Slimming World Recipe Classic Cheese & Onion Pie This month we have the perfect comfort food for the cold weather. A real treat and really easy to prepare and because it’s Slimming World it’s super satisfying. Enjoy!
Method:
1. Place the potatoes in a large saucepan with enough cold water to cover well. Bring to the boil, then lower the heat and simmer gently until tender when pierced with a skewer, about 20-25 minutes. 2. Meanwhile boil the carrots and green beans in a large saucepan of lightly salted boiling water for 3-4 minutes. Drain and set aside. 3. Spray a large non-stick frying pan with low calorie cooking spray and place over a medium-high heat. Add the onions and stir-fry for 10-12 minutes or until softened. 4. Preheat the oven to 180°C/160°F/Gas 6. Spray a medium-sized pie dish with low calorie cooking spray. 5. Drain the potatoes and mash until smooth, using a potato ricer if you have one. 6. In a small bowl, whisk together the eggs, dried parsley and cottage cheese. Add to the potatoes, stir to mix well and season to taste. Add the reserved vegetables and onion mixture to the potatoes and stir well again. 7. Transfer the mixture to the prepared dish and spread evenly. Sprinkle over the cheese and bake for about 35-45 minutes until golden. Sprinkle with the chopped parsley and serve immediately

Book Review
Tracy Chevalier is probably best known for her bestselling novel Girl with a Pearl Earring, later also turned into a decent film. Most of her books have a historical base and her latest - At the Edge of the Orchard is no exception, this time set in the time of an American pioneer family. It’s hard to imagine quite how harsh conditions must have been in the inhospitable Black Swamp of Ohio, but the cider apples, which are just about the only thing which would grow, help to dull the pain. Tragically, lethally strong cider “applejack” also tears the Goodenough family apart, sending son Robert fleeing from the chaos of his half-crazy parents across America to goldrush California. It’s a rich and well-researched story, pulling no punches in its descriptions of the hardships of the settler life, and the poverty, bawdiness and wildness of the first settlers. People had to lose a lot to gain very little. And for every miner who hit gold there were dozens like the Goodenoughs barely surviving as they struggled to grow the 50 apple trees which would secure their land in the eyes of the government. But Chevalier is also very astute on the way we carry our childhood with us all our lives; on the pull of family no matter how dysfunctional and the importance of the idea of hope and renewal even at the worst of times. The book also touches on issues like the exploitation of nature for human greed and coincidentally, you get to learn an awful lot of interesting stuff about apples and the redwoods of California.

November is the best time for planting tulips to avoid tulip fire fungus which badly damages the plant. Most tulips prefer full sun, and dislike very wet conditions so if you’re planting into clay it’s a good idea to add compost or gravel to improve drainage. An easy way to get planting right is twice the width of the bulb apart, and two to three times the height of the bulb deep.
You can now safely cut back any perennials which flower before the end of June. Also take back peonies to ensure good growth next year. Leave other perennials until spring along with buddleia and clematis which may suffer die-back from hard frost if pruned early. If you’ve got loads of fallen leaves, use them to create leaf mould, great for adding to compost. Either create a wire enclosure and just pile them in or put them in bin bags and leave for about a year. Make holes in the bag so air (and bacteria) can get in and help them to rot down.
Top Tip!
Remove any remaining fallen leaves from around the base of plants to prevent dratted slugs overwintering amongst them.
