When I first moved to Phoenix, I was surprised to see so many residents walking, jogging, and biking alongside the city’s miles of canals. In my mind, the waterways were nothing more than a way to deliver power and water to the arid Valley landscape. Boy, was I wrong,” says Rebecca L. Rhoades, an award-winning travel writer. “The canal system has a long history that dates back hundreds of years to the Hohokam people. Today, they support not only daily living but green spaces and public art—and they’re a worthwhile stop for any visitor.”

Southern Arizona

The largest metropolitan area in the Southwestern United States, Greater Phoenix encompasses more than 20 cities and towns, including Scottsdale, Phoenix (which is the capital of the state), Cave Creek, Carefree, Paradise Valley, Chandler, Gilbert, Mesa, and Glendale. Its nickname is the Valley of the Sun, bestowed in recognition of the average of 300 days of sunshine the Valley—so called because the area lies in the Salt River Valley—enjoys each year. Metro Phoenix is known for its high-end spas, golf courses, restaurants, and of course, cacti and scenic views.

Northern Arizona includes cities such as Sedona, Flagstaff, Payson, Pinetop, and Williams. The area features the famous red rocks of Sedona, several mountain ranges—including the San Francisco Peaks—and the largest Ponderosa Pine forest in North America. Of course, it’s also the location of the famous Grand Canyon, as well as Monument Valley, Canyon de Chelly, the Painted Desert, Slide Rock State Park, Antelope Canyon, and Meteor Crater. Due to its elevation, Northern Arizona experiences more seasonal weather than the Valley of the Sun, often including heavy snow. Skiing is a popular pastime.

There’s a lot of history to explore in Southern Arizona, from ancient ruins to abandoned mines to locales made famous during the Wild West days. Tucson is the region’s largest city, and is today filled with golf courses, spas, and a thriving food scene. Tombstone and Bisbee are known for their Old West vibes, while Sonoita, Elgin, and Willcox are popular locations for wineries and distilleries. The area is also home to Tubac, Yuma, and Sierra Vista. Southern Arizona, which borders Mexico, tends to have a warm, dry climate.

Nestled in Old Town Scottsdale, an area celebrated for its cobblestone streets, historic storefronts, art galleries, and dynamic nightlife, is longtime Valley staple AZ/88. “The bar sits on the Scottsdale Civic Plaza amid museums and gardens, a walkable canvas of public art where the Old West mingles seamlessly with contemporary flair,” says Paul Martinez, the longtime manager and beverage director of AZ/88. Named to denote the year it was founded—1988—the celebrated bar and eatery has seen many changes in the Valley since it made its debut. “For one, it is paved,” says Martinez, of the surrounding area. Despite its more rugged appearance at the time, when Milwaukee entrepreneur Karl Kopp relocated to Arizona in the 1980s, he had a vision for what the area could be and set out to create something that would light the match that helped ignite the fire that set Scottsdale’s nightlife scene ablaze, helping transform it into one of the most popular hospitality hot spots in the country. “Karl was not a first-time restaurateur when he moved to the Valley,” says Martinez. “In fact, his mother, Elsa, founded Kopp’s Frozen Custard in their home state of Wisconsin in 1951. A true innovator, she was the first custard maker nationwide to introduce a ‘flavor of the day,’ in addition to the standard chocolate and vanilla offerings available back in those days.” A RRI V ED G UEST BOOK

Kopp would join his mother at her custard stand after completing his service in the Army in the late 1950s, helping successfully grow the business—which still stands today—to several locations across Milwaukee. “When Karl decided to divide his time between Wisconsin and Arizona, he saw nothing but opportunity where many just saw cacti and coyotes,” Martinez says. Enter AZ/88. THE GALLERY-LIKE DESIGN

“Initially dark by design, a major overhaul in 1998 replaced the original interior with the uplifting, airy space framed by glass walls and an open patio that many know and love today,” Martinez says. The restaurant is known for its ultramodern look, blending minimalist features—clean lines, white walls, towering windows that allow ample natural light, and stainless-steel accents—to make AZ/88 feel almost like an art gallery upon entering. ART INSTALLATIONS

The gallery vibe is taken to the next level inside of the buzzy restaurant, thanks to the ever-changing art installation that serves as the centerpiece of the space. “Our restaurant is very much a living canvas, so much so that we have worked with local and national artists in partnership with our designers to create more than just decor, but a wholly immersive experience,” Martinez explains. One installation boasted massive, mirrored angular shapes strategically placed across the ceiling. The piece was connected to a projection machine that allowed colors to bounce off the installation in all directions, making diners feel as though they were inside a giant rainbow prism. For another piece, a mural hung above the long bar, spanning nearly the entirety of the wall, and featuring a gaggle of dolls staring back at guests in the way only creepy dolls can. AZ/88 also has several art elements in its repertoire that have become so popular that they’ve appeared multiple times in various forms, including disco balls and multistory Christmas trees. The disco balls, which project a very Studio 54 aura, have appeared more than once, often connected to a lighting system VS 80

that fully immerses the venue in colors. The annual holiday tree installation always changes in its theme, while remaining one of the largest such indoor trees in Arizona. For the 2025 holiday season, the team worked for months on its firstever 3D-printed tree. “All of our installations are meant to spark conversation among guests, adding to the vibe,” Martinez says. A UNIQUE BATHROOM

Even the restroom is a creative enclave. Designed by artist Janis Leonard, a board member of Scottsdale Museum of Contemporary Art (known as SMoCA) and frequent AZ/88 collaborator who passed in the early 2000s, the bathroom features mirrored panels, music, and a montage of miniature screens playing obscure programming. In addition to its food, AZ/88 is known for its ultramodern look, art installations, and martinis.

The cocktail program follows the same creative thread. “Back in the 1980s, it was still common for local eateries to serve beer in the can and drinks in mason jars,” Martinez says. Eschewing the tradition of the times, from day one, Kopp centered the entire drink menu around an elegant, extra-large martini glass. Using the tall glass as their muse, the team at AZ/88 began crafting spirit-forward martinis, both standard and flavored, in ways no one in Arizona had seen before. “Our printed menu never features less than 20 martinis, but we have more than 100 available to our guests at all times,” Martinez shares. “We fill our martini glasses to the absolute brim, avoiding ice and too much garnish—simple and sexy.” Certainly, the menu features espresso, cucumber, apple, and French martinis, but it also boasts unique offerings such as the Bramble Martini, which is Bombay Bramble blackberry and raspberry gin, citrus, and Monin Blueberry Syrup, and the White Chocolate Cake Martini, a blend of Smirnoff Vanilla vodka, Licor 43, White Crème de Cacao, and vanilla cream syrup. “Beyond our martinis, we continue to evolve the entirety of our cocktail program,” Martinez says. “We have a partnership with Knob Creek to get private barrels of whiskey and have north of two dozen craft cocktails on our menu, as well.” A RRI V ED G UEST BOOK

GO WITH THE FLOW

For hundreds of years, Arizona’s canal system has sustained life in the parched desert. Now it also enriches the soul BY REBECCA L. RHOADES

Phoenix is known for its arid landscape and scorching temperatures. Yet, millions of people call the sunbaked terrain home. Much of this is thanks to the miles of waterways that fan out across the Valley like arteries and capillaries, delivering life-sustaining water to plants, animals, and humans alike. But the canals are more than just a source of irrigation. They’re also a place for recreation, home to beautifying public art displays, and a connection to the Sonoran Desert’s ancient inhabitants.

ANCIENT WATERWAYS The Arizona canals date back to around 200 A.D., when the Hohokam people built more than 250 miles of trenches to irrigate their crops. “They operated, maintained, and grew this system until about 1450 A.D.,” says Marissa Sotomayor, team manager of Research, Archives and Heritage for Salt River Project (SRP), the electrical power and water utility provider for much of Arizona. SRP has managed the canals since the early 1900s. “At its peak, the system spanned about 500 miles and supported a population of as many as 50,000 people.” A RRI V ED G UEST BOOK

than Venice and Amsterdam combined. They stretch from Tolleson to Mesa and Chandler to Peoria. “There is strong evidence to indicate that some of today’s canals pretty closely and sometimes exactly follow that ancestral system,” Sotomayor points out. Two modern waterways in particular—the Arizona Canal and the Grand Canal—follow the pathways of the early canals. The Arizona Canal is the longest at about 50 miles. It’s also the most conspicuous, cutting from Peoria and North Phoenix through Old Town Scottsdale and out past the far eastern edges of the Valley. It connects in Scottsdale to the Grand Canal, which runs parallel through Central Phoenix, connecting in Glendale to the New River. They and seven other main canals, along with a network of more than 1,000 miles of ditches and underground pipelines, now bring water from the Salt and Verde rivers to the many apartment complexes, housing developments, office towers, and manufacturing sites that have replaced the verdant farmlands of the Valley’s early dwellers. But today’s canals are more than utilitarian.

MODERN-DAY INFRASTRUCTURE The Hohokam’s legacy lives on in the Valley’s modern canals. One hundred and twenty-one miles of open-air waterways crisscross the landscape. That’s more miles of canals

Using sticks and stones to dig, the Hohokam built the canals much as we would today. “It’s truly a testament to the really ingenious way that they engineered the system,” Sotomayor explains. “The ancient system and the modern one are engineered in the exact same way, which is gravity fed. We don’t pump any water. It’s all gravity.” By the mid 1400s, the canals were abandoned. They remained so until the 1800s, when prospectors and pioneers began settling in the region. A former soldier, Jack Swilling, one of Phoenix’s founding fathers, saw remnants of the irrigation channels and, realizing their importance to the desert’s agriculture, began excavating modern-era canals over the ancient system. Soon, new communities were popping up along the waterways. “Without the system that the Hohokam engineered, the settlers in the late 1800s would have had a really hard time coming up with all of that themselves if the remnants hadn’t already been there,” Sotomayor says.

baptisms, and even waterskiing were common activities. Fishing is still allowed with a valid fishing license. In 1964, the first recreational path was created. Today, more than 80 miles of paved ADA-compliant paths for walking, running, and biking extend alongside the canals. And the waters’ impact can even be seen miles away. Scottsdale’s Indian Bend Wash Greenbelt is an 11-milelong oasis that stretches from Shea Boulevard south to Tempe Town Lake along Hayden Road. It was developed in the 1960s and completed in 1985 to serve as a flood prevention zone. However, over the years, it has been transformed into a lush recreational paradise of parks, lakes, paved multiuse trails, sports fields, dog parks, and golf courses. Multiple lakes and waterways in the grassy space are sustained by SRP’s canal system—at its northern end, the Greenbelt is bisected by the Arizona Canal—as well as Colorado River water delivered by the Central Arizona Project (CAP). Like SRP, the CAP supplies water to Arizona, particularly to the northern and southern regions of the state. The ’90s saw the beginning of the addition of public art along the canals, ranging from murals and sculptures to large installations. One of the biggest projects that came out of that era was the renovation of the hydroelectric power station at the

Arizona Falls. Built in 1902, the plant was restored in 2003 with a stunning concrete, stone, and steel structure where visitors can stroll beneath curtains of falling water. The rustencrusted gears from the original power station are incorporated into the design, and poetry by the state’s first poet laureate is carved into the concrete. Also showcasing both the canals and public art is Canal Convergence. This free 10-day immersive event, held in November, illuminates the banks along the Scottsdale Waterfront with large-scale interactive installations by local and international artists. “Canal Convergence is such a cool event,” Sotomayor says. “People may not always understand or appreciate the origins of the canal system or where the water comes from, but that doesn’t mean that we can’t unite to create these phenomenal events where everyone can truly enjoy and recreate along the canal. “People have always been drawn to water,” she adds. “Having access to it freely is a nice perk of living here in the Valley.” Whether you want to connect with Arizona’s past or peruse public art, or you’re looking for a unique way to explore the greater Phoenix area, the Valley’s canals offer plenty of interest points and recreational opportunities.

When Cecilia Corral moved from Sonora, Mexico, to Scottsdale with her husband, Tomas, and two young sons in 1919, she was adamant about one thing: no mining. “While they worked in mining in Mexico, my grandmother wanted a new future for her family, one without the dangers of ground collapses, explosions, fires, and exposure to toxins,” says Maria Corral. As was custom at the time, the family got sponsored in their move to the U.S. by a farmer who needed help in his cotton fields. “My grandfather would work the fields until he saved $200, which afforded him two lots in what was, at the time, a haven for Mexican immigrants along Second Street in South Scottsdale, now more popularly known as Old Town Scottsdale,” Corral says. Tomas’ initial plan was to use the land for growing his cotton, but by 1928, he built an adobe structure on the land—one that would serve first as a home and then as a gathering place for the Hispanic community, including as a pool hall, bakery, tavern, and even a place of worship in its earliest days. “In 1947, my parents transformed it to a restaurant, calling it Los Olivos Mexican Patio to honor the olive trees that grow wild in the region, and our heritage,” Corral says, noting the second lot would eventually be sold and developed into Scottsdale Museum of Contemporary Art. When it opened, Los Olivos Mexican Patio was a celebration of Corral’s mother’s family recipes, many of which had been passed down several generations. “Both our red sauce and handmade tortillas, which have set us apart no matter the popular trends of the day, were

staples in my mother’s household when she was a child,” Corral shares. Corral, who began working at Los Olivos as a busser when she was 10 and spent decades as a server, cook, and even bookkeeper for the restaurant, proudly inherited the business from her parents, along with her three siblings, in the early 2000s. “My entire family has had a hand in Los Olivos, even dating back to our first days in business,” she says. “My Uncle Jesus is the talent behind the iconic Mayan sculpture that sits atop our building, as well as our chandeliers.” Other family members, from cousins to Corral’s children, continue to work at Los Olivos. “Beyond our blood relatives, we also have employees and diners who have been with us over 40 years,” Corral says. Los Olivos has also long been a popular destination for dignitaries and stars of the day. “During his heyday, Arizona lawmaker Barry Goldwater frequented the eatery on an almost weekly basis, which helped keep the doors open when developers came sniffing around,” Corral says, adding that everyone from Andy Rooney to Tom Hanks has visited over the years. Most of the menu has remained the same since 1947, notably the laundry list of beloved cheese crisps, enchiladas, and tacos, with a few additions to keep up with the times, including fajitas, serrano-kissed margaritas, and pollo a la queso crema. “A diner favorite, this is a homemade tortilla stuffed with chicken that is deep fried and topped with jalapeño-infused cream cheese and ample cheddar cheese,” Corral explains. “We also now offer our twist on a burger, but everything else is just as my mother’s family intended.”

Completed in just 18 months, it incorporated materials imported from around the country, including tile from the Wrigleys’ own tile factory on Catalina Island. “This is a personal and romantic gesture that adds meaning to its timeless legacy,” says Cara Padilla, the director of guest services for Wrigley Mansion, who estimates more than a thousand couples have said “I do” right there on the idyllic grounds amid the stunning architecture on the property. “Its romantic setting, rich history, and picture-perfect views make it a favorite among couples locally and from afar. Many return years later to celebrate anniversaries and family milestones, continuing the tradition.” Originally a winter getaway for the Wrigleys, ownership of the mansion would change hands multiple times. It spent years empty and was slated for demolition before musician, entrepreneur, and Hormel Foods heir Geordie Hormel and his wife, Jamie, who recognized its beauty and historic significance, rescued it by purchasing the mansion in 1992. They painstakingly restored the property with the intention of opening it for the public to enjoy. Jamie has overseen extensive renovations over the years, striking a careful balance between honoring the mansion’s 1930s charm and making it luxurious and relevant for today’s guests. Updates include everything from restored tile and architectural details to the creation of state-of-the-art kitchens and modern event spaces.
