Tomatillo Toasts with Serrano & Manchego
Prep Time: 10 minutes Cook Time: 10 minutes Serves 4 Ingredients 4 thick slices seeded bread 2 Tbsp extra virgin olive oil, divided 1 lb tomatillos, husked 1 large garlic clove, minced Salt and pepper 8 slices Casa Flores Serrano ham 4oz Casa Flores Manchego Instructions Preheat a grill pan to medium high. Brush olive oil on bread and grill until lightly charred on both sides, about 2 minutes. Halve the tomatillos. Using a large hole grater, gate the halves, flat-side facing the grater into a large bowl; discard the skins. Add minced garlic, 1 tablespoon olive oi, salt and pepper. Spoon the tomatillo mixture evenly on the toasts and top with serrano ham. Top generously with shaved manchego.
