Anxiety can feel like being strapped into a rollercoaster you never agreed to ride. One moment you’re calm and collected, the next your heart is racing, your thoughts are spiralling, and your body is bracing itself for danger that doesn’t seem to exist.

Anxiety is not a personal failing. It is rooted in the brain’s natural survival system. Deep inside the mind sits the primitive, emotional centre responsible for keeping us safe. When it senses threat, it releases stress hormones that prepare the body to react.

Living an Intentional Life

Self-Love Comes First in February
As we come into February there is no doubt love in the air, every shop, promotion, advert and email have something to do with the 14th of the month - Valentines day!
No matter what your relationship status, it is easy to feel overwhelmed with consumables around this time, how about for this year, we focus on our own self lovin’ - so often we are so hyper focused one ensuring everyone around us is cared for, looked after and heard its rare we take time to ask ourselves ‘’what do I need?’’.
Over the past 4 years, I have curated space around this time of year to reflect on my own self-love, self-worth and selfcare. This has included treating myself to a yoga class, booking a massage, finding a girls only creative painting session or taking myself shopping for a little treat (and a glitzy champagne bar ) something a little out of the ordinary. I would often take myself for lunch and pack my journal, taking time to reflect on self-love journal prompts.
So what actually is self-love?
To me, self-love is the way we view and treat ourselves. So often, we are made to feel “not enough” through targeted advertising, constant self-improvement messages, and comparison traps. Yet the truth is, you are already more than enough.
Self-love is feeling supported from within. It is knowing your worth, prioritising your needs, and listening to your inner voice. It means respecting your values with pride and taking gentle, intentional actions that support your growth throughout life. When we cultivate self-love, we begin to release the need for external validation and learn to trust ourselves more deeply.
Now, let’s get a little “woo woo.”
Each of us has a beating heart that we often take for granted. Every day, this incredible vessel works effortlessly to keep us alive, pumping blood to every part of our body. Take a moment now. Close your eyes, place your right hand over your heart, and imagine the colour green. Breathe
slowly and deeply three times, feeling your heartbeat beneath your palm. Send yourself love and gratitude. Notice the warmth of your hand. This simple practice helps you reconnect with yourself in a gentle, meaningful way.
Green is the colour of the Heart Chakra, one of seven main energy centres that run from the base of the spine to the crown of the head. Each chakra represents a physical, emotional, and spiritual connection within us. When these centres are balanced, we experience greater ease, flow, and wellbeing. Of course, life happens, and this balance is not always present.
When the heart chakra holds stagnant or negative energy, we may feel heaviness in the chest and shoulders, anxiety, or shallow breathing. By reconnecting with our heart and acting with compassion, we support deep self-love and inner healing.
Take time to breathe deeply, roll your shoulders back, and gently ask yourself: What do I need right now? Then listen to the quiet whispers of your body.
How to connect with yourself this Valentines Day:
1) Do something for YOU! It could be as small as 30 minutes carved out of your busy diary to sit with a book, take a walk or treat yourself to a yummy quiet lunch.
2) Take a moment to journal – putting pen to paper is one of the most powerful mindfulness tools
3) Shift your energy – take a workout class something out of the ordinary that will make you smile from within.

Vegan Shepherd’s Pie

Ingredients
2 large Baking Potatoes
80ml unsweetened Almond Milk
40g Vegan Butter
1 tbsp Olive Oil
1 Carrot, chopped
1 Onion, thinly sliced
1 stick Celery, sliced
2 sprigs of Thyme
1 garlic Clove
400ml Vegetable Stock
60ml Pickled Walnut Brine
100g Peas
4 Opies Pickled Walnuts, chopped into chunks
Method
Peel the potatoes and cut into large, uniform-sized chunks. Place in a pan of salted water and bring to the boil, then reduce and simmer for 20 minutes.
Preheat the oven to 200°C / 180°Cfan / gas 5. Whilst the potatoes are cooking, heat the oil in a pan over a lowmedium heat, add the carrot, celery and onion and fry gently for 8-10 minutes, until soft and caramelised. Add the garlic and thyme and cook for a further two minutes, and then add the lentils. Pour over the stock, season well and bring to a rapid boil for five minutes and then down to a simmer for 15 -20 minutes.
Check the lentils are cooked and still have a little bite to them and that the stock has reduced. Once nearly done, add the peas and cook for two minutes. Take off the heat and stir through the pickled walnuts and brine and check the seasoning. Drain the potatoes, allowing them to steam dry for 3 minutes, and transfer back to a pan and mash as smoothly as possible. Put the pan back on a low heat, pushing the potatoes to one side and adding the milk and butter to the other. Allow the milk and butter to melt together and stir into the potato allowing it to cook for a couple of minutes.
Transfer the lentil mix to an oven proof dish. Top with the mashed potato, scoring ridges with a fork. Cook in the oven for 20 minutes until golden brown.

600g lamb steak, cubed
1 onion, diced
2 garlic cloves, crushed
2 × 400g tins chopped tomatoes
2 lamb stock cubes (no need to dissolve)
3 tsp dried oregano
2 tsp dried thyme
1 tsp fennel seeds
1 tsp ground cumin
Sea salt and freshly ground black pepper
1 tbsp Opies Capers, drained
100g (about half a jar) Opies Mini Silverskin
Onions, chopped
1–2 tsp Opies Green Peppercorns
400g dried orzo

Method
Place the lamb cubes in the bottom of a slow cooker. Stir in the diced onion, crushed garlic, chopped tomatoes, stock cubes, oregano, thyme, fennel seeds, cumin, salt, and pepper. Add the capers, chopped silverskin onions, and green peppercorns. Mix well to combine.
Cover and cook for 3.5–4.5 hours on HIGH or 6–8 hours on LOW, until the lamb is tender. Stir in the dried orzo, sliced red peppers, and boiling water. Cover and cook for a further 45 minutes, until the orzo is just cooked. Squeeze over the lemon juice, then sprinkle with crumbled feta and chopped mint.

South African Peach and Amaretto Tiramisu

Ingredients
300ml strong black coffee, cooled
6tbsp Amaretto liqueur or Marsala
200g pack sponge fingers
4 South African peaches, pitted and thinly sliced
2 x 250g tubs mascarpone cheese
400ml double cream
Finely grated zest of 1 orange
30g caster sugar
2-3tbsp pomegranate seeds
Method
Put the coffee into a shallow bowl and add the Amaretto liqueur or Marsala. One at a time, dip in half the sponge fingers, allowing a couple of seconds for the liquid to soak in, transferring them to a large trifle bowl as you go along.
Beat the mascarpone cheese in a bowl to soften it. Whip the cream in a large chilled bowl until floppy, then fold it into the mascarpone with the orange zest and sugar. Pile half on top of the sponge fingers and spread out evenly. Arrange half the peach slices over the top in an even layer.
Repeat the layers of soaked sponge fingers, mascarpone mixture and peaches. Cover and chill until ready to serve, sprinkled with the pomegranate seeds.
Cook’s tips: You could use trifle sponges instead of sponge fingers – and raid the drinks cabinet if you don’t have Amaretto liqueur or Marsala –try Tia Maria or sweet sherry instead. If you like, sprinkle the top with 3-4 roughly crushed Amaretto biscuits.
