Dear Readers, We’re sure that you share our concern about the danger to the planet’s sustainability. The consequences of global warming and the unbridled exploitation of natural resources are now a reality that affects us all. At an increasingly accelerated pace, we’re seeing the poles melt, droughts and floods worsening and raw materials are getting scarce much faster than anyone imagined. In addition, we’re suffering the effects of various types of ecocide, which will be judged by history if we do not remedy them first. Because it is no longer just about what we will leave to future societies. It is a question of acting today for the ethical commitment that we must naturally take on as part of the ecosystem that sustains us. We must take on our individual responsibility as consumers, work collectively and undertake a transformation that starts with our little decisions and everyday acts. While we are all somewhat responsible for the deterioration of the environment and ecosystems, we can also be part of the solution. Choosing to consume mindfully, eating local and sustainable diets that don’t waste food, are the first steps we can take today. We want this magazine to be a window to new ways of taking action, a place from which we can look at ways of life that are respectful of nature and in harmony with the environment. With this in mind, in these pages we’ve gathered a list of unique locations, healthy products, committed initiatives and are giving voice to people who are taking care of their surroundings. We hope that this third issue will inspire and comfort you. Janek

Estimados lectores: Estamos seguros de que el peligro que acecha a la sostenibilidad del planeta no es un tema que les sea indiferente. Las consecuencias del calentamiento global y de la explotación desaforada de recursos naturales son hoy una realidad que nos afecta a todos. A un paso cada vez más acelerado vemos como se derriten los polos, se acentúan tanto las sequías como las inundaciones y escasean materias primas mucho más deprisa de lo que nadie imaginaba. Además, sufrimos los efectos de distintos tipos de ecocidio, que serán juzgados por la historia si no ponemos remedio antes. Porque ya no solo se trata de lo que dejaremos a sociedades futuras. Se trata de actuar hoy por el compromiso ético que naturalmente debemos asumir como parte del ecosistema que nos sostiene. Tenemos que asumir nuestra responsabilidad individual como consumidores, trabajar colectivamente y comenzar una transformación que empieza por nuestras pequeñas decisiones y actos cotidianos. Si bien todos somos en cierto modo responsables del deterioro del medioambiente y de los ecosistemas, también podemos ser parte de la solución. Un consumo consciente que prime la proximidad y una gastronomía sostenible que no derroche alimentos, son los primeros pasos que ya podemos dar. Queremos que esta revista sea una ventana a nuevas formas de tomar acción, un lugar desde el que poder asomarnos a modos de vida respetuosos con la naturaleza y consecuentes con su entorno. Por ello, en estas páginas hemos trabajado por dar a conocer enclaves únicos, productos saludables, iniciativas comprometidas y dar voz a personas que cuidan de lo que les rodea. Así es, el yoga no es solo un deporte, es un estilo de vida. Todas las sendas del yoga comparten unos principios y persiguen un objetivo común: encontrar equilibrio y paz interior y conectar con nuestra auténtica esencia. Y esto no se consigue sólo practicando a nivel físico, sino introduciendo hábitos en nuestra vida que nos conduzcan a un bienestar integral. Por eso, desde sus inicios, el yoga siempre ha estado hermanada con el ayurveda.

That’s right, yoga is not just a sport, it’s a lifestyle. All the paths of yoga share some principles and pursue a common goal: to find balance and inner peace and to connect with our authentic essence. And this is not only achieved by practising the yoga philosophy on a physical level, but by introducing habits into our lives that lead us to an integral well-being. That is why, since its inception, yoga has always been twinned with ayurveda.

Ayurveda means “knowledge of life and longevity.” This age-old alternative medicine system, which was also developed in India around the same time as yoga, considers that disease arises as a result of an imbalance in the body and therefore promotes healthy habits that help bring the body into balance. Therefore, one of the fundamental pillars of ayurveda is food, and the ayurvedic philosophy maintains that each person is unique and that their diet must be suited to their individual nutritional needs according to their body biotype.

Ayurveda significa “conocimiento de la vida y la longevidad”. Esta ciencia milenaria, que nació también en la India de forma simultánea al Yoga, considera que la enfermedad surge como consecuencia de un desequilibrio en nuestro organismo y por tanto promueve unos hábitos saludables que nos ayuden a mantenerlo. Por eso, uno de los pilares fundamentales del ayurveda es la alimentación, que defiende que cada persona es única y que su dieta debe adaptarse a sus necesidades nutricionales individuales según el biotipo corporal que posea.

Basic vocabulary. It is essential to know certain terms to understand the essence and goals of yoga and ayurveda:

Vocabulario básico. Es imprescindible conocer ciertos términos para comprender la esencia y los objetivos del yoga y el ayurveda:

YOGA SUTRA: With sutras being an aphorism or collection of rules, the Yoga Sutra is the set of ancient texts written by Patanjali, who is considered the father of the discipline, that lay out the foundations and paths of yoga.

YOGA SUTRA: Siendo los sutra un aforismo o una colección de reglas, el Yoga Sutra es el conjunto de textos milenarios escritos por Patanjali, considerado padre de la disciplina, en los que se definen los fundamentos y caminos del yoga.

YAMAS: Yamas are principles of universal ethical conduct. The Yamas and NIYAMAS - rules of personal conduct - are positive practices that we should bring into our lives to understand and live the essence of yoga.

Practicar el yoga de la mano del ayurveda es el equilibrio perfecto.

YAMAS: Refiere a principios de conducta ética universal. Los Yamas y NIYAMAS —reglas de conducta personal— son prácticas positivas que debemos incorporar a nuestra vida para comprender y vivir la esencia del yoga.

ASANA: Although originally asana means “seat” in Sanskrit, today this term is used to describe the various exercises and postures practised in yoga. There are yoga gurus who claim that there are as many asanas as there are living beings on the planet.

ASANA: Aunque originalmente asana quiere decir «asiento» en sánscrito, hoy se utiliza este término para describir los distintos ejercicios y posturas que se practican en el yoga. Hay profesionales que afirman que existen tantas asanas como seres vivos en el planeta.

PRANAYAMA: Pranayama is the term for conscious breathing exercises. Translated from Sanskrit it literally means “breath control”, and the goal is to get our vital energy flowing right through our body and our mind, finding calm through inhalation and exhalation control.

PRANAYAMA: Se conoce así a los ejercicios de respiración consciente. Su traducción del sánscrito es literalmente “control de la respiración” y su objetivo es lograr que nuestra energía vital fluya correctamente por nuestro cuerpo y que nuestra mente encuentre la calma a través del control de la inhalación y la exhalación.

DOSHAS: According to ayurveda, doshas are the three fundamental principles that govern the functioning of the human body. There are three doshas: Vata, which regulates movement and is related to the element air, Pitta, which regulates metabolism and is related to the el-

ikas Khanna’s (1971, Amritsar, India) professional record is so extensive and varied that it is difficult to summarise his professional and dynamic career. Several pages would be necessary to list the feats that this illustrious chef has achieved during the past two decades. Vikas emigrated to the United States with the desire to show the world the best of his home country’s cuisine and, today, he has become one of the most important figures of international cuisine.

After this presentation, how would you describe yourself?

I describe myself as a kid from Amritsar who got very fortunate and the universe took his side in many things in life. All this happened because of destiny. I think the moment we start crediting ourselves for our success or our achievements, it diminishes or devalues the success. Because there are so many parameters which come together to make one event happen.

What makes Indian cuisine unique?

Indian cuisine is so unique because it has been the mother cuisine to millions of kitchens around the world. What India presents is far more intense in the kitchen than anything else in the world. I feel very proud to be playing a small role in this massive cultural selft power.

La cocina india es tan única porque ha sido la cocina madre de millones de cocinas de todo el mundo. Lo que presenta la India es mucho más intenso en la cocina que cualquier otra gastronomía en el mundo. Y me siento muy orgulloso de jugar un pequeño papel en este enorme poder cultural.

Ha habido muchas cosas inesperadas en mi vida. Creo que una de las más importantes fue el cierre de mi restaurante en Times Square. Fue muy inesperado porque me iba muy bien y perder ese local me rompió el corazón. Pero al mismo tiempo, se convirtió en un giro muy importante de mi vida.

There have been many unexpected things in my life. I think one of the greatest was closing off my restaurant in Times Square. It was very unexpected because it was doing very well and losing that place was heart breaking for me. But at the same time, it became a very important turn for my life.

Cuando conocí a Su Santidad el Dalai Lama, me dijo “si no cierras, ¿cómo podrás explorar nuevas oportunidades y ser libre para hacer más cosas?”. Ahora creo que siempre hay algo más grande que nos espera y que te llevará a algo mucho más especial.

When I met His Holiness the Dalai Lama, he said to me “if you don’t shut down, how will you be able to explore new opportunities and be free to do more things?” Now I think there is always something bigger happening which is waiting for us and it will lead you to something much more special.

“La cocina india ha sido la cocina madre de millones de cocinas de todo el mundo” You opened your first restaurant in India when you were 17 years old. What made you do this at such a young age?

Abriste tu primer negocio de restauración en India cuando tenías 17 años. ¿Qué te llevó a hacerlo a una edad tan temprana?

I opened it with my mum and our grandmother was the head of the kitchen. I was very passionate about the idea that chefs might be invisible, but they are a part of every big celebration of a life, from weddings to retirement parties to childbirths. And that is what intrigued me and I said: “we should use the space in the back of our house to do this kind of events and gatherings”. And there is when I understood that the most important part of hospitality was customer service. You can put all the marble and granite in your kitchens and dining rooms, but if you do not understand the value of a customer, nothing means anything.

Lo abrí con mi madre y nuestra abuela era la responsable de la cocina. Me apasionaba la idea de que los chefs puedan ser invisibles, pero formen parte de todas las grandes celebraciones de una vida, desde bodas a fiestas de jubilación o partos. Y eso es lo que me intrigó y dije: “deberíamos utilizar el espacio de la parte trasera de nuestra casa para hacer este tipo de eventos y reuniones”. Y ahí es cuando entendí que la parte más importante de la hospitalidad era el servicio al cliente. Puedes poner todo el mármol y el granito en tus cocinas y comedores, pero si no entiendes el valor de un cliente, no significa nada.

After that you emigrated to the United States and ended up settling there. What remains of that young man today?

Luego emigraste a Estados Unidos y acabaste estableciéndote allí. ¿Qué queda hoy de aquel joven?

I think moving to America was a big risk in my life because I was very settled back home in Amritsar. It did it without any confirmed jobs, or any support. But what I left behind was much more important and relevant than what I gained as moving forward in America. I left parents, fa-

Your role in the dissemination and exposure of Indian gastronomy has been fundamental. What is left for us in the West to discover?

Tu papel en la difusión y exposición de la gastronomía india ha sido fundamental. ¿Qué nos queda por descubrir en Occidente?

I think there’s a lot to discover. It’s a never-ending search. There’s still so much regarding food that has to be brought over to the west and so much of western foods or techniques or ideas or implications or managements that should be taken to the East.

Over the last a few years, chefs have become celebrities. What are the positives and negatives of this?

I feel that in the last decade chefs have obtained the status of celebrities thanks to the power of social media and television. Although this has of course positives things, I think the downside is that now many chefs just want to be famous. I think that is a very destroying part. This is a very unforgiving industry, and I feel that it is very important to have you culinary, artistry, research, curiosity... first taken care of.

Creo que en la última década los chefs han obtenido el estatus de celebridades gracias al poder de las redes sociales y la televisión. Aunque esto tiene, por supuesto, cosas positivas, lo negativo es que ahora muchos chefs solo quieren ser famosos. Esta es una parte muy destructiva. Tengo muchos sueños. A veces me parece que acabo de empezar. Tengo muchos proyectos en marcha, trabajo constantemente en nuevas ideas, nuevos proyectos, buscando cómo llevar la historia de la India a más y más gente. Uno de los proyectos más importantes que se lanzará en pocas semanas se llama Secret Foods of India y es un libro Opus magnum que hemos estado preparando durante ocho años.

I have a lot of dreams. Sometimes I feel like that I have just started. I have a lot of more projects coming out, I’m constantly working on new ideas, new projects, finding the way to bring the story of India to more and more people. One of the most important projects launching in few weeks is called Secret Foods of India and it’s a magnum opus book that we have been making for eight years now.

“Feed India became one of the largest food drives by an individual in the world.” Your Feed India initiative, which was carried out throughout the first months of the COVID-19 pandemic, has been one of the largest food collection campaigns in history. Can you tell us about how it was managed and what it consisted of?

Tu iniciativa Feed India, que se llevó a cabo en los primeros meses de la pandemia de COVID-19, ha sido una de las mayores campañas de recogida de alimentos de la historia. ¿Puedes hablarnos de cómo se gestionó y en qué consistió?

Feed India went on wholeheartedly full strength for one year, and then we slowed down as things were coming back to normal. It’s still going on in some areas of India. As a chef, if hunger doesn’t move you, then you’re in the wrong business. Hunger and compassion for hungry people has to be your very big driving force. For me also it included the commitment to my mum, that I would do anything to support the country, to support my people. I think that is why Feed India became one of the largest food drives by an individual in the world. At the same time it was very challenging, it was a very heavy experience for me, emotionally, physically, spiritually... it was like almost being on a rollercoaster ride.

Feed India se llevó a cabo a pleno rendimiento durante un año, y luego se redujo el ritmo a medida que las cosas volvían a la normalidad. Todavía está en marcha en algunas zonas de la India. Of course, I believe in sustainable food and I think Chefs will be the leaders of the farming side of the game. It is great seeing the awareness of sustainability, which is extremely important in order to run a successful business or a kitchen. As chefs, we have to reinvent ourselves constantly and we have to be on top of the game. At this time people expect something new from us.

Turmeric is originally from India, where it has been grown for at least 2,000 years, although it has been known for more than 4,000. At first it was used as a medicinal spice, but soon it would be used for dyeing, perfuming and as a cosmetic. It is one of the most commonly used natural food dyes in the culinary traditions of several countries.

The history of humanity is full of myths which have been passed on from generation to generation. Several accounts of the origin of sangria have been passed down to our time, but the most trustworthy of these dates back to 1800 and tells us that it was created by farmworkers in Spain and Portugal with produce that they had available from their vegetable patch: different types of citrus fruits and, of course, wine.

En la Edad Media, el hipocrás era una bebida muy recurrente; es similar al vino caliente que se bebe hoy en Suiza (Glühwein) o a la Cuerva. También guarda semejanza con la sangría la Zurra o Zurracapote.

The mixture of wine spiced with fruits was not talked about as being “sangría” until the 18th century, but this does not mean that it was not being consumed until that time. Today you’re one of the most renowned sommeliers in the world, but we know that your first passion was being in the kitchen. What were your beginnings like?

Hoy eres uno de los más reconocidos sommeliers del mundo, pero sabemos que tu primera vocación fue en la cocina. ¿Cómo fueron esos inicios?

When I started studying at the hospitality school in Teruel, my idea was to train to work in the kitchen, but then I discovered waiting work and it captivated me so much that it became my true vocation. In the dining room, the chances for me to grow multiplied and this motivated me much more, so I decided to devote myself to it.

Cuando empecé a estudiar en la Escuela de Hostelería en Teruel, mi intención era formarme para trabajar en la cocina, pero conocí el trabajo de sala y me cautivó hasta convertirse en mi verdadera vocación. En la sala las posibilidades de crecer se multiplicaban y esto me motivaba mucho más, así que decidí dedicarme a ello.

How did you train to be a sommelier?

¿Cómo te formaste para ser sommelier?

When I finished school, my priority was not to devote myself to wine, I wanted to head towards the restaurant service. But then I had the opportunity to work at Zalacaín, the first Spanish restaurant to get three Michelin stars, where I met master sommelier Custodio Zamarra. He was my mentor and he gave me the bug for the world of wine and sommeliering. Then, in 2005, I got the chance to work at Bulli and I decided to start my regulated training at the Wine & Spirit Education Trust (WSET) and at The Court of Master Sommeliers in London.

Al terminar en la escuela, mi prioridad no era dedicarme al vino, yo quería encaminarme hacia el servicio de restaurante. Pero entonces tuve la oportunidad de trabajar en Zalacaín, el primer restaurante español en conseguir tres estrellas Michelin, y allí conocí al maestro sommelier Custodio Zamarra. Él fue mi mentor y quien puso en mi el gusanillo del vino y la sumillería. Posteriormente, en el 2005, me surgió la posibilidad de trabajar en Bulli y decidí comenzar mi formación reglada en la Wine & Spirit Education Trust (WSET) y en The Court of Master Sommelier de Londres.

With your career, you could settle in any culinary capital of the world... so why Teruel?

I’ve always felt deeply connected to my land. I love leaving the country to train, but always with the aim of returning home and bringing everything I’ve learned back here. The world is very big, but Teruel has never prevented me from doing everything I’ve ever wanted.

It may seem like I’m in the middle of nowhere, but I feel like I’m at the centre of everything, very close to all the people and things that I like, so here I have much more motivation than in other places where I think I wouldn’t put in the same effort, nor the same affection, to my work.

To someone who doesn’t know anything about wine, how would you explain what a sommelier’s job is?

A alguien que no sabe nada de vinos, ¿cómo le explicarías en qué consiste el trabajo de un sommelier?

We’re basically waiters who serve wine… (laughs). Our profession is complex, because apart from being specialised in all types of beverages, our skills and knowledge are what allow us to select wine well and thus we can improve our establishment’s purchases and sales, making businesses profitable.

Básicamente somos camareros que servimos vino… (ríe). Tenemos una profesión compleja, porque, aparte de estar especializados en todo tipo de bebidas, nuestras destrezas y conocimientos son los que nos permiten seleccionar bien el vino y así podemos mejorar las compras y las ventas a nuestros establecimientos rentabilizando los negocios.

What qualities should a good sommelier have?

¿Qué cualidades debe de tener un buen sommelier?

Honesty, humility and sensitivity. A good sommelier has to defend an expensive wine with the same affection as a simpler one. We do not see only the wine but the people behind it making it possible and for that, sensitivity is fundamental.

Honestidad, humildad y sensibilidad. Un buen sommelier ha de defender con el mismo cariño un vino caro que otro más sencillo. Nosotros no vemos sólo el vino sino a las personas que hay detrás haciéndolo posible y para eso la sensibilidad es fundamental.

¿Y un buen vino?

For me there are two types of wine. Those with impeccable technique, that have perfect oenological work behind them, and wines with soul, those that have small defects due to the naturalness of their elaboration, but that represent the people behind it. As a sommelier, I believe that any wine that has a diversity of aromas, volume in the mouth and is made with love, is a good wine.

Para mi hay dos tipos de vino. Los de técnica impecable, que llevan un trabajo enológico detrás perfecto, y los vinos con alma, aquellos que tienen pequeños defectos por la naturalidad de su elaboración, pero que representan a las personas que hay detrás. Como sommelier, creo que cualquier vino que tenga diversidad de aromas, volumen en boca y que esté hecho con cariño, es un buen vino.

What is the perfect pairing for you?

¿Cuál es para ti el maridaje perfecto?

For me it’s not just about wine and food, but who we share it with. The nice thing about wine is that it invites you to share it with the people you love the most, to sit down and enjoy the moment and taste it, and that is a perfect pairing.

Para mí no se trata solo de vino y comida, sino de con quien lo compartimos. Lo bonito del vino es que invita a ser compartido con quienes más queremos, sentarnos a disfrutar del momento y saborearlo y ese sí es un maridaje perfecto. ¿Qué sorpresas nos puede dar el mundo del vino próximamente?

What surprises could the world of wine give us in the near future?

Espero que muchas… no sé qué sorpresas podrán ser, pero yo personalmente tengo dos deseos. El primero es que a Aragón le otorguen los 100 puntos Parker para demostrar al mundo que esta es tierra de vinos. El segundo, rejuvenecer la profesión y hacer que el vino sea un producto también para gente joven.

I hope many... I don’t know what surprises they could be, but I personally have two hopes. The first is that Aragon be awarded 100 Parker points to show the world that this is a land of wine. The second is to rejuvenate the profession and make wine a product young people will enjoy too.

According to the FAO (The UN’s Food and Agriculture Organisation), a sustainable diet is one that causes a low environmental impact and promotes all dimensions of people’s health and well-being. But, in addition, Cook & Chef considers it essential to add two ingredients to this definition: the enjoyment of food and social awareness.

any spend their time trying to figure out what the meaning of life is. I, personally, have always focused on enjoying every present moment of this journey.

uchos se pasan el tiempo tratando de averiguar cuál es el sentido de la vida. Yo, personalmente, me he centrado siempre en disfrutar de cada momento presente de este viaje.

I was born in a small vegetable field — I’ve never known where exactly — when it was still cold and the first leaves began to sprout in the trees. I remember the first time my plant peeked out into the earth and I breathed in the scent of spring over the fields. I thought: what a beautiful experience to live!

Nací en un pequeño huerto, nunca tuve claro dónde exactamente, cuando todavía hacía frío y comenzaban a brotar las primeras hojas en los árboles. Recuerdo la primera vez que mi planta asomó entre la tierra y respiré el aroma de la primavera sobre los campos. Pensé: ¡qué bonita la experiencia de vivir!

I grew up surrounded by my brothers and sisters and, little by little, I had to learn to appreciate our differences. I found out that I wasn’t perfect - I had my wrinkles, curves and spots but it didn’t matter. On the inside, I felt like I was cultivated and at peace with my faults. I think humans call it “growing up.”

Me crie rodeado de mis hermanos y hermanas y, poco a poco, tuve que aprender a apreciar nuestras diferencias. Descubrí que no era perfecto -tenía mis arrugas, mis curvas y mis manchitas-, pero que poco importaba. Por dentro me sentía cultivado y en paz con mis defectos. Creo que los humanos lo llaman “madurar”.

Then came the summer, a kind hand separated me from my stem and we abandoned our shrub. We embarked on a journey through the region. We travelled along long roads and across rolling green meadows, saw vast fields and extensive groves and watched the animals graze in freedom.

Después llegó el verano, una mano amable me separó del tallo y abandonamos nuestra mata. Emprendimos un viaje a través de la comarca. Recorrimos extensos caminos y verdes praderas, contemplamos vastos sembrados y extensas arboledas y vimos a los animales pastar en libertad.

Discovering the world beyond our vegetable field was the greatest adventure I’ve ever experienced, and now I’m ready to rest. All I have to do is thank the human who raised for me his devotion and his affection during every stage of my growth. I hope they also appreciate the nuances of their hard work and the taste of my land.

Descubrir el mundo más allá de nuestro huerto ha sido la mayor aventura que he vivido, ahora estoy listo para descansar. Solo me queda agradecer al humano que me crio su dedicación y su cariño durante cada etapa de mi crecimiento. Espero que ellos también aprecien los matices del trabajo bien hecho y el sabor de mi tierra. Sin duda, soy un tomate con suerte.
