Welcome to Darling. Pulling a magazine together during lockdown was always going to be a challenge, but we reminded ourselves of why we created Darling in the first place. We had the goal of supporting local businesses and it’s more important than ever, so here we are with the third edition! One of the reasons we love our unique neighbourhood are the people. They’re our community, and there’s no greater sense of community, than in a crisis. We are delighted to support Darling magazine again this spring. For me, I have celebrated spring by shopping online at Stem finding a pop of colour for our home. I have bought lovely hair masks using phone and collect from Mecca. Beyond the canvas Extending her creativity beyond the painted form, local artist Lara Scolari embarks on a range of art collaborations. Lara’s venture into collaborations began in 2016 when Sails on Lavender Bay approached her. Inspired by the restaurant’s sweeping harbour views, Lara created a stunning piece of art displayed as a feature in the restaurant and reproduced on menus and marketing material. Fast forward to today and she has released her own Lara Scolari Collection with both Designer Rugs Australia and Luxe Walls and her spectacular designs are now available in carpet, rugs and luxury wallpaper, adorning high-end homes and commercial spaces worldwide.
On her collaborations with Designer Rugs Australia and Luxe Walls Lara says, “The hardest part is not being able to see the finished product, just a small sample or digital design on a computer where the colours show no depth. I usually work with large textured pieces of art, so this took some getting used to.” Over the years Lara has worked with a range of design professionals, from interior designers and stylists through to architects and property developers and she’s always open to new collaborations. “My art is designed to complement their vision and I have an enormous respect for other creatives. It takes a village

Launching a business amid a global pandemic is no mean feat, but a shift towards supporting local set White Bay Beer Co up for success.
An idea hatched by beer biz professionals, friends, and peninsula locals back in 2019 came into fruition in April 2020 when White Bay Beer Co opened its doors, and the peninsula got its first craft brewery. Adam TrippeSmith, co-founder explains, “We opened at a crazy time. Sydney had just gone into lockdown and pubs were a no go, so we put most of our beer into cans and hoped locals would support us.” Excited to try the new local brew, residents turned out in force, buying every last can available. Once lockdown lifted, the beer started flowing at local pubs and restaurants as well, and it wasn’t long before White Bay Beer Co established itself as one of Sydney’s top quality breweries. Testament to the fantastic new brew, it’s now stocked in pubs and bottle shops across NSW and ACT. The long-term plan was always to transform the 1,400-square-metre former steel mill into a brewery and tap room. In June this year it opened with 14 taps dedicated to pouring quality beers. White Bay Beer Co’s much loved core range is served alongside limited releases, giving the brewers
a chance to flex their creativity. The impressive space lets customers sample the goods brewed just a few metres away. A kitchen and pizza oven are yet to come and when the tap room is fully up and running it’ll be available for private functions of up to 100 people. Adam says, “We knew locals loved our beer, but we were overwhelmed by the support for the tap room. The weekends were buzzing with couples, families, kids and dogs all enjoying this great space.” But the buzz was short lived as another lockdown hit Sydney and the team had to revert to takeaway only. “Of course it’s disappointing
but what can you do? This time around we’ve got a bigger offering and our mix and match crowlers have been really popular as has our free local delivery.” The team behind White Bay Beer Co never doubted their ability to bring their dream to life, however, the past two years have taught them that without community support, they would be nowhere. Local pubs keeping us safe Pubsafe was established after an incident in Balmain in which a young girl, whilst being pursued by a male unknown to her, ran towards a busy pub as a means of getting away from him. The pub, Cat & Fiddle, shared a post on social media, warning locals and their children to be vigilant, and also letting the community know that their local pubs are safe havens. Pubsafe aims to promote hotels as a genuine safe place for young people especially in our area with a pub on every corner. The program is similar to ‘Safety House’ and ‘Neighbourhood Watch’ campaigns of the past. To date Cat & Fiddle, Royal Oak Balmain, Unity Hall Hotel, The Sackville and Corner Bar have declared their support for the initiative. For more information visit pubsafeau

Fibre optic solar collector
If a skylight is not an option, consider a fibre optic solar collector, which harnesses sunlight through a lightcollecting lens unit and sends it down a fibre optic cable, similar to a light fitting but without power connected. It’s particularly useful in improvised home offices. 2
Solar hot water
Often overlooked in favour of photovoltaic (PV) solar systems, this is worth considering if you can fit a solar heater on your roof. It’s simple and effective — the sun heats the water directly, making it more efficient than PVs, where you lose energy in conversion from DC to AC. 3
Pre-wiring for the future
You may not have an electric car, storage batteries or a photovoltaic system yet, but it’s a good idea to pre-wire during construction when the cost to throw in some extra wiring is negligible. As well Spring 2021
as future proofing your house, it prevents ugly conduits running down the side of your building. 4
Openable skylights
Openable skylights will keep your house cool in summer and provide ventilation year-round. They are more expensive than fixed skylights to buy but cost the same to install. 5
Downsize your air conditioner
If your home is well designed, you may just want something that takes the edge off on the hottest and coldest days of the year. Most AC systems are specified well beyond this and will freeze the tail off your Cavoodle. Talk to your AC contractor or builder about downsizing.

Real estate and style are intertwined. Amanda Houghton from The Fifth Door and Josie Simpson from Altus Design Studio share their thoughts on current and future styling trends with Cindy Kennedy from McGrath Balmain. What are the top home trends this spring? Amanda: Whilst we’ll continue to see warmth in neutral tones and organic shapes (think curved islands, vanities, shower screens and custom joinery), spring will see a delightful pop of colour. Even if it’s a fresh bunch of flowers that take centre stage on the kitchen bench. Aussies are good at infusing a pinch of playfulness and brightness into their homes and spring is the perfect time to do so. Josie: There has been a noticeable shift to warmer colours and very textural finishes which is reflective of a more comforting, nurturing colour palette.

Think vibrant pinks such as the deep magenta of an orchid flower. Are there any interior features that are uniquely Australian? Amanda: Undoubtedly, the open plan connection between inside and outside is quintessentially Australian. Choices and quality of outdoor furniture enables us to style up our outside space like an extension of the internal space. Add an alfresco kitchen with a built-in BBQ or pizza oven and you’ll know you’re in Australia.
What can we expect in 2022? Amanda: Perfectly curated zoom spaces, a focus on greenery and maybe even dedicated pet living. We’ll be considering our surroundings like never before from both a wellbeing and aesthetics perspective. Josie: There is a gravitation towards bold, bright colours that spark joy and a desire to be uplifted and energised.

Josie: Australians love indoor outdoor connection in their homes which is driven by our climate. We also love the use of white in interiors, particularly walls with colour accents brought in with furnishing and artwork. That said, Australians are embracing colour more and we’re seeing this in kitchens and bathrooms. What’s a must have item in the home at the moment? Amanda: Hands-down a coffee machine. Taking care of our wellbeing whilst working from home has become increasingly important as the months have rolled on during the pandemic. It all starts with a coffee! Josie: With more people working from home a practical study area is a must that is separate to the living area and offers a secluded space to work.
What’s your pick - a mud room or a butler’s pantry? Amanda: This decision generally comes down to two considerations; household needs and space. Living in Sydney’s Inner West, quite often the answer to this question lies in the latter. If a family is running all over town with sport and activities, a mud room is perfect for hiding those muddy footy boots. During the pandemic we’ve been cooking and baking our hearts out, and for those that love to cook a butler’s pantry would be a dream but at a compromise of other space. With growing families in the area, I think a mud room would win this race! Josie: The rise of homecooking is not going away, so definitely a butler’s pantry is a gem for families and people who love
entertaining and spending time cooking at home. It’s also the perfect space for all the kitchen gadgets you need to store away. What noticeable lifestyle shifts have you seen since the onset of COVID-19? Amanda: Within Sydney’s Inner West, the number of people working from home, at least on a part-time basis, remains high. We’ve seen amazing adaptations; wardrobes turned into workspaces, children’s study nooks given an executive upgrade and a focus on natural light for wellness. Josie: People very much want home to be a haven and a reflection of them, given we have all accepted we will be spending more time at home. All renovations I have worked on since COVID have been prioritising study areas.

Helping victims of fire Darling had the pleasure to talk to John O’Brien who lost wife Bianka and son Jude to the devastating fire that shook Rozelle in 2014. John’s neighbour Chris also lost his life.
Most of us can’t imagine what John must have felt after such a disaster but it takes a certain person to take a tragedy and turn it in to something good, and John is that person. After the Rozelle explosion, John was immediately offered assistance and was put in touch with the Homicide Victims Support Group. John says “They were fantastic, and immediately provided me with direct assistance, or information for assistance, to help with anything I needed.” The help inspired John to set up the Jude O’Brien Fund named after his late son. He says “I want to be that immediate and ongoing support to victims of house fires, whether that be by providing physical essential goods for them, or information about counselling. I want victims to have access to everything they need to start putting their lives back together.” John says “In the aftermath of the explosion, my brother packed me a suitcase and amongst all the chaos of everything happening, it’s what helped me the most practically. I had lost everything as well as my family, but a simple suitcase filled with items I didn’t even know I needed, helped me significantly.” The fund provides suitcases with practical items to help victims of fire. The team at Samsonite immediately offered to be involved and in a matter of days dozens of suitcases were donated to start the process. Next stop was supermarkets who could get involved. Fire and Rescue

Baby Jude NSW and Service NSW support the initiative and help identify those in need. John says “House fires are traumatic, no matter if you lose someone in them or not. The sudden loss or damage to your home, and especially being misplaced, can cause a lot of trauma to someone’s mental health. That’s why we’re also focused on including information and documentation about getting immediate psychological help, to help people process what’s happened and get the steps in place to rebuild their life.” John has remarried and has had the joy of being a Dad once again, and he will keep running the Jude O’Brien fund to make a difference in other people’s lives. “It definitely won’t bring back a home or replace what has been lost, but what I want is to make the process just that little bit easier and support those going through the tragedy of a house fire”, he said. John is calling out to local businesses to get involved in the Jude O’Brien fundraiser being held on the 24th September at Le Montage, Lilyfield. judeobrien.com.au

A woman of many hats Our neighbourhood is known for art, craft and experts in their field and there’s no better example of this than local milliner Catherine Kelly. holds 1:1 and group workshops where participants can make their own hat for raceday or enjoy a fun afternoon with friends making a new creation.
Located in the historic York Building on Victoria Road in Rozelle, is Embellish Atelier. This French-inspired studio is filled to the brim (pun intended) with handcrafted hats, fascinators, headpieces and unique jewellery. International awardwinning milliner, Catherine Kelly is behind this creative enterprise. Catherine’s inspiration comes from her travels, and her studies in textiles, design and millinery. “Millinery is the perfect outlet for my passion for fabric, colour and texture” says Catherine. Last month Catherine celebrated 30 years of teaching at Sydney Community College. She modestly said “I’ve taught more than 4,000 students. There’s nothing more rewarding than seeing a student making their own creation.” Catherine also

Catherine has launched an education program with professional video tutorials called the Hatters Millinery School. During these times people can access the tutorials from anywhere in the world. Catherine and her team regularly dress celebrities and a career highlight was working with Opera Australia making the Hats for the Ascot Scene in My Fair Lady. She has a love for collaborations and recently made all the headpieces for Australian fashion designer Camilla’s autumn campaign. However, working with clients is the core of her business, whether it’s a bride wanting a bespoke headpiece, or a local woman choosing the perfect fascinator for a day at the races. This year, Catherine won first place in the winter category and a coveted Standard of Excellence Award at the Royal
Easter Show – a testament to her outstanding work. Catherine and her team also operate Hatters Millinery Supplies which now offers over 2,000 product styles to its national and international customer base. Catherine is the creator of Hattember®, celebrating and supporting the millinery industry through an annual Millinery and Bridal Headwear Competition. Over time, the infected brush leads to a buildup of bacteria in the mascara tube, increasing the chance for infection with each use. To be safe, replace your mascara every three months.

The rise of sourdough During the height of lockdown, Instagram feeds were flooded with messy sourdough starters and fluffy loaves. Rising from the ashes On 6 May, Angel Aromatics experienced an electrical fire in their premises on Beattie Street forcing the small business to temporarily relocate. Owner Susanna says “We wallowed for a day or two, then the overwhelming love and support from the community forced us into action. People I’d never met offered to help and I’ll never forget the kindness we were shown. You hear about community spirit, and we experienced it firsthand.” Three weeks after the fire, Angel Aromatics were fulfilling web orders and they’re hoping to move back to Beattie Street in the next few months.

Our ‘Dawny’ brings summer relief There’s nothing more Balmain, than the historical Dawn Fraser Baths which is now ready to open after a $8 million heritage restoration.
2021 It’s been a long time coming, and as soon as public health restrictions allow, Balmain’s much-loved baths is set to reopen. To celebrate, Inner West Council is offering two weeks free entry after the reopening. “I promised to save Dawn Fraser Baths and, while it’s been a long hard fight, together we have now secured the future of Australia’s oldest and most beautiful harbourside pool for generations to come”, said Mayor Darcy Byrne. Dawn Fraser Baths, built in the 1880s, is home to the oldest swimming club in Australia. The restoration
presented many challenges, and during demolition, the southern pavilion and boardwalk were found to have no structural foundations. Builders had to construct new foundations on rock 8-10 metres below the surface, working with large drilling machinery in confined spaces and underwater. 70% of timber from the southern pavilion were replaced, and the pool is now protected from king tides. In 1964 the pool was re-named in honour of Australian swimming legend Dawn Fraser. A champion at three consecutive Olympic games, Dawn Fraser learned Spring 2021
to swim at these baths as a part of the Leichhardt-Balmain League of Swimmers. Many locals have a deep emotional connection to the baths, and over the years they’ve become part of the social fabric of Balmain. The much anticipated reopening is planned just in time for summer, and as we may well be spending more time in our community, the opening is expected to be very well received. Rozelle dad directs international movie Actor and director Michael Budd didn’t let a pandemic stop him from making an international movie. Darling finds out how he made it happen. Ruby’s Choice, filmed in Sydney last year, is earmarked to win awards when it launches next month at the CinefestOZ Film Festival in Western Australia. Funded by The Glenn Family Foundation, the film will donate 50 percent of profits to the Dementia Foundation’s Spark for Life, which aims to bring the spark of life back into the lives of people with dementia. Ruby’s Choice tackles the complicated topic of dementia through the film’s main character, Ruby, which is played by Jane Seymour. The story is told through the eyes of Ruby’s granddaughter,

Tash, played by Coco Jack Gillies and aims to show the humanity of dementia. CinefestOZ CEO Malinda Nixon said, “Ruby’s Choice will have a meaningful impact on audiences when it screens for the first time.” “We managed to film and produce Ruby’s Choice in Sydney during the peak of the pandemic in 2020 within a condensed time period. Significant additional planning, resourcing and safety requirements were put in place to ensure filming was able to proceed”, he said. Michael Budd has considerable movie and
directing experience spanning more than 25 years and owns production company Amazing People Pictures. He has appeared in Hollywood films such as “Matrix Reloaded”, “The Cold Light of Day” and produced, directed and starred in Australian films Love of My Life and Life of the Party. Michael, his wife Allison and their two children Harris and Lily, first came to Rozelle four years ago as renters and fell in love with the area purchasing their house last year. Michael said “We think it’s such a fabulous place to bring up a family, we love the village feel and friendly people.”

Why organic?
In recent years, there’s been a significant push for organic produce, but is it really better? Darling speaks to Andrew Austin of Bonfire Bread to learn more.
Bonfire Bread recently opened shop in Balmain, and they were one of the first Sydney bakeries to produce bread using organic wheat and grains with a Certified Organic status from the ACO. Becoming certified was essential in ensuring customers they were getting the real deal when purchasing from Bonfire Bread. Andrew says, “The flour we use is free from pesticides and chemicals which makes the bread cleaner. Glyphosate, the main ingredient in roundup, is used heavily in Australian wheat and grain farming and linked to a lot of health issues, particularly gut health, and gluten intolerance. Many of our customers are gluten intolerant, but they can eat our bread as it’s organic and has a long fermentation. I was initially sceptic, but customers kept coming back telling me they could eat bread again.”
Because organic produce doesn’t use pesticides and there are rigorous rules about how the crops and foods are grown and harvested, they have a lower carbon footprint. Eating organic, not just bread, but in general, is good for both you and the environment. Organic benefits aside, what keeps customers coming back is Bonfire Breads’ outstanding quality. They’ve achieved awards in some of Australia’s most prestigious baking competitions including Overall Champion Loaf at the National Artisan Baking Competition, and most Successful Exhibitor at the same show, winning four out of five sourdough categories.

The Balmain store is the third for Bonfire Bread and when asked why they chose to leave the Northern Beaches and try Balmain, Andrew says, “Locals here appreciate their fine food and wine and we saw a gap in the market. Love is in the hair! The relationship between a hairdresser and their client is truly special. Darling explores one salon’s story. It’s said the relationship between a client and their hairdresser is one of the most important in their lives, often lasting longer than marriages and love affairs! Emma Dean Salon has been part of the Balmain Rozelle community for 10 years and some of the bonds formed with their clients continue to stand the test of time. Ben, one of the salons most established stylists has worked locally for 25 years. Owner CJ Morello explains “There’s loyal clients, and then there’s Ben’s clients who’ve religiously followed him around the peninsula for the past 25 years. These clients would never see anyone else because they trust him – not just with their hair but with their

Managing stress Keeping your mind at ease through the changing landscape of the world is a challenge at the best of times. Throw in another lockdown, more uncertainty and a total shift in routine and your stress levels are likely to go through the roof.

Prolonged periods of stress can affect our mental health but sticking to a daily routine will help in times of ambiguity. Dedicate a few minutes every day to focus on your breathing or take a brisk walk. This will bring your awareness back to your body, and out of the chaos of the mind. Thankfully, local businesses are adapting the way they operate, taking their yoga and fitness classes online. Most of us are carrying a few extra COVID kilos and this second lockdown hasn’t helped. Jeremy, owner of Vision Personal Training Balmain shares his top tips for getting your health back on track. 1
Set SMART goals
Setting specific, measurable, achievable, relevant, and timely goals can improve your chances of success. It’s important to have a longterm overall health goal, but you should also set short term, achievable goals along the way. 2
Prioritise protein
Protein is the building block of your muscles and eating plenty of protein can help increase muscle mass and strength. Jeremy explains that eggs are among the healthiest and most nutritious food available. Whole eggs are high in protein, but egg whites are almost pure protein. 3
Embrace the good fats
Monounsaturated and polyunsaturated fats are known as the good fats because they’re good for your heart, cholesterol, and overall health. Good fats can be found in avocadoes, fatty fish such as salmon and tuna, nuts and peanut butter. Spring 2021

Reduce alcohol
Jeremy says “Alcohol consumption increased during lockdown periods and may be the culprit of those COVID kilos. Beer and wine are full of calories, and the longterm health risks associated with drinking are serious so reducing your alcohol intake should be a priority.” 5
Find exercise you enjoy
Finding an exercise you enjoy will make it easier turning it into a weekly or even daily habit. Exercising with a friend means you can commit to train together, making you more likely to stick with it. 10 Follow the 80/20 rule It’s very difficult to eat well all day, every day. That’s why Jeremy subscribes to the 80/20 rule. “I tell my clients that as long as they eat healthily 80% of the time they can eat and drink whatever they want 20% of the time.”
Eat small regular meals
Small, frequent meals speed up your metabolism whilst, contrary to popular belief, skipping meals slows it down. 6
Up the healthy snacks
Consuming carbohydrates before exercise can improve your performance, and a healthy, post workout snack high in carbohydrates helps your body recover. 7
Make sleep matter
Sleep is important because it enables your body to repair and be fit and ready for another day. Healthy adults need between 7 and 9 hours of sleep per night.
