Why we are investing locally, here in Woodburn.

he reason we invest in our local community has a lot to do with the futures we want for these two sweet boys! And we started before they were even born. In our home, May and June bring birthdays to Daxon (4) and Drew (2). So we’ve had a lot to celebrate lately! Daxon is our first born, and he’s started asking questions about when he was born. Heck, he’s four, he asks questions about everything! But in the weeks leading up to his birthday his questions sparked many conversations that took us through photo albums from my pregnancy and his first few weeks of life. We had a dog back then who has since passed. Our home was in town and we used to take many walks. On one of our very first walks after bringing Daxon home, I had the dog and a big water bottle both tethered to the stroller. He was all of a week old when we

went down the driveway and hit a crack in the sidewalk. That sent my big huge water bottle tumbling straight onto my precious little baby! He looked at Dylan and I like he wasn’t quite ready for this world. Although we laughed and laughed, I felt like the worst mom in the world! I just told Daxon that story and his reaction now was much as it was back then - lip quiver and all! And Drew; well, he’s two now, and basically runs the house with his boundless energy and an innate ability to get into virtually everything. If you drive by our house today, you’ll most likely see him with his seven chickens following him around for crackers. As these two grow up, I’m doing my very best to soak up every moment of their precious lives. In these short years, their innocent baby smells have already turned to a sweaty, dirty, sunkissed aroma, with just a hint of what I have to look forward to in their teen years. If you see me around town, usually volunteering or helping a friend with a project, these two boys are my reason why. I want them to grow up in a town where people care about each other, where they step up when clean-up needs to be done. What I find when I get out from behind my computer, I see a whole host of people in town doing this exact same thing. And when others are doing it too, it makes it a whole lot easier to keep doing it! So get out there and make Woodburn one of those towns where visitors say, ”I WISH WE LIVED HERE!”

uality products, quality people: that’s the recipe for success according to founder, President and CEO of Rocky Mountain Chocolate Factory, Frank Crail. And it’s really just as simple as that, isn’t it? Without a strong commitment to these 2 key elements, a business can’t thrive. In particular, as a high-end confectionery and chocolate company, the product has to be of a consistently superior quality, and when it comes to Rocky Mountain Chocolate, that is what you get every time. The factory typically produces somewhere in the vicinity of 300 various chocolate candies and other confectionery products developed primarily by their master candy maker. From there, the treats are packaged and loaded into refrigerated trucks to maintain freshness before being delivered to their retail locations. At the local level, individual stores choose the factory-made chocolates they want to stock and make additional treats of their own. That brings us to our local franchise at the Woodburn Premium Outlets, which is one of only 5 locations in all of Oregon. Amanda Keeling has owned and operated the location since 2014, and is incredibly enthusiastic about her business. She actually began her journey right out of college when she and her boyfriend, Andre

Cintron, attended a special entrepreneurial program sponsored by Rocky Mountain Chocolate Factory. After competing against other applicants and completing the program, she and Andre were awarded an internship with the company. The first 9 months were a whirlwind of excitement and on-thejob training at a location in their home state of Nebraska. Once they’d mastered every aspect of the business there, the next step was running their own location. Their timing was fortuitous, as the previous owner of the Woodburn location was preparing for retirement and had just put it up for sale. In May of 2015, Amanda and Andre took possession and their location is now consistently ranked in the top 20% of all U.S. locations for annual sales! Amanda truly loves this company, the business model, and their products, especially those made right there in the store. With this franchise, each location has the freedom to prepare their own varieties of fresh caramel and candy apples, fudge, ice cream, chocolate items and more. And it’s all done in full view of the customers so they can observe the magic! Part of what makes RMCF so unique is the balance they strike between traditional methods and contemporary presentation. It’s not just a shop to visit, it’s a shop to experience! Their recently redesigned contemporary retail space prominently displays their kitchens, so you get dessert and a show! Beautiful artisan truffles, huge gooey clusters, delectably crunchy barks, caramels, fudges, and a plethora of chocolate-covered items (including strawberries, cherries, marshmallows, twinkies), and the list goes on. The company’s signature piece is called the Bear. This beast is a massive, paw-sized cluster of chewy caramel, roasted nuts, and a heavy coating of fine chocolate. Other favorites include nut clusters, butter creams, exotic flavored truffles, English toffees, and a peanut butter cup that is so big, it has appropriately been dubbed “The Bucket.” According to Amanda, their biggest seller is the caramel and candied apples. These are not the apples that people of a certain age will remember from childhood (with a limp sheath of caramel or a hard, tooth-cracking candy coating ). These are tantilizing culinary concoctions of such delight, it’s impossible to do justice with words.

Local favorites are the Peanut Caramel Apple, the Caramel Apple featuring Snickers Bar pieces, and the English Toffee Caramel Apple. They typically carry upwards of 18 varieties and they’re all made fresh on site! Andre has mastered the art of caramel and takes great pride in his work. Want something cold on a warm summer day? he most effective and regularly overlooked way to take care of your pet and beat the summer heat is by paying attention to your dog’s grooming needs. By keeping your dog properly groomed throughout the summer you can keep dangerous dog problems at bay and keep your pet cool and comfortable. 1. ACHIEVE PROPER COAT LENGTH FOR YOUR DOG While keeping a shorter coat on your dog might seem like the most logical way to keep your dog from overheating, cutting down the length of your dog’s coat too much can actually cause certain dogs to get sunburned (especially if they have a pink skin tone). A balance needs to be struck between not too long and not too short. A professional dog groomer can lend the experience necessary to achieve the length of coat that will keep your dog cool while protecting them from a painful sunburn. 2. PERFORM A THOROUGH DE-SHEDDING It’s natural for a dog with a thick, double coat to shed. It’s nature’s way of keeping your dog cool. But regular shedding can become problematic for a dog mom or dad looking to keep their house in order. We might be tempted to just shave it off and be done with it but shaving your double coated dog is not always the best answer. Not all double coated dogs should be shaved. Talk to your groomer about a thorough de-shedding process. 3. SPACE OUT YOUR DOG’S BATHS Just because it’s hot, it doesn’t mean that you should bathe your dog daily or even weekly. Over bathing can bring about a whole rash of other issues for your pet. Keep in mind that your pet’s skin can be very sensitive and that spacing out their baths is just as important as keeping them cool (even if they do get a little stinky from rolling in the mud or playing at the park). 4. PAY ATTENTION TO YOUR PET’S PAW PADS The pads on your pet’s feet are very sensitive. Hot concrete, asphalt, rocks, gravel and sand can be painful and damaging to your pet’s pads. Be mindful of the temperature of the ground you’re walking your pet on and avoid hot surfaces. A good rule of thumb is the 5 second rule; place your hand on the surface you’re walking on, if you can’t hold your palm to the ground for more than 5 seconds it’s too hot for your dog to be walking on. 5. TAKE YOUR PET FOR REGULAR GROOMING Regular grooming can help your dog stay healthy, feeling great, and even help you cut costs on certain vet bills. ne of Canby’s top home-grown musical talents is Aly Whelchel, a multi-talented singer and songwriter with jaw-droppingly powerful pipes — whose career was only just beginning when the pandemic put the kibosh on most live performances.

Aly, a 2019 grad of Canby High School and an instructor and clerk at Canby Music, also saw her work schedule be impacted, both because of the early shutdown and the store’s move to its new location last summer. “I don’t play a ton of gigs, so that didn’t affect me as much,” she says. “But I still had a lot of time on my hands, and I really wanted to make sure I spent my time well.” For most people, 2020 was not an easy year, but those challenges inspired meaning and creativity for many artists, including Aly. “A lot of songs came out of me during that time,” she recalls. “And there were a lot of musicians rising up in social media, talking about the pandemic and, really, just making it very poetic and beautiful even though it was sad and hard. It was really inspiring.” Her song “Submarine” was a pandemic-era creation, as was “Holy and Sacred,” for which she recorded a music video with a few friends at the Canby Pioneer Chapel last December. The video included a choir of backing vocals drawn from across the community. “It was really fun because I got to have people send in vocal recordings from their homes, which I put together

to make a choir effect,” she says. “In the song, there’s one part where it’s, like, 50 tracks stacked together, and it was actually really difficult to mix, but it was so much fun.” After more than a year out of commission, Aly returned to the “stage” with a live concert on May 8 at “Fort Wayward” - the outdoor dining area of Wayward Sandwiches in downtown Canby. “I am very excited,” she admitted before the show. “It’s been a long time coming. I’ve always been kind of scared and intimidated about doing gigs, but the more it happens, the more I feel like this is really who I am. And I’m so excited to see the people. There’s a whole different kind of energy when people are there, and you go off of that. That’s where the magic happens.” Canby Music owner Brian Haines also performed at the May 8th concert, playing the drums and providing backup vocals for Aly. The pandemic was an odd time for him for other reasons. He spent most of the early months as a construction worker, finishing the significant renovations needed to transform a nearly century-old house on Northwest 1st Avenue into the new home of Canby Music. The break from live performances, lessons and basically all things music was a huge adjustment for Brian as well, and in hindsight, not an altogether unpleasant one. “I had been playing music non-stop since I was 13, and to just not play, and watch the chops slowly deteriorate was actually kind of exciting for me,” he says with a laugh. “It was a new challenge, you know, ‘Can I get it back?’ And I did, but in the re-learning, I went about things a little differently, and that was fun.” Both Brian and Aly provide remarkable examples of how artists can take the hard times and use them to create something good, useful, and even beautiful. Despite that extraordinary ability, however, I’m sure we can all agree that we’ll be thrilled to have them back at full performance ability as soon as possible! wasn’t exactly the first year of business they might have hoped for, but Bethany and David Zito of B’s Bake Shoppe, are grateful for the journey they’ve enjoyed since opening their scratch bakery and cafe in downtown Canby last July. “It’s crazy,” Bethany said with a laugh. “It doesn’t feel like a year, because so much has happened. We’ve had COVID, the wildfires, the ice storm and power outage, all of the holidays... It hasn’t been what we expected, but it sure hasn’t been boring.” B’s Bake Shoppe is the culmination of a dream Bethany has harbored ever since she started in the industry at the age of 15. She has worked for and with some of the world’s top chefs, and David also started working in professional kitchens as a teen and has a background in classic French and Italian cuisine.

But they’ve also continued to experiment, sometimes hitting the jackpot with recipes like their apple cheddar walnut loaf. “That kind of surprised us,” Bethany said. “We thought people would be a little weirded out by that, but they come in specifically on Saturdays for that. They’ll call and make sure they can get one.”

Together the Zitos have been able to build their clientele and develop a foothold in the growing Canby culinary scene, thanks to their quality recipes and ingredients, hard work, creativity and their willingness to take feedback from their customers. “We weren’t doing sandwiches when we first started,” Bethany recalls. “But we had a lot of people coming in asking for more than pastries, and we thought, ‘Let’s build on this.’ We’ve definitely added and even shifted some things as we’ve continued to hear from people. If we can do it, we’ll make it happen.”

B’s offers a rotating weekly menu of house breads, which they can sell as whole loaves or sliced. They’ve also recently rolled out a new “bread card,” where if you buy six fresh loaves, your seventh is free.

B’s Bake Shoppe has kept producing their staple products, including their world-famous pretzels, handmade house sourdough, focaccia and baguettes, truffles, pastries, candy

Sometimes, B’s version of something like a traditional breakfast sandwich is a little more upscale and gourmet, like their mouth-watering Canadian bacon and cheddar croissant. Other times, the most striking difference is the size. “One of the big sellers, something people really love, is the cheesy sausage biscuit,” said Bethany. “It’s just like a really big, substantial version of a fast food biscuit sandwich. We make all of the sausage in house, too.” B’s will soon be bringing back its ever-popular s’mores candy bar treat (just in time for summer) and their freezer is always stocked with various flavors of their homemade, extra-creamy ice cream. “The flavors change all the time, but we try to always have our brown sugar vanilla and chocolate malt,” Bethany says. “It’s churned and really more like gelato than store-bought ice cream. Grilled Huli Huli Chicken Thighs

June means that perfect grilling weather has finally arrived, so bust out that bag of charcoal or make sure the propane tank is filled - it’s time to turn up the heat with this tangy Hawaiian grilled chicken recipe! It’s so easy and delicious, you may find yourself making it again and again this summer. INGREDIENTS

1 cup packed brown sugar 3/4 cup ketchup 3/4 cup reduced-sodium soy sauce 1/3 cup sherry or chicken broth 2-1/2 teaspoons minced fresh ginger root 1-1/2 teaspoons minced garlic 24 boneless skinless chicken thighs (about 6 pounds) DIRECTIONS

1. In a small bowl, mix the first 6 ingredients. Reserve 1-1/3 cups for basting; cover and refrigerate. 2. Divide remaining marinade between 2 large shallow dishes. Add 12 chicken thighs to each; turn to coat. Refrigerate, covered, for 8 hours or overnight. 3. Drain chicken, discarding marinade. 4. A RITE OF PASSAGE FOR OREGONIANS Enchanted Forest

o anyone who grew up in Oregon, or even anyone who has driven the I-5 corridor through Turner (south of Salem), you will be familiar with the fantastic little gem of a roadside attraction known as the Enchanted Forest. Many readers looking at this story will be swept away by warm feelings of nostalgia. It seems that virtually everyone who spent time in Oregon as a child has made at least one visit to this magical place. When the topic comes up among friends of a certain age, stares begin to wander, countenances begin to soften; eyes moisten. It’s a different response than you get when you mention big money efforts like Disneyland, or Magic Mountain. It’s not as wide-eyed or excited as that perhaps, but I’d argue, it’s deeper. It’s more profound because the Enchanted Forest takes us through a portal to a better time; a simpler time; a more innocent time. It’s a treasure to so many of us, and it’s one we need to protect. It all began in the mid 60’s. Roger Tofte had retired from the Navy after the Korean War and was working for the Oregon State Highway Department as a draftsman and artist. He’d always had a very artistic creative side but hadn’t had much opportunity to put it to use. When he took his family on a long road trip, he realized that many other states had attractions, various examples of glorious Americana, but there was very little in Oregon. He saw a vision, and without hesitation, got to work on it. The original section of the park, the Storybook Trail, was that vision and it was his alone. He drew up the plans and did almost all of the work himself. He had some help from friends and family, of course, but the vast majority of it was just Roger out there digging holes with shovels.

Owner Roger Tofte He initially thought it might take about 2 years to complete. It took 7! But he persevered and on Sunday, Aug. 8th, 1971, they opened. It was an instant success! That first weekend, they had 75 people. The following weekend, after they had an article in the Statesman Journal, over 1000 people showed up! Roger continued to work full-time for another year until he was sure he could support his family, then he devoted himself to the park 100% and never looked back. I had the pleasure of speaking with Susan Vasley, one of Roger’s daughters (and one of the current co-managers of the park), and I was incredibly moved by her story; by the whole family’s story. Since it opened, this park has been their life. They grew up here. It was dad’s vision; it was his dream, but the entire family was involved in it. There are family businesses...and then there is the Enchanted Forest! It was the 70’s and of course, there were no child labor laws. Nobody even thought about that kind of stuff back then. If you were capable, you helped out. It was as simple as that. And they did; all of them, and they loved it! Susan, who was 14 at the time, worked the entrance building. Her sister Mary (who is the second current co-manager), worked the food stand and was only 9 years old. Their brother, Ken, kept all the trash picked up and the trails cleaned. He was aged 12. And

their littlest sister, Lori, who wiped tables in the food area was at the ripe old age of 4! Mavis, their mother worked behind the scenes. She had a mind for business which allowed Roger to focus on the creative. It was the perfect balance. And so things went. In the following years, Roger consistently built onto the park. The Tofteville western park was constructed in year 2 with the Haunted House coming shortly after. The Comedy Theatre followed next and then the famed Ice Mountain Bobsled roller coaster (the first ride to require some professional outside help) made its debut. Then came the Old Europe Village with it’s Jolly Roger Water-Light Show, the Big Timber Log Ride (the 2nd big ride), and most recently, the hugely popular Challenge of Mondor ride!

At the end of last season, the reality of their situation was that they needed $500,000 just to open back up this year. A GoFundMe was set up and the community came to the rescue, raising almost the entire amount needed. The Tofte family is so grateful to everyone who came out in support and they were able to plan to reopen this year with your help.

It seems that virtually everyone who spent time in Oregon as a child has made at least one visit to this magical place.

Interspersed throughout, they’ve added several other smaller rides, and expanded on some of the existing themed areas. All the while, Roger and the entire family have worked side by side to make his dreams— dreams which were now shared by his children and by children all over the state and beyond—a reality. Roger still works at the park every day. That just goes to show that when you do what you love, it’s not work! Susan and Mary have the same balanced relationship that Roger and Mavis did back in the early days. Susan is the creative force (she actually writes and directs all of their plays, composes and records all of the music played throughout the park and performs in the house band!) while Mary takes care of all of the business.

Tragically, then the ice storm hit in February and caused mass destruction across the property. Hundreds of trees came down, damaging multiple exhibits and rides and a huge chunk of that money they had received from your generous donations, had to be redirected towards the clean-up rather than the day-to-day costs of keeping them open. Susan is optimistic and hopeful they can make up some ground this year, but the fact is, the park is dangerously close to having to close their doors, possibly for good. The Enchanted Forest is a special place, folks. There is literally nothing else quite like it. It is the realization of one man’s dream and his family’s love and continued support. Generations of kids have walked its magical paths and been “enchanted” by its fairytalecome-to-life exhibits and rides. This August is their 50th Anniversary. We need them for 50 more! Celebrate National Rose Month In Portland

une has been recognized as National Rose Month since 1959, when it was part of an effort to designate the rose as our national flower. The latter event didn’t actually occur until President Reagan made it official in 1986, but for over 6 decades now the month of June has been widely and formally recognized as the perfect time to enjoy the beauty of roses. As all Portland-metro area residents know, there is nowhere better in the country to celebrate National Rose Month than in the City of Roses! The incredible Rose Festival would, in normal years, be the most iconic way to do so, but in 2020 and 2021 celebrations were canceled due to public health restrictions. Don’t let that stop you from getting out and smelling the beautiful flowers, though! Here are the best places to go for optimal rose viewing (and sniffing) around the city this month: The Portland International Rose Test Garden - As anyone who has ever visited will know, this is the place to go for all things roses. The garden features more than 650 varieties and over 10,000 individual rose bushes, making it the largest public rose garden in the entire country. The garden serves as a testing ground for new rose varieties, and in its earliest days roses were sent from around the world to Portland for testing, and in the hopes of preserving them from the ravages of World War I.

Situated in Washington Park in the West Hills of Portland, the garden features stunning views of the city and admission is free. That means it’s a very popular place to visit, especially in June and throughout the summer, and parking can be extremely limited. It’s recommended to visit early in the day to avoid peak crowds, and once you’re in the park you can use a free seasonal shuttle to explore more of the park. See ExploreWashingtonPark.org for more information. Peninsula Park Rose Garden - Peninsula Park, located in North Portland, was actually home to the city’s very first rose garden. The garden was established in 1913 and was the original location of the annual rose show, before festivities were moved to Washington Park in 1917. The Peninsula Park Garden, though smaller than the Test Garden, remains a stunning place to visit and enjoy not only the blooming flowers, but also the ornamental fountain, street lamps, brick walkways, and music pavilion. The gazebo-like structure was designated a Portland Historic Landmark in 1973 and is the last of its kind in the city. The park is often reserved for weddings, so keep that in mind when visiting! Ladd Circle Park & Rose Gardens - Located on the East side of the Willamette between Hawthorne Blvd and Division Street, the Ladd Circle Rose Garden is a small but wonderful place to drink in the beauty of early summer in Portland. Named for Portland settler, business tycoon, and mayor William Sargent Ladd, the formal landscape of the park was designed in 1909 by Park Superintendent Emanuel Mische. It features 4 diamond shaped rose gardens, containing over 3,000 roses and 60 different varieties in total. Pittock Mansion - Returning to the West Hills, the jaw-dropping Pittock Mansion is worth touring in its own right, but if you don’t have the time or simply can’t bear to be indoors on a glorious early summer day, be sure to at least walk through the gardens and take in the amazing views. You’ll also find 100 different species of roses to enjoy as you stroll. few years ago, Kelly Long of Long Bros. Building Supply found a new outlet for her creativity: making decorative seasonal signs. Her signs were so cute and clever that she soon had people asking her to set up and lead classes where they could make the signs themselves. She started out teaching the classes in her garage, but they gained popularity so quickly that Kelly soon made them a regular activity at the store. Each class allows attendees to design and create a beautifully customized decorative sign to take home with them. All of the materials needed for the class are included in the cost, the wood is pre-cut, and the templates are prepared ahead of time. The designs are usually seasonal in focus, and Kelly makes different sizes, themes, and colors available so that everyone can personalize their sign to their own tastes. Classes usually last for 2 to 3 hours, and

the cost varies depending on the size and complexity of each project, but averages around $45. Kelly’s classes had to be stopped for a few months during the pandemic, but they are now ready to start up again (with the necessary precautions in place, of course!) Registration for each class is required in order to maintain social distancing protocol, and to ensure that there are enough materials for everyone.
