An uncertain future

atching the financial markets these days can be as hard on the stomach as an early morning fishing trip with my dad. It’s up; no, it’s down. It’s up; no, it’s down. It’s up; no, it’s PLUMMETED. While I’m currently using denial and avoidance as a coping tool for dealing with my personal financial investments, in the real world – also known as reality – that just doesn’t fly. Especially when in a few short months, there’s another crop season to prepare for. What exactly will the 2009 season bring? It’s bad enough that farmers are faced with the uncertainty of Mother Nature and the growing season; now they are also faced with an uncertain economic climate and credit crunch, fluctuating fuel prices and high fertilizer bills. According to freelance writer Peter Mitham, who has penned an article or two in the past for Fruit and Vegetable Magazine, Canadian farmers should be preparing for a credit crunch. “The best action plan farmers can take in such cases is to have prudent financial plan that acknowledges the impact deteri-

orating economic conditions may have on their businesses,” he stated in a recent CBC Commentary for the Canadian Farm Business Management Council (CFBMC). He spoke with Reg Ens, a farm business management consultant with Meyers Norris Penny in British Columbia, who suggests farmers monitor their operation’s cash flow and regularly review the outlook for future revenue and expenses. “It not only helps keep your farm business on track but it can also encourage your lender to view you in a better light,” Mitham wrote. Another way producers can plan for the future is to revisit their nutrient management plans and re-evaluate crop rotations. This is the advice of a recent report on fertilizer price volatility by the George Morris Centre. The 19-page report, prepared by James Oehmke, Beth Sparling and Larry Martin, concludes that farmers are facing two major fertilizer risks: rising and volatile fertilizer prices, and growing demand for limited supplies. A recent

report by The Canadian Press reflects this with Potash Corp. forecasting demand for product to “meet or exceed the availability of new supply” in the next five to seven years. The George Morris Centre report suggests farmers consider different risk management strategies for managing fertilizer prices, including “pre-purchasing fertilizer, forward contracting, volume purchases either individually or in a group, and maintaining relationships with dealers based on price, service, and consistency of product.” It may also be time for farmers to begin pooling their assets as they used to in the nottoo-distant past. There’s an important crop resource coming out of the hind end of the neighbouring farm’s dairy or beef cows or pooling in the lagoon behind your cousin’s farrow-to-finish operation. Manure can be a challenge to manage safely and responsibly in fruit and vegetable production but, given the forecasted costs of chemical fertilizers, it may be an alternative route to take. ❦

WEB EXCLUSIVE Herbicide-resistant grape could revitalize wine industry October 21, 2008 — An herbicide that is effective at killing broadleaf weeds in corn – but also annihilates most grapes – may finally have a worthy contender. Researchers at the University of Illinois have developed a new grape called Improved Chancellor, which is resistant to the popular herbicide 2, 4-D. “In 1946, 2,4-Dichlorophenoxyacetic or 2,4-D was introduced. It was a wonder herbicide,” said Robert Skirvin, plant biologist in the college of agriculture, consumer and environmental sciences. “It works really well in corn and wheat and grass crops because it kills the broadleaves, so the grasses are resistant to it, but grapes are incredibly sensitive to it.” Skirvin said that 1/100th of the amount of 2, 4-D commonly used on corn to kill broadleaves, will kill grapes. The discovery of the gene that makes Improved Chancellor resistant to 2, 4-D came about by accident. “The USDA found a soil bacterium that had a gene that breaks down 2, 4-D. Someone noticed that after spilling 2, 4-D on the ground, something in the soil broke it up – metabolized it. They were looking for something to control pollution and discovered this soil bacterium instead,” said Skirvin. He received permission to use the bacterial gene and began in 2002 to transfer it to a grape that would ultimately be resistant to 2, 4-D. He and his graduate student, Richard Mulwa, followed standard genetic engineering techniques in order to transfer the gene to grape cells.

Trapping pests with Bugbait Researchers say new tomato variety has ‘excellent potential’ to control potato beetle By Treena Hein

f potato beetles could talk, they would be raving this season about a new local variety of tomato plant. Yes, tomatoes – and these same plants that are so very attractive to potato beetles may be able to usher in a new era of beetle control in Ontario and beyond. The new variety – coined Bugbait by its discoverer Dr. Jim Dick – has undergone very positive preliminary testing at the Ridgetown College campus of University of Guelph this season, and expanded testing will continue next year. The discovery of the variety was a lucky accident. “I was looking for greenstemmed mutants,” says Dr. Dick, CEO of tomato breeding company Tomato Solutions in Chatham, Ont. “I was able to find three in different varieties. It turned out I couldn’t use them as intended, but noticed that one of them, the Colorado potato, beetle ate it up – just destroyed it.” It is this attractiveness that is the key to this variety’s potential to control potato beetles. Because they are more attractive than potato plants to the beetles, they may be used to serve as a “trap-crop” around the edge of potato fields. As long as there is sufficient foliage to keep the beetles happy, they will stay put. Steve Loewen, a tomato breeder who works at Ridgetown, brought the mutant plants to the attention of Dr. Christian Krupke, a pathologist specializing in vegetable pest management. Dr. Krupke joined the faculty at Ridgetown in March 2008 after working at Purdue University in Indiana for three years. He is originally from Mississauga and has studied at the universities of Guelph, Simon Fraser and Washington state. Dr. Krupke planted several dozen plants mixed with potato and other tomato varieties this season. “I have never seen this kind of attraction on a non-host plant,” he says. “From that point of view, I am very excited about it and doing work on it next year. I would characterize its potential [as a trap-crop] as excellent.” In terms of why potato beetles like

the foliage of Bugbait plants so much, Dr. Krupke says “My main theory is that there’s an anti-feeding compound missing in these plants. They most likely don’t have a secondary plant compound that would ordinarily control the beetle.” He adds, “In nature, this plant wouldn’t survive. It would be eaten down and killed and wouldn’t survive to the next generation.” Dr. Krupke’s other theory is that Bugbait plants have something extra that’s attractive to the beetles, but he says “It’s far more likely that there’s something missing.” As to whether the beetles may be able to smell that the anti-feeding compound is missing or take an experimental bite and find it to be absent, Dr. Krupke says he would guess it’s the latter. This winter, Dr. Krupke will probably seek a chemist colleague to help investigate

the chemical differences between the foliage of Bugbait and other varieties. “It’s easier than you think [to identify plant compounds],” he says, a process which involves the burning of plant tissue samples in a gas chromatography machine.

Trap-plant control What’s so exciting about Bugbait tomatoes is the fact that their attractiveness to potato beetles is only one of the qualities they possess that are critical to trap-plant success. Bugbait plants also grow a great deal of foliage, keeping the beetles fed for a substantial amount of time. “You need a trap-plant to grow well in southern Ontario weather and this tomato plant does that,” says Dr. Krupke. In comparison, he points out that eggplant, which has also been studied as a potato beetle trap-plant, “doesn’t put on a lot of foliage in the best of times,”

and really doesn’t do well in the cool, wet weather common in southern Ontario. “You need a crop that’s going to perform for you and you don’t have to baby,“ he says. “That’s the advantage of this tomato. It’s from commercial cultivars and it’s resilient.” The lack of all these qualities together in one plant is the very reason why trapcropping hasn’t been widely adopted as a method of potato beetle control. Potato beetles do, however, lend themselves to being controlled this way, says Dr. Krupke, because they walk into potato fields from the edge. “If you can trap them as they walk in and keep them there, then you have them and you don’t have to spray as much,” he notes.

Pest control challenges Spraying is still an important management tool, even when trap-cropping is used. When the beetles on Bugbait plants should be sprayed is part of what Dr. Krupke will be investigating in 2009. Trap-cropping, however, may be able to help with the problem of insecticide resistance. “This beetle has been resistant to everything we’ve tried in the last 40 to 50 years,” Dr. Krupke says. “Crossresistance [to several pesticides] also happens. “The way you prevent resistance is by not spraying the entire field all the time. You lower the pressure on the organism and kill only what you need to kill. What [trap-cropping] would accomplish is that you would spray the border of the field. Some will get through, but is it really worth spraying the entire field to kill them all? No.” Resistance aside, potato beetles are also among the toughest pests to fight because of their high reproductive rate, says Dr. Krupke, and the corresponding high level of genetic diversity present in all those offspring. And, there are lots of potato beetles out there because the crop has been grown widely for a long period of time. Preparing for next summer’s testing of Bugbait will involve harvesting seeds this fall and getting in touch with willing potato growers. “The target is a commercial potato field ringed on all sides with this tomato,” Dr. Krupke says. ❦ FRUIT & VEGETABLE MAGAZINE, NOVEMBER/DECEMBER 2008

Stevenson is the new vice-president of sales and marketing for New Holland Agriculture in North America. The appointment was effective Aug. 1, 2008. Stevenson will maintain his office at New Holland Agriculture North American headquarters in New Holland, Pa. He will report directly to the president of New Holland Agriculture worldwide. Stevenson’s credentials include most recently serving as president and chief executive officer of American LaFrance LLC, a U.S.-based manufacturer of fire, rescue and other emergency response vehicles. Prior to that, he served in senior management positions at Freightliner, Volvo Trucks North America, and Mack Trucks. His background also includes proficiencies in organizational management, manufacturing, distribution, purchasing, logistics, product marketing, service and sales. He holds a bachelor of business administration degree from Muhlenberg College in Allentown, Pa.

To help kick off its anniversary year, the organization is planning a celebration January 12-14, 2009, at the Crowne Plaza Hotel in Niagara Falls, Ont. The event will be held in conjunction with the association’s annual general meeting. As part of the event, the OF&VGA will be awarding a Lifetime Achievement Award, recognizing a living individual’s lifetime involvement and contribution to Ontario horticulture. Tackling tender fruit in Nova Scotia Growers experimenting with sweet cherries, peaches, plums and nectarines By Dan Woolley

ncredible as it may seem, there are other tree fruit grown in Nova Scotia’s Annapolis Valley besides apples. Two stops on the recent 2008 Nova Scotia Fruit Growers Association (NSFGA) orchard tour, held in late August, indicate increasing diversification in Nova Scotia’s orchards. During the 2008 season, NSFGA board director Craig Nichols planted 15 acres of sweet cherries on a former apple orchard located near Millville, N.S.. Following a fact-finding trip to California during the 2007 winter examining cherry orchard management, he decided to plant the orchard using the Lapin variety on Mazzard rootstock. The 100 or so trees are spaced nine feet apart with 18 feet between each row. They will be managed using a suspension system and Nichols plans to restrict the cherry trees to a maximum height of 12 feet. He will also be irrigating them. It’s expected the planting will be a challenge to manage, given the orchard’s mix of seven different soil types, but Agra Point tree specialist Bill Craig noted drainage shouldn’t be a problem on the site. Canker could be an issue for the planting because of the area’s variable climate, said Craig, although he added a lot of research is currently being done on canker control. Unfortunately, the local wild deer population has developed a taste for Nichols’ cherry planting. He has bought a small electrical shocking device from Scotian Gold Co-operative Ltd. that has been placed in the tree row to dissuade the deer from nibbling on the trees. The device emits an apple odour to attract the deer. When they touch it, it gives them a zap on the nose. Nichols believes there is enough grower interest in the Annapolis Valley to sustain a cherry industry but he also feels it needs “a critical mass” of production volume in order to sustain it. with Scotian Gold Co-operative Ltd., said cherries are a challenging choice of crop to grow in the Annapolis Valley since the local market likes large cherries. But he added the fruit crop is the one with the most potential in the export market. “They are highly perishable, but they are also highly profitable,” Lutz said. It’s still not known whether cherries will need to be covered with a tunnel structure to prevent cracking in the Nova Scotia climate. “The jury is still out,” said Lutz, adding the Lapin variety is crack-resistant.

Nova Scotia tender fruit? Geoff Hennigar’s Blomidon Farms orchard at Dempsey Corner, N.S., is very diversified, producing apples, peaches, plums, nectarines and cherries. Hennigar grows 18 varieties of peaches on 12 acres and, over the years, has increased the peach production in his orchard by about 500 per cent. He is also unique in that he trains his peach trees on a central leader system. This year, Agriculture and Agri-Food Canada (AAFC) tree fruit researcher Charles Embree began peach thinning trials in Hennigar’s orchard. “It is amazing we are doing this, this far north,” he said. “ATS (ammonium thiosulphate)

wasn’t too bad; lime-sulphur and fish oil worked reasonably well; eugenol, however, proved quite phytotoxic.”

Apple management For the first time, Hennigar used Apogee in his apple blocks to shorten suckers and shoots and he likes the way it has worked on both his Gala and Jonagold trees. He found the later he applied Apogee, the better it worked, enabling him to avoid summer pruning while opening up the tree canopy to ripen fruit close to the trunk. Embree noted Apogee works well on Spys and young, vigorously growing trees. Hennigar also applied a couple of seaweed products to feed a low rate of nitrogen to the tree rows. He feels these products also helped to control mites. “I think it does something, but don’t ask me for proof,” he said. In a 10-year-old block of Gala and Jonagold, Hennigar hand thins the Gala, while thinning the Jonagold with Sevin, Maxcel and NAA. This block is also suspended on a wire trellis with a spacing of six-feet by 14-feet. He also trickle irrigates the block but has irrigated only twice in the past 10 years. ❦ PAGE 11

C Consumers are demanding largersized cherries and the way to produce them is through variety selection, plus a little know-how with a pair of pruning shears, says Lindsay Hainstock of Kelowna, B.C.

onsumer demand for the regular-sized sweet cherry has been changing over the past few years, says Lindsay Hainstock of B.C. Packing House, Kelowna, B.C. The market is now demanding big cherries, and B.C. growers have them the size of ping-pong balls. Since 2003, nearly 89 per cent of the cherry trees planted in B.C. have been of the Summerland variety, with the majority being devoted to Lapin, Sweetheart and Stacatto, respectively, along with some early producing varieties. While consumers are demanding bigger cherries, the larger varieties are also proving more profitable for growers to produce, particularly those operating on the nine and one-half row system, says

Hainstock. By using this planting system, and with yields of 10,000 pounds per acre loaded into 20-pound packs, grower costs have been averaging about $12,140 per acre. While variety selection is an important determinant in cherry size and shape, proper pruning is the deciding factor in just how big the cherries will be. Outlining the pruning procedures she prefers, Hainstock says, “one person per tree is the best because we all have different perspectives.” It is, however, best to avoid the ‘freestyle system’ of pruning that usually results in bad crotch angles, no new wood being allowed to grow, or too many vertical branches that need to be tied back.

Hainstock says to stand back and assess the tree. Choose three big cuts, and using the 50 per cent rule, start cutting at the top and shape your way down. It is important to get, and maintain, good crotch angles. A flat branch, jutting out at 90 degrees from the trunk, is more prone to break when laden with fruit than a branch with a more upward, but not steep, angle. She says that toothpicks, spreaders and young wood are all good to keep, and big older wood should be removed. Hainstock says to think of the water flow theory in which water will flow to the biggest pipe first, or in this case, the biggest branch. In Washington state, the growers prune out what they call the “wood of mass domination.” Whichever way you want to think of it, she adds, “just try to balance out that flow throughout the tree.” As for where to prune, Hainstock suggests cutting to the trunk if the branch is too strong or upright. Cut to a stub if it will increase fruiting area. Also, cut to a tip if it is a weak branch and this will strengthen it. As for when to prune, Hainstock likes pruning during the late B.C. summer and knows of one grower who harvests his

crop and then prunes afterward. “Consider the tree like a wound-up spring in winter just ready to pop,” she says. “Then consider it sprung in summer.” She notes the branches are softer and easier to prune in summer, plus it also improves vigour and light distribution. Good sunlight distribution throughout the tree is very important and improves fruit quality, yield and bud quality. “You may have to change the shape around the main leader to keep the centre open,” she says. This can be done by removing some inward branches, which will also increase airflow and decrease pressure from diseases such as powdery mildew. “Again, go with three cuts at 50 per cent but don’t get greedy. You don’t want a tree overloaded with fruit,” she says. Managing crop load is another goal that can be achieved by pruning, says Hainstock. You can reduce the load by pruning out branches but you can also thin out the blossoms and the fruit if needed, which is often necessary with new dwarfing stock. “Base your pruning on the tree’s vigour,” she suggests. “The tree has limited resources so balance it as best as you can with the fruit.

There is an inverse relationship between fruit size and crop load,” she says. Consider the leaf to bud ratio and its distribution, then consider how that tree will look three years down the road. “Don’t bonsai the tree. It may look great but it won’t produce any fruit. “If you overcrop the tree, you’ll get zip, zero from it the next year,” she cautions. So avoid heavy croppers, and know your varieties, especially the dwarfing ones. Of the dwarfs, Hainstock notes that Staccato is very sensitive to bud damage so care must be taken during pruning. She adds that Gisela will hold its own, if properly pruned, for about six years, after which it will need a support system. Of the planting styles in use in B.C., Hainstock says it is popular to plant the whips and delay the head cut in the first year but they will score near the tip of the whip. There is no head cut until bloom, which generally happens, in the second year. She adds that cherry trees do not like wet feet so there is no advantage to watering the whips. “It won’t help size, so it’s best to plant them, go fishing and not worry about them,” she concludes. ❦

Nova Scotia fruit tour highlights replanting methods By Dan Woolley

he Nova Scotia Fruit Growers Association’s 2008 orchard tour, held in late August, helped to illustrate how Annapolis Valley apple growers are adapting new varieties to Atlantic growing conditions. Each of the orchards visited during the annual tour featured an active program for grafting or replanting new, highvalue cultivars.

Boates Farm In Woodville, N.S., Brian Boates of Boates Farm began organically growing apples in 1994. Today, 80 per cent of his blocks are producing Honeycrisp with the remaining 20 per cent planted to Pacific Gala. When he planted his first block of

Honeycrisp, Boates chose land that had lain fallow for 20 years. He ripped the soil two feet deep and then applied composted beef manure. He trellised using metal conduit since, as an organic grower, he cannot use treated wood. This season, Boates added some additional beef manure as compost around his trees and knocked down the weeds in the orchard rows using a grass cutter in late July. He also composts orchard rows with straw (four bales per row, 16 bales per hectare) to help control the weeds. Boates says his biggest problem to date has been with aphids. He uses Safers Insecticidal Soap (Trounce) as his organic control. “It knocked them down, but it doesn’t eliminate them,” he admits. Next year, he plans to get professional advice as to the best time to apply the control. For scab control, Boates uses copper sulphate, sulphur and lime/sulphur.

Parker farm At Gail and Andrew Parker’s nearby operation, more than 10 acres have been grafted from Macintosh, Idared, Viking and Spys, to mainly Honeycrisp. They have been working on the changeover since 2002. “We are strong proponents of grafting, at least in our orchard,” says Andrew, adding grafting has not been an issue as PAGE 14

far as growth. He estimates the grafting has been more than 90 per cent successful and the cost has been “pretty minimal.” He converted his first one-hectare block of Macintosh and Idared in 2002 after a few years of dismal fresh market and processing sales forced him to sell his apples for juice. Three years after the conversion, Parker began picking in the new block. The fruit quality has been good and he expects about 120 bins this year from the grafted varieties. In 2006, the Parkers continued their conversion project, grafting a 1988 planting of Macintosh and Idared on M111 rootstock to Honeycrisp and Gala. Andrew admits it has been a challenge to get this block of Honeycrisp to grow into vigorous trees due to light soils. To combat this, the pair irrigates and removes some fruit from the Honeycrisp trees before harvest, while leaving fruit hanging on the hardier Gala. Andrew harrows his rows to promote tree growth and suppress weeds. He also utilizes an overhead irrigation system, which also doubles as a frost control system on the operation’s low-lying land. “We lost a couple of crops in the early 1980s because of frost,” he recalls. The Parkers thin their trees using Sevin and, for the first time this season, used the new thinner Maxcel on their

composted hog manure provided the best replanting results, explained Agra Point tree specialist Bill Craig.

Several years ago, British Columbia native Al Fisher, convinced that Nova Scotia was the best place to grow Honeycrisp apples, bought an orchard near Windermere, N.S. According to Larry Lutz, Fisher began his extensive replanting in 2006 by deep ripping with a bulldozer, followed by fumigation in blocks that were plotted with geometrical precision using a GPS system. His replanted blocks use a trellis system, familiar to B.C. apple farmers, involving wooden poles that support the trellis wires, a cheaper to metal conduit. Fisher also built an eight-foot-high deer fence around his orchard. In 2007, Fisher planted an additional 10 acres of Honeycrisp in four rows on M26 rootstock, accompanied by two rows of Ambrosia on M9 rootstock. This past spring, Fisher planted 15 more acres, predominantly in Honeycrisp on M26 rootstock at a spacing of about five-feet between trees and a row spacing of 15 feet. Craig says Fisher plans to ultimately

2006 Honeycrisp block. The couple has found Honeycrisp easy to grow and prune. “We now prune them just like Macintosh,” says Andrew. “It has been a low-maintenance orchard for us.”

Birchleigh Farms Rockland, Nova Scotia’s Birchleigh Farms has 93 acres of apple orchard and owner Waldo Walsh is busy replanting the operation’s oldest blocks. He recently pruned one block of Honeycrisp, planted on M106 rootstock, using extensive heading cuts followed by large limb removal. In 2007, Walsh harvested 26 bins per acre from this block with a 91 per cent pack out of fruit and he is pleased with the crop performance of the M106 rootstock. Charles Embree, a research scientist with Agriculture and Agri-Food Canada, believes Honeycrisp does well on M106, although Larry Lutz of Scotia Gold, feels M106 might have phytopthera problems. At one trial replant site in Walsh’s orchard, it was demonstrated that deep ripping followed by an application of FRUIT & VEGETABLE MAGAZINE, NOVEMBER/DECEMBER 2008

to have about 160 acres of new plantings, with many of those young trees originating from his B.C. nursery, where he is also an organic cherry grower. Fisher lost a few trees in his 2006 planting due to rodents girdling the tree trunks. The tree rows had been mulched using hay, which provided good cover for the rodents and a perfect environment for collar rot on the M26 rootstock.

van Meekeren Farms Collar rot also confronted the van Meekeren brothers of van Meekeren Farms near Lakeville, N.S. The rot struck following the operation’s 2003 planting of Gala on M9 rootstock in an orchard that has a heavy soil and is not well drained in its lowest parts. As a result, during the farm’s subsequent planting in 2007, the brothers placed their new trees on a berm or hilled them. Fire blight remains the operation’s big management issue, explains Stephen van Meekeren. Despite two years of trials with organic controls – Bloomtime Biological FD and BlightBan C9-1 – in the orchard, the products did not work adequately and so the brothers had to intervene with streptomycin. ❦

ost potato growers are aware of the fact that storage diseases of potatoes are seldom curable, but there are ways to help prevent – or at least limit – disease spread to healthy potatoes and to keep a problem with diseased tubers in storage from getting worse. When a crop is produced and harvested, most growers have only reached the halfway mark of the crop cycle – storing the crop for several months is a crucial and potentially risky phase when growers can encounter numerous problems if management of the stored crop is not done right. But, similar to crop cultivation, adherence to certain ground rules can help to ensure that a crop is marketed successfully at the end of the storage phase. What are these ground rules?

Identify potential diseases It is of great importance that growers identify risky lots that go into storage, and also pinpoint the nature of a potential diseased batch. “Knowing what tuber disease is causing the problem will also help in field management decisions for the following growing seasons,” says Dr. Nora Olsen, extension potato specialist at the University of Idaho. The major diseases that plague potato storages include: soft rot, pink rot, Pythium leak, late blight, dry rot, soft rot, silver scurf, and black dot. It is important to properly identify the major storage disease problem either before loading the storage or while the potatoes are in storage prior to making any changes to typical storage management procedures, according to Dr. Jeff Miller, assistant professor of plant pathology at the University of Idaho. “Disease management decisions can impact other potato quality attributes,” he said. Dr. Miller is of the opinion that there are three basic tools of storage management: temperature, humidity, and airflow. “Balanced use of these tools is the key to managing potato storage diseases.” Be mindful of pulp temperature at harvest time If potatoes are harvested with pulp temperatures above 60 F, effort should be made PAGE 42

to cool potatoes to at least 60 F within the first two to three days after harvest. Dr. Olsen and Dr. Miller advise that this is especially important for tubers infected with late blight, pink rot, Pythium leak and soft rot since warmer temperatures promote a faster rate of decay. According to Dr. Olsen, the storage manager should supply a high volume of air to the potatoes to decrease the temperature and to help dry out rotted or wet potatoes. The ventilation air system should be initiated as soon as the first two to three ducts are covered in the loading process. Then the storage manager should continue to decrease storage temperatures to the desired curing temperature.

Wound healing important Proper management of the storage facility during the wound healing or “curing period” is critical, noted Dr. Phil Nolte, extension seed potato specialist at the University of Idaho. “The curing period is important for the proper healing of cuts and bruises, the reduction of disease spread, and to keep shrinkage losses at a minimum,” he said. “Wound healing requires oxygen, high humidity and favourable temperatures. The recommended storage regime for wound healing and curing is typically 50 to 55 F for two to three weeks with good ventilation and a high relative humidity of 90 to 95 per cent.” Dr. Nolte noted that curing temperatures might need to be lowered to 50 F if disease incidence and severity are high. But storage managers should be aware that curing temperatures below 50 F may delay wound healing and are not generally recommended unless they are necessary and the curing time can be extended. “Providing storage conditions for proper wound healing is important for dry rot disease control,” Dr. Nolte says. Dr. Olsen recommends continuous ventilation to dry out wet potatoes. She cautioned that if “hot spots” begin to develop during the curing time, the storage manager should supply high airflow to the area to help prevent additional disease spread. It is of great importance that sufficient air supply be provided within the storage environment to remove water given off by the decaying tubers.

The storage manager should reduce the storage temperature from the curing to holding temperature as quickly as possible (at around 0.5 F per day). According to Dr. Miller, limiting the amount of time the disease-infected tubers are held at warmer temperatures will decrease the rate of disease progression. A fast “ramping rate” may not be appropriate for potatoes to be processed where sugar concentrations and fry color are a concern.

Holding temperatures Lower holding temperatures typically decrease the rate of disease progress and can be used to the storage manager’s advantage, although any storage decisions involving temperature adjustments must take into consideration the end-use of the potato. Dr. Nolte noted that processing potatoes typically need to be stored at higher storage temperatures (44 to 55 F), and therefore the luxury of low storage temperatures are not an option compared to seed and fresh market potatoes, which can be stored at 37 to 45 F. Continuous fan operation and high airflow may still be necessary to dry out wet or problem potatoes, especially those infected with soft rot, pink rot or pythium leak. Depending upon the nature and the percentage of rot that might be present in the storage, the pile may need additional drying time by reducing the humidity in the storage facility, although this management procedure comes at a cost: additional shrinkage of tubers will most likely be the result. “Lowered relative humidity also delays wound healing, which can increase the incidence of dry rot. Decreasing relative humidity in storage (85 per cent relative humidity or less) can also decrease the secondary spread of silver scurf,” Dr. Olsen said. The University of Idaho specialists cautioned that storage managers should keep in mind that any deviation from normal storage practices can potentially have a negative effect on the quality of stored potatoes. Under some conditions, early marketing may be the only option to preserve the value of a stored crop or a particular batch of potatoes in storage. ❦
