This new format of bluefin tuna loin, weighing 1 kg, is designed to respond to the demands of kitchens that work with high volumes without compromising the quality of the product. Individually wrapped, the tablet keeps its original qualities intact color, texture and flavor. A format designed to streamline work in professional kitchens and reduce both preparation time and shrinkage, always ensuring an excellent result. 1 KG PIECES
Balfegó tuna kirimi is made by slicing the loin. It is a cut with a honeyed texture, balanced infiltration and great versatility in the kitchen. This piece, which ranges between 200 g and 500 g, ultrafrozen at -60°C to preserve all its organoleptic properties, Balfegó bluefin tuna sirloin offers an excellent yield both raw and cooked. It is an ideal product for tatakis, griddled dishes, grilled dishes or preparations in which it is important to highlight the authenticity of the product.

Weighing approximately 2 kg, this format is designed to offer chefs the freedom to portion accurately, adapting to the demands of each cooking style. Its whole presentation respects the natural shape of the belly, allowing a clear view of the fat vein and facilitating cuts according to the desired cooking or plating method.

Follow these simple steps to preserve the full quality and flavor of bluefin tuna.
Step 1
In a container with water at 38ºC, add 35 grams of salt per liter poured.
Step 2
Open the product and place it in the container. Be careful if you add more than one piece, you must ensure that they do not touch each other. Leave it in the water for 20 minutes.
*With a thermal immersion circulator: Without removing the product from the packaging, place it in a thermal immersion circulator in 2 liters of water and 70 g of salt at 38ºC for 15 minutes.
Step 3
Dry the product and wrap it in absorbent paper, leaving it at room temperature for 20 minutes to allow it to regain its color and oxygenate.
*With a thermal immersion circulator: After 15 minutes, remove it from the packaging, dry it with absorbent paper and let it sit for 20 minutes at room temperature.
Step 4
Finally, let it rest for 20 more minutes in a cold room (between 2 and 4ºC).
*You can store it for up to 3 days in a cold room, wrapped in absorbent paper and changing the paper twice a day.
