alley restaurants all have lots of dishes from which to choose. However, the best eateries also have “the dish,” a signature offering that becomes synonymous with the restaurant, setting the tone for the menu and giving diners a reason to return. Here are some local favorites.
FROM THE SEA Red, White & Brew (6740 E. McDowell Road, Mesa; rwbaz. com) has earned a loyal following for fresh seafood, flown in every other day. Its signature Bourbon Glazed Pecan Crusted Salmon ($33) proves why, featuring pan-seared salmon brushed with bourbon glaze and topped with house-made candied pecans, then served with pumpkin mascarpone ravioli, spinach, and Creole mustard sauce. Across The Pond (4236 N. Central Ave., Phoenix; acrossthepondphx.com) takes salmon in an entirely different direction with its Coffee Cured Salmon Nigiri ($8), on the menu since day one. Scottish salmon is cured in coffee grounds for 48 hours in-house before being sliced over vinegar rice and dressed with ancho chile flakes for a take on nigiri rarely seen elsewhere. East Coast tradition comes to the desert at Bluewater Grill (1525 E. Bethany Home Road, Phoenix; bluewatergrill.com/ location/phoenix), where managing partner Jeff Martineau brought his passion for New England seafood to Arizona in 2009, including his beloved Bluewater Lobster Roll ($32),
which comes in cold New England or hot, buttery Rhode Island preparations. Maple & Ash Scottsdale (7135 E. Camelback Road, Scottsdale; mapleandash.com) goes big with its signature Fire-Roasted Seafood Tower ($140 and up). The tower overflows with Maine lobster, Alaskan king crab, Gulf shrimp, clams, seared scallops, and oysters in sizzling garlic butter, chile oil, and herbs. Insider tip: add the “pasta back,” and housemade pasta is tossed into the remaining sauce.

Smoked Brisket Empanadas ($13). House-smoked brisket is tucked inside crisp empanadas and paired with sweet pepper jam, tomatillo-avocado crema, watermelon radish and pickled onions. Over at Hearth ’61 (5445 E. Lincoln Drive, Paradise Valley; mountainshadows.com/dining), there is one classic—the Niman Ranch Prime Beef Tenderloin ($58)—that has stood the test of time. Marinated in herbs for 24 to 48 hours before being seared, it is served with port demi-glace, smoked blue cheese fondue, Yukon Gold mashed potatoes, and broccolini. At Toca Madera (4736 N. Goldwater Blvd., Scottsdale; tocamadera.com), guest feedback helped inspire A La Roca ($78), the restaurant’s reimagining of fajitas. Australian wagyu skirt steak arrives sizzling with sautéed onions and peppers, tortillas, salsa roja, and chipotle crema, accompanied by cilantro rice, beans, guacamole, and queso fundido.
COMFORT CALLING Society Swan (7014 E. Camelback Road, Scottsdale; societyswan.com) gives an Italian American favorite a fresh spin with its Chicken Francese ($33). Lightly breaded chicken breast is served with sautéed broccolini, Parmesan, herbs, and lemon before warm lemon chicken jus is poured tableside, with buttered Parmesan spaghetti available to complete the meal. HULA’S Modern Tiki (multiple locations; hulasmoderntiki.com) reaches back to 1940s Hawaii with its Loco Moco ($16). Originally a weekend option, the house-made beef patty, sticky white rice, shiitake mushroom gravy, and sunny-side-up egg proved so popular it eventually earned a permanent place on the daily menu. At LOVECRAFT (3128 E. Cactus Road, Phoenix; lovecraftphx. com), New Mexican roots meet Texas barbecue in the Hatch Green Chile Stew ($19). Owner Rebecca Golden’s Southern New Mexico upbringing inspired the combination of smoked brisket, smoked pork, Hatch green chiles, and melted cheese that represents the restaurant’s marriage of the two cuisines. Chef Cory Oppold transforms comfort food to haute cuisine
at COURSE (7366 E. Shea Blvd., Scottsdale; courserestaurantaz. com), but his Animal Fries ($35) take things to another level. Golden fries are topped with crème fraîche, diced shallot, cured egg yolk, and ample caviar before being plated like edible art. True to the playful personality that has helped make Mr. Pickle’s (multiple locations; mrpickles.com) a cult favorite since its 1995 debut, the Big Jake ($6.99 and up) delivers plenty of personality in every bite. Turkey breast is paired with cream cheese and avocado, then piled with mayo, mustard, garlic sauce, tomato, red onion, pickle, pepperoncini, and lettuce for a hearty sandwich that proves more really is more.
AROUND THE WORLD Feringhee Modern Indian (3491 W. Frye Road, Chandler; feringhee.com) looks to India's street-side chaat stalls for its signature Feringhee’s Chaat ($14). White pea ragda creates the base for crisp potato tikki, yogurt mousse, and shiso, bringing sweet, tangy, spicy, creamy, and crunchy elements together. Moving over to The Henry (multiple locations; thehenryrestaurant.com), the Korean Prime Skirt Steak ($42) puts a cultural twist on steak and potatoes, serving marinated prime skirt steak over double egg fried rice with heirloom carrots, bok choy, snap peas, and pickled shiitake mushrooms, all finished with Korean butter, herbs, and Fresno chiles. At Théa Mediterranean Rooftop (4360 E. Camelback Road, Phoenix; globalambassadorhotel.com), the Goddess of All Dips ($58) celebrates the Mediterranean tradition of gathering around mezze. Whipped ricotta, baba ghanoush, muhammara, avocado labneh, kopanisti, and hummus fill the spread, accompanied by warm bazlama, pita, and crisp crudités. Finally, JING (10605 N. Scottsdale Road, Scottsdale; jingrestaurant.com) turns one of China’s most celebrated dishes into a showpiece with its Famous Peking Duck ($62). MUSICAL INSTRUMENT MUSEUM
The Musical Instrument Museum in North Phoenix— usually referred to simply as the “MIM”—showcases instruments from around the world. With the VIP Tour, a specially trained museum guide takes you through a variety of spaces and places that are not accessible to the public. You’ll learn how exhibits are created, go backstage to the MIM Music Theater, and more. The tour is approximately an hour; cost is $27 per person (museum admission included). ORPHEUM THEATRE
The Orpheum Theatre in Downtown Phoenix is a fully restored 1929 atmospheric theatre, built to make the audience feel like they were sitting in a garden surrounded by Spanish style buildings and mountain ranges. The theatre also features a magnificent disappearing Mighty Wurlitzer Theatre Organ. Historic Tours are offered select Tuesdays from September through May, with limited availability in December, and provide access to both public and behind-thescenes areas, offering a rare glimpse into the magic of a historic movie palace. Approximately 90 minutes. Reservations are recommended but walk-ups are welcome.

PHOENIX ZOO
You can get a behind-thescenes look at some of the animals and their habitats at the Phoenix Zoo with the Backstage Adventures Tour. There are a variety of animal options available, from the giant anteater to the greater one-horned rhino to stingrays and more. These tours, which are offered daily and last 30 minutes to an hour, must be booked two weeks in advance. Prices vary and some age restrictions apply. Tours are offered daily by the docents at Phoenix Art Museum. Explore the museum, which offers world-class exhibitions and comprehensive collections, via the Highlights Tour or Special Exhibition Tour, which are offered at various times throughout the week and are free with museum
admission. The 60-minute Highlights Tour gives a closer look at works representative of the museum’s broad collection and may include works on loan. FRANK LLOYD WRIGHT’S TALIESIN WEST
While there are many tours available to explore architect Frank Lloyd Wright’s (18671959) iconic winter home and desert laboratory, the Behind-the-Scenes Tour lets you see iconic spaces such as the drafting studio, apprentice court, and kitchen. You’ll go behind the ropes of various spaces to view areas not generally showcased. The tour is approximately two to two-and-a-half hours.
