Mallow is a creamy, soft, and fluffy filling with a neutral flavour that can be blended and by that flavoured and coloured with our other products such as Flavours, Truffles, and Les Fruits Fruit Fillings.
• Lightly chewy and creamy marshmallow-like consistency that can be piped, spread, and used as a filling.
• Can be frozen and thawed. Retains its creamy character after freezing.
• Stable at room temperature.
• Can be torched to create a crisp, golden surface.
• Has a matte finish when used straight from the bucket and can be whipped to achieve a glossy finish.
• Stable structure and highly resilient. Mallow can be re-whipped repeatedly.
• Based on egg white from free-range hens and contains no gluten or gelatin.
• Suitable for vegetarians.

MALLOW CREAM BUNS
Mallow is perfect for creating delicious, creamy “Cream Buns” or “Mums-Mums” (classic Swedish marshmallow treats). Always have something new and exciting to offer your customers by varying the flavours and combining Mallow with our Flavours, Truffles, or Les Fruits Fruit Fillings.

ORIGINAL
• Pipe Mallow onto a biscuit base
• Dip in Dark Chockex
• Decorate with coconut


CHOCOLATE
• Whip 100 g Dark Truffle and mix with 500 g Mallow
• Pipe onto a biscuit base
• Dip in Dark & Light Chockex alternately for a marbled effect.
RASPBERRY & RUBY
• Mix 500 g Mallow with 20 g Hallonarom
• Pipe onto a biscuit base
• Pipe in Les Fruits Raspberry
• Dip in Ruby Chockex


PISTACHIO
• Mix 500 g Mallow with 10 g Pistachio flavour
• Pipe onto a biscuit/cookie base
• Dip in Dark Chockex
• Decorate with chopped pistachio nuts

HAZELNUT
• Whip 100 g Hazelnut Truffle and mix with 500 g Mallow
• Pipe onto a biscuit base
• Pipe in Semla filling Silvia
• Dip in Dark Chockex
• Decorate with chopped nuts
For a Mallow-buttercream:
Whip 500 g butter until fluffy and mix with 500 g Mallow


MALLOW MERINGUE-TOPPING
For a delicious ”mallow-meringue-topping”: Whip Mallow, spread onto the cake and torch.
Packaging 5,5 kg pail
Shelf life 180 days

Storage
To be stored between 5°C - 18°C. Avoid heat sources and direct sunlight.

• Fill a tartlet with Creme Filling Lemon
• Whip Mallow glossy
• Pipe Mallow onto the filling
• Torch the Mallow
S’MORES WITH TRUFFLE & CARAMEL
• Whip Dark Truffle and spread onto one cookie
• Spread Mallow onto the next cookie
• Torch the Mallow
• Sandwich the cookies together
• Decorate with Dark Chockex and Millionaires Caramel



MALLOW CARROT CAKE MUFFIN
• Use Bakels Vanilla Muffin mix
• Carrot cake topping:
Whip 500 g Mallow with a wing, then add 200 g Philadelphia cheese and 10 g Lemon Flavour
MALLOW CHOCOLATE FROSTING MUFFIN
• Use Bakels Chocolate Muffin mix
• Chocolate frosting:
Whip 500 g Mallow with a wing, mix with 100 g Dark Truffle and 5 g Mocha Flavour
MALLOW STRAWBERRY MUFFIN
• Use Bakels Vanilla Muffin mix
• Inject Les Fruits Strawberry as a filling
• Pipe wipped Mallow on top
• Torch
