Salt & Pepper Chicken Instant-Style Pot Crispy chicken, instant-style noodle base Works well served in branded noodle pots Serves 4 INGREDIENTS Noodle seasoning 2 tbsp chicken bouillon powder 1 tbsp onion powder 1 tbsp garlic powder 1 tsp ground turmeric 1 tsp dried chives Stirfry 500g chicken thigh, diced 1 tsp Chinese five spice 1 tsp salt, + extra for finish 1 tsp white pepper, plus extra for the finish 3 tbsp cornflour

METHOD 1 tbsp plain flour Vegetable oil, for frying 2 garlic cloves, chopped 2 red chillies, finely sliced 2 spring onions, sliced (separate whites and greens) Assembly & serving 4 nests dried thin egg noodles (or instant noodle blocks) 1 litre boiling water or hot chicken stock 4 tsp soy sauce
Noodle seasoning Mix ingredients, set aside. Stirfry 1. Marinate the diced chicken thigh in the five spice, salt and white pepper for 15 minutes. 2. Toss the marinated chicken in the cornflour and plain flour. Fry in hot oil for 4-5 mins until golden and crisp, drain. 3. In the same hot pan, stirfry the garlic, chilli and
spring onion whites for 30 seconds. Toss fried chicken through with a generous pinch of salt and white pepper to finish. Assembly & serving 1. To build each pot: add a noodle nest, 1½ tsp of the seasoning powder and 1 tsp soy sauce. 2. Top with the hot salt and pepper chicken just before serving - or hold
the chicken separately and add fresh at point of sale for a grab-and-go format. 3. For the full 'just add water' effect: pour over boiling water, cover and let stand for 3 minutes before stirring through. 4. Finish with the reserved spring onion greens and a few extra chilli slices.

Spicy ‘Aigre Doux’ dressing Serve in individual Kraft Deli pots, glasses as a starter, or spooned into lettuce cups for a lighter bite INGREDIENTS
METHOD
500g sushi-grade salmon fillet, skin & bloodline removed 1 ripe avocado 1/2 honeydew melon 1 cucumber 300g cooked mixed grains & rice 2 limes, juiced 3 tbsp extra virgin olive oil 1 tbsp yuzu juice (or rice vinegar) 1 tsp light soy sauce 1 red chili, finely sliced Small bunch fresh mint, torn Small bunch fresh coriander 1 tbsp black & white sesame seeds 1 sheet of nori seaweed Flaky sea salt & black pepper
1. Slice the salmon thinly, sashimi-style. Season lightly with sea salt and a squeeze of lime juice. Chill while you prepare the rest. 2. Dice the avocado, honeydew and cucumber into small, even cubes. Keep separate. 3. Whisk the olive oil, remaining lime juice, yuzu juice and soy sauce together to make the dressing. 4. Build each bowl with a base of grains and rice, followed by the cucumber, honeydew and avocado, then fan salmon slices over the top. 5. Spoon over the dressing. Scatter with chili, mint, coriander and sesame seeds. 6. Finish with a pinch of flaky salt, torn nori seaweed and cracked black pepper. Serve immediately, well chilled.

4 whole wheat pistolets, baguettes, sourdough slices 400g rare roast beef (Sirloin, Rump, Flatiron) 100g arugula / rocket 50g pine nuts 50g capers 50g Parmesan cheese 100g button mushrooms, finely grated 125ml truffle mayonnaise 50ml olive oil 1 lemon Black pepper & smoked sea salt to taste
1. Season the beef with salt and pepper. Sear and roast to an internal temperature of 48°C (rare). Cool, then shave/slice very finely. 2. Bake the pistolets, baguettes or sourdough according to package instructions. Allow to cool briefly. 3. Cut open the bread. Spread truffle mayo on the base. Layer with rocket / arugula, rare roast beef tataki, pine nuts, capers and Parmesan. 4. Add a few loose rocket leaves on top. Sprinkle with freshly cracked black pepper. Place the top half of the bread on if using pistolets. 5. Finish with a good squeeze of lemon and a scattering of finely grated button mushrooms. Serve immediately, open or closed.

Kimchi Grilled Cheese Pinsa, Onion Soup Dip Melted Gruyère & mozzarella, gochujang butter Also works as a flatbread starter, sliced into strips for sharing INGREDIENTS
METHOD
4 small pinsa bases (or 1 large, quartered) 200g kimchi, rough chopped, well drained 150g mozzarella, grated 100g Gruyère, grated 50g Fontina or mature cheddar 30g butter, softened 1 tbsp sesame oil 1 tsp gochujang 2 spring onions, sliced 1 tbsp toasted sesame seeds Olive oil, for brushing 2 large onions, thinly sliced (for the dip) 2 tbsp butter (for the dip) 1 tsp sugar 500ml beef or vegetable stock 1 tbsp Worcestershire sauce 100g cream cheese or crème fraîche Salt & pepper
Onion soup dip 1. Melt butter with a little olive oil, add the onions and sugar, and cook low and slow for 25-30 mins until deeply caramelised. 2. Add the stock and Worcestershire sauce, and simmer for 10 minutes to reduce and concentrate the flavour. 3. Blend half onion mixture with cream cheese until smooth, stir back through the rest for texture. Season and set aside.

Grilled cheese pinsa 1. Preheat the oven as high as it will go (ideally 240°C+) with a tray or pizza stone inside.

2. Brush the pinsa bases with olive oil. Scatter over the mozzarella, Cheddar and/or Fontina and Gruyère, then top with the well-drained kimchi. 3. Bake for 8-10 minutes until the crust is crisp and the cheese is bubbling and lightly charred at the edges. 4. Mix the softened butter with the sesame oil and gochujang, and brush over the hot crust edges as it comes out of the oven. 5. Scatter with spring onion and sesame seeds. Slice and serve warm, with the onion soup dip alongside.

Thai Red Curry Samosa Coriander & chili chutney Also works oven-baked and frozen ahead - cook straight from frozen, adding a few extra minutes Serves 4 (makes 16) INGREDIENTS Samosa filling 2 tbsp vegetable oil 1 small onion, finely diced 2 tbsp Thai red curry paste 300g potato, peeled and finely diced 1 carrot, finely diced 100ml coconut milk 100g frozen peas 1 tbsp fish sauce (or soy sauce) 1 tsp palm sugar or brown sugar Juice of 1 lime Small bunch coriander, chopped

METHOD Samosa assembly 8 sheets filo pastry 50g butter or oil, melted, for brushing Vegetable oil, for frying (or spray oil for baking) Chutney Large bunch coriander 2 green chillies 1 garlic clove Juice of 2 limes 1 tsp caster sugar 2 tbsp coconut milk or yoghurt Salt, to taste
Samosa filling 1. Heat oil in a pan and fry the onion until soft. Add curry paste and cook for 1-2 minutes until fragrant. 2. Add the potato and carrot, stirring to coat in the paste. Pour in the coconut milk, cover and simmer for 10-12 minutes until the potato is tender. 3. Stir in the peas, fish sauce, sugar, lime juice and chopped coriander. Cook for 2 more minutes, leave to cool completely.
Samosa assembly 1. Cut the filo sheets into long strips and brush with melted butter. Place a spoonful of filling at one end, then fold into triangles, sealing the edges with a little more butter. 2. Deep-fry the samosas in batches at 180°C for 3-4 minutes until golden and crisp (or brush with oil and bake at 200°C for 15-18 minutes, turning once).
Chutney Blend the coriander, chillies, garlic, lime juice, sugar and coconut milk until smooth. Season with salt. Serving Serve the samosas hot, with the chutney alongside for dipping.

Sumac-Mint Lemonade Slushie Fresh mint, Levantine sumac Also works blended with a splash of sparkling water for a lighter, spritz-style finish

200ml fresh lemon juice (about 5-6 lemons) 150g caster sugar 250ml water 1 tbsp sumac, plus extra for the glass rim Large handful fresh mint leaves, plus extra to garnish 800g ice cubes Pinch of salt
1. Heat the water and sugar in a small pan until the sugar dissolves. Remove from the heat, stir in the sumac and mint leaves, and leave to steep for 15 minutes. 2. Strain the syrup through a fine sieve, pressing on the mint to extract the flavour, then discard the solids. Chill. 3. Combine the chilled sumac-mint syrup with the lemon juice and a pinch of salt. 4. Add the ice to a blender with the lemon-sumac mixture. Blend until smooth and slushy, adding a splash of water if needed to loosen. 5. Optional: rim the glasses with a little lemon juice and dip in sumac before pouring. 6. Pour into glasses and garnish with fresh mint leaves and a light dusting of sumac.

4 tsp hojicha powder (or 4 hojicha tea bags) 480ml hot water (not boiling, approx. 80°C) 4 tbsp maple syrup, or to taste 400ml coconut milk, well shaken Plenty of ice Pinch of sea salt (optional) Toasted coconut flakes, to garnish
1. If using hojicha powder, whisk 1 tsp per serving with a small splash of hot water until smooth and lightly frothy. If using tea bags, steep in the hot water for 3–4 minutes, then remove. 2. Stir the maple syrup into the warm hojicha until fully dissolved, then chill until cold. 3. Fill glasses generously with ice. 4. Pour the chilled, sweetened hojicha over the ice, filling each glass about halfway. 5. Top with the well-shaken coconut milk, pouring slowly over back of spoon for layered effect. 6. Add a pinch of sea salt if using and finish with a scattering of toasted coconut flakes. 7. Stir before drinking or serve layered and let it be stirred at the table.

8 ring doughnuts (plain, RTU or homemade) 300ml double cream 2 tbsp icing sugar 1 tbsp matcha powder, plus extra for dusting 150g fresh strawberries, hulled and diced 2 tbsp strawberry jam 100g white chocolate, melted 1 tsp matcha powder (for glaze) 1–2 tbsp milk, to loosen the glaze Freeze-dried strawberry pieces, crushed, to finish
1. Whip cream with icing sugar and 1tbsp matcha until it holds soft peaks. Chill until needed. 2. Warm the strawberry jam slightly to loosen, then fold through the diced strawberries. 3. Slice each doughnut horizontally, not quite all the way through, to create a pocket. 4. Pipe or spoon the matcha cream generously into each doughnut, then spoon over the strawberry mixture. 5. Melt the white chocolate and stir in the matcha powder and milk to make a glaze. Drizzle over the top of each loaded doughnut. 6. Finish with a dusting of matcha and a scattering of crushed freeze-dried strawberries. Serve immediately.
