home. The Cooking Room in Red Deer is a place to learn what to eat and how to prepare it, try new things and taste some new dishes. The Cooking Room has been open for eight years; Selena Hucal officially opened its doors in 2005. Hucal used to live in Manitoba where she graduated from the University of Manitoba as a registered dietitian. Manitoba also gave her the opportunity to take many classes from the different culinary schools in the province. When she would travel she would expand her experiences with food by taking classes here and there. However, when Hucal and her husband Ivan moved from Winnipeg to Red Deer in 2000, they quickly came to realize that Red Deer did not have a very developed culinary scene. She decided to supply Red Deer with a new approach to inspiring a love of good food and a desire to cook at home. Thus The Cooking Room was opened. The Cooking Room is a place that offers Red Deerians a unique way to put together all the elements of a great kitchen party – interesting people, lively conversation and the inspiration to create great food. “I have always loved being in the kitchen. Ultimately that is where it all started. I love being in the kitchen and I love teaching people and I those two concepts
together. Working with people to improve their lives and health and food is a big part of that,” said Selena. “From a dietitian’s perspective I spent years teaching people about nutrition and how to eat well. Then I discovered that one of the major roadblocks for people is cooking skills, what their culinary cooking skills are like,” she said. The Cooking Room offers three different types of cooking classes. First there is the Hands On Cooking where participants learn by doing. Everyone is set up at one of the cooking stations, usually in groups of four and are asked to prepare an aspect of the meal under the expert guidance of a professional chef. Afterwards everyone partakes of the meal together tasting what everyone has made. A Demonstration Cooking class is perfect for people wanting to see what happens behind the scenes in a professional kitchen. The chef will prepare a meal while demonstrating knife handling, how to properly season a dish and how to select fresh ingredients. Once again, everyone partakes of what the chefs create. Finally, there is the Chef’s Table. This is when an intimate group of about 10 people get an up close lesson on a few of the finer culinary techniques. This is a great way to get personal time with professional chefs and to experience the craft of cooking from a ringside seat. Each participant will get to taste the meal prepared and will receive a recipe pack to take home. The Cooking Room also offers custom

Taking relationship advice from an ancient queen Was 2012 a banner year for your love life?

MACLEOD If not, let’s try something new this New Year. Let’s go back a couple thousand years to excavate some ancient advice from Cleopatra, Egypt’s most famous queen. The ancient author Plutarch conveyed that her presence was ‘irresistible’ and her conversation ‘bewitching.’ Shakespeare spoke of her ‘infinite variety.’ Indeed, her long marriage to Antony was pleasure-filled.

Fan the flames of passion and partnership every day, so that boredom and familiarity cannot extinguish them. Community offers an array of programs to enrich your life BY ERIN FAWCETT Red Deer Express There are many programs offered in the City to help accomplish your best self in 2013 - whether it be to give back to the community more, improve health and fitness, gain new hobbies or seek out new adventures. For many being healthier, getting into shape, eating cleaner or losing weight is at the top of the list when the New Year rolls around. Red Deer College offers a number of courses including a move and play workshop, Zumba, swing into spring for golfers and performance sport yoga, among others. Local gym and fitness clubs also offer a number of boot camps as well as personal trainers and nutritionists – all of the tools needed to achieve this particular goal. If you’ve made a promise to yourself to travel more this year, RDC has a few travel opportunities that could help. The College will host a weeklong excursion to New York City next month where participants can
take in first-class theatre from renowned actors, instructors, directors and designers. At the end of April there is also a study trip to Mexico where there will be opportunities to volunteer and work with children in orphanages, schools and special needs agencies, among others. And in May there is an opportunity to travel to China where travelers can study life firsthand in both modern and ancient China. The City of Red Deer also offers residents an array of activities. For the kids there are music programs, dance programs, theatre programs and art programs, among many more. For adults there is a variety of photography courses, adult dance classes, guitar lessons, chocolate-making classes, herbal medicine workshops and more. The City also offers swimming lessons for all ages as well as mom and baby water workouts and aquasize. There are also various opportunities to become part of a number of clubs
throughout the City as well. Some clubs include the Exelta Gymnastics Club, the Country Pride Dance Club, as well as a variety of clubs at the Golden Circle. Red Deerians can also
sign up for day camps which are hosted by the City. There are a variety available for a wide-range of age groups and interests. And finally, there is also a variety of sports pro-

typically follow a similar format. “Within the hour you do 16 songs straight through. It combines all Latin styles of dancing including cha-cha, salsa and merengue. It’s a beat that people just start moving to as soon as they hear it.” It can be modified to fit various themes as well. “All the moves are easy to follow.” Ultimately, it’s just loads of fun and provides a lively, thorough workout in a supportive, non-threatening environment. Beginners are encouraged to do the entire hour but of course can modify the moves to make it easier as they adjust. It also takes a little while to get the moves down pat, but it’s all fun and Brooks maintains there is no sense of anyone judging anyone else’s fitness or ability level. Also, it’s not just for the ladies – Brooks’ classes have several guys that regularly take part as well. Chair Tease also offers Zumba classes on a drop-in basis. She added that people are quickly won over to Zumba, especially those who aren’t so much interested in more conventional ways to getting fit like going to a gym. Refresh and rejuvenate your skin If you are like most of us, you probably spent most of the holidays eating all the wrong foods, sleeping too little, and celebrating too much.

KREIGER All of this fun can be hard on your skin and can leave you looking tired and dull. The following are some procedures that will help to refresh and rejuvenate your skin helping to improve your skin tone and texture. The least invasive procedure is a facial. This is a great way revitalize your skin slightly and it is very relaxing. Most facials include a cleanse, manual exfoliation, steam, extractions, face massage and a mask suited to your skin type. A spa facial is a great way to clean up your skin if you have minor blemishes and just need a refreshing. If you want a bit more aggressive of an exfoliation, you can add a glycolic peel to your facial. A glycolic peel is a gentle chemical exfoliation that dissolves the top layer of skin to reveal the fresh new skin underneath. This type of peel is applied to the skin and then removed after a few minutes. Your skin
should not peel afterwards. You will be advised to use a moisturizer containing SPF 30 since your skin will be more sensitive to the sun for a few days. If your skin requires more than just a slight rejuvenation, a microdermabrasion may be what you’re looking for. A microdermabrasion uses crystals and suction to help exfoliate your skin. The machine blasts crystals at your skin while sucking up dirt, dead skin and used crystals. The feeling has been compared to a cat licking your face. The treatment will usually include a cleanse and gentle massage and you will be advised to use a moisturizer with SPF 30 afterwards as your skin will be more sensitive to the sun for a few days. Diamondabrasion is another option similar to microdermabrasion. It uses a laser cut diamond tip wand and suction rather than crystals. It is a more accurate procedure and the technician is able to get closer to the eye and mouth area without worrying about stray crystals getting into your eyes or mouth. The next level of exfoliation would be a Jessner peel. Although it is still considered a gentle peel it is much more aggressive than a glycolic peel. The solution is made of several acids including salicylic and lactic acid. This procedure will usually still include a cleanse but the peel solution will be applied up to three times and then left on the skin.
Colic and your child’s spine Crying for three hours per day more than three days per week for more than three weeks is defined as colic. Nothing you seem to do can ease this abdominal cramping in your baby and as a result I often see mothers coming in worn out and tired. I tell mothers-to-be and parents with children that it is not normal to have a child that is fussy, irritable or cries all the time. If a child is otherwise healthy, fed well, sleeps and is held often then there should be no reason to be irritable. I have three children and I can count on one hand the number of times they have cried for no physiological or psychological problem. Too often mothers are told that it’s just part of being a new parent and the baby will get over it in time. I disagree with this remark in the fact that it can be dealt with effectively and extremely quickly by your doctor of chiropractic. The first question I ask new mothers is about the birth process, c-section, natural, forceps, vacuum extraction, OP etc. How long was the labour; what was the baby’s weight? The first trauma in life is birth trauma and anyone who says children have

Upper cervical or upper neck subluxations (spinal misalignments) are extremely common during the birthing process and as a result of theses subluxations the blood supply to the brain as well as the nerve supply to the body can be interrupted. As a result of this interference the body and brain do not communicate well and things go wrong, the baby is restless, irritable and cranky. Most adults have had a rib or mid back out of place and know the pain it causes well in a child the pain is not there but instead it directly affects the visceral organs like the intestines and stomach. The second question is about feeding and the mother’s diet. Do some research and learn what you should not eat or drink that will negatively affect the baby’s digestion and mood. Many new mothers are not taught how to feed their child either. Just the other day I had
a mother come in with a gassy baby, she was feeding on both breasts without a break, she was never told not to. Young babies should be fed for five to seven minutes then up for a burp, feed another five to seven, then switch sides and do the same. This will allow the child to get rid of the air swallowed during feeding. More often than not when checking the mobility in a newborn’s spine I feel restrictions in the lower back and mid-thoracic spine. A couple ounces of pressure and the problems are solved! By mobilizing the vertebra that has been dislodged due to the birth process, being in a car seat or trying to lift its head, we can alleviate the nervous system irritation and almost immediately cure colic. It is completely painless and the baby usually sleeps or looks around. It is the parent whom has to get over the fear that chiropractic may be rough or hurt their child.
