Worcestershire sauce 1 tbsp. yellow mustard 1 tbsp. ketchup Kosher salt Freshly ground black pepper 6 slices yellow cheddar FOR SPECIAL SAUCE 1/3 c. mayonnaise 2 tbsp. yellow mustard 1 tbsp. ketchup 1 tbsp. apple cider vinegar 1 tsp. paprika Pickle chips, for garnish 1. Preheat oven to 350°. In a large bowl, stir to combine beef, onion, egg, Worcestershire, mustard, and ketchup. Season with salt and pepper. 2. Remove seeds and veins from bell peppers and fill with meat mixture. Place in a shallow
baking dish. Add 1/4 cup water to baking dish. Top each pepper with a slice of cheese and bake until peppers are tender and meat is cooked through, 30 minutes. 3. Meanwhile, make special sauce: in a medium bowl, whisk together mayonnaise, mustard, ketchup, vinegar, and paprika. 4. When peppers are cooked, drizzle with special sauce and garnish with pickles.
