Arugula salad with manchegO, pear, and hazelnut INGREDIENTS Vinaigrette 2 Tbsp apple cider vinegar 1 Tbsp lemon juice 2 tsp Dijon mustard 1 tsp honey 1 garlic clove, minced 1/4 cup olive oil Salt and pepper Salad 4 cups Arugula 1 large ripe pear, sliced 1/2 cup pomegranate arils 4 oz CASA FLORES 6 month Manchego, sliced 1/3 cup roasted hazelnuts, chopped INSTRUCTIONS
For the dressing, place all ingredients in a jar with a tight-fitting lid. Shake well until all ingredients are combined. Taste and adjust if needed.
For the salad, place the salad ingredients in a
mixing bowl and toss with 2 Tbsp of dressing. Taste if you need more dressing. Serve immediately.
