ASHFORD CASTLE When you step inside the gates of Ashford Castle, you’re stepping into history.
Did you know?
The large round table at the entry room to George V Dining Room is actually a rotating 'rent table', and one of the most significant and interesting pieces of original furniture in the castle. This is the table where the rents for the estate were collected. “On the day you paid the rent, the agent would sit at the table and the tenants would queue up,” says Fintan Gorman. “As they came up alphabetically, the agent would swivel the table around until he found their name and rent book. Guests are fascinated by it – it’s a very rare piece.”
T
here’s a rich and chequered story when it comes to Ashford Castle and its estate and over 800 years of tales, anecdotes and moments of historical note that have taken place within these walls. The story begins back in 1228, when the castle was founded by the Anglo-Norman de Burgo family, following their defeat of the O’Connors of Connaught. Ashford was not the only castle the family built, but it was their principal stronghold. It remained within their domain until 1589, when control of the castle was won by Sir Richard Bingham, Lord President of Connaught. However, it wasn’t until 1715 that Ashford began to take the form that you recognise today. The Browne family built the (then) freestanding French-style chateau section, Ashford House, in 1715. If you take afternoon tea in The Connaught Room of the castle, this is the section you’ll be in. But while the Browne family helped morph Ashford into a fine period-style hunting lodge, it was the Guinness family that played the most important role in putting Ashford on the map as a venue “fit for a King”. Sir Benjamin Lee Guinness purchased Ashford in 1852 and when he died 16 years later, he bequeathed the estate to his son Arthur, Lord Ardilaun, a keen gardener with a passion for trees, who added the west wing. The building additions to the castle under the Guinness ownership can be seen most prominently in the George V Dining Room and West Wing of the castle. “Three things put Ashford on the map,” says historian Fintan Gorman. “In 1905, Prince George Prince of Wales (later King George V) visited from England, to shoot with the Guinness family. They spent an absolute fortune on his visit – they built the new tower entrance and added the Prince of Wales cocktail lounge. It was a huge coup for the Guinness family, getting royalty to come and shoot with them. The next significant moment was the filming of The Quiet Man (more on that later) and then

The Guinness Era
Dating back to the 13th century, Ashford Castle has witnessed a rich and storied history. The estate has been home to a host of prestigious names, including Sir Benjamin Lee Guinness, Irish brewer and first lord mayor of Dublin, whose brewery became one of the largest in the world. When Sir Benjamin purchased Ashford, he began transforming the Estate into the magnificent retreat we enjoy today. He extended the estate to 26,000 acres, built new roads and planted thousands of trees. He also added two large Victorian style extensions. His son, Lord Ardilaun, was a conservationist long before it became fashionable. He started producing salmon and later trout to stock the lake from the 1860s. It is still functioning and believed to be the oldest trout hatchery in the world. The Guinness family’s legacy at Ashford Castle can be seen to this day, in its beautiful trees, infrastructure and impressive buildings.
the really big one in modern times was the Reagan visit in 1984, when he came as President to trace his roots.” Ashford was retained by the Iveagh Trust on behalf of the Guinness family until 1939 when it was purchased by Noel Huggard. It was under Huggard’s ownership that Ashford Castle became a hotel, when he established the property as a luxury estate ideal for country pursuits, much like it is today. In 1951, one of the most impactful group of guests arrived at Ashford Castle, ready to film The Quiet Man. While none of the movie was filmed within the castle itself, the plot and the setting is intertwined with the story of Ashford and most of the stars of the film, including director John Ford and the leads John Wayne and Maureen O’Hara, stayed at the castle during filming. It was in 1970 that John A Mulcahy bought Ashford Castle and oversaw a complete renovation and expansion, doubling its size and adding a golf course. A group of Irish American investors bought the castle from him in 1985 and in 2013, the current owners of Ashford Castle, Red Carnation Hotels, stepped aboard, instigating a huge restoration and refurbishment of the main buildings. It was during this stage of restoration that many of the castle’s current highlights, like the plush Billiards Room and the Cinema, were added. In the years following, there were other new additions to the castle, including the stunning Spa and wine tasting tunnels, which were completed in 2015. When you stand before the castle today, you can see its evolution in several stages, from the original piece of the castle from 1228 to the French chateau style Browne house of 1715, the Tudor-style castle from the Guinness era, all the way through to the Victorian glasshouse of the Spa. It’s this view that shows the progression of Ashford Castle alongside its historic roots… and who knows what the future holds?

Afternoon Tea is a beloved institution that is enjoyed all over the world. Here at Ashford Castle, it is a time-honoured tradition that has been lovingly preserved since 1868.
Served in The Connaught Room overlooking the lake, our Afternoon Tea experience is a nod to our former residents, Lord and Lady Ardilaun, who would take their tea in this very room when they lived in the castle. To this day, it is a luxurious ceremony not to be rushed but enjoyed at a leisurely pace, savouring every morsel and elegant detail. While we like to keep proceedings traditional, we do serve our Afternoon Tea with a hint of a twist to the classic; for example, using Wagyu beef with a homemade tarragon pesto alongside a celeriac remoulade in our finger sandwich selection. The balance of flavours and quality of ingredients is of the utmost importance. Our salmon sandwich includes apple, celery and pickled elderflower, which we grow in our gardens and preserve to be used throughout the year, so we’re using age-old techniques in a modern way. This course is then followed by our sweet treats selection, which is made fresh on the premises each day and includes a balance of flavours and textures. Our pastry selection changes throughout the year depending on what’s grown in our gardens, what’s in season and what we might be celebrating given the time of year. Our freshly made scone selection traditionally follows this course and includes a fruit scone, plain scone and our famous cheese scone served alongside homemade seasonal fruit jam, traditional clotted cream and a vibrant lemon curd, which we suggest our guests try with the cheese scone. Of course, you can’t have Afternoon Tea without a suitably elegant matching service and we pride ourselves on ensuring every detail would impress not only our guests, but Lord and Lady Ardilaun themselves. As you sit back in this intimate space, taking in views of Lough Corrib and the exquisite details of the room, you can expect a very personal service as we only have nine tables at each sitting.

The wood panelled walls are glossy and lined with oil paintings, the lights in the Waterford Crystal chandeliers twinkle and the wait team are dressed traditionally in white bowties and tails.
I
t is not the only nod to tradition within the restaurant. Gentlemen are still asked to wear a jacket for dinner and many dishes arrive to the table on a trolley, alluding to a more elegant, refined time. It is how a glass of champagne is served, as well as the beef which is carved at the table side, for additional flair. The cheese is also served from the trolley and petit fours are wheeled in at the end of service. It is very much about a traditional, elegant experience. The ethos of the menu focuses on sourcing the best possible ingredients and letting them speak for themselves. A great deal of the produce comes directly from the castle gardens, too. You might see homegrown horseradish made into a sauce for the salmon, or cucumbers served pressed, chargrilled and pickled, all coming from the garden. Nasturtium leaves aren’t just used to dress the dishes – the kitchen makes a spicy, fragrant oil from the peppery flower and stems. The kitchen is run by Liam Finnegan, Executive Head Chef at Ashford Castle. With a background in a series of Michelin starred restaurants, including Michael Caine’s two star restaurant Gidleigh Park in Devon, Liam brings a classic and old-school cooking style to George V Dining Room, with a menu that celebrates the best possible ingredients. He also works incredibly closely with the garden team, creating inventive dishes from the produce grown on the estate. When it comes to choosing what to order in George V Dining Room, the decision is tough. There are a few classic dishes on the menu, but served with a bit of a twist. “Earlier this year, we were doing a beautiful foie gras terrine but rather than making it traditionally, we served it with quince, chicory and brioche. We also did a beautiful partridge with bacon and hazelnut.” While the restaurant is the perfect setting for an elegant dinner, an experience within George V Dining Room is not limited to the evening. This is also where breakfast is served, so you can get a taste of sophistication first thing in the morning. There is a ham trolley where freshly carved ham is served at the table side and there is a trolley with homemade smoothies, kombucha and champagne that goes from table to table. It is all part of the experience, one which will stay with you for many years to come.

If you’re in the mood for a cocktail with your meal, the theme of rich, decadent flavour profiles continues with the mixology menu. There’s The Ashford Knight made with Tequila, Cointreau, Red Wine and Lime or The Lost Year features Jameson Black Barrel, Buffalo Trace bourbon and absinthe, with a dash of Lillet Rose to finish. At Ashford Castle, sustainability is the lodestar for all our food decisions, starting with our own back yard.
I
t is no secret that food tastes best when eaten closest to its source. Which is why dishes at Ashford Castle positively sing with flavour. Plenty of the vegetables, fruits and herbs served at Ashford are grown within the estate walls, in the extensive kitchen gardens. And it is not just the regular produce you would expect to see in a country garden. At Ashford, our team of gardeners grow ingredients that you would not see on any other menu, like rare kinds of pumpkin and squash for soups and risottos, flowered dill seeds and salsify. They also grow several varieties of baby vegetable, which may appear as tempura bites on a vegan platter in The Quay Bar at The Lodge, or as a side dish in Stanley’s. With the garden team working in conjunction with the chefs and kitchens, there are some truly creative inventions coming out of the beds and polytunnels. “We have one tunnel dedicated to herbs like rosemary, sage and lemon verbena,” says Head Gardener Alex Lavarde, originally from Lyon. “The smell from the lemon verbena leaf is just heaven. The chefs use it to make sorbet and desserts, but they also dry it to make tea, which they put in a nice teabag and give to guests. Guests really love this touch.” There are also some plants you might not expect to see in Ireland. “We planted a grapevine in the polytunnel. When we harvest the grapes, they might be going onto the cheeseboard. Or the chefs will be able to use the leaves of the grapevine, almost like a spring roll.” These kind of ‘no waste’ principles extend into the kitchens, where every scrap of waste, from coffee grinds to tea leaves, potato peelings to fruit skins, is collected for the garden team to make compost. “We are trying to create a closed circle,” says Alex. “We start with the kitchen waste, make compost, then put compost on the beds, which helps to grow the vegetables that return to the kitchen, where the waste goes into the compost and so on.” It is not the only sustainable measure in place. The team also make a plant fertiliser using fermented nettle leaves or comfrey, and they’ve also just created a worm farm which produces a matter that is extremely good for the plants, with lots of micronutrients (and the worms are happy with their gourmet food, too). This is all part of the broader sustainability policy of the estate and the gardens. “When I started here, the brief was to be as self-sufficient as possible,” says Alex. But alongside producing as much as they can with the space available, Alex wants to ensure said produce can be used throughout the year. “All of the fruits we’re planting can be enjoyed in season. But then we can also preserve them to make jams and chutneys, so we can benefit from the summer months throughout the year.”

Alex Lavarde How did you get into the industry?
I started to grow vegetables for hotels and restaurants about 13 years
Alongside those jams and chutneys, there’s another garden product that’s jarred for use on the estate and that’s the honey from their very own hive of Ashford bees. There are several beehives on the estate, with eight near the Lodge and two nearer the castle. “The bees are great to help us to pollinate the different fruits, trees and fruit bushes that we have. And they are also great to increase biodiversity.” The honey they produce is a happy by-product, which you might find on your porridge at breakfast or even in a cocktail at the bar. “We collect some of the honey from the bees, but we don’t collect everything,” says Alex. “We leave them with a fair amount of stores for the winter, so then we don’t need to feed them unnaturally. We keep it as a very, very natural way of beekeeping.” “It’s something that is very close to my heart because we are losing the bee population, mainly due to farming practises. Too many chemicals are being used and the bees are being poisoned. So we don’t do any of that. We don’t use any chemical fertilisers or chemicals at all in the garden.” Ashford honey makes its way into another product, too. In 2022, Ashford Castle collaborated with the award-winning Shed Distillery in Leitrim to produce Ashford Castle Drumshanbo Gunpowder Irish Gin. The distinctive bottle is the shade of the estate’s signature forest green and the gin is flavoured with gunpowder tea, the first harvest of Ashford honey and fragrant wood sorrel, a wild herb which flourishes beneath the ancient trees on the estate woodlands. There is so much bounty within the 350-acre estate of Ashford Castle, from the wild foods that grow in the forest to the hundreds of varieties of plants tended to by the garden team. With so much to be discovered, the best way to explore the abundant growth is on a guided tour with one of the gardeners.

Garden Project and it keeps growing every year since then. In this field, you always learn every day!
What is your favourite time of year in the garden?
Oh, there are a lot of times that I love. But I suppose a very interesting time in the garden would be around late July to mid-August, because there is a very wide range of produce available. May is interesting
because you have crops like asparagus that are starting to come in
season, which is an interesting crop, because the harvesting season is only six to seven weeks. Chefs love it, too.
How do you interact with the chefs and kitchen team?
We communicate a lot. Also, at the end of the year, we talk a lot with the chefs about the year gone by, what worked and what did not work, and also what they would like us to grow for them in the future. It’s great to get feedback from the chefs, to find out what they loved.
What are some of your favourite ingredients that you’ve grown? We grow a lot of things that the chefs can’t really find anywhere else.
We grow coriander and let it go to flower, then we get green, crunchy
coriander seeds that the chefs use fresh in salads, or make into a pickle.
We harvest the leaves of the blackcurrant bushes and the chefs use them to make infused oils, or infused milks for desserts. We also harvest the additional roots on celeriac, which they fry up with butter and garlic – they’re amazing.
What do you love about your job?
I’m very happy to be a part of this journey, it’s a very interesting one.
You meet really interesting people and I get to work outside every day. I’m not stuck in an office because I couldn’t do that – I just love being
outside! I love working with the soil and knowing that we don’t put any nasty chemicals into it and the produce that we grow is just fresh and very tasty. It’s a great reward for us.

PRESERVING HERITAGE
Apple trees on the Ashford Estate are all descended from heritage varieties planted by the original owners in the 1800s. These are
native breeds and unique to Ireland. We use these apples in our signature chutneys and jams and throughout our kitchens.
POLLINATOR HEAVEN
Our hives are located in our orchards creating an
environmental loop. We provide the bees with an
environment in which they can flourish and they in turn pollinate our fruit trees.
When the gardens are at their most active, you can take a guided walk with one of the gardeners around the various beds and poly tunnels, so you can see it all first-hand. On Tuesdays, Thursdays and Saturdays, you can join either Alex or Niamh to learn all about the produce grown in the gardens, as well as the sustainability practices they uphold. You will have the opportunity to go down to the gardens and pick the prime produce, before heading to Squire Danagher’s with the chef and gardener to prepare a dish, picked by your own hands. But whether you want to go out and get your hands dirty or simply tuck into its harvest in one of the estate’s restaurants, you can be sure that you’ll be enjoying some of the freshest produce in the country.

The Wine Cellars in Ashford Castle are a really beautiful space to explore and enjoy a glass of wine. You can select your wine for dinner, have a tasting or even a private dinner down there. It was formerly the old Victorian entrance tunnel and coal bunker. When the Tollmans came to purchase the hotel, Mr Tollman said to me, “Do you have a cellar?” I’d been trying to get this area turned into a cellar for 30 years, so I said to him, “Yeah, we have this amazing tunnel that should be a cellar.” He asked if he could see it so I brought him down and he couldn’t believe we weren’t using it. It hadn’t been used in probably 200 years. It was filthy. I told him we never had the time or resources and it would cost a fortune and he smiled proudly and said, “You needn’t worry about that.” And they’ve done a magnificent job restoring this space. The Inglenook, which is the entrance to The Connaught Room, is a really nice space for Afternoon Tea if you have a party of six or eight; it’s almost like a little separate area. We also use it for private dining; or if we have a larger private dining group, say for 20 people using The Connaught Room, the Inglenook is a wonderful place for a cocktail reception. From noon until six o’clock in the evening, people watching in The Drawing Room over a coffee, light lunch or maybe a cocktail before dinner is just the ticket, or simply enjoy the beautiful views over the lake. Then it turns into our entertainment hub where at ten o’clock, musicians will come in and perform for guests until midnight. As the Restaurant Manager, I spend most of my time in the George V, so from my point of view, it’s really the heart and soul of the castle. Our guests have breakfast there, they’ll have dinner, and it’s the last place they experience before their departure. I think one of the greatest assets we have in the castle is the experience of our people; we have staff who’ve been working here through various ownerships and generations who bring a sense of history and pride from each era to the next generation. We’re very lucky in that way. It’s a really special place. When you come down over the hill and see the estate for the first time, you’re in awe. Then you enter the castle and you’re met with all the opulence. I think a lot of people expect it to be really stuffy and they’re surprised to find that it’s actually very welcoming and relaxed, like a country home, where any seat is the best seat in the house.’

Over the years, this space has taken many forms – it was once the Cong Cinema, the first theatre to screen The Quiet Man before even Hollywood premiered the film. But now, it’s the second casual restaurant on the estate. The menu is locally inspired, with a strong focus on seafood, but plenty of other options to choose from. All of the produce is sourced from the shores of Ireland, but paired with a global flavour and sensibility. “With a nod to our owner, Mrs Tollman, there are several international dishes on the menu, with an emphasis on her favourite options,” says Executive Head Chef Liam Finnegan. “The beef bobotie spring rolls have a strong South African influence and they’re very popular – we serve them with an apricot and peach chutney. One of our favourite dishes is the piri piri chicken cooked on the rotisserie grill, which is again a nod to South Africa – though the dish is technically Portuguese.” While the menu is broad, seafood options are particularly strong. Who can pass up the particularly Irish pairing of the freshest oysters with a creamy pint of Guinness? There are seafood platters including langoustines, smoked salmon, mussels and the catch of the day, along with surf and turf and a lobster tank, too. With an open, airy feel and open fireplace at the heart of the space, it’s a great spot for dining in the winter months, where you can cosy up next to the roaring fire as you tuck into a bowl of warming fish bisque with saffron, fennel and rouille. But it’s also ideal in the summer, where you can take a cocktail onto the terrace or enjoy an al fresco lunch. A fairy tale location on the banks of Lough Corrib, Ashford Castle is the ultimate Irish wedding destination. Couples that get married at Ashford Castle become part of a unique history. Celebrities have chosen the estate for their special day; with its rich history, beautiful location and team of experienced staff eager to make every moment utterly magical, it’s no wonder Ashford Castle is considered one of the world’s most
enchanting wedding venues. “No request too large, no detail too small” is the philosophy behind every wedding at Ashford Castle and one that owner Beatrice Tollman has instilled since purchasing the estate in 2013. The story of Beatrice and her husband Stanley is where it all started, a love story that began in South Africa when the newly married couple opened The Nugget Hotel in Johannesburg. Renowned for her fine cuisine, this is where Mrs Tollman’s food journey began and today, you can find her recipes on the menus at Ashford Castle. In 1975, the couple moved to the UK and purchased the prestigious Chesterfield Hotel in Mayfair and the Red Carnation Hotel Collection came to life, inspired by the signature red carnation Stanley often wore in his lapel.

MYTHOLOGICAL TALES OF LOVE A mythological tale of love, the legend of Diarmuid and Grainne comes from the Fenian Cycle of Irish mythology and tells the story of a classic love triangle. It begins with Ireland’s legendary mythological hero and leader of a band of warriors known as the Fianna, Fionn Mac Cumhaill. Fionn is grief stricken after the death of his wife Maigneis and in a bid to ease his pain, his followers set out to find him the loveliest woman of all to replace her. They choose Grainne, the daughter of the High King Cormac MacAirt, who instead falls in love with one of Fionn’s best warriors, Diarmuid. The two run away together, crossing the river Shannon and hiding in a forest, with Grainne taking cover under an invisibility cloak. Fionn and the rest of the Fianna begin an epic chase, but the couple manage to evade them every time. Realising that their love for each other is real, Fionn eventually relents and marries Grainne’s sister instead, leaving the couple to live happily ever after in County Sligo.

TIMELESS IRISH LOVE STORIES
Over the decades, legendary love stories have unfolded at Ashford Castle. Engagements, weddings, christenings, anniversaries… couples return to where it all started to celebrate and remember. Ireland has long been an island full of romantics, renowned for our own legendary love stories that have made it into song and film. The love-ballad ‘Grace’ tells the story of the final hours of the poet, journalist and revolutionary Joseph Mary Plunkett. Plunkett was executed in May 1916 at Kilmainham Gaol for his part in organising the Easter Rising. While awaiting execution, a badly injured Plunkett married his long-time sweetheart Grace Gifford, to whom he had proposed to a year before. On learning that Plunkett was to be executed, Grace purchased a ring from a Dublin jeweller’s shop and persuaded the authorities to allow her and Plunkett to wed on the night before he was executed. Grace never remarried and when she died in 1955, she was given a funeral with full military honours, with the President of Ireland in attendance. Considered one of our finest traditional ballads, ‘Grace’ was written in 1985 by brothers Frank and Seán O’Meara and has been covered by a host of musicians including The Dubliners and Rod Stewart.
LET LOVE AND FRIENDSHIP REIGN
As Lough Corrib spills out into Galway Bay along the Corrib river, it flows past the ancient village of Claddagh. It was here that the original Claddagh Ring was first created by Richard Joyce in the 17th century. The people of the Claddagh were proud sailors and fishermen and to this day, they have a seafaring tradition. The Claddagh Ring is worn proudly by the people of the Claddagh and is a treasured part of their identity. The ring shows two hands holding a heart which wears a crown, a motif that’s explained in the phrase “Let Love and Friendship reign”. The Claddagh Ring was the only ring made in Ireland worn by Queen Victoria and later by Queen Alexandra and King Edward VII. The tradition of how to wear this ring is very distinctive. If the owner of the ring wears it with the crown pointing towards the fingernail, he or she is said to be in love or married. To wear the ring with the heart pointing to the fingernail, he or she is said to be unattached to anyone.

Abiding by Mrs Tollman’s philosophy that “no request is too large, no detail too small”, it’s the small things that make weddings at Ashford such magical experiences. At one recent wedding for two serious whiskey enthusiasts, the couple purchased a rare bottle of whiskey and had it placed into a specially carved wooden collector’s box. They wrote letters to each other and placed them inside this box, along with mementos detailing their special day, creating a time capsule for them to revisit when they open it again on their 10th anniversary.

BEA AND STANLEY Bea and Stanley Tollman’s love story is a captivating saga of enduring love. The Red Carnation story began in 1952, when a beautiful young woman called Bea caught the eye of a distinguished young hotelier named Stanley, who was known for wearing a red carnation in his lapel. They married and opened their first hotel called The Nugget Hotel in Johannesburg, which over the next five decades, grew into a global business with high-end hotels in the UK, South Africa, Switzerland and the US. Through the chapters of life, their love embodied a timeless tale of true partnership.
At Ashford Castle, every guest is unique so when it comes to planning a wedding, there is no copy and paste formula. Every detail is bespoke; it very much depends on what aspects of the couple’s culture and traditions they want to incorporate into their special day. We offer two types of weddings at the castle. The first is intimate, from two up to 40 guests, inclusive of the wedding couple. These weddings are accommodated for in The Connaught Room, which features a beautiful Donegal Crystal chandelier, antique furniture, original fireplace and floor-to-ceiling windows overlooking the gardens and fountain located at the original entrance to the castle. Our other option is exclusive hire of the castle for a minimum of two days, which includes all bedrooms and suites, restaurants and bars and the lakeside boathouse, which is a private one-bedroom suite. The wedding breakfast is then served in the George V dining room. We also host weddings at The Lodge, which overlooks Lough Corrib. Our drinks reception takes place in our Harbour Bar or Gallery area and we can also arrange an outdoor drinks reception on our Harbour Bar patio. The wedding dinner is then held in our magnificent Harbour Ballroom complete with beautiful chandeliers and panoramic views of Lough Corrib and Kinlough Woods. The wedding couple then have their choice of staying in one of our stunning Lake View Suites, which are all individually styled, on the night of their wedding. Our advice to couples is to plan as much as possible in advance. Delegate certain tasks to your bridal party or members of your immediate family, maybe sharing a contact list of key people or a list of some of the groups of people you want to be sure the photographer takes a picture of on the day. Most importantly, be sure to enjoy every moment.

THE PROPOSAL
Our team help to create many engagements at The Lodge and offer different proposal packages. We recently helped create a lovely memory for one couple where upon their arrival, we told them their room wasn’t ready yet. We offered to drop them down to the gardens to take a romantic walk through the estate. While they were out, we put candles and rose petals in their room and we had someone on the grounds ready to take photographs of the couple when it was time, but pretending to be out taking images for our social media. So we were able to record their special moment for them without spoiling the surprise.
There is so much for couples to enjoy throughout the Ashford Estate. In addition to the many activities available, couples having weddings at The Lodge are also welcome to use the castle as a backdrop for their photography*, taking advantage of the majestic views over Lough Corrib and of course the beautiful turreted castle – the ideal setting to capture your perfect day.

Examine the perennial borders and freshly grown fruits and vegetables within our Walled Garden or venture through our woodland trails to greet our ancient trees and friendly wildlife. Guided walks are available should you wish to learn a little more about the estate’s fascinating history, flora and fauna, or the food grown in our kitchen gardens before it reaches your table.
Branching out A native of Cong, VINCENT CAMPBELL provides walking tours of the estate and the village, highlighting places of interest from a heritage point of view as well as the flora and fauna in the area and the history of the river and the trees that were planted here over 150 years ago.
KITCHEN GARDEN WALK Discover not only how we grow our own food here on the estate, but also the practices we employ to make us a truly sustainable enterprise. Led by estate gardeners, Alex and Niamh, our Kitchen Garden Walk begins at the historic Kitchen Garden, once owned by the Guinness family. From there, you’ll learn about sustainable gardening practices and discover the fresh produce featured across our seasonal menus. What’s more, you’ll learn about our dedication to sustainability, including our organic, no-dig, no-chemicals approach, as well as composting, crop health and local biodiversity. Tours available June to mid October, three days a week (Tuesday, Thursday and Friday at 10am)
“I grew up around Cong and my father was a forester here, so I was brought up with an appreciation of the trees. The woods were our playground. One of my favourite walks on the estate is the one I bring guests on, down by the river and towards the woods and then across the Abbey Bridge and around Cong. When you look at the trees, all of the big ones were planted by Lord Ardilaun over 150 years ago. One tree on the estate that I love would be the one just outside the kitchen. It’s a European common silver and there are a number of those trees throughout the wood. They’re incredible. If you look at the branches, they appear like a tree growing out of another tree. Then there are the Monterey pines as you drive into the golf course and the monkey puzzles down at the farmyard. Where else in the world would you get such a variety of beautiful trees that the Guinnes brought in? And they’re still there for everyone to enjoy. But my favourite tree would probably be one that you would find just outside the gate to the estate as you enter one of the Coillte walks. It’s a Californian redwood, or sequoia sempervirens, and it’s about 150 to 160 years old. If you put your hands on the bark, you’ll find that it’s soft. I love giving tours of this area and sharing what I know with visitors. My advice to anyone visiting the estate is to take some time to walk around the woods and really look all around – every time you go out, you see something different. I recently spotted two red squirrels going up the trees and on another occasion I was greeted by a blue heron. OUR MOSAIC
The stunning ‘Tree of Life’ mural in the indoor pool area was created by South African ceramic artist Jane du Rand. Drawing inspiration from Irish folklore, the intricate mosaic depicts a great oak tree which Celts believed to be a cosmic storehouse of wisdom. The woodland creatures in the tree’s branches and roots are also found in Celtic mythology.

Meet the
MASTER JEWELLER Ashford’s resident Master Goldsmith, Nigel O’Reilly, is recognised as one of the world’s top high-jewellery designers.
I
had been creating vascular surgical devices for many years and loved working with metal and creating pieces. Of course there was a girl I liked and wanted to impress her. She was an artist so I had to find a way to creatively impress her. I made a ring for her from carbide steel. When she mentioned that it could be a beautiful piece of jewellery and that maybe I should consider jewellery design, I became more aware of the potential of using metal for jewellery. And yes, it worked, I impressed the girl and we got married! INSPIRATION... Undoubtably my wife, Tracy. She’s the one that I’m still trying to impress 20 years later. Erwin Springbrunn has also influenced me greatly – he trained me in the master goldsmithing tradition which I love. But the greatest implemental impact came from his attitude towards living in the West of Ireland. He said: “If you make work that is good enough, people will travel to you”. That if I make work that is better than anybody else in the world, it doesn’t matter that I’m at the edge of Europe on a small island, people will come. That’s happening now; people are flying from all over the world to visit our studio and that’s one of the things I’m most proud of... and it was Erwin that really made me believe that could happen. PROUD MOMENT... Having a solo show in Los Angeles last November with Sotheby’s, one of the biggest names of jewellery and art in the world, was probably one of my proudest moments. But there are also so many little things that have happened that I’m really proud of. I’m proud to put Mayo on the map for fine jewellery. Even having apprentices contact me asking to spend time training in the studio here, I’m proud of that. ON ASHFORD... I grew up not 30 minutes away from Ashford Castle and it’s always had a magical appeal. It has became a place of worship in my head. It has always had a special place in Mayo people’s hearts and to be part of that team and to have my work included in a place like Ashford Castle is amazing. I feel so honoured to be a part of the Ashford Castle family. AMBITION... I would like my name and my work to be recognised in the same way as Fabergé is and JAR in Paris. On a greater scale, I would love to start a jewellery industry in Castlebar, Mayo and the West of Ireland in general. A place to train apprentices, where they can start up on their own. It’s a long-term goal but I think you must set your sights high.

What could be more memorable for family members of every age than a tour of the estate’s woodland trails on horseback? If you want to explore every nook and cranny of the ancient forests and trails on the estate, a horseback ride is a great way to do so. Trail rides and lessons are accompanied by experienced guides and each person is matched to a horse who will best suit their abilities. If you’d rather leave the reins in another pair of hands, you can take a romantic horse-drawn carriage ride around the woodlands.
Similarly, archery is a noble and ancient sport and you can give it a go yourself at the Ashford archery range. Using arrows that are the only ones of their kind in Ireland, along with rubber 3D targets, you’ll learn the ropes in a beautiful setting. In case the weather doesn’t cooperate, fret not, as we have an indoor range available. Please note that this experience is suitable for individuals aged 10 years and older, offering an opportunity for both seasoned archers and novices to enjoy this timeless activity amidst the captivating surroundings of Ashford Castle.
Our picturesque nine-hole, 2,996 yard, par 35 parkland course is perfect for golfers of all abilities to hone their skills. Legendary Irish golfer Christy O’Connor Snr started his illustrious career here in 1947 before going on to participate in ten Ryder Cups. Green fees are complimentary to hotel residents and we provide the latest Titleist clubs on request. The course, the original deer park of the estate, was designed by renowned Irish golf architect Eddie Hackett and imaginatively integrates a wide variety of natural features to create charming par threes, exciting par fours and a formidable par five. Ashford Castle looks most imposing and impressive when viewed from Lough Corrib. And on a kayaking trip, you get to see the castle and the grounds from a whole new perspective, on an adventure that will bring you up close and personal with the local wildlife. You’ll paddle among the swaying rushes as your guide imparts their knowledge of the history of the estate and its surroundings. We welcome individuals and groups of up to eight people every day. For larger groups, please let us know in advance. Our kayaking excursion is available from May to September each year.

Discover the ancient form of falconry at the oldest established Falconry School in Ireland. The art of shooting is a long-standing country pursuit and one which tempted George V to Ashford Castle back in 1905. You can master the art yourself on the clay shooting range, where you’ll learn about the safety and etiquette of shooting on targets that mimic the local game. You’ll gather at the Equestrian Centre to meet your instructor who will then direct you to the shooting range. Clay shooting participants must be over 16 years of age.
You can book one of our two allweather courts at reception, where rackets and balls are available for hire. Whether you’re a regular player or have never held a racket in your life, you’re sure to enjoy the experience in the beautiful setting of the Ashford Estate. Group coaching sessions can also be arranged, please enquire for prices. Use of the courts is complimentary for residents, 24-hours notice is required for tennis instruction.
The impressive Lough Corrib, covering 44,000 acres, is the largest of the region’s three lakes and renowned for brown trout, salmon and pike fishing. Set out with our knowledgeable third-generation ghillie who will guide you to the best spots and tailor your experience to your ability. We offer fly fishing lessons, half- and full-day trips, primarily using hand-crafted 19-foot clinker traditional wooden boats, for both beginners and experienced fishers. A fullday experience allows you time to enjoy a picnic lunch on one of our glorious islands and the chance to cook your catch.

MEET THE FALCONER Deborah Knight
James and Deborah Knight founded Ireland’s first School of Falconry at Ashford Castle back in 1999, though they were falconers since 1990. In fact, their first bird, who hatched in 1991, is still with them today. We chatted to Deborah about the school and what they offer… WHAT CAN GUESTS EXPECT AT THE SCHOOL OF FALCONRY? We offer one-hour private Hawk Walk Experiences, where castle and lodge guests fly our wonderful hawks with us around the spectacular castle grounds and through the surrounding woods. On arrival at the Falconry School, the guests are greeted by their Hawk Walk instructor and shown around the aviaries but, within minutes of arriving, they will be introduced to the hawk or hawks that they are going to fly. After some instruction on how to handle the hawks correctly they will set off, with their instructor, to the surrounding gardens and woods where they will fly the hawks free. As they walk through the grounds the hawks will closely follow them, flying from tree to tree, before swooping down to land on their gloved fists whenever we ask them to. As our guests fly the hawks, their falconer will explain about the
hawks’ exceptional eyesight, their speed and agility and also about the characters of the individual hawks they are flying. All of the hawks are specially trained by ourselves and are exercised daily. This allows us to give guests a real insight into the personality and character of the hawks they are flying. WHAT MAKES YOU UNIQUE? We are unique in that we never sell our hawks; we make a lifelong commitment to them so we have many years’ experience with them and many stories to tell about each individual hawk. We even had some new arrivals during lockdown, with the surprise hatching of the hawk chicks we call the “nuts” – Acorn, Walnut, Chestnut and Hazelnut! WHAT DO GUESTS LOVE ABOUT IT? The experience of interacting so closely
with a free-flying hawk is a profound and moving experience. It is very ‘hands-on’ and is much more interactive than guests expect it to be. They have the chance to really get to know their hawk and to study their hawk up close when it is perched on their glove and especially when flying to and from their glove. Having the hawks come zipping past us, twisting and turning and showing off their agility at speed through the woods, is quite an experience to say the least! WHY DO YOU THINK IT’S SUCH A SPECIAL EXPERIENCE? Flying a hawk that is choosing to work in partnership with you is really quite an emotional and magical experience and no-one ever fails to be moved by it. There is nothing comparable to it, no other relationship between man and animal even comes close.

SQUIRE DANAGHER’S COTTAGE
For a truly unique experience, a trip to Squire Danagher’s Cottage is a must, particularly for fans of The Quiet Man. Set in the original house where the classic movie was filmed, this traditional thatch cottage was recently restored to feel exactly as it would have in the 1950s, when the film was made. Walk in and you’ll be met with the scent of fresh bread cooking on the stove, before you sit down at the traditional kitchen table to eat. This private dining experience offers a unique and intimate insight into Irish life, with a seanchaí (traditional Gaelic storyteller) and traditional dancing, if you’d like. There’s even a Guinness tap, so you can master the art of pouring the perfect pint. Did you know… The film could have been known by a different title. Apparently, the head of Republic Pictures preferred The Prizefighter and the Colleen, but John Ford won his battle for The Quiet Man.

THE CASTLE WINE CELLARS
Down in the underbelly of the castle, you’ll find the striking wine cellars, the 16th-century stone tunnels illuminated by flickering candle light and home to some incredible wines from all around the world. But this wasn’t always the case. Originally, this area was the main service entrance for the castle’s ‘downstairs’ staff, in the Guinness family era. The tunnels were recently renovated to become the cellars. “I always describe it as the newest oldest wine cellar you’ll see,” says Paul Fogerty, Head Sommelier at Ashford Castle. “The transformation into the cellar created the natural environment where wine should be stored”. You can go down to the cellars for a tutored wine tasting, which might focus on champagnes or premium wines and you can also book the space for a private dinner, for the ultimate in atmospheric dining. Did you know… You can go down to browse the cellar and select your own wine for dinner in George V. As Paul says, “There’s no better way to choose your wine for dinner than looking at every single bottle we have!”

It may surprise you to learn that Wilde’s at the Lodge is not named for Oscar but after his father, surgeon Sir William Wilde, who founded the first eye and ear hospital in Dublin.

pen every evening, Wilde’s at The Lodge is an elegant, contemporary space where you can enjoy the best of local produce, prepared simply but impeccably under the direction of award-winning Executive Chef Jonathan Keane. “Wilde’s tagline is ‘local food with imagination’”, says Jonathan. “Our approach is to let the produce do the talking and to deliver superb ingredients cooked simply and in our own fun, informal style. Wilde’s appeals to foodies because we use the best produce and never compromise on that. Plus, we focus on generosity and guest satisfaction over current trends or fads.” This ethos is evident on the menu, where you’ll find some incredible elements cooked with a subtle dash of flair. There’s a strong seafood theme throughout the menu, with dishes like butter poached wild turbot and pan-seared scallops, along with a lobster bisque topped with fried bread and a whiskey foam. But there are also creative, unique ingredients showcased on the menu – think wild rabbit pithivier or a white pudding scotch egg. Like in George V, plenty of ingredients grown in the garden pop up on the plate, like the mint or meadowsweet that flavours the ice cream, or wild garlic that brings a punchy wave of flavour to the risotto. There’s a frequent addition of seaweeds and wild sea vegetables too, all of which are foraged and picked by the chefs at Old Head in Mayo. While Wilde’s at The Lodge is open nightly for dinner, you can also join them for a Sunday lunch, with hearty dishes like prime Irish Hereford striploin steak served with beef dripping fries, or a supreme of Irish chicken with black pudding mash. But it’s also not a restaurant that takes itself too seriously. “You can expect informal but smart service,” says Jonathan. “Think Nina Simone on the stereo, biodynamic wines and local food.” A winning combination indeed. his casual, warm space is the perfect place to unwind at the end of the day, with a glass of wine and some light bites, rather than a full sit down menu. All of which makes it the ideal option if you’ve enjoyed a lavish dinner the night before and want to keep things lighter on your second evening. At dinner time, dishes are served as lavish sharing platters, where you can indulge in a board of culinary delights alongside an ice cold glass of bubbles. There is a smoked fish platter with the finest trout, salmon and mackerel, served with capers, lemon, watercress and a classic potato salad. There’s a cheeseboard with the best artisan cheeses from the area – think St Tola goat’s cheese, Cavanbert and Rockfield, a pasteurised sheep’s cheese from Mayo. You can also opt for a platter of oysters or charcuterie and there’s a special platter for vegans, featuring tempura garden vegetables, black olive tapenade, sweet potato fries and hummus. Or you can keep things simple with a platter of classic oysters, served natural au mignonette or baked in garlic butter. While the evening focus is on these exquisite boards, there’s a heartier menu on offer at lunchtime, ideal if you’ve just come in from a walk around the estate. “We do a lovely Burren Smoke House Salmon sandwich combo,” says Jonathan Keane, Executive Head Chef at The Lodge at Ashford Castle, “or a dressed Cleggan Crab Mayonnaise or the Ashford Estate Kitchen Garden Risotto”. You can also warm up with a bowl of creamy chowder, with chunks of local seafood and house-made sourdough. But the desserts are every bit as special. “My current favourite dish is our deep fried apple ravioli dessert, served with crème anglaise and Grand Marnier sauce,” says Jonathan. You can even get a decadent dessert platter in the evening, with the apple ravioli, cheesecake, brownie, ice creams and sorbet. Whether you want to cosy up with a cheeseboard and a glass of Malbec or tuck into oysters with a glass of champagne, you’ll be well looked after at The Quay Bar.

A CLASSIC COLLECTION THAT REFLECTS THE PROPERTY’S 800-YEAR HISTORY
The art collection in Ashford Castle is classic and very much in the tradition of the 800 years of history that the castle holds. One iconic piece that is historically linked with the castle hangs in the entrance hall – it’s a portrait of the Guinness family featuring a young Benjamin Lee Guinness when he was about six or seven years old. That’s a really nice painting that immediately greets you when you arrive at the castle. Then there is a small room between the Oak Hall and the George V Dining Room where a few works by Irish artist Pauline Bewick hang. Those paintings are absolutely beautiful and every time I enter that room, I stop and take a closer look at them. Finally, in The Connaught Room you will see a massive 19th century oil painting called ‘After Dinner’ that depicts a very relaxed gathering – everybody’s having wine and you can see a waiter with a bottle of wine between his legs, trying to pop it open. That piece really evokes the feeling we want in that room – it’s very relaxed, the waiter and guests are friendly with each other and that’s what we want our guests to feel – that they can sit back, relax and really enjoy themselves.

A MODERN, WHIMSICAL COLLECTION FROM THE LAST HALF-CENTURY
We have quite a big collection of artwork here at The Lodge. It’s very different to that of the castle – it’s very modern and in some areas a little whimsical to reflect the style of the hotel and our own identity. All of the artworks here would be from the last 50 years. My favourite piece from this collection would have to be the ‘Absolut Vodka’ by Andy Warhol, which is a famous work that was created in 1986. I was always fond of it before I came to work here so was delighted to discover we had it here. My second favourite is a massive painting we have in The Quay Bar and Brasserie, which is also printed on our menus. It’s called ‘Abstract Landscape with Fish and Birds’ by Michael Alan Costello. It’s so vibrant and many of our guests point it out upon entering the bar, asking questions about it. Then there is ‘Lady and the Pelican’ by Andrew Nodes, which is another large painting that hangs in the room next to the bar. We also have a rather interesting painting which hangs in the gentlemen’s restroom – ‘Spring’ by Hannah van Bart – it’s a bit of fun and we do get a few questions from guests about that one. We have a number of interesting paintings throughout the hotel and each one has been carefully chosen specifically to reflect the mood we want in that room. Every piece has a purpose.

Green Dreams HOW YOU CAN HELP
As a guest at Ashford Castle or The Lodge, there are numerous ways you can help us reduce our impact on the environment. Our rooms feature waste separating bins to allow you to recycle and you can choose whether or not we change the linen in your room. Guests are also invited to explore the kitchen gardens where we produce our own food. You can take a tour of the estate to get a closer look at our unique flora and fauna and take with you a stronger appreciation for our natural resources and this beautiful planet we get to call home. Since 2018, Group Purchasing Manager Ailish Keane and Personal Assistant to the Managing Director Helen Gibbons have been working diligently together to help Ashford Estate meet its ambitious sustainability targets. Here, the pair discuss some of the important goals that the entire team are all striving towards in an effort to make a substantial difference to our beloved planet.
n addition to following the United Nations Sustainable Development Goals, we have our own goals that are carried throughout all corners of the estate, including those set by The TreadRight Foundation and Red Carnation Hotels. In 2023, our main aim was to start looking at renewable energy for the estate. We’ve already brought in solar energy and identified quite a few more projects for the future in terms of energy resources. Single-use plastics was our focus three years ago and we’ve worked really hard to reduce these; we now only have a handful left in the hotel. We’re really proud of our biodiversity projects as well and these are progressing year upon year. Ashford Castle was recently named Leading Green Hotel at the Gold Medal Awards 2023 for our sustainability efforts.

Initiatives
ACROSS THE ESTATE LOOKING AT ENERGY USE
We use an online portal called Diligent to record and measure our electricity, gas, diesel, water, waste, air miles and volunteering hours. Solar panels were installed in summer 2023 and 100% of the electricity used on the estate is from renewable/green sources. We’re phasing out diesel vehicles in the estate fleet and in 2023, we added an electric people carrier and shuttle bus. We’ve also added eight additional car charging points at the castle and Mrs Tea’s Boutique & Bakery.
REDUCING WASTE
We have reduced the number of printed brochures and other materials. Plastic bottles, straws and shower caps have been eliminated or replaced since 2019. The Lodge at Ashford Castle provides guests with toiletries by Irish brand The Handmade Soap Company contained in refillable 500ml glass bottles; while in Ashford Castle, we introduced beautiful bespoke toiletries in November 2023. At Mrs Tea’s, we’ve changed all of our disposable coffee cups, plates and cutlery to reusable options. We also measure our food waste through our Winnow weighing and video-capturing food bins. And we compost raw vegetable peelings and coffee grounds for use as garden and polytunnel fertiliser. We recently installed a bio-digester for food waste. We also pickle a lot of our food that we forage from the estate. Finally, through multi-stream waste segregation that is monitored and addressed, we are reducing non-recyclable waste.
CHOOSING SUSTAINABLE INGREDIENTS
Our chef’s passion is for food provenance, so we work with the very best local and organic suppliers to ensure our food is of the highest quality. The wine list at Wilde’s at The Lodge features only wines from bio-dynamic and organic vineyards, while the estate has a dedicated kitchen garden producing seasonal fruit, vegetables and flowers for our kitchens.
SUPPORTING WILDLIFE
With the installation of eight beehives, we’re helping to support our native wildlife. These in turn have produced a delicious honey for retail and kitchen use. Fifty percent of the estate is now considered an ARK – which is a restored, native eco-system, while our golf course is GEO Certified. With a wide variety of songbirds populating the 350-acre Ashford Estate in Cong, staff at the hotel have taken steps to protect the birds, and their young, with the construction of 83 nesting boxes, one for every guest room and suite in the castle. In every bedroom, guests will now find a unique QR code which, when scanned, provides the location of that room’s personal bird sanctuary. The boxes were crafted from an old larch tree that once grew on the estate until it fell in a storm. While alive, the tree provided a number of nesting sites amongst its branches, so the team at the five-star Ashford Castle are delighted that the tree is continuing to help the local birdlife. These include the goldcrest, whose very high-pitched calls can be heard during the winter months on woodlands adjoining the castle.

he Irish word pobal means ‘community’ and here on the Ashford Castle Estate, we take great pride in our local community and wish to honour that important relationship by doing our part to support everyone throughout Cong and the wider region that means so much to us. Whether through volunteering, fundraising or bringing our guests a little closer to the people doing incredible things in our area, our team work tirelessly throughout the year to show their support. Here are just some of the projects that have brought a little bit of added joy to our staff and our wider community…

PARTNERING WITH LOCAL CHARITIES
Through staff volunteering hours and fundraising, our entire team works throughout the year to support various charities and important causes. Every staff member on the estate receives two paid days each year to volunteer with a local charity. Some of the activities our staff are involved in include an annual 5k estate run, gardening, upcycling, photography competitions and estate clean-ups. Each year, we have our annual charity that’s selected by our staff. For 2025, we will be raising funds and awareness for Pancreatic Cancer Research and supporting Crossraods Community Care.Our team members’ efforts never cease to inspire us and it’s through our collective values that we continue to look for ongoing ways in which we can give back to our local community throughout the year.
Through our EXCEPTIONAL IRISH EXPERIENCES, we have curated a collection of authentic Irish experiences under four themes – food; indigenous craft; music and storytelling; and the real Connemara. This provides a unique opportunity for our guests to support our local artists and artisans and discover what makes the West of Ireland so special. Lore & Legend Ireland has a rich diversity and depth of fairy and folk stories. At Ashford Castle, hear from some of the country’s most renowned storytellers and gain an insight into Ireland’s oldest oral art-form Legends, folklore and tales serve as a bridge connecting generations, imparting values, traditions and a sense of identity. These stories often contain timeless wisdom, moral lessons and reflections of the shared experiences within a community. Fewer cultures have relied as heavily on folklore than the Irish. Irish folklore during the penal times, which spanned the 17th to the 18th centuries, holds a special place in the country’s history. The Penal Laws sought to suppress Irish language, religion and cultural expressions. Irish folklore endured as a vital means of preserving the cultural identity and traditions of the people. The stories from this time often include themes of hidden meetings, secret rituals and the preservation of traditions in the face of external threats. Fairy tales, legends and folk beliefs also played a role in conveying messages that could be interpreted allegorically, allowing the Irish to share cultural and religious values discreetly. Irish folklore is a rich tapestry that weaves together the threads of history, faith and identity, reflecting the enduring spirit of the Irish during a period of significant adversity. Legendary Tales
FAIRY FORTS It’s important to note that while the term “fairy fort” suggests a connection to fairies, the cultural significance of these sites goes beyond mere fantasy. They often represent a blend of mythology, historical memory and a deep respect for the natural landscape in the regions where they are found. They were places the people strove to preserve and keep whole through scary stories. Today, efforts are made to protect these sites as part of cultural and historical heritage.
THE CHILDREN OF LÍR
THE FIANNA
Lír, a King of the Tuatha Dé Danann (a magical race who decended from clouds), had four children, daughter Fionnuala and three sons. Stepmother Aoife, jealous of this great love, cast a spell transforming the children into swans and cursed them to 900 years roaming the earth in this form. The curse is eventually broken when a Christian bell tolls, marking the arrival of Christianity into Ireland. The swans transform back into their human forms, age and soon die.
The Fianna were a band of warriors devoted to the service of the High King. Joining the Fianna wasn’t a decision that one took lightly and acceptance into the group was for life – there was no change of hearts allowed. Only the strongest and cleverest of men were accepted into the Fianna. Among other tests, candidates were required to sprint as fast as they could with a thorn stuck in their foot, which they must remove without slowing down at any point.
GRACE O’MALLEY
TÍR NA NÓG
Grace O’Malley, also known as Gráinne Mhaol, was a fearless Irish pirate queen in the 16th century. Born into a seafaring family, O’Malley became a formidable maritime leader, challenging English rule. Renowned for her strategic acumen and resilience, she commanded a fleet, negotiated with Queen Elizabeth I (refusing to bow to her) and defended her people. A symbol of feminine strength and independence, Grace O’Malley left an indelible mark on Irish history.
Oisín was a warrior-poet and the son of Fionn Mac Cumhaill. His legendary tale includes a journey to Tír na nÓg, the Land of Youth, after falling in love with Niamh. Time flowed differently there and when Oisín returned to Ireland, centuries had passed. Niamh had given Oisin her magical horse, warning him he could not touch Irish soil. Upon his return he forgot the warning, bent to help some farmers move a stone and upon touching the rock, aged instantly.
QUEEN MÉABH
FIONN MAC CUMHAILL
Queen Medb (Méabh) of Connaught is a complex figure in Irish mythology, embodying both love and war. The Cattle Raid of Cooley recounts her fierce dispute with husband Ailill, culminating in a battle for prized bulls. Medb’s strategic prowess prevails, even against the formidable Cú Chulainn. Legend holds that she rests in a cairn on Knocknarea, spear in hand, eternally facing Ulster, her enduring foes.
The poet Finn Éces spent seven years trying to catch a particular salmon that lived in the Boyne, for it was prophesied the poet would eat this salmon and “nothing would remain unknown to him”. Eventually the poet caught it and told his student Fionn to cook it for him. While he was cooking it, Fionn burned his thumb and instinctively put his thumb in his mouth. This imbued him with the salmon’s wisdom, making him a master strategist.
CÚ CHULAINN
THE BANSHEE
Cú Chulainn, the most celebrated hero in Irish mythology, is famed for his unparalleled strength, prowess in combat and unwavering courage. Originally named Sétanta, at the age of five, he set off to join the Red Branch Knights armed only with his hurley and sliotar. He earned the title Cú Chulainn (Culann’s Hound) after killing Culann’s attacking dog. Beaten by Queen Maeve in battle and dying, he still refused to lie down. He tied himself to a standing stone and kept fighting upright.
The Banshee, a supernatural figure, is a harbinger of death and an omen to Irish families. Often depicted as a veiled woman wailing mournfully, her cries signal an impending death within the household. Though feared, she is not malevolent, but rather expressing sorrow for the imminent passing. The Banshee watches for the moment of death, to guide the newly dead to their deserved resting place (direction TBC). As h f ord C a s t l e Ma g a z i n e

THE BANSHEES OF INISHERIN (2022)
Two lifelong friends find themselves at an impasse when one abruptly ends their relationship, with alarming consequences for both of them. Starring Colin Farrell, Brendan Gleeson and directed by Martin McDonagh, much of this 2022 hit movie was shot in the West of Ireland. Inis Mor features heavily as does Achill Island. While some of the locations were temporary sets, fans will recognise Colm’Doherty’s cottage in Keem Bay, County Mayo.

Ireland’s captivating scenery acts as a muse, fueling creativity for various artistic endeavors. The west in particular continues to inspire writers, film makers and artists alike. Ireland is a country that’s celebrated for its wealth of artists, ranging from traditional music and film to Irish literature. The West of Ireland is perhaps considered the most culture-rich region of the country, home to a wealth of famous poets, writers, artists, singers, actors and storytellers. If culture is the lifeblood of the West of Ireland, then Galway City, Ireland’s only truly bilingual city, is often seen as its hub. People say this is due to the artistic courses offered by Galway’s colleges, or perhaps it’s people’s desire to head out west, looking for a slower pace of living. A huge number of art galleries pepper the towns, villages and cities across the west, along with pubs offering Celtic music up close and personal and numerous literary points of interest along the way. Thanks to its breathtaking scenery, the West of Ireland has, in recent years, served as a location for several award-winning films such as The Banshees of Inisherin, The Guard, Harry Potter and The Half-Blood Prince, and Star Wars: The Force Awakens’ and The Last Jedi. In 2023, a new film production studio - West Cork Film Studios - opened on the edge of Skibbereen town with the aim of capitalising on the region’s attractiveness as a TV and film location while the likes of Troy Studios in Limerick continues to make high-profile TV and film for Netflix and Apple TV. With the West of Ireland serving as the backdrop for a slew of new films set to hit our screens over the next year or two, expect to see and hear more about this beautiful part of the world very soon.
HARRY CLARKE STAINED GLASS ARTIST
Clarke was born in Dublin and learned his craft in the city, but the impact of the West of Ireland upon his works cannot be underestimated. His vibrant works can be found all over Ireland, but one may frequently stumble across one of his designs in various places in the west. Less than 30 minutes drive from the castle, his windows can be found at St Patrick’s Church in Kilmaine, at St Mary’s in Ballinrobe, at Roundfort Church in Hollymount and at St Mary of the Rosary Church in Cong.

THE QUIET MAN (1952)
Starring John Wayne and Maureen O’Hara and directed by John Ford, The Quiet Man tells the tale of a retired American boxer, played by John Wayne, who returns to the fictional village of his birth, Inisfree, where he finds love. Many of the film’s outdoor scenes were shot in counties Mayo and Galway, with some even taking place on the grounds of Ashford Castle itself. When Sean and Mary Kate first start courting halfway through the movie, Michaeleen drives them across the Ashford Castle bridge. Take a trip into Cong and take a walking tour to see some of the original movie locations including Pat Cohan’s bar and The Quiet Man commemorative statue.

Paul Henry is one of Ireland’s best-known artists, noted in particular for his depictions of the West of Ireland’s unique landscape. He was born in Belfast in 1876, but moved to Achill Island in 1910 and remained there for a decade. His works often depicted the landscapes of Achill Island and of Connemara and can be considered as typifying a vision of Ireland that was prevalent in the early years of the new Irish Free State. Indeed, there are echoes of J.M. Synge’s time spent on the Aran Islands in Henry’s decision to move to Achill and the two undoubtedly owe the significance of much of their work to the sensory experiences and way of life of the islands along the western coast.

LADY GREGORY DRAMATIST
Lady Gregory was an Irish dramatist, folklorist and theatre manager who, together with W.B. Yeats and Edward Martyn, co-founded the Irish Literary Theatre and the Abbey Theatre and wrote numerous short works for both companies. Lady Gregory is remembered for her work behind the Irish Literary Revival and her home at Coole Park in County Galway served as an important meeting place for leading Revival figures. The walled garden contains an autograph tree, a copper beech that is engraved with the initials of many of the leading figures of the Irish Literary Revival including Yeats, Martyn, George Bernard Shaw, J.M. Synge and Seán O’Casey. Lady Gregory’s passion for the Irish language and the folklore of the West of Ireland is said to have been awoken by a trip to Inisheer in the Aran Islands in 1893, which in turn led to some of her most revered works including A Book of Saints and Wonders.
OSCAR WILDE PLAYWRIGHT
Oscar Wilde is one of Ireland’s most well-known novelists, poets and playwrights, with famous works including the play The Importance of Being Earnest, the novel The Picture of Dorian Gray and the letter entitled De Profundis – written during the time of his imprisonment. While Wilde’s extravagant lifestyle and eventual arrest in adulthood is widely known, his childhood remains a little more hidden. The young Wilde in fact spent much time in the West of Ireland – specifically at Moytura House in Cong. The house was built by his father, William Wilde, and exposed the budding writer to elements of Gaelic culture and language. It is also here in the west that Wilde developed his own story-telling skills, listening as he did to local tales of folklore and history.
WILLIAM BUTLER YEATS POET & PLAYWRIGHT
W.B. Yeats was one of the foremost figures of 20th century literature and was particularly pivotal in driving the Irish Literary Revival of the late nineteenth and early twentieth century forward. Despite being born in Sandymount in Dublin, Yeats came to consider his mother’s native Sligo as his childhood and spiritual home after he and his family relocated there shortly following his birth. The natural beauty and local folklore of his spiritual home served to inspire the budding writer and the west’s influence can be seen throughout the course of his career. The 12-line poem Lake Isle of Innisfree, first published in 1890, perhaps serves as the clearest example of Yeats’ affinity with the west, with the poet meditating upon the peace and quiet that the island of Innisfree affords.

The waters of Clew Blay are no stranger to whales and dolphins and even the harmless baskin shark. The eight species most likely to be encountered are the harbour porpoise, common dolphin, bottlenose dolphin, Risso’s dolphin, killer whale, minke whale, humpback whale and fin whale.

THE LUCKY BLUE HERON The blue heron traditionally symbolises luck, prosperity and determination. The blue heron lives nearby lakes and shallow waters where people go fishing. Seeing a blue heron in your dreams is said to be a good sign and seeing one first thing in the morning brings luck all day.

Situated on the banks of Lough Corrib and the River Cong is one of the most famous fisheries in all of Ireland. Covering 44,000 acres, Lough Corrib is the largest of the three lakes in the area and well known for its brown trout, salmon and pike fishing. Your ghillie (guide), Frank Costello, is internationally recognised as one of the most knowledgeable experts on fishing Lough Corrib, having lived beside the lake his entire life. The majority of fishing trips take place from hand-crafted 19ft clinker traditional wooden boats on Lough Corrib. Ask at the Concierge desk for details of all activities available on the estate.
RIVER LIFE
Fishing at Lough Corrib near The Lodge at Ashford Castle is an angler’s paradise. The Owenduff and Tarsaghaun rivers, renowned for their SALMON and SEA TROUT, provide an exhilarating challenge. OTTERS gracefully navigate the waters, where eels and salmon are plentiful, occasionally making appearances on the blanket bog. RED SQUIRREL The revival of the red squirrel in Ireland is a conservation success story. BALLYCROY NATIONAL PARK Close to Ballycroy National Park, spanning over 11,000 hectares, is one of the last intact active blanket bog systems in Ireland and Western Europe, an important scientific and scenic feature of the Irish landscape. The land itself is a designated conservation area where rare and important species and habitats are protected by legislation.
IRISH MOUNTAIN HARE The Irish Mountain Hare, among the oldest indigenous mammal species in Ireland, enjoys protected status. Its natural predators include foxes, stoats and birds of prey. With a bounding gallop reaching speeds of 70km/h, adult hares showcase remarkable agility. Their wide-set eyes provide nearly a 360-degree field of vision, contributing to their adaptability and survival.
WHAT IS A BLANKET BOG? A blanket bog is like a thick, comfy quilt made of decaying plants, mainly sphagnum moss. These bogs are unique, creating a spongy, acidic environment, perfect for storing carbon.

day fast, it actually pre-dates Irish Christianity and has been a site of pilgrimage for more than 2,000 years. Today its rugged slopes
continue to draw devout pilgrims, seeking
not only spiritual solace but also breathtaking
vistas of the Irish countryside from its summit.
Saint Patrick’s connection to the west of Ireland is deeply rooted in Irish history and folklore. Patrick was a fifth Century Christian missionary who is credited with bringing Christianity to Ireland from Roman Britain. At the time Celtic polytheism was the most widely practiced religion. Legend has it that he was captured when he was 16 by Irish pirates and taken to Ireland where he was kept as a slave for six years, working as a shepherd. His time in captivity heighted his spiritual development and after escaping from his captors and returning home, he studied and was ordained as a priest before he had a vision which ultimately saw him return to Ireland to preach Christianity, famously using a shamrock to explain the Trinity of father, son and holy ghost to the masses. Patrick became the first Irish Bishop of Armagh and Primate of Ireland and is now the Patron Saint of Ireland. The legend extends to him banishing snakes from Ireland by driving them into the sea, however there is no evidence that snakes, other than the harmless grass snakes, ever inhabited Ireland. The west of Ireland also holds significant sites associated with Saint Patrick, including holy wells, ancient ruins, and pilgrimage routes that continue to attract visitors seeking spiritual connection. Places like Croagh Patrick, a mountain in County Mayo where Saint Patrick reputedly fasted for forty days, are pilgrimage destinations to this day. Saint Patrick’s Day is a national holiday in Ireland and is celebrated on the 17th of March, which marks the date of his death.
