SURGEON BITES Neighborhood oral surgeon brings art to cooking, robotics to dentistry Story by ALYSSA HIGH | Photography by YUVIE STYLES

ticking their fingers in your mouth and judging you for not flossing might be what dentists are notorious for, but an oral surgeon from our neighborhood is shooting for a different reputation. “Eating is a pleasure,” Dr. Reed Gibbins says. “Everything is on the table if it tastes good.” Gibbins got into cooking after graduating from college at Southern Methodist University and was tired of eating out all the time. After watching Food Network and picking up a Betty Crocker cookbook, he got to work trying out recipes and cooking for himself. A men’s cooking class at Sur La Table, a gift from his sister-in-law, taught him to shop and make recipes outside of Betty Crocker. But still, Gibbins was only cooking for himself and his family. That is, until the pandemic started, and the dental industry was restricted to treating only emergency patients. Gibbins filled that time with at-home school for his kids, baking and taking long walks. It was along the Northaven Trail where Gibbins’ wife, Kristen, came up with the idea to post his dishes on Instagram. A publicist, she saw the intersection of her husband’s two interests and started @surgeonbites. The page is mostly viewed by friends and family, and Gibbins says he does it just for fun, although they have plans to expand the page. Grilled lamb, roasted

asparagus, white bean and tomato bruschetta was one recent dish. They’re also open to requests, via Instagram direct messaging, to spur creativity. Gibbins and Dr. Tom Draper of ArchPoint Oral & Maxillofacial Surgery and ArchPoint Implant Dentistry, were the first in Dallas to bring robotic devices into dental implant surgery. “Obviously, robotic surgery is not new to the medical field. There’ve been many robots used in things like orthopedic surgery and abdominal surgery or pelvic surgery,” Gibbins says. “But this is the first of its kind in the dental industry.” The YOMI robot allows oral surgeons to alter the surgical plan in real-time, saving patients from repeat visits. Gibbins is introducing non-invasive laser technology to the practice, including LipLase and NightLase, which help naturally plump the lips and minimize snoring and sleep apnea, respectively. The surgeon specializes in treating facial trauma; these services are just another way to make his patients feel good about their smiles again. “A lot of patients that we take care of are getting a whole new smile and brand new teeth … we do our whole dental implant treatment for them, and a lot of times they’re commenting about their skin or other things that maybe need to be addressed,” Gibbins says. “It’s a way to engage them and give them an option for additional treatment.”

Sal ads are full-fledged m eals foun d on just about every m enu. We searched our neighborhood for big bowls of leafy, veggi e goodness that will please even the most persnicketY characters.

Taco Salad at Flower Child At the dawn of the age of health food done quick and delicious, there was Flower Child, with its customizable menu and wholesome ways. Everything here is made from scratch and excess fruits and vegetables are used in juices, spokesperson Tracy McGinnis says. Even if you know you prefer a big salad, deciding what to order from FC’s array of vegilicious items, could be tough. Here’s what we know: The vegetarian taco salad was on, then off, the menu before being brought back by popular demand, according to a spokesperson. The reason for its return is obvious to the taste buds. A leafy romaine and chickpea chorizo base offers a meat-free take on tradition. Toss in red cabbage, avocado, black bean, roasted corn, organic tomato, pepitas and blue corn chips and top with cilantro lime dressing and you have a mildly spicy, citrus-y super salad with satisfying crunch. Honorable mention choices — crowd sourced from readers — include Flower Child’s Thai Noodle Salad and Avocado Caesar, which reportedly is a kid favorite. While a big salad is a sufficient meal, it is a mistake to leave FC without a side of street-corn “ribs.” 5450 Lovers Lane

The Beverly Hills Cobb Salad at Neuhaus CafE Visiting Neuhaus Cafe and Chocolate Boutique “for the salads” is a little like subscribing to Playboy “for the articles.” The salads are palatable, interesting and skillfully crafted; that doesn’t mean you can’t enjoy the picture-perfect, expertly curated (by owner Mervyn Sacher) sweets too. Sacher has told the Advocate that his colorful colossal candy dispensers are the main attraction, but cuisine inspired by his preferred New York City delis commands equal attention and care. Neuhaus’ Beverly Hills Cobb Salad is “Like No Other,” according to the menu and many consumer reviews. Lightly grilled chicken, bacon, boiled egg slices and tomatoes on a bed of crisp greens topped with blue cheese crumbles and dressing makes this cobb a thing of both beauty and substance. 5959 Royal Lane, Suite 626

Summer Seared Ahi at Modern Market The Harvest Salad at Salata As one might infer from the name, Salata does salads — big healthy salads served in bowls, as all big salads should be. Sizes are listed as “small” and “regular,” but the taste is big. (And the “regular” is physically large, a full meal.) If choosing the perfect mix from Salata’s selection of more than 50 ingredients proves overwhelming, go with the Harvest Salad, a medley of mixed greens, grapes, cranberries, feta cheese, walnuts, apples and pesto chicken under a drizzle of balsamic vinaigrette. However, any salad that includes falafel or quinoa as its protein is a win, especially when sitting on vitamin-packed kale, spinach or combination thereof. A dozen house-recipe dressings are made from scratch daily, according to a Salata spokesperson. 8307 Westchester

The Cali Roll Deconstructed Salad at Parigi The classics — the wedge with truffle blue cheese or the Caesar, hailed by food critics and diners alike — come in perfect form at French-inspired bistro Parigi. Diners rave about Parigi’s Brussels Sprout Salad and Texas Watermelon Salad with its baby beets. The hidden gem, while not literally a big salad, bears a shout out due to its creativity and craveability — the Cali Roll Deconstructed Salad is presented as a cake of sweet lump crab and avocado, cucumber, cilantro rice, ginger and nori topped with mixed greens, cucumber twists and sea salt with wasabi tamari dressing drizzled on top. Asian Noodle Salad at Asian Mint It’s an unconventional spicy salad — spicy shrimp, minced chicken, clear lowcarb noodles, julienne seasonal rainbow vegetable, grape tomato, peanut, cilantro, fresh mint, scallion and spicy lime sauce. This is a one-of-a-kind addition to your end-of-summer salad menu. Yes, there is an absence of lettuce here, but let us let that slide. Salads don’t always have to include leafy greens, so says Asian Mint chef and owner Nikky Phinyawatana. She explains that the shirataki noodles in this dish come from fiber from the root of a konjac plant, native to east and southeast Asia. According to the chef these noodles absorb water, move slowly down the digestive tract and give the consumer a feeling of fullness. ris Torrance is the bar manager at Republic Texas Tavern owner’s newest concept Onēsan Dim Sum Sushi. Torrance has been a bartender for over a decade, learning the ins and outs of the industry before opening Onēsan and creating its cocktail menu. Torrance started working as a bartender 10 years ago in Fort Lauderdale, Florida, before moving to Nashville and then Scottsdale, Arizona. He arrived in Dallas to work at Whiskey Hatchet in Deep Ellum. Later, after settling into the cocktail and bourbon scene at Republic Texas Tavern, Torrance helped open its neighbor Onēsan. Onēsan opened in July and serves dim sum, sushi rolls, nigiri and other Asian-inspired dishes. The drink menu boasts cocktails like the Death Over Dishonor, with Japanese whisky, Szechuan peppercorn ginger syrup and plum bitters. I’ve never worked in the sushi or Asian concept. So it’s a lot of learning about sake and dim sum and sushi and things I never thought I would eat, which is cool. Republic is up my alley with bourbon and American gastropub steak and stuff, but it has been really cool learning about the Asian restaurant world and studying its processes. It’s fun, and it’s challenging. But it’s easy to go right back into everything that you already know and are comfortable with.

WHAT DO YOU LIKE ABOUT BEING A BARTENDER?

John Kinsler, the owner of Republic, mentions all the time that we’re not in the food and beverage industry; we’re an entertainment business. Which is to say, we’re giving you an experience and that’s definitely true. Especially being a bartender behind the bar, you’re on stage all the time. You have to talk to everybody and get along with everybody. Make everybody laugh. You’re everybody’s friend. People come and tell you things they probably shouldn’t tell you. Those connections to people are definitely one of the best things about the job.

This one is my favorite cocktail to make and my favorite cocktail to drink. It’s our best. I have a Japanese twist on an Old Fashioned made with ginger peppercorn syrup and Japanese whisky. We have craft cocktails and classic cocktails, which are of course crafted when made correctly. We don’t have a sour mix or anything like that. That’s always the most fun, right? Being creative. I like to play music and get creative at work. R EGU L A RS AT YA M AGU C H I ’S, LY N A E F E A R I N G A N D T RACY RATHBUN were sitting at dinner when they found out their friend Yamaguchi was planning on selling the restaurant in 2005. They had known each other for awhile — even tossed around the idea of opening a taco stand together, the kind that’s all the rage now. “It wasn't that we weren't going to do tacos,” Lynae says. “It was just, opportunity fell into our laps and we both looked at each other at dinner that night, said we should do this.” Their chef husbands Dean Fearing and Ken Rathbun told them don’t. Lynae and Tracy weren’t new to restaurants. Lyane started at Dairy Queen when she was 14 in a small Texas town. Tracy, an Austin native, started at Beans, a chain similar to Chili’s. When Lynae got to Dallas, her resume included Dick’s Last Resort, Sfuzzi and eventually Del Frisco’s, where she met now ex-husband Dean. After a stint at Hyatt, Tracy left hospitality to work at Park Place Porsche. Lynae started teaching yoga. Opening Shinsei, a pan-Asian restaurant, in Yamaguchi’s old space felt right. They started calling banks for a loan to back the restaurant. It took them three months to sign documents and seven to launch their restaurant. “We've always had the philosophy that if

you're pushing something way too hard, it's probably not it,” Tracy says. “But everything fell in place.” Formerly a classic Italian restaurant, Yamaguchi’s was gutted, including the black and white tile. Their husbands helped with back-of-the-house structuring and developing a menu. Yama’s house salad and the tuna tartare stayed on the menu. Everything else changed. They hired Dean’s former saucier Casey Thompson as the chef de cuisine before she competed on Bravo’s Top Chef. Eleven years later, Rex’s Seafood, a beloved Preston Hollow spot right around the corner from Shinsei, shuttered. “We weren’t actively thinking, ‘Oh, we need to open another restaurant and start doing more,’” Lynae says. But it just made sense. It was in walking distance, and if Lynae and Tracy didn’t buy the space, someone else would. Lovers Seafood and Market opened in 2017 with former Abacus chef Aaron Staudenmeier. The menu is all over the seafood spectrum — gumbo, lobster rolls and poke. It was a slower start. According to Lynae, about a year before the pandemic started, the restaurant started gaining more traction. “During the pandemic, we were one of the few restaurants open,” Lynae says. “So we got tons of new customers that had never tried us. And they loved it. And now they've become very loyal.” AUGUST 2022

Tracy and Lynae each spent three days a week working the restaurant. They usually start the night at Shinesi and walk around the corner to Lovers Seafood. They’re not above expediting dishes or waitressing, when need be. “That's what we enjoy,” Tracy says. “ We enjoy mee ting our customers. We enjoy seeing the food go out. We enjoy the business endeavor. You know? It's how it all kind of comes together.” In October 2021, Fireside Pies, right next door to Shinsei, closed. The location was too irresistible. “I was fine with just Shinsei. And then Lovers happened. I'm like, ‘OK, now two is good.’ And now, three is going to be good,” Lynae says. “I was not dying for another restaurant, but the same amazing opportunity fell

into our laps. And it was in the neighborhood.” European coastal, Italian, Mediterranean — they describe their coming-soon concept Dea as all of the above wrapped up in the guise of a steakhouse. The planned menu features largeformat steaks, fresh handmade pastas and flatbreads out of the former Fireside Pies woodfire oven. T hey’re not a hospitality company. There are no plans to build a huge brand to sell or franchise. They want to own neighborhood restaurants where regulars keep coming back. “Since Shinsei has been up and 16 years, we've seen people's kids from babies grow up,” Tracy says. “Now they're driving, and they're the ones who are requesting to go to Shinsei or Lovers.”

lex Baker Kincaid’s birth announcement was a baker’s hat with a recipe and directions that lead to her a r r i va l . “ B re d a B a ke r f ro m birth” is written across her website, as if making cakes was destiny. After more than a decade in public relations and marketing, Kincaid began living up to her destiny and became a full-time baker in 2020. A. Baker, the cake business she runs out of her home, produces glamorous cakes in unique, modern flavors for weddings and events. A. Baker’s cakes are decadent but classy. Think Food Network meets Chanel. The Hockaday grad cut into her creative side in school, practicing art and photography. She graduated from Elon College in 2009, with degrees in history and journalism. After that, Kincaid studied at Sotheby’s Institute of Art in London, earning a master’s degree in contemporary art.

That’s also when she began baking in her free time. “I had won a pie contest in college at a fraternity party, so it was just sort of a creative outlet, rather than an educational outlet,” Kincaid says. “But I knew that education and corporate was the way I was going to make money.” Kincaid returned home from London to work in marketing and hospitality. The Dallas Art Fair, Ross-Michael’s Gallery and Hotel Zaza were among her clients in luxury marketing and public relations. Later she was Modern Luxury magazine’s marketing manager and director. Eventually, she became the marketing and communications manager for the Ritz-Carlton Hotel Company. The Ritz-Carlton provided Kincaid the opportunity to see behind the scenes some of the city’s well-known pastry chefs and bakers. Among chef Dean Fearing’s pastry team, including rock-star pastry chef Jill Bates, Kincaid found herself surrounded by sweets galore. “If you couldn’t find me at my desk, you’d find me down there, bugging them in the kitchen and just asking a million questions,” Kincaid says. “Even though I wasn’t technically trained in pastry, that’s sort of where I saw true beauty and art come together in a culinary way.”

Kincaid practiced her skills on loved ones. “I was baking my friends birthday cakes, making cookies, and making cupcakes,” Kincaid says. “Just figuring it out as I went along.” After the pandemic, Kincaid realized life was short, and she quit her job to start her own business. She found that Dallas had a bit of a hole when it came to bakeries that provided beautiful, whimsical cakes. “I was like ‘Don’t fight it. People want the cake.’ So I made them cake, but super interesting with a little bit more adult flavors,” Kinciad says. “And then decorated in a way where you’d be proud to set it on your table.” Kincaid got her food handler’s license and cottage baking license, and she registered the name A. Baker. “I am truly the only employee of the company. I’m the baker, the decorator, the dishwasher, the purchaser, you name it,” she says. Now Kincaid whips up a variety of flavors like white raspberry, chocolate raspberry, funfetti crunch, black cocoa mascarpone, chocolate cool mint, carrot caramel, chocolate peanut butter, champagne and roasted strawberry, chocolate mocha toffee crunch, and her personal favorite, limoncello. Her cakes are inspired by the floral arrangements of her customers’ events, and Kincaid often works with local floral shops to make sure that cakes fit the theme. “It’s typically florals I would never think to put together or I would have never picked myself,” Kincaid says. “And that is when I’m pushed and when the best work comes out of me. That’s when the creativity gets really fun and usually ends up in some of the most beautiful cakes.” The cakes range from $60 to $160, depending on size, and can feed anywhere from six people to over 30. “They say that you’ll never work a day in your life if you’re doing what you love,” Kincaid says. “And that’s really how I feel about this business; I was born truly, A. Baker.”

Use together, rebuild together Our infrastructure must evolve to support everyone’s well-being

he Walcrest Pumping Station adjacent to Hillcrest High School at Walnut Hill Lane and Hillcrest Road has reached its final inspection after 7 years in the works. Surely you noticed when the work began back in 2015 because traffic had to be funneled down to one or two lanes. But have you noticed now that it is done? Maybe its completion has been difficult to recognize due to the continued traffic congestion at that intersection as Walnut Hill Lane completes its revision. Who hasn’t sought alternate routes or impatiently sat in the back-up … waiting. Perhaps in frustration with being inconvenienced. Or perhaps in wonder at the planning, the many hands laboring and the engineering necessary to benefit the community so together we may flourish. The changes taking place in our neighborhood and city offer intersections for contemplation about ourselves and the greater good. The pumping station and roadways were built to the best-possible standards at the time of their construction. The community has grown, demands have changed, and knowledge is evolving regarding standards that benefit the safety and support of an expanding community. Alas, if the infrastructure served only one person, revision would not be necessary. The pumping station is not for meeting my needs alone — it is for all my neighbors. The roads are not for me alone to drive — they support the coming and going for all of us. Together we wear them down. Together we must build them up for the

sake of community. We get to participate through funding, direct effort or with cooperative patience so that we all may flourish. The action of our contemplation comes with our attitude. While waiting in a line of cars, will we grumble and be angry at being inconvenienced? Or can we sit with gratitude for people laboring to complete the work, for funds supporting the effort, for the eventual improved outcome that benefits our community? Because what helps one, helps us all. Contemplating the rebuilding of infrastructure can serve as a reminder that we live in community. As community expands and knowledge of our diversity grows, our “infrastructure” must evolve in order to support everyone’s well-being. Australian native Lilla Watson wisely states: “Your liberation is bound up with mine, let us work together.” The intersection with action comes in remembering we are not as individualized as we think. Sure, we are individuals representing the amazing diversity of our God-given world. And as individuals together, we create a community on which we all depend. When we all have what we need, our community can thrive in safety and well-being. When one flourishes, we all flourish.
