ToMaTILLo toaSTS WITH SErranO aND manchegO INGREDIENTS 4 thick slices seeded bread 2 Tbsp extra virgin olive oil, divided 1 lb tomatillos, husked 1 large garlic clove, minced Salt and pepper 8 Slices Serrano Ham 4 oz CASA FLORES 6 month Manchego INSTRUCTIONS
Preheat a grill pan to medium-high. Brush olive oil on bread and grill until lightly charred on both sides, about 2 minutes. Halve the tomatillos. Using a large hole grater, grate the halves, flat-side facing the grater, into a large bowl; discard the skins. Add minced garlic, 1 tablespoon olive oil, salt and pepper. Spoon the tomatillo mixture evenly on the toast and top with Serrano ham. Top generously with shaved Manchego.
