SALAD WITH GRILLED PEACHES, BUFFALO MOZZARELLA AND HAM portions

Approx. 150 g mixed salad (e.g. Chicoree, Lollo Bionda, Romana, Radicchio) 250 g buffalo mozzarella

1. Clean and sort the salad leaves and tear into big pieces. Wash and spin dry the leaves. Cut the mozzarella and ham into bite-sized pieces. Halve the peaches, remove the stone. Cut each half into 3 slices.

150 g thin slices of parma ham 4 firm peaches 1 clove of garlic 3 tbsp. red wine vinegar

2. For the dressing, peel the garlic clove and grate finely. Thoroughly mix the vinegar with mustard, honey, salt and pepper. Add 5 tbsp. of the oil and use a whisk to beat into a creamy sauce. Mix in the garlic.

1 tsp. Dijon mustard 2 tsp. honey Salt, freshly ground pepper 7 tbsp. olive oil

3. Mix the peach slices with the remaining oil and cook on a hot griddle on each side for approx. 2 minutes. Season with salt and pepper. Then mix together with the other prepared ingredients in a large salad bowl and loosely mix with the dressing.

INDIVIDUAL CHOCOLATE CAKES

3 eggs 125 g butter + 50 g for the Cocotte 125 g sugar crystals 200 g dark chocolate 60 g flour 20 g potato starch Cocoa powder

1. Pre-heat the oven to 200°C. Cut the chocolate and butter into small pieces and melt in a bain-marie. 2. Soften the 50 g butter for the dishes. Mix the flour, potato starch and cocoa in a dish. 3. Add the sugar to the melted chocolate and thoroughly whisk all the eggs. 4. Then mix in the flour-cocoa mixture until it forms a smooth dough. 5. Use a small paintbrush to generously grease the Cocottes with butter. 6. Fill the Cocottes with the chocolate dough and place in the refrigerator for at least 30 minutes. (It is even better to prepare the dough the day before). 7. Bake the small cakes in the oven for 7-8 minutes. 8. Consume immediately! 9. A fruit sorbet with seasonal fruits (peach, pear, fig, apricots) can be served with the dessert.

SUMMER TART portions

Serving of puff pastry (home-made or bought) preferably all-butter 2 small red bell peppers 1 green or yellow zucchini 1 ripe tomato 1 onion 1 clove of garlic Several fresh basil leaves 2 tbsp. of olive oil 1/2 a tsp. of ground ginger (or another spice to taste) 20 cl of pouring cream or soya equivalent 1 flat tbsp. of mustard 2 eggs Parmesan shavings 4-5 slices of coppa (or parma ham) Salt and freshly-ground pepper Grated nutmeg

1. Place the puff pastry in the pie dish, prick it and bake blind covered with baking beans for 10-15 min to prevent the pastry from rising. 2. Wash the bell papers, remove the stalk and seeds and cut into sticks then cubes (known as a brunoise). Remove the ends of the zucchini and cut into cubes as for the pepper. 3. Peel the onion and chop finely. Also cut the tomato into cubes (it can be peeled beforehand if you prefer). Peel the garlic, remove the green center and crush it to a paste. 4. In a saucepan heat the olive oil for a couple of seconds, then add all the prepared vegetables except the tomato. Stir regularly for 10-15 min. 5. Add the tomato, ginger, salt, pepper and chopped basil. Stir well. Cook over a medium heat for another 5-8 minutes. In a bowl prepare the beaten eggs, cream, mustard, a pinch of salt, pepper and nutmeg. 6. Remove the pastry base from the oven. Spread out the vegetable filling and cover with the cream and egg mixture. 7. To finish, place on top the parmesan shavings and the coppa slices which have been cut into strips ahead of time. 8. Bake in the oven at 180°C for around 30 min.

TARTE AU CHOCOLAT portions

200 g dark chocolate, 70% 150 g butter 125 g sugar 4 eggs 1 pinch of salt 250 g strawberries 250 g raspberries 3-4 tbsp. creme de cassis Mint, to garnish

1. Preheat the oven to 160 °C. Break the chocolate into big pieces and melt with the butter in a bowl over a pan of simmering hot water. Beat the eggs with a pinch of salt and sugar, for around 5 minutes, until stiff. Use a hand blender in a big bowl. Then gradually stir in the liquid chocolate butter mixture. 2. Pour the batter into a well-greased pie dish (approx. 24 cm diameter) and bake in the oven for approx. 35 minutes. 3. Meanwhile, clean the strawberries and depending on size, halve or quarter. Mix the strawberries with the raspberries and cassis liqueur in a bowl. 4. Allow the chocolate tart to cool slightly while still in the dish. Spread the berry mixture over the top and garnish with fresh mint as desired.

EGGS EN COCOTTE portions

200 ml cream 2 tbsp. double cream Sea salt Ground black pepper 1 pinch nutmeg 2 tsp fine truffle oil 100 g boiled ham 100 g Emmental cheese 6 small mushrooms 4 fresh, large eggs (size L) About ½ bunch chives

1. Pre-heat the oven to 180° C. Add the cream and double cream to a small pan, season with a pinch of salt, pepper and freshly ground nutmeg and flavor with some truffle oil. Now simmer the mixture at medium heat for about 6 minutes while stirring. 2. In the meantime cube the ham and cheese and slice the mushrooms. Mix everything together and add to 4 small, round Staub cocottes. Place on a deep baking tray. 3. Pour the hot cream mixture into the small molds over the ham/cheese mixture, then carefully slide in a beaten egg. (The egg yolk should remain intact!) 4. Place the deep baking tray in the center of the hot oven and pour in sufficient boiling water so that the small cocottes are half submersed. Thicken the liquid egg white in the oven for about 8-10 minutes. When ready the egg yolk and the cream should still be fine and creamy. 5. In the meantime, cut the chives into fine rings. Remove the molds from the oven, season the egg yolks with a pinch of Fleur de Sel and some pepper and sprinkle with the finelychopped chives.

BROCCOLI PASTA BAKE portions

Approx. 500 g broccoli (around 1 small broccoli) 250 g rigatoni pasta 300 g yellow and red cherry tomatoes 4 eggs 250 ml milk 125 g finely grated Gruyère or Emmental Salt, pepper, nutmeg

1. Pre-cook the rigatoni in boiling, salted water for around 8 minutes. In the meantime, clean the broccoli and break it into florets, prepare and wash the cherry tomatoes. After around 8 minutes, add the broccoli florets to the pasta and boil together for another 4-5 minutes. Then drain the ingredients, rinse in cold water and place the pasta and broccoli together with the cherry tomatoes in a buttered ovenproof dish. 2. Preheat the oven to 200°C. Mix eggs with milk and 2/3 of the cheese in a tall bowl and mix thoroughly using a hand-held blender. Season thoroughly to taste with salt, pepper and some nutmeg and pour the mix evenly over the pasta and vegetables in the ovenproof dish. 3. Sprinkle the remaining cheese over the pasta and vegetables, and place the dish on a rack at the lowest level in the oven and bake for around 40 minutes until golden brown.

RASPBERRY YOGURT PARFAIT portions

400 g fresh raspberries 250 g Greek creamy yogurt

1. Finely puree the raspberries, then sieve. Mix the raspberry puree with yogurt and vanilla sugar.

2 packets of vanilla sugar 2 egg whites 75 g sugar as many fresh raspberries, as much mint and wafer bits as you’d like for garnishing

2. Whisk the egg whites with a pinch of salt till firm. Gradually add sugar. Add the whisked egg mix to the raspberry yogurt mix. Fill 6 XS mini heart ramekins with parfait and leave in the freezer for 4 hours.

Icing sugar for sprinkling 3. Remove the frozen parfaits from the freezer, cover with some fresh raspberries, some mint and wafer bits at your discretion, and sprinkle with some icing sugar before serving.

STEWED BABY CARROTS portions

800 g baby carrots 1 organic orange

1. Clean and peel the carrots and slice in half lengthways. Peel the orange thinly, halve the orange and press out the juice.

1 tbsp. coriander seeds, slightly crushed In total 5 tbsp. olive oil 1 tbsp. sugar 100 ml chicken or vegetable stock Salt, pepper

2. Lightly braise the baby carrots together with the orange peel and coriander seeds in 2 tbsp. of hot olive oil for approx. 2 minutes. Then sprinkle with sugar and allow the baby carrots to caramelise slightly. 3. Now add stock and orange juice to the mixture and cover. Continue to braise gently on a low heat for approx. 12 minutes. 4. Toss the remaining olive oil into the softly braised baby carrots and season to taste with salt and pepper.

STUFFED BEEF TOMATOES portions

4 very large beef tomatoes or 8 smaller ones 400 g minced beef 1 bread roll from the previous day 1 egg

1. Pre-heat the oven to 200° C (convection heat). 2. Remove the tops from the tomatoes and scoop out the flesh. Chop up the flesh and set aside. Cut the bread roll into small pieces, add to a bowl and pour water over it.

1 small onion 1 garlic clove 1/2 tsp cumin 1 pinch Cayenne pepper ground 2 sprigs thyme 2 sprigs rosemary, salt, pepper

3. Pluck and chop the leaves from the sprigs of rosemary and thyme. Finely dice the onion, press the garlic through the garlic press onto the minced beef. 4. Knead the minced beef with the bread roll, egg, onions, spices and herbs. Cube the Feta cheese and fold in. Fill the tomatoes with the mixture, replace the tops.

5. Grease the oven dish with olive oil and add the stuffed tomatoes. Add the chopped tomato flesh and 2 herb sprigs to the mold and cook in the oven slowly for 35 min on a medium rack. 6. Wash the mint, pluck the leaves from the stems and chop. Mix with yogurt, add salt. Arrange the tomatoes with the roasting juice and mint yogurt sauce. Serve with boiled rice.

75 g hulled, whole walnuts 2 tbsp. sugar 125 g softened butter 50 g brown sugar 1 egg 150 g flour 2 tsp. cocoa powder 1 tsp. baking powder 100 g chopped dark chocolate candied fruit

1. Preheat the oven to 180°C. Roughly chop the walnuts, mix the sugar with 2-3 tbsp. of hot water and mix with the chopped nuts. Spread the mix on a baking tray covered with baking paper and caramelise in a hot oven for around 10 minutes, until golden brown. Use a spoon to turn the mixture occasionally. 2. Beat the butter with the sugar until creamy, then stir in the egg. Mix the flour with the cocoa powder, stirring into the butter mixture. Then fold the caramelised walnuts and chopped candied dark chocolate fruit into the dough. 3. Cut out balls measuring approx. 3 cm from the dough, space these out, with 5 cm between them, on a baking tray lined with baking paper and and press down until somewhat flat. Bake the cookies in a hot oven for 15-20 minutes until golden brown. Then leave to cool on an oven rack.

DANISH BRIOCHE ROLLS

15 g yeast 75 ml tepid milk 20 g sugar 250 g flour 3 egg yolks 60 g softened butter

1. Crumble the yeast into the tepid milk and allow to dissolve. Add 80 g of the flour and sugar and mix together into a smooth yeast sponge. Cover this and allow to prove in a warm oven for around 30 minutes. Then add the remaining flour, the egg yolks, butter and a pinch of salt to the dough and knead to a smooth, malleable dough. Allow this to prove for a further 30 minutes.

2. Preheat the oven to 200°C. Divide the dough into approx. 15 equal pieces, roll them into round balls and place on a baking tray with lined with baking paper. Cover and allow the balls of dough to prove for another 30 minutes, then brush with whisked egg yolk and bake in a warm oven until golden brown for approx. 15 minutes.

FRENCH TOAST

3 eggs 100 ml milk

1. Beat the eggs with the milk, vanilla pulp and sugar and pour into a deep, wide dish.

Pulp of 1 vanilla pod 2 tbsp. sugar 8 slices of stale brioche or white bread 50 g butter Approx. 50 g brown sugar for sprinkling Freshly cut fruit (e.g. orange segments, slices of pear or kiwi, etc.) Fresh berries (e.g. raspberries, strawberries, blueberries, etc.)

2. Turn the slices of bread in the vanilla-egg-milk mixture. Then fry portions of the slices on both sides, in melted butter, in a wide frying pan, at a medium heat until golden brown. Then sprinkle with the brown sugar and allow the slices to lightly caramelise. 3. Leave the slices to dry on kitchen paper and serve scattered with freshly cut fruit and berries as desired.

CRÈME BRÛLÉE portions

Pulp of 2 vanilla pods 250 ml milk 350 ml cream 75 g sugar

1. Boil the vanilla pulp with the milk, cream and sugar. Remove the pan from the heat, stir in the egg yolks gradually. Place the pan back on the stove, at a medium heat, stirring until the liquid begins to bind and take on a creamy, viscous consistency. Pour the creamy mix through a fine sieve into a bowl.

2. Pre-heat the oven to 120°C on upper/lower heat. Place 4 dishes in a pan and pour in enough hot water so that 2/3 of the dishes are immersed in the water. Divide the creamy mix into the dishes. Place an oven tray with the filled dishes in the lowest level of the oven and cook for approx. 50 min. Allow the set cream to cool fully in the refrigerator. 3. Sprinkle the set mixture evenly with brown sugar. Use a Bunsen burner to caramelise the sugar until golden brown and crispy. Serve immediately. Lovely fresh summer berries go perfectly with this, scattered across the caramelised topping of the crème.

PEAR CLAFOUTIS WITH ALMONDS portions

600 g ripe pears Zest and juice of 1 lemon Butter and flour for the dish

1. Wash, halve and core the pears. Cut the halves into fine slivers and sprinkle with lemon juice. Grease an oval ceramic mould and dust with flour.

4 eggs 120 g flour 50 g liquid butter 2 tbsp. pear brandy 50 ml milk 100 g sugar

2. Preheat the baking oven to 200°C. Separate the eggs. Mix the egg yolk with flour and lemon zest in a mixing bowl. Pour in the melted butter and pear brandy as well as the tepid milk and mix together thoroughly. Beat the egg whites until stiff. When doing so, gradually trickle the sugar in. Fold the beaten egg whites into the batter.

50 g flaked almonds Cinnamon for garnishing

3. Pour the batter into the mould and spread the pear slices evenly across it. Sprinkle the whole mixture with almonds and allow to bake for some 30 minutes in a hot oven. Then remove from the oven and dust with cinnamon.
