INGREDIENTS 1 bag fresh ravioli (25 oz., use your favorite – we used 4-cheese) 1 1/2 T. olive oil 2 garlic cloves, minced 1/2 C. whipping cream 1/2 C. vegetable broth 1/2 lb. mushrooms, sliced
2 C. fresh spinach 1 1/2 C. shredded parmesan cheese 1 t. pepper 1/2 t. red chili pepper flakes 1 T. parsley, for garnish
INSTRUCTIONS 1. Oven to 400. Grease 9x13 baking dish. Heat oil in a saucepan over medium heat. Add garlic, sauté for about a minute. Add the cream, 2 T. parmesan & broth. Bring to a gentle simmer, heat to low & simmer for about 10 minutes, season with pepper to taste. The sauce should thicken enough to coat the back of a spoon. 2. In the meantime, sauté the spinach in 1/2 T. oil, then set aside. Wipe the pan from spinach water, heat 1/2 T. oil, sauté mushrooms about 5 mins. 3. Pour a little of the cream sauce into the bottom of the baking dish. Arrange half of the ravioli in a single layer on top. 4. Top with half the sautéed spinach, half the mushrooms, half the cream sauce & half the parmesan. Repeat the layers: ravioli, spinach, mushrooms, cream sauce & parmesan.
