ONE THING I KNOW FOR SURE — Hard work pays off First and foremost, I want to thank each and every one of you for your continued support. Aleph magazine seems to be resonating with Persians across BC, and I’m thrilled with the response. What’s even more inspiring is the fact that the magazine continues to get the attention of other communities including immigrants from China, India and even the UK. I believe there’s a common experience we all share making a new life here in Canada. I hope this trend continues. One of the things I know immigrants share is an entrepreneurial spirit. And the fact is, small businesses run by immigrants are a vital engine for the BC economy. So, I think it’s important that we all support immigrant-run small businesses in any way we can. Of course, this got me thinking. How can Aleph magazine better support immigrant entrepreneurs? Well, here’s what I’ve got up my sleeve. We are pleased to announce that we are pulling together our network to build what I call, The Aleph Startup Community for Young Entrepreneurs. Catchy, isn’t it? The idea is to support young entrepreneurs by building an information and networking hub for everything young, immigrant and entrepreneurial. We’re planning networking events, business pitch events, branding seminars, Aleph TV content development and a host of other activities to help our community grow together. So, I need your help. If you’re a young entrepreneur, artist, photographer, videographer and are looking for a way to connect with your community, develop compelling content, learn more about business in BC and be a part of something special, let me know. The Taycan Turbo S Cross Turismo has the same steering technology and engineering as the 911, feeling solid and responsive. Cornering was pretty much effortless, and whether I was driving on the highway, in busy city streets, or parallel parking, the control was always in my hands and felt fantastic. Intuitive features like the InnoDrive adaptive cruise control checked even more boxes for me. I was prompted to turn this on when my battery was winding down, which allowed me time to get to a charging station without that stressful running-out-of-gas feeling. Speaking of charging, the Taycan Turbo S Cross Turismo has charging ports on both sides of the car, which I hadn’t seen in other vehicles, making it super convenient no matter where you pull up. Each port handles different charging capabilities, the driver side for AC charging and the passenger for DC. A 300-kW charger went from less than 10% to an 80% charge in just over 20 minutes, which was about how long it took me to use the restroom, grab some snacks and stretch my legs at the charging station. Plus? I didn’t have to physically ‘fuel up’ holding a nozzle filling a tank. I connected the charger and walked away, returning a few minutes later to pick up where I left off.

We recently had the pleasure of sitting down to chat with West

Vancouver’s Mayor to discuss everything from the status quo of the district, a glimpse into her career, and the role of the Persian community.

Can you tell us a little about yourself? I was born and raised in the lower mainland, am a mother of two grown daughters, a lawyer by profession and in politics for 15 years. How did you get into politics, was there any inspiration? I was on student council in high school, but I ended up gravitating to leadership roles in university, and then the chair of parent advisory at my daughters’ school. A former female mayor of West Vancouver, Pamela Goldsmith-Jones, kept asking me to run for council, and she nudged me into politics. Why West Vancouver? West Van kind of chose me (laughs). I didn’t grow up here, but I’ve lived here now 30 years. My husband grew up here, I met

What changes or improvements have you made as Mayor of West Vancouver?

During this tenure I was able to participate in hiring a new City Manager, Robert Bartlett. I take that job seriously because whoever is your City Manager is also your Chief Administrative Officer, so they set the culture, tone, standards, and excellence of the organization. As mayor I am considered the CEO, my job is to set the vision, and then guide the implementation through council and my CAO. We also set the strategic plan, that is our roadmap, because if we have 7 people on council all going in different directions, chaos will happen, and we’ll never get anything done. We have just approved an update to our plan with about 6 major goals and 30 objectives. Are there new strategic plans for 2022? The challenges we face, and the needs of the community have not changed much in 3 years, but the most important element is tying that strategic plan to the budget. We have to allocate resources, we have a lot of hopes and dreams for this community, but we can’t afford them all. My personal priority is housing. We don’t have the right housing here and it is not affordable. We have 1700 empty houses that are sitting vacant because they are big and not inexpensive. What we need is more diversity of housing because we can’t attract young people to live here and enter our professional workforce, plus people are leaving because they want to downsize and have nowhere to go. It causes more traffic congestion because 75% of the people that work here, commute here, and they can’t afford to live here. It affects our

We were building really large houses, which wouldn’t be a problem if people could afford them, or if we had lots of people living in them, but we have empty houses. What we really want wasn’t getting built. So, my motto in life is make it easy for people to do the right thing, so you often use the carrot and the stick. So, the carrot is if you want to do a coach house or secondary suite, we will give you more density, but if you want to just do a single-family house, brand new and starting at $5 million, we are going to reduce the allowable size of that. We haven’t really taken away the density we are just redistributing it. Any final words? I do want to thank you for this opportunity, and I love to connect with the community. I really believe that municipal government is where the action is happening, with the most impact and it’s not just about garbage, sewers and roads, it’s about building community and collaborating. The other levels of government are looking to us because we are boots on the ground, we know what our needs are. So, it’s an exciting place to be, and I have absolute belief that we can meet the community’s needs together. My job is just to listen, and then find that sweet spot, that compromise that everyone can agree to.

Ali Akbar Sadeghi is a climax figure in the context of Iranian

Born in 1937, Sadeghi graduated from the Fine Art Department of Tehran University in 1969. Sadeghi showed a great passion for hand-made objects from his early school years using various tools in his father’s workshop and received his first painting commission in 1952. He became engaged with school performances and makeups and designed his school’s theatre hall. One year later he began working as an illustrator and title organizer for Asia Newspaper. In those years, he also worked as a graphic designer for a variety of Iranian magazines and companies and designed several movie posters. In 1967 he created a number of polyptych stained glass for Roudaki Hall at Talar Vahdat in Tehran.

How to make Saffron Chawanmushi 1.

In a heavy based pot, add 2 cups of water and dried seaweed and let stand for 10 minutes so that the seaweed can soften and hydrate.

To the pot of seaweed and water, add bonito, dried shiitake mushrooms, soy sauce and sugar (or mirin) and bring to a light simmer over medium-low heat.

Allow your broth to simmer slightly covered for 25-30 minutes. Once your broth has simmered, strain out the solids. Add salt or more soy sauce into the broth to taste, erroring on the side of a fuller flavored broth.

Return the strained liquid while still hot to another clean pot, add saffron threads whole, and allow the broth to infuse covered for 1 hour.

Once your broth has infused and cooled, crack eggs into an appropriately sized bowl and slowly whisk your saffron dashi broth directly into the eggs, reserving about the last 1/4 cup of broth with the saffron threads still intact and set aside to later garnish the Chawanmushi with. Once your dashi and eggs are fully incorporated, you should have a mixture that feels smooth and silky. Optionally strain through a fine mesh strainer for a silkier result.

Arrange some pieces of shrimp at the bottom of either a ramekin or heat proof bowl with a 1 cup capacity of your choosing and ladle the Chawanmushi custard batter over top of your shrimp, leaving just a half an inch or so from the top of the ramekin.

Within the hysteria of chefs and locals, I managed to procure a collection of dried seaweed, dried fish, and aged bonito to create a “Saffron Dashi ‘’ utilizing more from the smuggled pantry I naturally brought with me to Tokyo in my luggage. The resulting dashi which I committed days to make (out of nervousness and nothing else), was whisked into some of the most beautiful farm fresh eggs I have ever used, and the resulting batter was steamed into a golden yellow custard which for me still is the single greatest piece of mise en place I have ever created. Among the room of esteemed guests, I shared with them the uses of saffron, the meticulous process behind harvesting and processing the spice as well as the social and political implications of the ingredient. Historical Turkish Hamams Traditional steam baths, a part of the Turkish life for centuries, are fast becoming fixtures in major cities from New York to Paris and across the globe. The original hamams, however, are only available in Turkey. Commissioned to the great architect Sinan by the famous Ottoman Admiral Kılıç Ali Paşa as part of the mosque and school complex, Kılıc Ali Paşa Hamamı was constructed in between 1578-1583 to serve the levends (marine forces in the Ottoman navy). Famous for its architectural lines and majestic dome, the Hamam is one of the symbolic buildings in Tophane, Istanbul’s harbor district. Ayasofya Hürrem Sultan Bath “Hamamı,” another of Sinan’s masterpieces, was built in 1556 for Roxelana, who became the powerful wife of Sultan Suleyman the Magnificent. The bath was

fully restored in June 2011, retaining every aspect of the original bath architecture. Galatasaray Hamamı, in Galatasaray, was built in 1481 and for almost 500 years this hamam was for men only. A small women’s section was finally added in 1963, but little else has been altered. The lobby is particularly beautiful, and there’s some superb tile work at the entrance to the men’s steam room. The Süleymaniye Bath in Istanbul, a mixed hamam where men and can bathe together, is one of the most famous, having been built by Sultan Süleyman the Magnificent in 1550 and designed by Sinan, the famous architect of the Süleymaniye Mosque.

MEDIATION IN FAMILY LAW

Save Money and Get More Control Over the Outcome

Separation and divorce are difficult journeys, and they can be quite expensive. Going to court costs a lot. Each party commonly pays about $10,000 on average in legal fees for every day of trial. Sometime paying those legal costs to bring a conclusion to a stressful matter is worth every penny. But mediating family disputes can be a suitable alternative that many don’t consider at first. Mediation gives the parties more control over the outcome, at a fraction of the cost and time that the same disputes would take to be resolved in court. In mediation, the spouses jointly appoint a mediator to help them resolve their disputes. Matters that are commonly at dispute in a family matter include parenting, child and spousal support payments, and division of property. An experienced family law mediator will break down these matters into smaller issues that the parties will discuss with the goal of finding suitable options for resolving them. Examples may include: who will pay spousal support, how much, and how often, and until when? If the parties cannot resolve the issues, the mediator cannot decide for them. The mediator’s role is to act as an unbiased facilitator between two parties that cannot communicate with each other effectively on their own. As a family law mediator, I have found the use of shuttle mediation to be quite effective, especially when dealing with high-conflict personalities. In shuttle mediation, the parties are mostly not in the same room. Each spouse is in a separate room (possibly with their lawyer), and the mediator “shuttles” between the rooms to facilitate the conversation. In doing so, the mediator does not take sides, or advocate for either party, even if the mediator is a lawyer. But having a lawyer as the mediator can be quite effective. When a knowledgeable lawyer is appointed as the mediator, the lawyer will be better prepared to deal with complexities of property law, tax law, corporate law, and international interplay between Canada and another country. While the mediator does not give you legal advice in those matters, finding a mediator that is familiar with those issues and the range of options for resolving them will make it more likely for the parties to get results. In mediation, you also have more control over the results than you would in court. The court process is more adversarial by design, and no lawyer can predict the outcome with certainty. In fact, if your lawyer is telling you that you will win on a certain matter, you should seriously consider seeking a second opinion. Contrary to court, in mediation the process is less adversarial and more collaborative. In a collaborative process, the dynamic leans more toward positioning both parties against the issues as opposed to against each other. An experienced mediator is trained in doing so. If you are considering mediation and are contacting a lawyer to be the mediator, you should advise the lawyer immediately upon contacting them about your intention to hire the lawyer as a mediator. If you seek advice as a party and the lawyer gives you legal advice, then the lawyer will be conflicted out and cannot be the mediator. Of

How & Where Do Pistachios Grow? Pistachios are one of the world’s most popular nuts, and yet, they are not really true nuts at all! Like many other ‘nuts,’ pistachios are actually technically a seed because they grow inside the pistachio tree’s drupe. As the drupe dries, it forms a hard hull around the edible pistachio seed within, making it appear like a nut!

Where do pistachios grow? Pistachio trees originated in the Middle East and Central Asia; however, nowadays, they are cultivated in many countries, including the United States, China, India, and Italy. As a dessert tree, pistachios need sweltering summers to produce a successful crop and they don’t take kindly to cold winters, humidity, or excess water. For this reason, fruit-bearing pistachio trees are not often seen in Europe and are mostly cultivated in climates that resemble those found in the Middle East.

Iran - 551,307 tonnes

Iranian pistachios are regarded as some of the best quality pistachios in the world and form an integral part of Iranian culture, featuring in festivals, celebrations and special recipes. 2.

The United States - 447,700 tonnes

California accounts for more than 99% of all pistachio production in the United States thanks to its perfect climate. Nut production in the US has increased dramatically in the last five years and is predicted to continue to rise well into the future. 3.

Turkey - 240,000 tonnes

The majority of Turkish pistachios are consumed within Turkey itself because pistachios are an important ingredient in many Turkish dishes, including their world-famous dessert - pistachio baklava!

How do pistachios grow? Pistachios trees have been cultivated for their drupes and seeds for many thousands of years with archeological evidence of pistachio consumption dating back as far as 6750 BCE. Pistachio trees are planted in orchards to make them easier to pollinate and to manage, and can take up to 20 years to reach their peak production! It is only the female pistachio tree that bears fruit, and so many pistachio trees are now artificially pollinated so as not to waste space on unproductive male plants, however some countries still allow their pistachio trees to pollinate naturally by planting male trees in the vicinity of the female trees. Harvesting in the United States is usually accomplished with equipment that vigorously shakes the tree causing the drupes to fall to the ground; however, in most other countries, the harvest is still conducted by hand! Once collected from the ground, the drupes are then dried and processed to remove their thick hulls so that just the pistachio seed remains. Depending on their grade and demand, these pistachios may be kept in their shells or de-shelled and further processed.
