STARTING A BAKERY BUSINESS

Are you committed to opening a bakery business?

At Bakers Journal we write articles with bakeries of all sizes in mind, from the largest industrial bakery right down to a cottage baker making the leap to a storefront. The “Starting a Bakery Business?” page of the Baking Association of Canada’s website, baking. ca, guides new baking entrepreneurs. Whether you’re opening a new bakery or expanding an existing one, success depends on more than just great products. It requires a solid plan, smart operations and the ability to ask good questions. You don’t always know what we don’t know.

That’s why connecting with others in the industry is so important. The BAC provides expert guidance, practical resources and a free 30-minute consultation for its members to help set them up for success. They provide a thorough list of considerations to anyone exploring the baking industry, including creating a business plan, demographics, location, suitability of the premises, equipment, licensing and permits, regulatory matters, ingredients, human resources, insurance, formulation, and wholesaling and export markets.

Baking.ca is a great place to start if you want to know what you don’t know. Prospective members can fill out a Business Engagement Form and get connected with a highly experience team of bakery professionals from all walks of this diverse industry.

Retail Bakers of America’s ‘Retail Bakery Start Up Guide’

The Baking Association of Canada partners with the Retail Bakers of America on education. Bakers who join the BAC receive a free one-year membership to the RBA.

Our partners will present a seminar at Bakery Showcase called “BOB Essentials: A Starter Guide to Opening Your Bakery.” The one-hour seminar aims to bring together entrepreneurs who are thinking about or have recently opened bakeries to share information in an unintimidating, welcoming atmosphere. Scott Calvert and Kimberly Houston, experienced bakers, business owners and educators, will break down the essential concepts every new bakery owner should understand, offering an overview of planning, operations and strategy and walking you through the key considerations of opening a bakery.

Related to this session, there is an eight-hour workshop in the works for Toronto in the fall in which bakers can learn how to build their business plans and get practical advice from some of the most successful bakery businesspeople out there.

This is just one in a series of educational events the associations are constantly baking up for you.

Euromonitor publishes trends in the baked goods

Melanie Torres Cabrera, senior analyst at Euromonitor International, shared insights via email from the trend data company’s “Baked Goods in Canada” report published in November.

These insights are specific to the broader retail market, which is primarily influenced by the grocery side (notably grocery store sales and could vary from trends that are specific to bakeries). Euromonitor does not provide channel-specific insights into the bakery sector but instead gives us an overview of the total retail market for baked goods. A separate report they publish on food service covers the bakery-cafés, sandwich and doughnut shops and other limited-service businesses.

Torres Cabrera reports that sales of baked goods in 2025 were $10,996 million Canadian in retail value RSP. Not surprisingly, bread topped the list with nearly $6.5 billion Cdn in sales.

While the pastries category is seeing the best value performance, flat bread stands out as seeing positive value and volume

growth. This is attributed to the population growth of immigrant groups such as South Asian and Western Asian, for whom flat bread consumption is part of their tradition. Flat bread is also seen as a healthy type of bread, which further enhances its image in appealing to health-conscious consumers.

Trends in baked goods will include premiumization, perceived freshness and experiential flavours. For example, this is likely to be seen with the increasing presence of in-store bakeries, in particular. Such services are expected to be seen in discounters as well as supermarkets, with discounters also benefiting from offering lower prices.

Flavours and sensory experience remain as key drivers in baked goods. Over the review period, new, interesting and bold flavours have been tested. An example of this trend is the sour and tangy flavour profile associated with sourdough, whose popularity has been rising in recent years in Canada. What’s more, international and/or multicultural flavours will likely find their way

into baked goods, similar to what’s happening in many other packaged food markets, as the interest in international or internationally inspired food/cuisine continues to rise, supported by recent growth in immigration as well as Canadian consumers’ interest in culture exploration, according to the report.

The growing interest in GLP-1 medications as weight-loss aids is impacting net household consumption trends, as people using these medications are eating less overall. When this is combined with overall health and wellness trends and a movement away from high-sugar foods, this presents both challenges and opportunities to baked goods manufacturers. With consumer demand split between indulgence and cutting back entirely on consumption, one example of a product adaptation is the trend of mug cakes.

Overall, Canadian consumers are increasingly seeking clean labels, functional ingredients and the absence of allergens, alongside organic claims. The full report is available at euromonitor.com.

Hein Schumacher appointed CEO of Barry Callebaut

Barry Callebaut has announced its board of directors has appointed Hein Schumacher as new chief executive officer, effective Jan. 26, succeeding Peter Feld.

On completion of the BC Next Level program, Feld will leave Barry Callebaut to pursue other opportunities.

Schumacher has more than 25 years of experience in the food sector. He served as CEO of Unilever and held leadership positions at Royal FrieslandCampina and HJ Heinz (now Kraft Heinz).

Patrick De Maeseneire, chairman, Barry Callebaut Group, said in a news release, “The Board is delighted to welcome Hein Schumacher as the next CEO after an extensive global search process and to embark on a new chapter of growth, value creation and industry leadership.”

Johnson joins Chicago Metallic Bakeware

Jeff Johnson has joined Chicago Metallic Bakeware as director of national accounts. Mike Macdonald, vice-president of sales for the company, made the announcement, noting in a new release that Johnson is a food-service industry veteran, having spent nearly 20 years in the food-service and commercial products industries in the tabletop, smallwares and light/medium equipment sectors.

Most recently Johnson served as a sales and business development consultant after serving in various sales and leadership positions for industry suppliers such as Tuxton China and Pro Cookware, Arc Cardinal and Zink Foodservice.

Chicago Metallic, a division of Bundy Baking Solutions, is located in Humboldt, Tenn., and has been in operation since 1898.

American Bakers Association and Retail Bakers of America move toward formal affiliation

The American Bakers Association (ABA) and the Retail Bakers of America (RBA) have signed a letter of intent to explore a formal affiliation aimed at strengthening the baking industry.

The two groups say the move supports their shared goal of growing both the commercial and retail baking sectors. Under the proposed structure, each association would continue to operate independently with its own governance, while collaborating more closely on advocacy, operations and member services. According to a statement, the organizations expect to finalize the arrangement in the second quarter of 2026.

In a news release, ABA president and chief executive officer Eric Dell said the agreement builds on an already strong relationship and would give RBA added operational support while allowing it to maintain its brand identity.

“This will provide RBA with operational efficiencies and support as well as create a unified voice with ABA on advocacy issues important to the baking industry,” Dell said.

RBA executive director Marissa Sertich Velie said the affiliation would help both groups use industry resources more efficiently and bolster advocacy efforts at a time when the sector faces increasing pressures.

“It’s a good day for the baking industry,” Sertich Velie said. “This will support growth of both the retail and commercial baking sectors by bringing both organizations closer and using the broader industry’s resources more strategically and efficiently.

“Specifically, this will strengthen advocacy work on behalf of the industry, which is more important now than ever. In short, this is solely about supporting and growing the baking industry.”

Leaders from both associations said the partnership is intended to create long-term growth opportunities and strengthen the industry’s collective voice.

“By aligning our strengths while preserving RBA’s respected brand and expertise, we continue to elevate the service to our members, amplify the industry’s collective advocacy, and accelerate our shared mission to grow and advance the entire baking community,” said Bill Quigg, ABA chair and president of Richmond Baking.

Amie Smith, RBA president and owner, AMIE Bakery, said “Independently, RBA and ABA bring significant value to members, but together that value increases exponentially and helps drive the changes our industry needs. Each organization’s strengths complement the other, and by joining forces, our industry is poised for growth.”

Dave Lewis joins Novacart as regional sales manager for the west

Novacart has announced the appointment of Dave Lewis as regional sales manager for the west.

Lewis joined the company last fall and, with his strong industry experience, is already making an impact in his region, the company said in a news release.

Established in 1926 in Italy, Novacart is the inventor of the first paper baking mould and is a designer, manufacturer and distributor of paper products for the baking and confectionery industries.

Skjodt-Barrett recently launched a line of caramels and fillings, opening its formulation library to the broader market.

Valentine’s Day is a celebration of sweet, chocolate-inspired gifts shared with the people we love. It’s a welcome moment of warmth in the middle of a cold, blustery Canadian winter. In the nation’s capital, often blanketed in snow this time of year, three Ottawa pastry chefs and chocolatiers are helping spread the love, one handcrafted creation at a time.

Love is in the air and in the display cases at Anna Stubbe Chocolates & Confectioneries. With a shop tucked away in the Ottawa suburb of Kanata, Germanborn Anna Stubbe is carrying on a remarkable family legacy as a sixth-generation chocolatier and pastry chef. Here, Valentine’s Day is less about trends and more about tradition.

“Men come in to buy gifts for women often at the last minute, even though it’s the same day every year,” says Anna with a laugh, noting that many return for the same gift year after year.

Some of the more classic chocolates to choose from include heart-shaped chocolate boxes. The box décor changes every year, from chocolate hearts placed in sprayed moulds painted in vibrant reds and pinks to more contemporary graffiti styles. Each heart can be filled with any of the 35 flavours of truffles and bonbons that Anna Stubbe Chocolates & Confectioneries offers. Anna adds a seasonal collection of heart-shaped bonbons for Valentine’s Day. In the past, these have included rose wine, spicy cinnamon and passionfruit.

Anna tells one of the numerous romantic tales involving her customers. “We sold a heart-shaped chocolate box filled with truffles and bonbons to a man who was planning to propose. He slipped the engagement ring inside before he gave the gift to his love.”

What tops Anna’s personal list of sweet Valentine’s Day treats? “My favourite

items we sell in store are the dessert hearts. Two bites. Heart-shaped chocolate shells, in either milk or dark chocolate, with cake inside. There is a layer of chocolate sponge, chocolate ganache and a bit of raspberry jam to add some sweetness.

In the quieter-than-the-city suburban community, there are swift sales of Valentine’s Day gifts for children. “The most popular item for kids is the moulded chocolate teddy bear, standing about four inches tall.”

Over at Pasticceria Gelateria Italiana, also known locally as the Italian Pastry Shop, in Ottawa’s Little Italy, customers pre-order heart-shaped cakes as a delectable treat for Valentine’s Day. “Customers love our classic buttercream

cakes. We also have chocolate mousse cakes with chocolate ganache made with Callebaut chocolate. All are decorated in a Valentine’s Day theme,” says Joe Calabro, multi-award-winning pastry chef and co-owner of PGI.

Buttercream cakes start with a vanilla or chocolate sponge cake base and are filled with a coordinating flavour of pastry cream. As for buttercream decorations, the pastry chef gets creative. “I decorate each cake differently, with different piping tips depending on the mood I am in. It keeps each cake individual, and it’s fun for me.”

ganache. The chocolate brownie mousse cake has a dense chocolate brownie base, also topped with chocolate mousse and milk chocolate ganache. Red velvet chocolate mousse cake is made with layers of red velvet cake brushed with rum syrup and filled with luscious cream cheese frosting. Only then is it topped with white chocolate ganache tinted with a bit of colour to turn it pink. All cakes are sprinkled with a little cocoa, chocolate and fun heart-shaped decorations.

To really elevate the cakes, the shop packages up Italian gelato by the litre to take home, as an accompaniment. Think strawberry, chocolate caramel, chocolate orange, chocolate brownie or Nutella.

Chocolate-covered strawberries are always a hit, as are the moulded heart chocolates and numerous truffles. “My favourite truffle is dark chocolate hazelnut,” the pastry chef confides.

strawberry chocolate heart-shaped tarts, the heart-shaped tiramisu tart and the mini red velvet cakes.

The strawberry heart-shaped tart is crafted with a sable crust, filled with cocoa almond cream, layered with strawberry confit and topped with a heart-shaped chocolate mousse. It’s a showstopping way to end a romantic meal.

“We have tiramisu tarts on the menu all year, but they turn heart-shaped for Valentine’s Day,” Sanaz says. “The base is made with homemade lady’s fingers dipped in espresso. Next is a layer of chocolate ganache, followed by a layer of mascarpone cheese.”

Round mini red velvet cakes are cut from two layers of red velvet sponge cake. “The middle and top are filled with mascarpone cream, with the addition of strawberry confit in the middle layer,” she says.

Many tarts available in the bakery can also work nicely for the special day. The espresso chocolate tart combines a crisp chocolate tart base with a filling of dark chocolate ganache and espresso mousse. Filled with chocolate almond cream, the chocolate caramel tart also contains a swoon-worthy layer of caramel, topped with chocolate mousse and chocolate ganache. With a buttery pastry base, the raspberry almond tart is filled with almond cream, raspberry confit and topped with raspberry ganache.

Other chocolate delights include the new individually sized chocolate Black Forest cheesecake, layered with cherry filling, whipped cream and dark chocolate shavings. Then, go ahead and choose a finger or two. The Rocher finger is a hazelnut financier filled with chocolate caramel and coated in Belgian dark chocolate, while the pistachio finger is a pistachio financier with raspberry-pistachio filling and Belgian white chocolate coating.

After the bingeworthy delights of sweets for Christmas and the New Year, followed by a vow to be sugar-free in January, customers are clamouring for chocolate and sweet desserts by Valentine’s Day. What’s more, they want to share it with the people they love. / BJ

Chef Joanne Yolles’ outstanding career as a professional pastry chef began almost 40 years ago in San Francisco, where she attended classes at the celebrated Tante Marie’s Cooking School. Returning to her hometown of Toronto, she landed her first job as a pastry chef at Fenton’s Food Shop, located next to the much-lauded Fenton’s Restaurant. From there, she moved to Scaramouche, the beloved fine-dining institution, where over 11 years she became well known for her delicious desserts. Joanne was considered a trailblazer at the time because most restaurants didn’t have a full-time pastry chef role. To this day, Chef Yolles’s famous coconut cream pie is the restaurant’s best-selling menu item.

Chef Yolles taught in the Baking and Pastry Arts Program at George Brown College for more than a decade. Her work has been recognized in many publications and, in 2022, she appeared as one of the celebrity judges on Food Network Canada’s hit TV series, Wall of Bakers.

Hans Suarez is a pastry chef based in Kelowna with over a decade of experience in hospitality and seven years specializing in pastry. He is the Head Pastry Chef at Quails’ Gate Estate Winery in Kelowna, B.C., and was previously the opening Executive Pastry Chef at The Dorian, Autograph Collection – Calgary’s only Michelin Key Guide hotel. Ryan Mallin is a Canadian baker and educator who has worked at the intersection of craft, agriculture, and sustainable food systems for the last ten years. Mallin completed his baking apprenticeship in Niagara-on-the-Lake, where close relationships with local growers and an abundance of seasonal fruit shaped his early approach to ingredient-driven baking and the idea of seasonality. “GLP1 has changed the snack game, but most brands are still playing by the old rules,” writes Gill Hyslop, the editor of Bakery&Snacks, in an insightful report on GLP-1 drugs.

When it comes to dietary trends, I am a skeptic. I have lived through eras of low-fat, low-carb, all-liquid, paleo and Scarsdale-type diets. I thought there could be “nothing new under the sun” until BAC’s new director of membership development, Tricia Ryan, brought up the topic last month.

In Canada’s bakery aisles, dietary trends come and go – low-carb, low-fat, no cane sugar, only cane sugar, now “GLP1 friendly.”

These trends may shape product development, but should they shape our approach to our work?

A baker’s perspective

It’s hard to escape the advertising images: people celebrating their effortless weight loss while cheerful jingles repeat the names of the new, life-changing drugs. These ads are mostly truthful: GLP1-class drugs address a variety of chronic health issues. They really are a miracle drug for people who struggle with conditions like

type II diabetes and obesity.

However, you also see advertisements that gloss over the real health benefits in order to focus on the same old issue: thinness. GLP-1 drugs can help people shed weight because they diminish appetite. Cities with high GLP-1 uptake are facing a bit of a crisis in the restaurant industry: people no longer want to socialize over a nice dinner out. How do we, as bakers, respond to a societal change that cuts into our bottom line?

Market realities

A shift is undeniable: “Texture, mouthfeel…label clarity…protein and fibre-led satiety.”

Consumers influenced by GLP1 medications seek smaller, more satisfying options with transparent ingredient lists. That’s a strategic opportunity, but also good practice for ingredient transparency and public knowledge. If we do our jobs right, people will choose the food we make for its flavour, even if they are eating less. Instead of eating a whole cinnamon bun, they may eat only one quarter and then share the rest with friends, who are, in

turn, tempted to buy their own delicious baked goods.

Medical realities

GLP-1 drugs are a game-changer, as long as people are willing to take them. One of the reasons there are so many commercials for them is that they are meant to be a lifetime drug, but most people will, for a variety of reasons, stop taking them within a year. (JAMA) When people discontinue GLP-1 drugs, their appetites return. When that happens, we will be here, as always, with healthy and delicious options.

This development requires a call to action for Canadian bakers:

• Stay informed, not influenced: Know the trends but don’t be consumed by them.

• Offer optional innovations: Add a small line of health-conscious products alongside traditional favourites. or consider smaller versions of popular items.

• Educate responsibly: Use packaging and social channels to remind people that baking can be part of a balanced diet.

• Collaborate for clarity: Work with national associations to develop guidelines on clean labelling and trend integrity.

NISABA AND THE BAKER AS A PHILOSOPHER

Many hours spent working behind the baker’s bench invite personal reflection, thoughtful introspection, and, of course, long sets of production-inspiring music. Lately, I’ve been reading There Are Rivers in the Sky by Elif Shafak. Part of the story unfolds in Mesopotamia, the cradle of civilization and the heart of the ancient Fertile Crescent.

In its pages, I was introduced to the goddess Nisaba and found myself moved by the way agriculture and literature intertwine in her story. I often think about the taming of wheat as a catalyst for civilization, but Nisaba adds a theological and spiritual dimension I hadn’t considered.

Nisaba, the Sumerian goddess of writing and grain, represents the profound interdependence of sustenance and intellect in early Mesopotamian life. Agriculture enabled cities to flourish, and with that came the need for recordkeeping – harvests, trade, temple offerings – etched into clay tablets. Even the tools of writing, reeds cut from riverbanks, came from the same fertile landscapes that nurtured grain. Writing and agriculture were not parallel achievements: they were braided together, much like Nisaba’s golden, intricately braided hair. Grain sustained the body, while writing preserved memory, order and culture. Knowledge, like crops, grew only from rich soil.

So, the next time you’re at your bench, dutifully weighing flour, consider the heritage of our craft’s most essential

ingredient and the long chain of interconnections that brought us to this privileged moment. Wheat, and other grains, have nourished humanity for millennia, not only feeding our bodies but also shaping our minds.

WHY CANADA IS THE ONLY COUNTRY ISSUING LARGE-SCALE PISTACHIO RECALLS

Canada remains the only country publicly recalling hundreds of pistachio and pistachio-containing products because Canada is the only jurisdiction that has confirmed a national Salmonella outbreak and traced it directly to specific imported lots of pistachios from Iran. The Public Health Agency of Canada has reported 155 illnesses across multiple provinces, triggering mandatory recalls under federal food-safety law. The Canadian Food Inspection Agency’s investigation has now expanded to more than 330 recalled products, spanning raw pistachios, bulk ingredients and branded consumer goods. Other countries may not have imported the same contaminated lots, may not have detected illnesses or may still be conducting internal investigations. The United States does not face this issue because direct imports of Iranian pistachios are effectively prohibited under longstanding U.S. trade restrictions. Canada’s food-safety surveillance system is among the most proactive in the world, and its early detection – combined with a supply chain that includes Canadian distributors sourcing from Iran – has made this a uniquely Canadian recall event.

FIVE EASY WAYS TO CREATE A YEARLY CALENDAR FOR YOUR BAKERY

Planning helps ensure operational stability, financial accuracy and growth

Creating an annual calendar for your bakery operation is a critical strategic practice for operators. It serves as both a powerful, long-term marketing tool and an essential, low-stress planning resource.

Here are five easy ways to create a yearly calendar for your bakery.

1.

PREPARE AN OPERATIONAL AND STRATEGIC CALENDAR

It is easy to find free month-by-month yearly calendar templates online. Numerous reputable websites offer them in various formats, including PDF, Word and Excel.

A bakery operation should have a yearly calendar because it is a strategic tool that drives consistency, organization and revenue. It is a strategic planning tool for mapping out promotions, campaigns and key dates across the year. Include all your staff and client suggestions, promotions, special events, trade shows, marketing campaigns, social media campaigns and important dates throughout the year. I always recommend a yearly calendar to my bakery clients as a critical tool for internal operations and customer engagement.

It will help you align marketing efforts within your operation, capitalize on key dates and seasons and manage resources effectively to avoid last-minute stress. You should plan which event to promote, when to promote it and which channels to use to drive sales and repeat visits.

Your bakery operation can drive success by layering a calendar with major holidays, niche food celebrations and operational planning milestones. You should include special holidays such as Christmas, Passover, Easter, Hanukkah, Super Bowl Sunday and any appreciation days and weeks, like

Teacher Appreciation Day and National Volunteer Week. There are also significant events and celebrations such as national festivals, wedding season, baby and bridal shower season, graduations and communions, special menus, and themed events that attract customers for a timely experience.

Don’t forget to block off personal downtime and family events alongside your business commitments to manage your energy more effectively and maintain a healthier work-life balance.

2. MAXIMIZE SALES STRATEGIES TO INCREASE REVENUE

As you know, eating patterns shift with seasons and holidays. A calendar will help you identify and prepare for high-impact opportunities like Valentine’s Day, National Indigenous Peoples Day, Saint-Jean-Baptiste Day in Quebec or National Pizza Month in October. This will allow you to create specific, limited-time offers and event themes that attract customers seeking a timely experience. Make a list of special moments that genuinely align with your brand and products.

3. IDENTIFY YOUR DIGITAL MARKETING CHANNELS AND STRATEGIES

Choose marketing channels that work best for you. Facebook and Instagram remain the top platforms for bakeries. Use your social media channels to promote your bakery by posting high-quality, mouthwatering food photos and videos on these platforms.

Focus on short-form videos. You should also consider using TikTok for marketing because it’s a highly effective platform for visual food content, driving massive organic reach, building brand awareness, and converting views into sales, especially by appealing to younger demographics who then bring in families and older customers. TikTok is also a great place to show your signature dish and highlight your unique bakery items or specials.

Use targeted ads (geo, interests), run contests, and engage with influencers. Post unique photos, new menu items, bakery

specials, seasonal campaigns, limited-time offers, events, settings and strategic promotions.

SEND EMAILS AND USE SMS MARKETING

List the different marketing channels in which you can promote your bakery. Use email blasts, social media posts, WhatsApp for restaurants, website updates, menus, advertisements, radio ads, billboards and direct mail pieces. Use email marketing to tell stories, share updates, announce upcoming campaigns and make special announcements.

Take advantage of Short Message Service (SMS) marketing, a direct-to-consumer channel in which businesses send promotional messages, reminders and updates via text to customers who have explicitly opted in. SMS messages offer high engagement due to immediate phone visibility and quick open rates, making them ideal for timesensitive offers and direct communication.

5. USE LOCAL, OFFLINE STRATEGIES

Use a loyalty program to reward repeat customers with points, free bakery items or discounts.

Sponsor events or local sports teams and host trivia nights. Partner with schools and local businesses for fundraisers or participate in community events. Vision and mission statements help keep your bakery’s goals in clear view

The personality of Rocket Bakery & Fresh Food has always been reflective of our interests: cartoons, comics and fun! The logo itself sets the mood, we think: we don’t take ourselves too seriously!

We take pride in our bakery offerings, but it doesn’t mean that our menu is walking lockstep to a particular brand profile. Rocket is shapeshifting constantly and our customers enjoy seeing new items we’ve come up with from day to day.

We’re influenced in our product choices by current events, travel or something that interests our employees at a particular moment. But, if I had to choose just one of these that affects our menu the most, it’s the talent of the folks who work for us.

One funny incident, that always makes me laugh, occurred when we hired staff from Morocco. They were thrilled to see that we had a “Moroccan Lentil Soup” on the menu, but when they tasted it, they looked at me sympathetically shaking their heads, saying, “Oh no, Kelly, that’s not Moroccan Red Lentil soup ... it’s Canadian Red Lentil soup.”

With a few spice tweaks, they were satisfied that what we offered was, indeed, Moroccan. We also now have a hugely popular Casablanca Bar (peanuts, honey, caramel and chocolate) that our bakery manager, who is from Casablanca, brought to us!

Having flexibility in our menu offerings allows us to react to market trends and rising food costs. If something becomes just too expensive for us to produce, we cut it and move on to something else.

However, we have had a guiding light that we try to follow when making decisions about our product offerings, staffing and service. Our mission and vision statement have been helpful in keeping us focused on what’s important to us, as owners, and to the company as a whole.

and staff spent considerable time crafting and honing these statements and we find these useful as we continue our journey. They allow us to keep our destination in clear view and remind us daily of our shortand long-term goals.

Coming up with vision and mission statements and tweaking them as you grow is a practice I’d recommend to everyone. They’ve been surprisingly powerful tools for us. We knew when we opened our doors 15 years ago that we wanted good, healthy, delicious food with fun at the heart of it all.

With the help of the CME (Canadian Manufacturers & Exporters) we undertook the first step of Kaizen*: establishing a clear vision and goals. We got together with our staff and posted words we felt represented a successful business and a strong workplace. These words were then grouped by association and the groups were each given a key word that encapsulated all the attributes we’d used to describe what we wanted Rocket to work towards. Ultimately, using the key words, we came up with solid vision and mission statements that, since about Year 5, have remained our North Star in everything we do:

• Vision: To be our community’s most loved food experience!

• Mission: To create the best-quality food, delivered with superior customer service, by our fabulous staff in a warm, engaging environment.

Keeping these statements in mind, we’ve developed Rocket’s personality by “bequeathing” our products with identities, many of which are based on local Newfoundland lexicon. Thus, we have Some Good Ginger Molasses Cookies, Best Kind Shortbread, The Chummy Breakfast Sandwich, The Buddy Bowl Vegan Salad, Sinful Cinnamon Buns and Devilish Bread Pudding, to name a few. Of course, we also have our rotating flavours for our weekly “Flakie Friday Flakie” – not local lexicon maybe, but fun!

Products like these allow us to have a laugh with our customers, which suits “the locals” (Newfoundlanders and Labradorians) just fine. In turn, both customers and products help us to achieve our vision and mission statements.
