Savory Galettes with Mushrooms and Thyme Prep Time: 20 minutes Cook Time: 20 minutes Serves: 6 Ingredients 1 sheet puff pastry, thawed 2 Tbsp olive oil 12 oz assorted mushrooms, sliced 1 garlic clove, minced 1 large shallot, sliced 1 tsp thyme 6 oz Casa Flores goat wine cheese, shredded Instructions Roll dough out into a thin even rectangle onto a piece of parchment. Transfer parchment to a baking tray and chill for 15 minutes. In a large sauté pan or cast iron skillet, heat olive oil over medium-high heat. Add mushrooms and cook, stirring occasionally, until browned, about 6 minutes. Add garlic, shallot, and thyme. Cook for 1-2 minutes longer or until shallot becomes soft and translucent. Remove mushrooms from heat and season with salt and pepper. Adjust oven rack to lower-middle position and preheat to 400°F. Spread cheese across dough, leaving about a 2-inch border of dough all around. Top with mushroom mixture. Fold each segment of dough over the edge of filling to create a rim. Brush egg over dough in a thin, even layer (including under each flap). This will give the crust a glossy, golden sheen and help bind the pieces together.
