19th Ascot Beer Festival held in association with the Berkshire South East branch of the Campaign for Real Ale (CAMRA). We have over one hundred and sixty beers, perries and ciders for you to choose from today, all lovingly selected and ordered by our CAMRA volunteers. They are also staffing the bar today so will be happy to help you find your favourite tipple.

Beer Styles REAL ALE Real ale is a fresh, natural product brewed using traditional ingredients and left to mature in the cask from which it is served in the pub, through a process called secondary fermentation. It is this process which makes real ale unique amongst beers and develops the wonderful tastes and aromas which processed beers can never provide. It is served without the addition of extraneous carbon dioxide and is also known as cask-conditioned or naturally conditioned beer. The fundamental distinction between real ale and other beer is that live yeast is present in the container from which it is served, although it settles at the bottom and is not poured into your glass. Real ale is a very diverse product and with thousands of breweries across the UK there is a beer out there to suit everyone’s palate. Here is an explanation of the most common beer styles: (Further information can be found at camra.org.uk/learn-discover/the-basics/beer-styles) MILDS Gold to dark brown in colour, these beers differ from Bitters and Pale Ales in that they should be lightly hopped and may have a corresponding light fruit character. SESSION BITTERS (UP TO 4.3% ABV)

There is often honeyed/biscuit malt aroma and flavours with pepper, spicy, earthy, piney or floral resins from the hops. SESSION PALE, BLOND AND GOLDEN ALES (UP TO 4.3% ABV)

These are ‘traditional’ bitters. Low to medium malt must be present with noticeable hops. Bitterness may range from light to strong. Hops are typically earthy, spicy and peppery but may also be floral or piney.

Straw to amber with a light malt character. Hop flavours will be present but hops may vary from traditional earthy or spicy English and German hops to citrusy New World hops.

PREMIUM BITTERS (4.4% TO 6.4% ABV)

Dark gold to amber in colour. Malt will be present but must be light to medium in character and should not dominate.

These are ‘traditional’ stronger bitters. Medium to strong malt flavour with noticeable hops. Bitterness may range from medium to strong. BRITISH & NEW WORLD IPAS (5% ABV AND ABOVE) Amber to pale brown. These beers should be heavily hopped with a good balance of malt and medium to high bitterness

PREMIUM PALE, BLOND AND GOLDEN ALES (4.4% TO 6.4% ABV)

BROWN AND RED ALES, OLD ALES AND STRONG MILDS (4.1% TO 6.4% ABV) Malt is to the fore and may impart nut-like flavours, although there may be some hop character and a light to moderate bitter or dry finish.

SESSION STOUTS AND PORTERS (UP TO 4.9% ABV) Stouts should be black with flavours and aromas resulting from the roasted malts e.g. chocolate, caramel and coffee notes. There should be minimal hop and fruit notes. STRONG STOUTS AND PORTERS INCLUDING IMPERIAL STOUTS AND BALTIC PORTER (5% ABV AND ABOVE) Full mouthfeel with only a little sweetness. There is a dry astringency that may come from unmalted dark-roasted barley. BARLEY WINES AND STRONG ALES (6.5% ABV AND ABOVE) Gold to tawny to black in colour. May be dry to sweet depending on whether the sugars have been fermented out. Honey notes are not uncommon. Noticeable alcohol is present. Rich, complex and full bodied.

SPECIALITY BEERS WHEAT, WILD/SOURS, SAISON, AGED, SMOKED, LAGER, FLAVOURED, FRUIT (UP TO 8.5% ABV) Speciality beers are those where a base beer has been made with non-conventional ingredients or techniques. Where the effect of this ingredient or technique dominates the appearance, aroma or flavour it becomes a Speciality.

The staff on the CAMRA bars are all beer-loving members of CAMRA who have come along as volunteers to help make this festival a success. Cider and Perry Real cider and perry is fermented from the whole juice of fresh pressed apples (for cider) or pears (for perry), without the use of concentrated or chaptalised* juices and are neither carbonated nor pasteurised. Cider has undergone a massive revival in recent years although it is unfortunate that many of the most well-known ciders in the UK are cold, fizzy keg products which have been produced artificially rather than naturally. More people are now discovering for themselves how deliciously mellow, aromatic and intoxicating the flavours of naturally produced real cider or perry can be. To make real cider, the apples are washed and checked for rot or mould. The apples are then crushed in a machine called a scratter which chops them up into small pieces called pulp. The pulp is placed in layers on a press. If a traditional screw or hydraulic press is used, the pulp is wrapped in fine mesh cloth parcels called cheeses. The apple juice is then extracted and natural yeasts in the juice start the fermentation. Several months later you have real cider. In order to maintain consistency and suit different palates, the producer will often blend ciders made from different apple varieties. Perry is made in exactly the same way. * ‘Chaptalised’ – this is where additional sugar is added to the juice once it has been pressed, so that when it ferments it achieves a much higher alcohol content. The resulting liquid (cider) is stored and then watered down to the desired abv. 6

LocAle is a nationwide CAMRA campaign to encourage pubs to stock at least one locally-brewed real ale of acceptable quality. Locally-brewed to Berkshire South-East includes those breweries within 25 miles of this festival. Beers served at this festival are produced from cereals (barley and/or wheat, rye, oats, maize) and as such will contain gluten unless labelled otherwise. Beers and ciders may also have used sulphites in the brewing/production process in very small quantities. For any other specific allergen information provided by the brewer/producer, please ask the Bar Manager. Please note that the beer and cider/perry lists are subject to last minute changes. Responsible Drinking Ascot Racecourse encourages responsible drinking. New controversial Government alcohol guidelines came into effect in January 2016. The alcohol limit for men has been lowered to be the same as for women. The UK’s Chief Medical Officer (CMO) guideline for both men and women is that: · You are safest not to drink regularly more than 14 units per week. · If you do drink as much as 14 units week it is best to spread this evenly across the week. As a guide:

n One pint of standard beer (3.5% volume) = 2 units n One pint of regular cider (5% volume) = 2.8 units n One pint of premium beer or lager (5% volume) = 2.8 units n One pint of standard lager (4% volume) = 2.3 units We want you to enjoy yourself, but please drink responsibly and remember: DON’T DRINK AND DRIVE.
