From the POA
Welcome to Rosemary Beach! Typically, we open this column with some casual observations about the weather, recent or upcoming holidays and special events, and a reminder of how much we hope you are either here enjoying the town or that you will be soon. This time, after the recent reminder of how quickly things can change, we will simply say that we are thankful, in so many ways. Hurricane Michael is no longer a headline for the national press, that industry having moved on to elections and other news. However, we remain thankful that the town was spared significant damage during the storm and we want you to know that our beaches are just as beautiful, the oak trees in Barrett Square are wrapped in lights, and we are looking forward to seeing you all over the holidays. Life only a handful of miles to the east of us is still largely focused on recovery from the storm. Using the word “they” is unacceptable… our friends, our neighbors and, in some cases, our staff, are not some anonymous “they.” This is our extended community, people who helped build our town and who continue to make it special, and who will need our help for a long time to come. We are thankful also that many of the individuals and businesses here in Rosemary Beach reacted quickly to help, and that many

continue to give generously of both time and resources as emergency response has evolved into long-term efforts to recover and rebuild. We considered carefully the choice of photograph for this issue’s cover, and it is the first image in a long time, if ever, to be chosen that was not captured in Rosemary Beach. While it is hard to find the words to describe the scene it portrays, what we hoped to share with our readers was both the almost unbelievable scope of devastation as well as a glimpse of the community’s strong and indomitable desire to return to life as it was before. Please know that your help is making a difference and that it is critically important that it continue for as long as it takes to restore normalcy to the region. We are so thankful for our extended Rosemary Beach family that stretches across the country, for the support that has and continues to be offered.
Shortly after the storm, at the request of several property owners, the POA investigated options as to how to best aid our employees and longterm contractors who have been significantly impacted by the hurricane. Our conclusion remains that the most timely and effective way to do so is to direct support through some of the local organizations that have mobilized at scale. We feel it is important to continue to share our conclusions, along with a request to consider directing your donations of volunteer time and money to one or more of these local groups: HopePanhandle.org www.hopepanhandle.org The Sonder Project www.thesonderproject.org Lighthouse Church www.lighthousepcb.com (partnered with Operation Blessing www.ob.org)

Another important way that we believe our town can continue to play a role in the efforts to help the larger community recover is to also continue to do the things that make Rosemary Beach the best family beach community in the country, keeping our restaurants, rental agencies and town staff busy and ensuring prosperity and opportunity at a time when it is most needed. Nashville Songwriters Give Back by Kristen Moss, Rosemary Beach Foundation
Lee Brice and friends performed at the sold out Live from Town Hall concert on Aug. 17 raising $18,500 for the Rosemary Beach Foundation. Earlier this summer, Rosemary Beach Cottage Rental Company approached Malayne DeMars with the Rosemary Beach Foundation to partner on the singer/songwriter event. In only a few months, the stage was set for songwriters like Joe Leathers, who have strong ties to the Rosemary Beach community. “We all felt like we should give back to the community that supports us so enthusiastically. While we are not skilled at bocce ball or
cornhole, we do have the ability to write and perform music and with the help of Malayne and her army of volunteers, we participated in the Live from Town Hall concert. The venue was packed and everyone had a great evening,” Leathers said. Starting in 2006 Leathers began organizing songwriter retreats at his home in Rosemary Beach. “There is such a cool, creative vibe, we never failed to come away with special songs. Over the years, I
think we have had over 35 writing retreats at RB and I know we will continue the tradition, it’s just too easy for good things to happen here.” Malayne DeMars echoed Joe’s comments saying, “We are grateful to the many partners who have made our work possible over the years. The community, its owners and its merchants are instrumental in the success of our events.” When the day finally arrived, over 125 fans gathered in Town Hall for the unforgettable show. The intimate setting provided the perfect backdrop for this rare chance to connect with the singer/ songwriters. Kyle Jacobs reflected on the show saying, “being in Town Hall feels like you’re playing your own songs in your living room at home, surrounded by family and good friends.” Rosemary Beach Foundation continues to accept Hurricane Michael donations at their website www.rosemarybeachfoundation. org/donate. While Rosemary Beach as a physical town was spared all but relatively minor damage, Rosemary Beach as a community of people is still reeling from the impacts to our extended family of staff and contractors. In the weeks that have followed the storm, we have seen heroic efforts to help those in need by many of the businesses and owners here, starting even before the storm had left Florida.

The Ancient Horticulturist Pets, Perennials, and Passings on the Dark Days of Winter By Susan Broussard
I know Christmas is full of places to go, people to see and events to attend, but soon enough it quiets down to just plain old winter. The cold chases me indoors. The lack of light forces me onto the sofa and insists that I pick up the TV remote. Winter is a time for reflection—reflection on the lost. There are several lost plants in my yard. The spot where they once lived is a hole in my memory. Their demise may be from last winter’s freezes, last summer’s rains, or maybe the author’s lack of attention. My guilt is overwhelming. Dusty, our ancient cat, has passed away since I coaxed him into the garden for a Rosemary Thymes picture last summer. There are even a few wild animals that have disappeared from my yard. Mr. Turtle, a regular visitor, gave me a nod in April while eating cat food on my back porch. I haven’t seen him since. (In the picture, Mr. Turtle is the one without the hose attachment.) Mr. Giant King Snake hasn’t appeared in more than a year. I miss my animal friends. I miss my plant friends. Auld Lang Syne circles my brain and reminds me to remain melancholy. But February arrives. In the Gulf South, this means that spots of new growth emerge. Light comes in through the east window earlier each morning. The sun’s journey across the sky tricks a few bloomers into spreading color before their time. Swamp Red Maples and Butterweed along the I-10 are a joy
to see as I speed past. They seem to appear earlier and earlier every year but I welcome the sight. I finally break away from the depths of winter and face the morning sun. Actually I get off my bee-hind and head out the back door to tackle those pesky winter weeds that taunt me every February. This may be the true me, but the previous sentences are so much more poetic. Anyway, it’s finally time to tell Old Man Winter to get lost. I really do look forward to that time when my internal clock says “Get off your butt!” The adrenaline is Top: A cinnamon coursing through me and I can’t wait fern boasts to dig in the soil, spread the mulch green and rust and plant according to plan. I usually suggest a showy flowering perennial, shrub or tree, but this time my focus will be on a native fern that works well in the background. The ‘I’m here for you’ kind of plant. The green BFF that has your back. Ferns work so well in the shadows while your choice of perennials show off. That said, let me introduce you to Osmunda cinnamomea aka Cinnamon Fern. As great as Cinnamon Fern is for giving its plant friends the spot light, it does sport beautiful cinnamon colored stalks each spring. Sort of like your
wet areas. What can I say? She’s a big girl. As always, plant Cinnamon Fern in soil that has been enriched with a good amount of compost. Celebrating 10 years of music on the beach

“It feels like someone made a list of all of my favorite performers and instead of traveling the world to see them, they came here to see me,” Kendall Horne, a 15-year resident of Walton County and the coordinator of landscaping for Alys Beach, enthusiastically chimed when asked for her thoughts on the line up for the 2019 30A Songwriters Festival. “All I can think about right now is Brandi Carlile headlining Songwriters this year with Jason Isbell. The two artists that I love the most are headlining in my neighborhood.”

Now in its 10th year, the 30A Songwriters Festival will boast more than 175 artists with 225 performances when the four-day musical fete begins on January 18. With live

The festival hosts many lesser known artists for whom the festival offers great exposure. “The War & Treaty is coming again this year,” Horne exclaimed. “We saw them last year at a little tent in Gulf Place and they killed it! We were crying at 10 in the morning – the whole crowd was! Now, they are huge; as they deserve to be.” Mindy Norris, who moved to the area in 2006 has attended all nine festivals and agrees with Horne. “War and Treaty is one of the best shows I’ve ever seen in the years I’ve gone to Songwriters,” she said. “I follow them now on all their social media outlets. They held church, basically, that day. That’s what it felt like. It was so good.”
Gregory Alan Isakov, Suzy Bogguss, Amanda Shires, Shawn Mullins, Livingston Taylor, John Fullbright, The Secret Sisters, Robyn Hitchcock, Aaron Lee Tasjan, Chely Wright, The War and Treaty and Radney Foster. It’s the beginning of an endless list of top tier local and international musical talent that will fill the local amphitheaters, town halls, restaurants, theaters, bars and covered patios of Scenic Highway 30A, transforming the spaces into music venues with capacities ranging from 75 to 500 seats indoors and 5,000 outdoors. Nashville singer-songwriter Jeffrey Steele has performed at every Songwriters Festival since 2010. “Consistently, every year, people are lined up out the door to hear Jeffrey,” said Jennifer Steele, Director for the Cultural Arts Alliance of Walton County (CAA). Steele first heard Jeffrey Steele perform in 1999 when her friend Kevin Boehm helped organize a festival on the north side of Rosemary Beach; the event also featured Greg Barnhill and Kim Carnes. “It was before there were many homes and long before the 30A Songwriters Festival,” she recalls. In that moment, Jennifer Steele saw a glimpse of the future.

In 2009, Steele had just taken on the role of director for the Cultural Arts Alliance and suggested producing the festival through the organization when Mark and Paige Schnell brought the idea to her. “My board agreed to add the event to our budget and take on all the risk as the producing organization,” said Steele. A festival committee was formed by community leaders that included Steele, Mark and Paige Schnell, Kelli Arnold Siler, Kathy Kemp, Kim Jameson, Adam Shiland, Stacy Hamilton, John Rosenberg, Balder Saunders and Rebecca Sullivan Balkcom. Committee meetings and planning began in January 2009, then Russell Carter joined the committee in June 2009 and secured some of the bigger acts, including Shawn Mullins, Susanna Hoffs (The Bangles), Matthew Sweet, Gary Louris, Chely Wright and The Indigo Girls. “All of these people and countless other volunteers are responsible for making the event come to life that first year,” Steele said. The first festival was held in January 2010. The festival is now co-produced by the CAA and Russell Carter Artist Management (RCAM) and employs about one hundred staff and requires nearly a thousand volunteers. One of the greatest benefits to the songwriters themselves is that the CAA works to create a sense of community with them while they are performing in Walton County. The festival invites songwriters to stay for five to seven days as artists-in-residence in order to enjoy the community, write, and connect with other artists. “There are many layers to what makes us a creative community,” Steele said. “The vision of the CAA is to be the catalyst for Walton County’s growth as a center for artistic and cultural excellence through which lives are enriched, economy is stimulated and community is strengthened. Events like the 30A Songwriters Festival are what the CAA is supposed to do. It’s our biggest fundraiser and sustains the CAA financially, while also spurring creative and economic growth throughout our community — it’s a success story on so many levels.” This year a portion of net proceeds will be donated to the Hurricane Michael relief efforts organized on behalf of the many who have suffered devastating losses along the Florida panhandle to the east of 30A. SCULPTURE EXHIBITION The Rosemary Beach Sculpture Exhibition (RBSE) is a biennial juried art show of contemporary outdoor sculptures on display throughout the town of Rosemary Beach. The purpose of this sculpture exhibition is to enhance the quality and excellence of Rosemary Beach through complementing its architectural heritage and natural beauty with outdoor sculpture and to contribute to the cultural arts environment in Rosemary Beach and surrounding areas.
CALL TO ARTISTS
HIGHLIGHTS FOR THE 2019-20 EXHIBITION
Artists working in the design, construction and installation of outdoor sculpture are invited to submit an application for the second biennial Rosemary Beach Sculpture Exhibition opening on May 24, 2019 and closing on February 14, 2020. All entries must be submitted online via CaFÉ at CallForEntry.org. There is a $5.00 application fee per sculpture entered. Application deadline is January 15, 2019. Up to 20 sculptures will be chosen for this juried exhibition and a $1,500 honorarium will be awarded to each artist whose sculpture is selected. First and Second Place winning sculptures will be named, with awards of $2,000 and $1,000 respectively.
Events. Several events are being planned around the Exhibition, including a Patron’s Party, Artist Panel Discussion, Opening Reception, Homeowners' Only Event, Student Participation, and more. Printed Material. A printed brochure with a site map will guide visitors through the RBSE and A Catalogue of the Exhibition will be available for visitors who want to learn more about the artists and their works. Audio Tour. An audio tour narrated by the artists themselves will be offered through the free ‘Otocast’ smartphone app, enabling visitors to hear the artists as they view the sculptures. James Neale and Ken Duenos put together a few sumptuous recipes from their holiday repertoires. If you’re hosting a party this season, considering trying your hand at one of these divine local dishes. Happy Holidays!
Pan Seared Pork Belly with Fig Compote Chef Ken Duenas, Pescado Seafood Grill and Rooftop Bar
Instructions: Pan sear the pork belly with salt and pepper on both sides with a hard sear. Place in roasting pan and put in oven at 300 degrees. Bake until fork tender. Let cool and slice to your liking. Fig Compote 1 cup of dried figs 2 cups of red wine 1/2 cup of sugar Pinch of cinnamon and nutmeg Put everything in a sauce pot and reduce on low heat until figs are tender. Blend in food processor.
Balsamic Reduction 1.5 cups of dark balsamic vinegar 1/4 cup sugar 2 tsp of corn syrup Put everything in sauce pot and reduce to a syrup consistency Crumble any type of goat cheese to your liking. Garnish with roasted red peppers and scallions

Havana Beach Bar and Grill Ingredients Foie Gras, grade A, cut into 3 oz and scored Zuchinni- Walnut Bread slice Blackberry Mostarda Walnut Crumble For the Foie Gras: In a hot, dry sauté pan, sear the foie gras on the presentation side seasoned with salt and pepper. When it starts to brown, turn it and finish it in a hot oven. The foie gras should have a brown crust to molten layer to firm center to the touch. Toast a slice of zuchinni bread with a generous amount of butter on a griddle or nonstick pan. For the Blackberry mostarda: 1 Pint blackberry jam 1 tsp Dijon mustard 3 tbsp whole grain mustard Combine with a whisk
For the walnut crumble: 1 cup toasted walnut pieces 1 tbsp course sea salt Zest of 3 lemons with their juice Chop the walnuts coarse, but small. Add the rest of the ingredients. Zucchini Bread ¾ cup Sugar 2 tbsp Apple juice ½ cup Vegetable oil 2 Eggs 1 tsp Vanilla extract ¼ tsp Baking powder ½ tsp Baking soda 1 tsp Salt 1½ tsp Cinnamon, ground 1¾ cup All purpose flour 2 cup Zucchini, grated ¾ cup Walnuts, chopped ¾ cup Raisins Mix dry ingredients together. Add oil, scrape bowl well. Add eggs. Mix 3 min 3rd speed. Add zucchini and nuts last.
Oyster Pan Roast For the gravy: 8 Shallots, large diced .5 Spanish onion, large diced 20 Garlic cloves, peeled & smashed 3 Celery stalks large diced 1 pinch of salt Method 1: Sweat the above in olive oil until translucent. Deglaze with white wine, reduce to dry. 1 lb Butter, unsalted 1 lb AP Flour 15 qt Clam Juice Method 2: Once the white wine is dry, add the butter, stir until foamy. Add flour cooking out the flour taste, do not let any color develop. Add the clam juice. Let simmer, season with salt and pepper to taste. Blend in the Vitamix, and pass through the chinois. Set aside. For the Garnishes: Fennel Confit Baby Potato Confit
Method 3: Cover 1 head of fennel in olive oil, slow cook until fork tender. Cover 3 lb potatoes with olive oil, slow cook until tender Bacon Lardons Matzutake Mushrooms, medium dice Leeks, cut into 1” rounds, charred and cooked through Final Assembly: Sauté the bacon, potatoes, mushrooms, fennel until it begins to crisp. Deglaze with Herbsaint. Once the alcohol burns off, turn down the heat, and add 6 medium sized oysters. Add 1 cup gravy. Slow poach the oysters until the outsides just begin to curl. Place 2 charred leeks in the bowl, pour the stew into the center of the bowl. Garnish with torn grilled sourdough bread, crispy Pancetta and Thyme leaves.

Greene began a quest to identify a surface product that would withstand the salt air, bright sunny days and periods of wet and dry days. “After testing on several of our smaller buildings around Rosemary Beach, we settled on a product that is actually a lime wash and not paint” says Greene. An ancient house staple dating back to ancient Greece, limewash is made from limestone that has been crushed, burned, and mixed with water to make a lime slurry. The slurry is aged and then thinned with water and colored with natural pigments. Limewash creates surfaces that are matte with a rich chalky texture, similar to suede. It lends a depth and luminosity to flat walls. In its base form, limewash is off-white. Color is achieved by adding natural, alkali-resistant pigments, which
are available in shades dictated by what the earth has to offer. Browns, grays, and taupes are the norm. “Obviously, we chose bright warm white. Now that the Town Hall is complete, and we have some history with the application, this will be our recommended product going forward. Because it bonds to the stucco surface and contains high levels of pH, it’s very durable and resistant to mold and mildew,” said Greene. It’s evident that the traditional atmosphere of Rosemary Beach is not happenstance. To remain diligent to the original vision for the little town on the Gulf requires an assortment of professionals, all of whom are dedicated to keeping this small part of paradise special for years to come.

Audrey Guay (8) was visiting from Indianapolis. She was riding with her friend Cassidy in a blow up kayak with her mom. Dolphins were swimming and jumping in the gulf. They were definitely closer than normal. They stopped in Nashville and Mississippi. Ellie Truax (6) competed in her first ever cheer competition! It was her first year cheering and she just loves it! While her team didn’t win, they did an amazing job competing as a team. Ellie will definitely cheer again.
