ROLLIN’ INTO SAINT PATRICK’S DAY

Reuben Egg Rolls are the perfect appetizer for your St. Patrick’s Day festivities. Your budding chef will love rolling up these egg rolls and eating them too. Embrace the luck of the Irish.

Reuben Egg Rolls with Thousand Island Dip

YIELD: 12 EGG ROLLS

FOR THE THOUSAND ISLAND DRESSING:

2 tablespoons minced shallot 1/4 cup Greek yogurt 1/4 cup mayonnaise 2 tablespoons sweet pickle relish 4 ½ teaspoons ketchup

DRESSING DIRECTIONS:

1. Mince shallot. Place into a mixing bowl.

2. Add yogurt, mayonnaise, relish, and ketchup. Whisk together until combined. Dip with egg rolls. Enjoy!

FOR THE EGG ROLLS:

½ cup packed sauerkraut ½ pound deli corned beef or pastrami 1 cup Swiss cheese, shredded 12 egg roll wrappers 2 tablespoons unsalted butter, melted

EGG ROLL DIRECTIONS:

1. Preheat oven to 400°F. Line a baking sheet with parchment paper.

2. Drain sauerkraut in a fine mesh strainer and squeeze out as much liquid as possible. Transfer sauerkraut to a mixing bowl.

3. Chop corned beef into small pieces. Place into bowl with sauerkraut.

4. Use a box grater to shred Swiss cheese and combine with the sauerkraut and corned beef.

5. Fill a small bowl with water and gather egg roll wrappers.

6. Place each egg roll wrapper with one of the corners facing you so it looks like a diamond.

7. Place about 2 tablespoons of the filling in the center of the wrapper in a horizontal line. Be sure to leave about one inch of empty space on either side.

8. Dip your finger in the water and run it around the perimeter of the wrapper.

9. Roll the corner closest to you over the filling once, gently tucking it under filling.

10. Fold over both the left and right sides of the wrapper towards the middle.

11. With your fingers on top of the roll, continue tightly rolling the egg roll into a cylinder shape until completely sealed. 12. Transfer to prepared baking sheet seam side down. Repeat with remaining egg rolls.

13. Brush melted butter over the egg rolls.

14. Bake for 15 minutes or until golden brown.
