Tiramisu Cups

Prep Time: 15 minutes Cook Time: N/A Makes 6 Ingredients 1 cup heavy whipping cream 1 cup mascarpone cheese, room temp 1/3 cup granulated sugar 1 tsp vanilla extract 1 1/2 cups Caffe Vergnano Espresso or very strong coffee, room temp, divided 24 Original or Gluten Free Rutherford & Meyer Wafers Cocoa powder for dusting Instructions Beat heavy whipping cream, sugar, and vanilla until soft peaks form. Slowly fold in mascarpone and continue to whip until stiff. Gently fold in ½ cup of the coffee into the mascarpone mixture. Dip crackers in the remaining coffee and place in the bottom of small glass dish or jar. Spoon or pipe 3 tablespoons of whipped cream mixture on top of the first cracker and repeat two more times. Flatten the top and dust with cocoa powder. Refrigerate for 3 hours before serving.
