Della: Opening the door
Curves are cool. That’s Della Glassey’s motto today. But it wasn’t a few years ago. Della is a big girl – she always was and knows now she always will be. And she’s okay with that. Her genes mean she’s never going to be stick thin and, although she’s had many times where she wished it were different, it’s not, and it’s something that at 47 she’s not only accepted, but embraced. Today, Della has just ticked something off her bucket list she never even knew she wanted. She flew to Melbourne and got a taste of life as a model after winning a plus-sized model search through Taking Shape (TS) – a clothing chain dedicated to women size 14 and up. She was one of eight winners – the only Kiwi, along with seven Aussies – and the three-day experience of a lifetime left her wanting more. She’s never been one to put herself out there and in the past would have hid if a camera was brought out. But as she walked on to the set in an old Melbourne warehouse for her first ever professional photo shoot, any past insecurities were long gone. “I thought, ‘right Della, before you even go up there, you’ve come all the way over here and this is a chance of a lifetime, a thing you’ll probably never do again, so when you get up there you smash it girl, do your best, and just have fun’. “And I did and it was amazing.” Even as a kid, Della was a big girl. She doesn’t remember ever being bullied about her weight; people accepted her for who she was. But Della herself, didn’t always. As she got older, she tried every diet under the sun in a bid to get what is perceived as the perfect body. But now, she realises the body she’s been blessed with, is perfect for her. “All women are cool, but every woman has a

gripe, whether they think they’re too fat or too skinny, or their arms are too flabby. Every woman sees the wrong in themselves, but people need to push that aside and see what’s good about themselves,” Della said. “If you are beautiful on the inside, you will shine on the outside.” She used to hide her curves and shy away from cameras. But today, her outlook is different. “The experience proved to me that curves are cool and you should be proud of yourself and be proud of the skin you’re in. “In my 30s, having young children and trying to work and make ends meet, I didn’t really enjoy much about myself, but I think as you mature and grow, it’s a bit like turning into a swan. “I don’t mean I started off ugly, but as you mature everything is brought back into perspective. I got to my 40s and I realised I am who I am, and if people don’t like me for who I am, then that’s their problem. “I’m not saying I’m perfect – I still like to go out and party up – but if you have good morals and you’re a happy person with a kind heart, it just shows out.” In Della, that’s true. continued P6

In my 30s, having young children and trying to work and make ends meet, I didn’t really enjoy much about myself, but I think as you mature and grow, it’s a bit like turning into a swan.
From P4 “I got comfortable with my own skin. Life’s great, I have a great, supportive group of people around me. I have a husband who’s my biggest fan and always has my back, I’ve got three great kids, I have a great mum and step-dad – I’m truly lucky, and it’s just being grateful for what I have,” Della said. “Material things don’t matter. I truly think I’m blessed because I have great people around me. I have a good job and work with great people.” Don’t get her wrong, like most women, she still has gripes about her body. But instead of dwelling on it, she now likes to look at the positives and accentuate them. “I’ve always been big, I’ve always had a big frame, and I can’t change the way I am built. I can’t change my broad shoulders, it’s about accepting who you are and loving who you are. “I can’t change the colour of my skin, but why should I? I love being Maori, it’s who I am. It’s accepting who you are and loving who you are. I always wished I was size Elle MacPherson, a size 10, but that was never
going to happen.” When you look good, you feel good. “Once upon a time there were hardly any clothes for large people and I struggled a lot in my 20s to find something that would look good and fit,” she said. But through clothing chains like TS, there’s not only more options for plussized women, but it’s also allowed people like Della to learn to dress to her body shape. Della is an O shape and her fellow models in Melbourne were various shapes. All were plus-sized and they ranged in age from 23-57. The eight winners will now feature as the faces of TS 14-Plus on their website and social media platforms. It was a dream three-day trip. Della got to go on a shopping spree with the $500 Taking Shape vouchers she won as part of her prize package, was wined and dined, given a tour of the company’s headquarters, and or course, did a spot of modelling. They got to choose their own clothes, were given the hair and make-up works, before striking many a pose for the camera.
Della said it was an amazing experience. She’s been told 450 people entered the competition; 220 of them from New Zealand. “They said to me, ‘Della, I hope you are proud of yourself’, and I said ‘I am, I feel so honoured and privileged to be here’. “They said out of 200-odd people from New Zealand, there was something about you that stood out. I didn’t want to tell them they were just photos taken on my phone on a Saturday night!” They’re photos she found one night lying in bed, after scrolling through Facebook on her phone, and coming across the TS 14Plus model search. She thought why not, so found a couple of photos on her phone and submitted them, without thinking any more of it. She didn’t tell anyone she’d entered. She didn’t see the point. It wasn’t that big a deal. But it turned out to be a big deal and now that door’s been opened, Della is keen to see what else is behind it. “I definitely want to carry on, I don’t want this to be the end. This door has been opened for a reason.”

A rugby mum in Japan: Loving the journey Arnia Ross will always remember the day her husband was named an All Black. She and husband Isaac had been at former All Black Leon McDonald’s going-away party the night before and were feeling a little under the weather when there was a knock at the door. It was a television news crew asking if they could film the team’s announcement live with them. A polite “can you come back in 10 minutes” was followed by quick showers and cleaning of the house, before the crew arrived back at the door. They sat around an AM radio and listened as Isaac achieved many little Kiwi boys’ dream of being named in the All Blacks; the Rosses didn’t have Sky. Looking back, Arnia reckons they didn’t realise just how big a deal it was at the time. They were young – Isaac was just 24 when he played the first of his eight tests for the All Blacks. Now, he’s 31, and the couple live in Japan with their four children. Isaac plays rugby professionally for NTT Shining Arcs and he knows all too well what a privilege it was to be able to say he was an All Black. Rugby is still his life, so it’s also Arnia’s life and that of their four children. But it’s a life they love. Arnia may be a rugby wife, but in New Zealand there’s no such thing as a WAGS (Wives and Girlfriends) Club like the one that frequently contributes to the UK tabloids. continued next page

From P8 “We definitely don’t have the cash-flow and lives of those of the high-paid soccer players’ wives in Europe, that’s a whole other universe,” Arnia said. “Obviously I can’t vouch for everyone, but being Isaac’s wife and through his rugby journey, we’ve had what I’d say is a very fortunate life, and one that we don’t take for granted. “There are positives and negatives, but that’s life, you get that in everything ... mainly our experience has been amazing – the places we have been, the life we get to live and, most importantly, the awesome people you meet along the way. We feel extremely blessed.” A year after Isaac was named in the All Blacks, the family left the New Zealand
rugby scene and moved to Japan. They moved for rugby, but they’ve stayed for rugby and the lifestyle. The Rosses love Japan. It’s an amazing lifestyle and, while communicating wasn’t easy initially, their Japanese is getting better. Arnia said if they had any problems, their oldest two kids were pretty good translators. Isaac and Arnia are high school sweethearts. They met through friends when they were 14 and Arnia was immediately drawn to him. Not only was he tall and good looking, the young Mid Canterbury farm boy was funny too. “He was my first love and obviously made a good impression because I decided to keep him around,” she joked. Both were sporty – Isaac a rugby player,

and Arnia a swimmer and then a rower. “But I would dabble in everything at school – athletics, running, netball, rugby, basketball, soccer – trying to fit it all in was the problem.” Being naturally sporty, and with a husband who is a professional sportsman, fitness and wellbeing are a big part of their life. It’s important for them to be on the same page with nutrition and leading an active lifestyle, particularly with four boys to raise, Arnia said. “Every year when we are back in New Zealand we try to pick an event that we will do together. Usually it’s the Motatapu. Last year I did the Queenstown women’s triathlon though and picked up first place which I was rapt about. continued over page

From P9 “I’m now in training for a triathlon at the end of the year and a half ironman early next year. Once we get Isaac’s year schedule – quite typical of a rugby wife having to plan around their schedule and especially when we live overseas – I can pick the most convenient events wherever they may be.” The couple got married at the beginning of 2010; they already had one child – Stanley – and another on the way. “Marriage wasn’t a huge priority for us. We were keen to get into the housing market and get completely set up before we spent all our hard-earned cash on a big party. We bought our first investment property at 21 and continued from there,” Arnia said. Today, the Rosses have four boys, and life is busy. “It’s loud, busy and fun, with lots of fights, fart jokes and cuddles; it’s a great combo and I wouldn’t trade it for the world.” Stanley is seven and he’s the typical eldest child. He’s the most like Isaac in the looks department, has a great sense of humour, is fluent in Japanese, learning Te Reo and is sporty, but loves school too. Frankie is five and he’s a real character. He’s kind and cheeky, and wants to do everything the opposite to his big brother. He’s a skateboarder, who loves soccer. Noah, 3, has the build of Stanley, but looks like Frankie, and being number three he’s loud and bossy. He doesn’t let his brothers tell him what to do. “He’s a real home boy. He’s just happy if he’s got his family and his dog Georgie all under the same roof. “His favourite people on earth are Michael Jordan and Rocky Balboa so he’s

obsessed with basketball and boxing.” The newest family member is fivemonth-old Isaiah and Arnia said he’s a lovely baby and they’re loving getting to know him. “Time will tell what his wee personality will be, but I’m guessing like the rest of his brothers he will be noisy and rowdy.” Isaac has been an amazing, hands-on dad from day one, Arnia said. “At all the ages – he happily helps with the newborns in the middle of the night and gets up most mornings to get the kids to school so I can sleep in, but mainly because he wants to drop them off and be a part of their school journey. He’s very loving and fair, and loves playing and making them laugh.” She couldn’t ask for a better husband and fortunately the lifestyle of a professional rugby player allows him to do those things; it’s far from your normal 9 to 5 job. “He still buys me flowers for no reason, takes me out on dates at least three times a month and encourages me in whatever it is I’m doing.” They’re relaxed parents and reckon when you’ve got a few kids, there’s no point stressing over every little thing. “As long as they’re loved, happy, with full tummies I don’t think you can go too wrong. “Our personalities are very cruisey so our kids are cruisers that can go anywhere and do anything, sleep anywhere, anytime. However they are extremely loud – as are we – so no surprises there.” Is there a good cop and a bad cop in the Ross household? “I’m terrible at being bad cop … I try, but dad’s usually bad cop. I’m still working on it,” Arnia said.
Their extended family is tight and living so far away was hard at times, but the move to Japan had been a long time coming, and had been the right one for them. “When we were 21 he got an offer to go overseas and we were so close to going until we were convinced to stay and give New Zealand a shot, so we delayed those plans and gave New Zealand a good crack.” That crack resulted in Isaac following in his five-match All Black father Jock’s footsteps; he ran out to play his first test match against France in Dunedin in 2009, and scored two tries in the eight tests he played. But the Rosses were always going to head overseas at some point, it was just a matter of when. “We knew we needed to get overseas while he was still young enough to play well and maximise his earnings. It was important to us to not leave it until he was too old to establish himself. “Getting a contract overseas is the easy part, keeping it is the hard bit.” They first visited Japan and met with clubs at the end of 2010 and immediately loved it. “The first year we moved there was so [much] fun. We had an amazing group of foreigners at our club and everything was new and exciting. “Now it feels like home, it’s such a cool place. Obviously we would love it more if our family was closer, but we’re extremely fortunate both the nanas come once a year each and we have friends that pop over on their travels, and then we’re home in Wanaka for four months of the year where we get our family times. “I rarely get homesick, as long as our wee family is all together I’m happy.”

Organic – more than a lifestyle Choosing to eat organic food offers much more than a healthy lifestyle. Grown without pesticides, herbicides or artificial fertilisers producing food using organic methods actually improves soil structure and fertility. This in turn promotes healthy plants, less prone to diseases and insect attack.
Organic production also encourages recycling. Food and garden waste is composted to provide a rich source of plant nutrients and condition the soil. By choosing organic food, you are also reducing landfill and New Zealand’s carbon footprint. Organic production does its bit to help conserve wildlife too. Pesticides don’t discriminate between “good” and “bad” insects; they generally wipe out everything in range, including bees and other pollinators. Research has now linked commonplace glyphosate weed sprays, such as Roundup, with declining bee populations across the world. In organic systems the emphasis is to encourage beneficial insects to take care of pest control. Economically, organic growers are doing their bit for the economy in a far more sustainable way. Criticism has been levelled at the impact of intensive farming for many years, for the amount of water used to produce stock food and crops and the subsequent nutrient losses which are degrading the country’s waterways. The two most crucial moves we can make to improve New Zealand's degraded waterways are to slow down dairy expansion, and to transition towards sustainable farming, according to the Soil & Health Association. Organic farmers are well ahead of the game in sustainable production and provide a model for a positive, healthy future for New Zealand. "New Zealand's waterways are in a dire state, with many showing a continuing deterioration in water quality, and no clear
path for improvement." Soil & Health’s cochair Marion Thomson says. "The main driver of this is the increasing intensification of non-organic farms, and we urgently need to turn this around." "Organic and biological farming systems have a much lower ecological footprint, greater biodiversity and reduced nitrate leaching, making waterways healthier for all to enjoy.” However, given that a big factor in the pollution of waterways is nitrates from cow urine diffusing through soils, and from soluble nitrogen fertilisers, simply fencing off and planting around streams cannot solve this issue. Healthier fresh water is achievable by ensuring stock numbers are sustainable, and by shifting to organic and biological fertilising practices that involve nitrogen-fixing pasture species, and healthy living soils with good moisture-holding capacity. New Zealand’s largest company Fonterra has also recognised the economic potential of tapping into the growing trend of discerning consumers, who want to know where their food comes from and how it is produced. The global demand for organic milk has been radically underscored by the company’s opening 2016-17 season forecast for its organic suppliers of $9.20 per kilogram of milksolids, in contrast with the current farmgate price of $3.90kg/MS for conventional dairy farmers. While the resulting premium adds to the weekly grocery tab, the global demand for sustainably-produced, chemical-free food continues to grow, providing an economically viable opportunity for New Zealand farmers.

Indulge in you It may be that time of year to reflect on how you are taking care of yourself and if you’re putting enough time aside for yourself, to feel well and energised to care for those around you. Stop and read a magazine or a book each day – which will aid in nurturing your creative side of the brain and help you to feel more positive. Plan some time with a friend

Studies show we are getting far less sleep than we actually require, try nine hours. 9. Include exercise in your life – do what spins your wheels – be it swimming, walking, running or biking, do what you can fit into your schedule – once a week can be enough. 10. Go shopping by yourself, to self-treat and indulge, to reward yourself with retail therapy. 11. Get away from your own four walls on a regular basis, be it work or home or both. 12. Decadent chocolate cake Indulge your senses with this flour-free cake. 175g butter – cut into small cubes, room temperature 175g of dark chocolate (50 percent) – broken into cubes 5 eggs, separated – yolks in a small bowl and whites into mixing bowl 3/4 C caster sugar – Preheat oven to 170°C. – Grease and line the base of a 26cm spring-form tin with greaseproof paper on the bottom, set aside. – Place chocolate and butter in a small bowl over a small pot of bubbling water on low, stir until melted – then set aside to cool completely. – Beat egg yolks, then add sugar, and whisk together until thick. Add half of the chocolate mixture and whisk in, then add the other half and whisk, until fully combined. – Beat egg whites on medium speed, until stiff peaks are just formed in an electric mixer. – Pour half the beaten egg white into chocolate mixture and fold in gently until combined, then add and fold in the remaining egg white mixture until all is combined. – Pour the cake mixture into the prepared tin and bake for 45 mins or until set. There are two ways to check it is cooked correctly – when you press the centre gently it bounces back, or when you place a skewer into the centre of cake and it comes out clean. – When the cake is cooked take out of oven and set aside and allow to cool completely, then you can take the cake out of the tin. Please note this cake will deflate by half the original cooked volume. – To serve dust with icing sugar and drizzle with some melted chocolate over the top and serve with whipped cream or yoghurt, or serve warmed slightly with a berry icecream on the side. Look out for your liver! The liver is an amazing organ! It is the second largest organ in the body (after skin). It carries out three crucial tasks: helping digestion, making proteins, and getting rid of bad things. The liver filters and removes harmful antigens that cause allergic reactions. If you’re looking for a wallpaper to add instant colour or impact to your overall scheme, here’s some tips on what designs and trends are popular right now.
Oriental-inspired
Bold floral
Archive-design
Traditionally used in bedrooms, oriental-inspired wallpapers are often considered quite feminine, but they don’t have to be overpoweringly so, if the design is in a more masculine colour. If you’re opting for a busy, intricate wallpaper featuring something like birds, figures or lots of foliage, that is likely to look best in rooms that aren’t crammed full of accessories.
Oversized prints can look great in big or small rooms. The secret is to stick to a subtle design or softer colours if your room is smaller. A strong floral print should be balanced with a lot of plain surfaces, and for something different, try wallpaper in an unexpected area - like behind an open shelving unit, for a hint of print behind whatever you’ve got lining your shelves.
Wallpapers from archives are historic, but not old-fashioned, and a traditional archive-print can work well even if you live in a newer home. But remember to choose a design that suits the scale of your home - a small floral typical of the 1930s could look lost in a room with a high ceiling, while heavily patterned Victorian prints can overwhelm small spaces.

Colourful, fluid and often reflective, these designs can be fun and free-flowing, as well as versatile. It’s a look which can be used in any room, although it is liquid imagery is often fitting for a bathroom, particularly when in aqua or blue shades. Darker schemes can work well in bedrooms. But you need to bear in mind the scale - a tighter pattern might be more beneficial in a smaller space.
To make a small room look bigger and brighter, use metallic, as the reflective surface will throw light back into the room. Large prints and designs with a dark background can give off a more opulent look and they are great for adding interest to larger room, but are best used sparingly in smaller rooms. They can look great when paired with fabulous furniture and accessories.
Large scale graphic prints work well in contemporary homes, while smaller patterns are a good choice to fit in with more traditional furnishings. If you’re going for a geometric pattern, make sure furniture and furnishings don’t fight with the print. They can be quite bold, too, so a good tip is to tape a large sample of the geometric paper you like to a wall for a few days and leave it, to make sure you can live with it.

Which carpet do you choose? Carpet in a nutshell. I know what you’re thinking ... yawn, but carpet is probably one of the most dominant interior features of any New Zealand house and needs to suit the style and meet the needs of those living on it. The range available for carpet these days can be a little overwhelming and walking into a showroom displaying hundreds of samples is daunting. To make selection easier and narrow the field we ask as many questions as we can to determine the best product for your home. The two major players in the carpet game are wool and solution dyed nylon. (There is also polypropylene and blends of nylon and wool) solution dyed nylon has become increasingly popular as a man made product that is more resistant to fading and staining, however wool carpet

is a warmer, dryer, healthier option and is also flame retardant. When renovating an older home I would recommend wool carpet as it is warmer underfoot and as a natural fibre will filter moisture, however the majority of new builds and modern style homes are using a lot of glass with large floor to ceiling ranch sliders to allow plenty of sun which drenches the carpet, in this case solution dyed nylon may better suit to reduce the risk of fading in New Zealands’ weather extremes. When selecting colour and style, it is important to consider the occupants that will be trampling over your new carpet, and just how much you enjoy vacuuming.
Pets and children are probably not going to be as careful as you and they tend to not be too concerned about dropping hair or vegemite on toast onto carpet, so with that in mind you would be better to go for a carpet with a fleck (more than one colour) as a solid colour carpet is less forgiving and crumbs, pet hair and bits of fluff are more visible. When deciding on carpet colour I also encourage you to take your samples home for a day or two to see how changing light can affect the look of your carpet. Choose your winter During the short days and long cold nights of winter many of us leave for work and get home in the dark. It is often hard to shake off the temptation to hibernate, but it's not necessarily the healthy option, no matter how tempting it can be to hole up through the chilly winter months, there's no excuse - opportunities for winter activities abound in Mid Canterbury. Keeping active and engaged helps offset the winter blues and provides an opportunity for cabin-crazed kids and pets to run off pent-up energy. A brisk daily walk will help improve fitness and energy levels and has been proven to lower blood pressure and stress, and best of all it costs nothing. The Ashburton Domain is worth a visit in any season and the youngsters will enjoy the great playground equipment and the nearby aviary. Further afield the Rakaia walkway offers fantastic views of the snowy peaks and is accessible for the very young and infirmed. Take a close-up look at that giant salmon locals tend to hurtle past on the way to Christchurch. The Rakaia playground also has up-to-date equipment and a mini golf course across the road offers another opportunity to spend time outdoors this winter. For the more adventurous take a stroll along the windswept winter coastline or
pack a picnic and head into the back country for an invigorating walk around one of the Ashburton lakes. Just half an hour south of Ashburton the delightful village of Geraldine has all the trappings for a great day out. The township is home to Barkers and Talbot Forest Cheeses, and speaking of which take your walking shoes and a warm jacket to visit Talbot Forest. The reserve offers four easy routes through a rare remnant of lowland podocarp and hardwood native forest. Methven is also well worth a visit. The alpine village comes into its own during the winter, even for the more sedentary with no desire to hit the slopes, with its internationally-themed eateries and a great little cinema. There's nothing like a good book to fritter away those long winter nights; if you're not already a member of your local library,
now is a perfect time to join. Reading groups and card clubs also offer companionship and intellectual stimulation. Board game clubs are gaining popularity and the range of games on offer might well astound you. Many companies are fuelling the resurgence by producing new games requiring intellect, stealth and tactics to overcome opponents. Dice games add to the thrill because no matter how skilled players are, much depends on luck. Invite some friends around and be prepared to laugh the cold away. For those looking for more physical activity, Ashburton's sports centre also offers a range of indoor exercise opportunities, from swimming to spin classes to yoga. So there's no excuse to watch the world pass through a window this winter, get out there, get active and enjoy the season.

Farmhouse carrot cake
True to form the weather during May is like a roller-coaster, one minute warm, the next cold enough so that we find ourselves huddled around the fire. With this happening the bugs seem to be running riot, so in our house we are cranking up the levels of “good stuff” to try and ward off anything remotely looking like a runny nose and fever. What a great invention juicers are! The ease of being able to start the day with a freshly-squeezed juice, with all the vitamins from fresh fruit and vegetables, is perfect as we come into the season where we come under attack from viruses. With that in mind the recipes reflect some of what is happening in our house at the moment.
Morning ginger blast –
3 carrots 2 apples 1 beetroot 1-2cm slice of raw ginger Wash under water all fruit and vegetables. Set up your machine and cut to size to enable you to put through. Process. Drink with gusto … with the excess fruit pulp that is left in the chamber set aside and use either in your compost or in the following carrot cake recipe. – This makes approximately 2C enough for 2 to 3 people.
2t baking powder 2C flour 2t baking soda 2t cinnamon 1t cloves 1t mixed spice 2C brown sugar 3C grated carrot 1C sultana 1C chopped apricots or peach 1C chopped nuts (I used almond slivers as that was easiest to grab at the time, but walnuts and hazelnuts work well) 1 1/4 canola oil 4 eggs
– Preheat the oven to 160°C. Grease and line a 26cm tin. – Put all in a mixer and mix slowly for a good minute to mix then beat on a higher speed for another 3 to 5 minutes until light in colour. Put into a cake pan and bake on 180oC bake for approximately 90 minutes or until a skewer comes out clean when tested in the middle of the cake. Let cool for 15 minutes before taking out and cooling onto a wire rack. Cream cheese icing 60g cream cheese 30g butter – softened 1 1/2 C icing sugar – Beat well until smooth. Smooth on top of your cooled cake and cover with chopped nuts and dried fruit if wanted. – I have been known to double this icing mixture to make a super thick and decadent topping.

Thai red curry mussels with udon noodles
This is so simple that it is ridiculous … the hardest thing being the preparation of the mussels, but from then it’s super easy Sesame oil 1 onion, finely sliced 2 1/2 kg mussels, beards removed and shells cleaned Spice paste for Thai red curry, or one that you would like 1/2 can coconut cream 1 can of diced tomato 2 packets of udon noodles
– Finish with chopped coriander, sweet chilli sauce and wedges of lime. – In a hot wok add about a teaspoon of sesame oil, add the onion and toss around lightly with curry mix, lightly fry for 30 seconds, add tomato and heat through. Add mussels and coconut milk, cover. Make sure the mussels are opened before serving, taking out as they open so that they don’t toughen over time. – Once all cooked, add noodles to heat through and add the mussels to reheat. leaves chopped – Steam silverbeet in a pot with a little water for about five minutes, drain and toss with a knob of butter and season with salt and pepper. Cover and serve when ready. Pumpkin, rosemary and potato mash 1kg pumpkin, peeled and chopped 500g agria potatoes, red rascal or similar starchy potato 50g butter 1T finely chopped fresh rosemary
Comfort food at its best and perfect as the days become cooler. You can put these in the slow cooker in the morning before you go to work and have these glorious glutinous hocks ready so all you have to do is thicken the stock for a gravy and cook your vegetables while you take a quick shower. Too easy! Serves 4-6.

2-3 bacon hocks 2 onions, peeled halved and quartered 2 apples, halved and quartered 2 stalks celery, leaves included, halved 1 c cider 1 c water 2 bay leaves Preheat oven to 160°C. Place onion, celery, apples, bay leaves, water and cider in a baking dish that fits hocks well (not too large as you want to have the hocks sitting in the liquid), cover with foil tightly. – Bake for 2 1/2 to 3 hours, or until the meat is falling off the bone. If you are using a slow cooker do the same method then bake for 6 to 8 hours. Once
cooked take hocks out of stock and cover to keep warm. – Skim off any excess fat and mash up vegetables in liquid to thicken, taste and add seasonings if needed. Silverbeet 1 large bunch of silverbeet (about 650-700g), tough stems removed and

Amazing Argentina DESTINATION with Bronwyn Wooding
Where has the week gone, it is hard to believe that I have only been home a week from a whirlwind trip to Argentina. With the introduction of Air New Zealand direct services three time a week to Buenos Aries the Eastern side of South America has really opened up to the New Zealand market. We started our trip in Buenos Aries the second biggest city in South America and the most European. Our city tour included a visit to La Boca and the Recoleta Cemetery to visit the grave of Eva Peron. Two great options for a night out on the town are: The Ultimate Argentine Cuisine Experience and a Tango Show. I would highly recommend doing the Ultimate Argentine Cuisine Experience earlier in your visit as you learn about the Argentine food and culture. Your evening starts with an Empanada making contest and finishes with the most amazing Alfajores – mmm yum. We did the Tango show at the end of our trip and it was amazing, the passion of the tango and the footwork of the dancers was amazing, the evening also includes some folk dancing. From Buenos Aries we caught a 50 minute flights up to Iguazu to visit the Iguazu falls – All I can say are these are amazing and a 2-3 night visit is a must. Our first

view of the falls came from a fly over of the falls by our pilot, we are not sure if this the norm or if we were extremely lucky. The next day we visited the Argentine side of the falls first visiting Devils Throat, the power and amount of water that goes over this fall is incredible, the pressure even causes clouds to form! Then it was a walk from the tropical forest to visit the rest of the falls. Even through there were thousands of people it didn’t feel too overcrowded and it was nice listening to all the bird life. Then it was off for the highlight of our day, a boat trip up the river to see the falls – did we
get wet? No we got drenched, when they say put your cameras away do it as I think many have been ruined due to water damage especially when you are put right under one of the falls. The next day we crossed the border into Brazil, first stop was a 10 minute helicopter ride over the falls, I wasn’t sure about doing this after our unexpected plane detour, but it was amazing with fantastic views looking down over the falls – there is no commentary but the views say it all. From here we continued to look at the falls from ground level. Yet again we were amazed. The main difference between the two sides of the falls that we found were that the Brazil side you looked more up at the falls and it felt busier, as the tracks were narrower. Access wise it is easier on the Brazil side as they have a lift down to the walk way. Back to Buenos Aries and a day trip to Uruguay was a must. Colonia del Sacramento is a 50 minute ferry ride across the widest river I have seen (at one point it is apparently 250 km wide). Yet again it is an escape from the hustle and bustle of the big city. Its historic quarter is a Unesco world heritage site, with quaint cobbled streets and great shopping – it was a surprise gem of the trip. David Hickman is this month’s winner with the following question: We are installing a small greenhouse. What tips do you have for new greenhouse gardeners in Ashburton? Is there any point in trying to grow plants in the greenhouse during winter? It is definitely possible to grow a range of “out-of-season” vegetables in Ashburton in a greenhouse. However there are a few critical things you need to do beforehand to guarantee success. Firstly, position the greenhouse so it receives full winter sun and is sheltered from prevailing cold, south westerly winds. The garden beds in the greenhouse should be raised well above ground level and filled with Daltons Premium Garden Mix. This will help maintain higher soil temperatures which is important in any winter greenhouse veggie production. Install a large thermometer in the greenhouse and monitor temperatures day and night. This will provide a more accurate guide for what you can successfully grow. Start with some easier vegetables such as lettuce, rocket and spinach, as well as some of out of season vegetables like tomatoes, cucumber and capsicum. Lastly, ensure the greenhouse is well ventilated without letting in excessive cold air – this means vented during the day and closed up at night. You can make your very own worm farm at home that costs nothing. Back to Basics’ Katie Esler says it is so important to compost food scraps. There are so many benefits to composting: Your use of black bags will drop, you have a fun kid-friendly way of composting your food scraps and you then get free compost for your garden.

How to build and care for your worm farm A worm farm can turn your kitchen scraps into a great organic tonic to feed your garden plants. You will need: 3-4 car tyres of similar size (most tyre companies will give away old tyres) Tiger worms (you can buy them from commercial worm farms, pet shops and Ashburton Abattoirs) A piece of old carpet or sacking About 50 newspapers (avoid the glossy advertising inserts) Three old phone books (or 6-8 bricks) A 60cm square piece of corrugated iron A bucket or similar container A piece of wood or similar to use as a lid Manure, compost or peastraw – Make a base out of the phone books or bricks – make it higher on one side. – Place the corrugated iron on top so it is sloping. – Put the old carpet or an old sack on top of the iron. – Dig a hole beside the base and place the bucket in the hole (this is to collect the liquid that runs off the sloping iron). – Soak newspapers in water with a handful of dirt added and stuff the tyres full of wet paper. – Put the first paper-stuffed tyre on top of the carpet. – Fill the tyre with manure/compost/peastraw. – Tip in worms. – Cover with a thick layer

of wet newspaper. – Place other paper-stuffed tyres on top, placing a sack between each tyre. – Place a tight-fitting lid on top (a piece of wood weighed down with a brick or rock is fine) – Feed regularly with food scraps (beneath the newspaper layer). Avoid too much citrus, onions and don’t add meat or dairy products as they will attract vermin. – Keep the stack moist – add a bucket of water once every 2-3 weeks in summer. – As the tyres fill up (this usually takes a few months) remove the bottom tyre and empty out the worm castings to use on your garden. – Regularly empty the liquid from the bucket. Dilute it 10-1 with water and use on your garden.

Garlic mayonnaise hash cakes
Makes 12 (Serves 4)
2 large Agria potatoes, peeled 1 large golden or orange kumara, peeled 1 spring onion, finely sliced 1t caraway seeds 1t all-purpose seasoning or similar 3T Best Foods Mayonnaise with a Touch of Garlic + extra for serving 1/4 C self-raising flour 1 egg, beaten Oil for frying 1 avocado, sliced Handful rocket leaves
1/4 C sweet chilli sauce
– Grate the peeled potato and kumara. – Squeeze out as much juice as possible using a clean tea towel or paper towels and then place in a large bowl. – Add the sliced spring onion, caraway seeds, seasoning, mayonnaise, flour and egg and mix well. – Heat 2-3 tablespoons of oil in a medium frying pan. – Place tablespoonsful of the kumara mixture in the pan and flatten slightly with the back of a spoon.
