Lessons learned: After leaving the military, I spent nearly 10 years struggling with alcoholism and a loss of purpose. Today, I’ve embraced my service and use those lessons to help others. A partner to lean on: After years of battling mental health challenges on my own, I finally opened up to my wife. Sharing those struggles was one of the hardest things I’ve ever done and she immediately helped me find support because she didn’t want our family to lose me. That conversation became a turning point in my life.

We leave behind a structured, mission-driven environment and often struggle with the loss of purpose, belonging and support. Too many veterans must navigate that transition without enough guidance.
If I’m helping others, serving my community, strengthening my family and living out my faith, then I’m successful.”

Cari grew up in Virginia Beach where her father, Craig, a Naval aviator, served in the Navy and her mother, Carol, was a nurse. She is the younger sister to brother David. Faith and education were the foundation of their tight-knit, middle-class family. “When I was a kid, I wanted to be a pediatrician, but I’m a numbers person,” says Cari. “I loved my math classes and am blessed that it came naturally.” After graduating from James Madison University, Cari was recruited to work as a mortgage advisor. It was a good learning experience that made her want to dive deeper and help people financially, but in a different way. “While I was working on mortgages, I always wanted to look at the whole financial aspect of someone’s life, not just their buying of a home,” she says. She made it her goal then to become a financial advisor. Her years in the mortgage industry had developed her natural skills at communication and relationship building. She brought those talents to her work in financial advising. “In 2016 my parents moved down to Florda. They had taken a couple years to travel the country and then landed in The Villages,” says Cari, who lives in Sumter County just miles from them. Today, Cari’s clientele hail from across Central Florida. For the past decade her work in finance has been focused on fixed index annuities. Cari doesn’t want anyone to settle for less than they deserve. “There are many people out there who have the resources to live a worry-free life, but they don’t know it because they haven’t talked to someone,” she says. “I’ve sat down with people who are fully capable of retiring but didn’t realize they were.”

Twice monthly she holds these seminars at Harry and the Natives on Lake Okahumpka. “I talk for about 30 minutes about fixed annuities, and the rest of the time is eating and socializing,” says Cari, noting that dinner is included and there is no cost.
have time for pickleball yet, but maybe one day. For now, it’s just Cari and Dottie, the miniature Dachshund she describes as her little best friend. Her faith is an important aspect of her life. When she chose the name Fruitful Financial for her business, she wanted something that reflected faith and finances because there are strong similarities between them. “Volunteering and church are a big part of my life,” says Cari, who attends Live Oak Community Church. Since 2019, she’s been doing volunteer prison visitation at Federal Correctional Institution, Coleman, something she finds very rewarding.
Looking Ahead
Her seminars are popular and book up quickly. Cari appreciates that people who have attended seminars given by other financial advisors and then come to hers, often tell her that she comes across as the most moral and ethical. They leave her seminars feeling more informed and educated about investment options but also knowing there is no pressure to invest in a certain way. “I enjoy doing the seminars, but my favorite thing is when someone is sitting across the desk from me sharing their biggest concerns,” says
Cari. “Then I get to help solve the problems that keep them up at night. I get so much satisfaction and fulfillment coming up with a financial plan to help someone feel secure. I’m always going to recommend what makes the most sense for that individual person and their situation.”

hen Hunter Duncan graduated high school, he thought he knew exactly what came next. His plan was to join the military, but he was disqualified during the medical evaluation process because of childhood ADHD and the medication he had taken for it. "I had all of my eggs in one basket being the military," Hunter says. "I
really didn’t know what to do from there." Fortunately, another path was waiting. His father had always kept a welding machine in his shop and welding had long interested Hunter. After high school, he enrolled at Lively Technical Center in Tallahassee, where he quickly discovered that hands-on learning suited him far better than a traditional classroom. “Welding school involved a lot of demonstrating of techniques and teachers

saying: 'Hey, this is how you do it. Okay, replicate it,’ and I excelled,” he says. For someone who struggled to stay engaged in school, the experience was transformative. "In high school, it was tough to get me to school," Hunter says. "When I got to Tallahassee, however, I was looking forward to going to school because of the different style of learning and I loved it." After completing the program and passing an extensive welding exam required by companies, he landed a job at a nuclear
power plant in Augusta, Georgia, before later moving to West Texas to work in the oil fields. The demanding jobs helped sharpen his skills and exposed him to large-scale industrial projects. Then, during a trip home to Leesburg in 2018, a few people who knew he was visiting asked if he could tackle some welding jobs for them. Those requests sparked an idea. "It got my wheels turning," Hunter says. He took a chance on those jobs and his decision
for manufacturers, fabricators and other businesses looking for a reliable local powder coating partner. "There's not a powder coat operation around every corner," Hunter says, adding that because relatively few companies offer the service, demand continues to grow. As Mid Florida Welding Services and Powder Coating continues to expand, Hunter remains grateful for the community that helped make it possible. He’s also thankful that even though the path he originally planned on taking changed course, he was able to discover his strengths, embrace a skilled trade and build something of his own. "I pride my company off of communication and relationships," he says.

Today, the business operates from a new 16,000-square-foot facility on Progress Road in Leesburg, a major leap from the company's previous 4,000-squarefoot location. "It's been a blessing," Hunter says. Mid Florida Welding Services focuses
primarily on commercial and industrial work, providing structural and architectural fabrication for projects throughout Central Florida. The company builds everything from handrails and grab rails to staircases, structural steel systems and custom metal fabrication. Current projects include balcony rail systems for The Villages and work for a variety of commercial clients throughout the region. The company's latest growth area is powder
coating, a specialized finishing process that creates a durable, attractive coating for metal products. While Mid Florida Welding Services previously performed powder coating only for its own projects, the new facility has allowed Hunter to expand the service and offer it to outside clients as well. "We are targeting not only our own personal work that we're building in-house, but also other clients," he says. The addition has opened new opportunities

isitors to the Pineapple Peace Garden in Minneola quickly realize it is no ordinary backyard. Butterflies drift among native flowers. Fruit trees share space with herbs and medicinal plants. A yoga deck sits beneath the trees, while a small healing cottage offers a quiet place for reflection. Founder Katie Haley says that every plant tells a story. Some plantings trace back to her years studying herbal traditions

in India, Peru and France. Others remind her of family members who inspired her love of gardening. Many represent lessons learned through years of research, travel and handson experience. Perhaps the most meaningful story growing at Pineapple Peace Garden isn’t about plants; it’s about coming home. Five years ago, after 33 years spent building a career as a licensed massage therapist, aesthetician, herbalist and aromatherapist, Katie returned to
Lake County and moved back onto her parents’ property for the first time since leaving home at 18. “I came here and I saw my parents’ land with just weeds and grass,” Katie says. “And something said, ‘You need to move here.’” She returned with a vision, not only to help her aging parents, but to create a place where others could learn about gardening and about how beneficial a deeper connection with nature can be. That vision eventually became Pineapple Peace Garden, a nonprofit

educational garden dedicated to teaching people how to grow food and herbal medicine in their own backyards. The garden’s name comes from a pineapple plant Katie brought with her from South Florida, the only plant she transported when she moved. The pineapple also symbolizes hospitality, something she hopes every visitor feels when they arrive. Katie’s love of plants began long before her nonprofit. “I’ve been a plant lover my whole life,” she says. Her Italian grandmother kept a garden and her Irish grandfather came from a farming family. Years later, her early fascination evolved into a lifelong pursuit. After years of study, Katie launched an aromatherapy company that operated for
18 years. She trained with farmers and distillers, studied extensively in India and spent years learning about traditional healing practices from cultures around the world. Her travels eventually inspired books focused on medicinal plants and herbal traditions. Of all the places she visited, however, she chose a backyard in Lake County to be the foundation for her next chapter, but with everything she’d learned about intertwined. Today, Pineapple Peace Garden offers guided tours, workshops and hands-on classes focused on gardening, food forests, medicinal herbs, pollinator habitats and sustainable living. Visitors learn how to harvest herbs, make tinctures and discover practical ways to grow food in even small spaces.
One of Katie’s goals is helping people see plants differently. Many visitors arrive knowing herbs as ingredients for cooking or flowers as decorative additions to a landscape. Katie teaches that many plants have served additional purposes for generations. She points to rosemary, oregano, passionflower, rose petals and olive leaves while explaining their traditional uses and demonstrating ways they can be preserved through tinctures, teas, infused salts and other preparations. One of her favorite examples is the moringa tree, sometimes called a ‘miracle tree’ because nearly every part of it can be consumed or used in some way. Katie dehydrates the leaves into powders, incorporates them into recipes and regularly shares seeds with visitors interested in growing their own trees. “I hand moringa seeds out when I give talks,” she says. “You know how Johnny Appleseed was giving out seeds to help people grow apples? Well, I’m giving out seeds to help people grow moringa.”

She also teaches visitors how previous generations preserved medicinal plants much the same way they preserved food. “You want to make the medicines and harvest things, kind of like our grandmothers and their grandmothers did in the summertime when they had peaches,” she says. “No one was gonna be able to eat them all, so they made jam.” For Katie, learning how to harvest, preserve and use plants isn’t about replacing modern medicine. It’s about helping people better understand the resources growing around them and reclaiming knowledge that was once commonly passed from one generation to the next.
Over time, Katie realized her mission had become about something larger than gardening. “All the information we need is at our fingertips, so we don’t need more information,” Katie says. “What do we need more of? We need inspiration.” She believes many people have lost touch with experiences that previous generations took for granted, like growing food, preserving harvests and spending time outdoors. “I want to help people do things that are quick and easy, because that’s a good way to start,” she says. “And then if they feel inspired and they are seeing the benefits of it – which I think they will – then they might want more.”

Her classes place just as much emphasis on connecting with nature as they do on gardening techniques. “I think people forget how powerful nature is,” she says. Her philosophy extends beyond food production. Native plants throughout the garden attract bees, butterflies and birds. Katie regularly teaches about the importance of supporting pollinators and creating backyard habitats that benefit the environment. “If we all just planted a little bit of the natives, we could have a huge renaissance just in our own backyards,” she says. Many visitors leave inspired by the plants, but Katie’s greatest inspiration is very human. One of the garden’s most meaningful success stories is standing right beside her. Katie’s father, Jerome Haley, helped transform the property from her idea into their reality. “My dad has helped me do so much,” Katie says. “He was reluctant, but he helped me because he’s a good dad.” Jerome admits he wasn’t immediately sold on the plan.

Paradise Found From Michigan stages to Florida palapas, Tiki Bob is still making waves. STORY: GINA HORAN
obert Luttrell started playing the guitar and singing with other musicians over 50 years ago in his hometown of Lansing, Michigan. When he made Florida his permanent home, his beachy attire and a nearby palapa inspired a new stage name. “The nickname started almost by accident,” he says. “I was playing under a Tiki hut at Holiday RV Village in Leesburg when a friend looked over and said, ‘Tiki Bob!’ The name just stuck.” The nickname may be playful, but the man is a passionate performer. His shows are built around variety, familiar songs and crowd participation. He plays music from artists such as The Eagles, Beach Boys, Jimmy Buffett, Tom Petty and Bob Seger, along with other songs meant to get people singing along, dancing and smiling.
“My favorite part of performing is the connection with the crowd,” he says. “Tennessee Whiskey is the most popular song at the moment, but when they sing songs like Sweet Caroline or Margaritaville, it’s the best part of the show.” One of his greatest influences was his first bandmate and friend Steve O’Connor. He has since passed away, but his impact remains. His musical inspirations are broad, but The Dave Clark Five holds a special place in his heart. He sang their hit “Because” to his wife, Lynn, at their wedding. “Lynn is a huge part of Tiki Bob,” he says. “She is not only my biggest fan, but she does the PR, the scheduling and manages everything so I can play.” Florida was also part of him long before he moved here. “I visited Daytona in 1973 and the combination of Beach Boys songs,

he sound of live music, the laughter of children stomping grapes and the bustle of dozens of vendors will again fill the hilly grounds of Lakeridge Winery this month. For the first time since before the COVID-19 pandemic, the Clermont winery is bringing back its Harvest Festival in full force on August 21-23 with a return to the large-scale celebration that has become a tradition for generations of visitors. The 31st Harvest Festival and Grape Stomp marks the beginning of another winemaking season and the culmination of months of work in the vineyard. “For us, the celebration is all about bringing the fruit in, processing it and actually turning it into wine,” says Christian Slupe, a third-generation member of the family-owned operation. Lakeridge Winery has become one of Central Florida’s most recognized attractions and one of the state’s
largest wineries since Gary Cox founded it in 1989. The winery, known for wines made from Florida-grown muscadine grapes, welcomes visitors year-round for tours, tastings and special events, but harvest season remains one of the most important times of the year. Unlike many traditional wine grapes, muscadines thrive in Florida’s heat and humidity. By August, the fruit is ready to be picked, signaling the start of the harvest that ultimately becomes the winery’s next vintage. During the festival, visitors can watch parts of that process unfold as grapes are harvested, crushed and prepared for winemaking. “Seeing that fruit get harvested and processed out is special,” Christian says. He explains that long ago, harvest celebrations often included blessings of the crop, a tradition rooted in European winemaking regions. Today, the focus is on bringing the community
together to celebrate the harvest and enjoy a family-friendly weekend at the winery. Guests can enjoy live music by two musical acts each day during the festival, browse more than 60 arts and crafts vendors, sample a variety of local food and wines. Then there’s the grape stomp. Participants climb into barrels filled with grapes (non-muscadine) and compete to see who can stomp out the most juice. Winners receive prizes, but
for many families, the activity is simply a chance to make memories and snap a few messy photos. Those memories go back decades for Christian. One of his favorite family photos shows him at age 4 or 5 standing in a grape-stomping barrel nearly as tall as he was. Today, he’s helping organize the same event he attended as a child. “It’s been really cool,” he says. “It’s a big piece of me and my dad and

For visitors, the event is a chance to experience one of Lake County’s longest-running traditions. For the family behind Lakeridge Winery, it’s a celebration of another successful harvest and the generations who helped make it possible. “We would love for people to come celebrate this special occasion with us,” Christian says. ore than 20 years ago, RBOI founder Dr. Norman Anderson successfully treated a man whose metastatic melanoma had produced 23 brain lesions. Anderson performed whole brain radiation, administering low doses twice a day. His discovery led to a study with 19 patients, whose melanomas together had metastasized to the brain, other areas of the head, neck, lung, abdomen, liver, pelvis, and extremities, along with lymph nodes. They had all exhausted their other treatment options. Now, over 100 melanoma patients have completed treatment. Eighty percent of people whose melanoma was metastatic at the outset are alive three years after radiation treatment, and the occurrence of further disease elsewhere has been “markedly diminished if not eliminated, increasing the potential for a cure.” Other patients have remained disease-free for up to a decade and longer. Dr. Anderson’s radiation protocol, often used without added surgery or pharmaceuticals, eliminated melanomas that had been resistant to other procedures, or that had returned following surgery, chemotherapy, and immunotherapy.
Dr. Anderson points out that there is a big difference between once-daily radiation (the current standard of care) and smaller doses of twice-daily radiation. More frequent radiation has eliminated tumors even in untreated areas, a historically rare phenomenon called the abscopal effect. Twice-daily radiation can eliminate all signs of the disease, reduce side effects significantly, and extend patient survival, for a small fraction of the cost of other treatments. According to the medical literature, treating advanced melanoma in which surgery is not an option can cost around $1.6 million to add a single year of progression-free survival. “Treatment with twice daily radiation as an alternative appears to offer optimum results,” Dr. Anderson says, “while markedly decreasing overall cost to a few percent.” Annual melanoma deaths in the US total 8,510 and rising. Twice-daily radiation may help reverse that trend. Patented in the US and Australia, with 34 patents pending in Europe, Dr. Anderson’s treatment protocol is poised to serve “an essential therapeutic role for melanoma.” Call RBOI to learn more!

hen Ellen Didion founded the Sunshine Community Foundation, it wasn’t because she wanted to start another nonprofit. It was because she witnessed firsthand the struggles many families faced during one of the nation’s most difficult economic times. “During the 2008 financial crisis, I was teaching kindergarten,” Ellen says. “One of my students was living in the woods and another in a car. My co-worker came home to find her house locked by a bank and the contents in bags on the lawn. She had a husband and 4 children. There
were veterans and seniors living on social security that had their benefits cut and were struggling to make it through the month. My heart was moved to do something to help.” As a teacher in high poverty schools in the area for over 20 years, Ellen has had students that faced all types of family trauma, including homelessness, neglect, abuse, domestic violence, drugs, mental illness, parental incarceration, sudden loss, instability, and bullying. “Often multiple occurrences of various traumas take place within a family, multiplying the negative

effect on the brain and learning,” she says. “When the brain is stressed, learning stops. The effects often result in a higher amount of absenteeism, putting these students even further behind.” The higher percentage of students going through trauma, the higher percentage of time a teacher needs for classroom management and intervention. This type of classroom environment negatively impacts all students, the schools and the economy. Fortunately, supportive relationships, support for families in poverty, safe environments and
targeted interventions can help reverse these structural changes and promote healing. A community foundation supporting organizations that are making a difference is crucial. With deep roots in the region dating back to the 1800s, Ellen says protecting the area has always been important to her. “With family on this land since the 1800’s, protecting the history, culture, and resources is important to me,” she says. “As a teacher, I realize the positive impact the arts and enrichment activities have on the wholesome growth of our youth. There is a need to protect animals, serve the needs of elders, and help families with disabled or disadvantaged members.” That vision led to the creation of Sunshine Community Foundation, established to serve Sumter County and North Lake County—areas that previously did not have a community foundation. A community foundation can convert a variety of assets into various types of funds that allow the giver to achieve their charitable dreams. A community foundation serves as a charitable hub, helping individuals, families and businesses invest in the future of the communities they call home. By managing charitable funds, supporting local nonprofits, providing grants, administering scholarships and building endowments, community foundations help ensure charitable giving continues making an impact for generations. “Our mission is to increase the quality of life in our region by connecting people who care with causes that matter,” Ellen says. “Sunshine Community Foundation works with individuals, families and organizations to understand their charitable dreams and structure a plan to best meet their financial and charitable goals.” The foundation also works closely with financial advisers, trust
officers, wealth managers, attorneys and tax professionals to help their clients develop charitable giving strategies that may reduce taxes and optimize giving. Among the foundation’s favorite initiatives are impact grants, which provide funding for projects addressing immediate community needs. Past grants have helped purchase bicycle helmets for children, strengthen civic group projects, provide Christmas presents for children living in trailer parks and supply students with needed items, including eyeglasses. “It is my hope to see impact grants go towards strengthening families, the cornerstone of our communities, as well as other areas that include economic opportunity, cultural arts, elder well-being, health, education, animal welfare, community enhancement and environmental quality,” Ellen says. “Lifting up most marginalized in our communities increases the quality of life for us all.” Looking ahead, Sunshine Community Foundation has an ambitious vision for the future. “The vision is to become a multimillion-dollar community foundation that gives millions every year to non-profits that are making the biggest difference in our region,” Ellen says. “To do this, we need to find people who care and want to make a lasting regional impact.” To help build that permanent legacy, the foundation is seeking 30 Foundation Founders willing to pledge $5,000 annually for five years to establish a substantial community endowment that will continue serving the region now and for generations to come. “Contact Sunshine Community Foundation if you are interested in getting involved with increasing the quality of life in our communities now and forever,” Ellen says. “We are looking for people who care, who want to inspire giving, investing and leadership in our communities.”

A Legacy Worth Toasting Two Old Hags Wine Shoppe finds its next chapter in two local entrepreneurs. PAI D P RO MOT I O N A L FEAT URE
or nearly two decades, Two Old Hags Wine Shoppe in Leesburg has become part of the downtown identity. Under several local owners, including Joyce Huey and her son Michael Huey, “Hags” evolved into Leesburg’s official living room where neighbors gathered, fundraisers were born and one glass of wine often turned into an evening spent catching up with friends. This year, Joyce and her son Michael passed the keys to Ryan McCabe and Layna Sasser, two Lake County natives who understand they inherited more than a business. "We are just a new chapter," Ryan says. "Every Hag along the way has added their own touch to it and we are slowly adding ours." The couple were both born at Leesburg Regional Medical Center, grew up just around the corner from one another and spent years visiting Two Old Hags before ever imagining they would own it. "Before we were the owners, we were the regulars," Layna says. "We have always loved the feeling Hags created and our goal is to continue
providing the same fun-loving atmosphere that we came to love." That sense of history is woven throughout a cozy lounge filled with vintage signs, local memorabilia and personal keepsakes. Ryan even hung the original sign from his father's former downtown sandwich shop, The Chopping Block. "Everything on the walls has some kind of history," Ryan says. "You can always tell when someone walks in

for the first time because they just sort of look around in awe of the collective memories." Their first priority wasn't changing the business. It was making sure longtime regulars still felt at home. “We have always loved coming to Hags, it just felt like home,” Ryan says. “We wanted to preserve that feeling, but also add our own spin to the business.” That philosophy extends to the wine list. Rather than overwhelming guests with intimidating selections, the couple focuses on approachable bottles that encourage discovery without pressure. "We want to offer wine that no matter what you pick, you can’t make a bad decision," Layna says. "If you don't know anything about wine, that’s OK too.” The shop remains dog-friendly, with resident greeter Mrs. Grits welcoming visitors, while live music, special events and community
celebration and memories waiting to be made." As Two Old Hags approaches its 20th anniversary next year, Ryan and Layna hope the shop continues to bring people together while introducing new visitors to historic downtown Leesburg. "It's just a different chapter of the same legacy," Ryan says.

Standing Up for Lake County Taxpayers
W
ater quality issues in Lake County have always been a huge priority for Florida native Leslie Campione. As she runs for re-election for Lake County Commission, District 4, Leslie brings a strong track record on water-related issues. “Having grown up in Lake County, our lakes, rivers, and springs are a significant part of my childhood memories,” says Leslie. “I am a huge proponent of promoting recreational use of these areas and believe people are better stewards when they feel more connected to these natural resources.” Leslie was appointed by the governor in her first term to serve on the Wekiva River Basin Commission and Wekiva Wild and Scenic River Committee and continues to serve in that capacity. One of the first water-related issues she tackled as a commissioner was initiating debris removal from the Dora Canal to protect props, boats, habitat and assure safe passage during seasonal water level fluctuations. Recently, Leslie advocated for continued boat access to Silver Glen Run, and the implementation of a noise sensitive zone ordinance in conjunction with Marion County. Along with residents on Lake Joanna, she worked hard to get support from the Water Authority to partner with Lake County Public Works to get a sediment-removing baffle box installed to remove nutrients traveling into Lake Joanna. “Residents Claudia and Mike Russell were a critical part of making that happen because they owned
the area where the baffle box was installed,” says Leslie. As Chairman of the Board of County Commissioners (BCC), Leslie has worked on nutrient removal strategies at Lake Apopka and the Northshore. Leslie has worked directly with the St. Johns Water Management District and LCWA on a nutrient reduction pilot program on Lake Yale to safely and efficiently lower nutrient levels, particularly phosphorus. The program has been used successfully nationwide to help turn around lake conditions. Leslie was part of the Lake BCC that stopped a proposed aggregate hauling project at the Lake Norris Conservation area, allowing this land to be held in perpetuity for conservation and recreation, including horseback riding, camping, hiking and canoeing. “Through ecotourism and our ‘Real Florida, Real Close’ brand, I have been a strong advocate for bass fishing tournaments, recreational kayaking and competitive rowing,” says Leslie. “It has been a tremendous honor to use my platform on the County Commission to promote protection of our water resources and also enhance recreational use and stewardship of these valuable assets.”

he Leesburg Lightning continue a baseball legacy at Buddy Lowe Field at Pat Thomas Stadium, the historic ballpark where Hank Aaron golfed pitches over the wall, Pete Rose burned up basepaths and Rollie Fingers began his Hallof-Fame career. Nearly 90 years later, the lights are still burning, the stands are full and admission remains free. That last part was never an accident. “It’s not about turning a profit,” Team President Tyler Brandeburg says. “It’s about putting good product on the field and giving back to the community.” When Tyler’s dad John Brandeburg helped found the
Lightning nearly 20 years ago, the mission was to provide a summer of affordable, family-friendly fun. He certainly did his part by selling raffle tickets from the stands, finding sponsors for outfield banners and going home exhausted, all without ever taking a paycheck. “The team meant everything to Dad,” Tyler says. “He was relentless and tenacious because he knew it was all worth it.” Tyler was 12 when he first watched his father work the stands and 20 when the heart-and-soul of the Lightning suddenly passed away. That summer, the board named Tyler president. Tyler has embraced the role his father defined. One of his best

Pat Thomas Stadium opened in 1937 as ‘The Ballpark at Venetian Gardens.’ It was Florida’s first lighted baseball stadium. Fans once crossed a wooden bridge to attend games. Baseball legends including Hank Aaron, Rollie Fingers, Gene Tenace and Pete Rose played there. Cal Ripken Jr. visited the stadium as a young child while his father managed the Leesburg Orioles. The Leesburg Lightning have called the stadium home since 2007. The stadium was named Pat Thomas Stadium in 1972 in honor of longtime Leesburg City Manager Pat Thomas. The field was named Buddy Lowe Field in 2003 to honor the legendary Leesburg High School baseball coach.

decisions was naming Leesburg High School graduate Rich Billings as head coach. Eleven years later, Leesburg’s baseball team has never been better. Coach Billings has compiled a 233-156-1 record, three league titles, five straight championship series appearances and been named FCSL Coach of the Year in 2021, 2023 and 2024. But ask what matters most and he won’t mention a single statistic. Billings, his wife Betsy and their 8-year-old daughter see their family grow every summer as Coach takes more than a dozen young men under his wing. “My players may be the only boys my wife Betsy and I ever have,” he says. “I get to watch
them become men and there is nothing more rewarding.” Mount Dora native Ethan Priest, now an Air Force Academy sophomore, grew up watching the Lightning and is now chasing a path his older brother Collin blazed before him. “It’s surreal to realize I’m in the position I used to dream about,” Ethan says. The connection runs deeper than baseball for Ethan, who seeks out the veterans in the stands before and after games. “The veterans who stop to talk are incredible,” he says. “They’re the reason all of this is possible.” Kaden Thompson, known as KT, arrived from Flowery Branch, Georgia, not knowing what to expect. In three weeks, he had his answer.

“Coach is demanding, but that makes us better players,” he says. “You need a guy who lets you play but has a structure.” Longtime public-address announcer Chuck Johnson, who coined the phrase ‘free baseball under the Florida sky’ nearly 17 years ago, still defines every game that way. The moment speaks for itself when players remove their hats to honor veterans in attendance after the multigenerational crowd fills the stands. Tyler says he never fully understood what his father was building while John was still here but he does now. “The Lightning is a way for me not only to give back to my community but also to feel closer to my dad,” he says. “I wouldn’t give it up for the world.”

owntown Mount Dora has no shortage of charming restaurants that entice visitors from around the world looking for something worth remembering. Most find it easily; a few find something more. For three years, the Mount Dora Bistro Coterie Supper Club has provided that something extra. “We are a necessity for those who want more than just food,” Chef John Rossetti says. “We offer an experience that’s nostalgic, celebratory and memorable.” The experience begins with a French country cottage veneer. Inside is the kind of dining space you would Instagram on vacation and spend the rest of your life trying to recreate. The décor is methodically crafted down to the last detail with antique tea pots, Eiffel Tower votive covers and iron chandeliers. Warm lighting through windows highlight tablescapes assembled with the type of care most restaurants reserve for special occasions. It’s not Parisian pretentiousness; it’s provincial French auberge with a Paris twist that’s warm, personal and quietly sophisticated.
“We serve comfort food presented in a reverent style,” John says. “We aren’t mainstream and that is our intention.” John came to Mount Dora after nearly three decades in restaurants and an earlier chapter in New York theater and television. That combination of culinary talent blended with a showman’s instinct is evident in every corner of the room, every napkin fold and every dish.
He also greets every guest at the door with a hug. “If I invite someone into my house I wouldn’t disrespect them by giving them less than my full heart and the best quality,” he says. “This is like my home and these are my cherished guests.” John and Fiorella Gullesserian certainly felt cherished when they discovered the bistro while visiting Mount Dora. Now they come once or twice a week. “Many times, we go out and people don’t remember us,” Fiorella says. “But John is at the door with our table waiting and never stops making sure we are happy. The quality of the food is better than anywhere we have been.” Exceptional food is by design, not accident. Each dish is meticulously made by hand. What isn’t produced in house is imported from carefully chosen sources. A menu featuring housemade baguettes, triple cream camembert, mussels, escargot and buttery potatoes so rich they become their own course is an invitation to step outside your comfort zone in the best possible way. “Why do it at all if you won’t do it right?” John says. The menu honors classic French heirloom recipes as well, like steak au poivre flambé and chicken à l'orange made with marmalade for a modern twist. Such depth of flavor is rare locally and prices remain surprisingly reasonable for the level of quality and experience offered. Reservations are essential, not because of a full house, but because John doesn’t want a full dining room. John believes every guest deserves his full attention. “We don’t try to fill the room because we couldn’t give the perfect experience,” he says. “Every table is a personal experience to me.”

Memorable food keeps customers coming back; special occasions like apothecary tea service, monthly cabaret supper club and the Friday “Chef’s Table,” are the encrusted sugar on top of the Crème Brulee. “You can eat anywhere,” John says. “But here we want you to dine and make memories.”

DIRECTIONS:
In a blender combine mustard, vinegar, Worcestershire sauce, anchovies, garlic, lemon juice and egg yolk. Blend on low speed for a few seconds, then scrape down the sides. With the blender running, gradually drizzle in the olive oil in a steady stream. Scrape the sides again and blend to fully combine. Add parmesan cheese, black pepper and salt, blending until the mixture is smooth and thoroughly mixed. Transfer the dressing to an airtight container and refrigerate for up to three days. If you used a raw egg yolk consume the dressing the same day it is made.
Chicken à l’orange INGREDIENTS: Start with 1/4 inch thick chicken, well-trimmed, portioned and prepared sous vide, then oven roasted. 1 4

Trim chicken and prepare for sous vide cooking method with all ingredients. Remove the fully cooked chicken and roast in the oven in an iron skillet uncovered, basting with the marmalade and all of the sous vide liquids. Serve with mashed potatoes and haricot verts.

get the rich flavor. Striploin is the recommended cut. DIRECTIONS:
Season the steak with salt and pepper and set aside to obtain room temperature. Sauté the steak over high heat with the butter to create a peppercorn crust, taking care not to burn the peppercorns. Add the Bordelaise until bubbling and concentrating. Add the cognac and flambé for a few seconds for richness. Remove the steak and add the cream, stirring in the pan to create a bubbling sauce to serve tableside flambé. Take care not to overheat the sauce as it separates and be certain that the steak is prepared to desired doneness. IF YOU GO

or Tara Vittoria, opening Cousin’s Kolaches wasn’t simply about introducing a delicious new food to Lake County. Bringing kolaches (pronounced kuh-LAH-chee) to Tavares was about sharing a piece of her childhood, creating a place where people feel welcome and building a business that gives back to the community she loves. Cousin’s Kolaches specializes in kolaches, a Czech pastry made with soft, slightly sweet yeast dough that can be filled with sweet or savory ingredients. While kolaches are common throughout Texas, where Tara was born, many Floridians are now discovering them for the first time. That’s exactly what Tara hoped would happen. The restaurant business has been part of her life for as long as she can remember. At just 11 years old, she began working at her father Vincent ‘Vinnie’ Vittoria’s restaurant, Cousin Vinnie’s Family Sports Restaurant, which he sold in 2021. She learned nearly every aspect of the business: bussing tables,

answering phones, serving customers and managing operations. Watching her father build a successful family business inspired her. “I want to follow in your footsteps, dad,” Tara says she told her father after years of working at Cousin Vinnie’s. Years later, while pregnant with her

kolaches eventually led her family to a shop in Merritt Island. The owners welcomed them, trained them and helped turn Tara’s dream of opening her own place into reality.
Finding the right location took time, but once they secured a spot in Tavares, Tara and her father transformed the space from the ground up, designing a kitchen and purchasing equipment built specifically for making fresh kolaches, donuts and breakfast items each day. Today, customers can choose from fruit-filled or Texas-style savory kolaches and a growing list of creative specialties. During a recent visit, Chief Photographer Nicole Hamel and I sampled our way through a generous portion of the menu. The sausage and gravy kolache delivered all the comfort of a southern breakfast item wrapped inside soft, buttery dough and the sausage jalapeño & cheese kolache featured what may be one of the best sausages we’ve ever tasted paired with just enough spice. My favorite, however, was the chicken enchilada kolache. The saucy mixture inside was rich and flavorful, but not spicy. I also enjoyed a
bacon, egg, cheese and potato burrito but could only eat half because it was so stuffed with goodness. Nicole, who’s allergic to eggs, tried a ham and cheese croissant, and though simple and to the point, it offered another satisfying breakfast option. For dessert, we sampled a lemon and cream cheese kolache, a Boston cream special kolache drizzled with chocolate and an apple fritter that was Nicole’s favorite bite of the day.
The menu also included other breakfast burritos and sandwiches, cinnamon rolls, donuts and specialty coffee drinks. Additionally, new kolache flavors are introduced regularly, giving customers something to look forward to every few weeks. But what stands out most about Cousin’s Kolaches isn’t what’s inside the dough. It’s Tara’s desire to serve people. At the end of each day, leftover donuts are donated to schools, hospitals, first responders and community organizations. Tara welcomes opportunities to help wherever she can. The shop regularly supports fundraisers and local causes. So while the kolaches may bring customers through the door, it’s the heart behind them that keeps people coming back. “We’ve created a niche in the community and once people come and try what we have to offer, they’re hooked,” Tara says. “We see some customers multiple times a week because they just want more and we love getting to know them.”

first noticed grapevines along County Road 462 during a search for inspiration while driving the lush backroads near my house. At Taste of Lake, I made the connection while marveling at some of the most beautifully designed wine labels I had ever seen. “Oh my gosh, is that your winery?” I asked Keisha Santana-Doak. “I was going to retire after COVID,” Keisha says. “Then our real estate guy called about this property. It was just too good to pass up.” Her husband, Phillip Doak, has a different version of the story of how Wildwood Winery & Events began. “She got bored and the next thing we know we own a vineyard on 10 acres and I’m making wine,” he says. Phillip, an Army veteran with a hospitality background, learned
winemaking from scratch with guidance from a few mentors and a lot of hard work. Their first wine was a white cranberry blend cheekily named Kiss Me Down Under. Some grapes are shipped in, while muscadine grows right outside. Each wine is made in small batches, triple filtered and held to a standard they refuse to compromise. Every wine is a blend and Keisha’s personality is reflected on every bottle — labels she designed with names like Cherry Noir, Life is a Cab, The Dark Affair and Intoxicating Merlot. “I always try to fly high and Phillip keeps me grounded,” Keisha says. “We couldn’t do this without each other.” ‘This’ includes a vineyard with a wine room, growing events calendar, wedding venue and a barn still in progress. Their vision has only begun to breathe.

’ve been known as Roxanne Brown, my byline for more than two decades since leaving Arizona for Florida in 1999. It’s the name readers, sources and community members know. Earlier this year, when my divorce was finalized – “YAAAY” – I seriously considered keeping it because changing your name is kind of a nightmare. There are licenses, passports, voter registration cards, bank accounts, subscriptions, memberships and countless other documents to update, all requiring an updated Social Security card, hence my first stop. Even with an appointment, I spent hours waiting at a jam-packed office. In that time, I witnessed an older gentleman doze off while sitting straight up in his chair and a woman
get into such a heated exchange with security that she was told to sit down or leave. After befriending one of the guards, I learned all about his retirement plans and he even helped me beat a level in the game I was playing on my phone to pass the time. And just when I seriously began wondering whether to book it, my number was finally called. Turns out the wait, and my patience, was worth it. At the window, I asked to take back my maiden name, Batriz, plus the original spelling of my first name, Roxanna. When the worker asked why I’d changed my name in the first place, my honest answer was, “I don’t really know.”
What I do know is that at that moment, my reasoning went from simply wanting to make sure all my official documents match to something way more important: embracing the first gift my parents ever gave me and the version of my first name I’d altered years ago because Roxanne felt easier. Honestly, it’s taken me a bit to get used to the sound of my given name again, but considering the things I’ve survived, it’s freeing. Almost like a path forward. And although I know it’ll probably take time for others to get used to it, too, it kind of feels like a hug from someone I haven’t seen in a while and I like it. So welcome back, Roxanna Batriz, but with a little wiggle room to see who I have yet to become.
