ummer is just around the corner which means, depending on pandemic restrictions, we should hopefully all be able to sit outside and eat at our favorite restaurants again. While some will vehemently go down fighting for their standard barbecued steaks and burgers, etc. there are just as many of us out there who prefer somewhat lighter fare. Especially during the warmer months, nothing sits heavier than red meat, fries, and beer! Now, nobody’s saying that a good burger isn’t welcome now and then, but it’s always good to consider a variety of options. When it comes to great options here in Wilsonville, there is nothing better for a delicious, healthy, lighter summertime meal than Mediterranean. More specifically, there is no place better than Mr. Gyros!

a very close friend of Fayad’s also happens to be the owner of several Gyro House locations around town. Serendipitously, he was interested in selling one of those locations and discussed it with Fayad just when he was looking to get back into the industry. The timing was perfect! He bought the location in Wilsonville, transformed it, and just recently (on April 20th, 2021) he opened the doors of the very first Mr. Gyros restaurant here in Wilsonville! Opening a new business (especially a new restaurant during the unpredictability of COVID) is a huge challenge, but Fayad is optimistic, and if the initial response he has gotten from the community is any indication, they are more than up for the task. He’s made all the adjustments and followed all of the proper protocol for adherence to CDC guidelines. Beyond that, however, trying out a new restaurant is all about the food, so let’s talk about the menu!

Fayad Zinab, owner and founder of Mr. Gyros, has been in the restaurant business for over 20 years. For those of you who’ve been in the greater Portland area for some time, you may remember the late great Greek Cusina (yes, the place with the purple octopus over the entryway). Fayad started his culinary journey there at the height of their popularity; it was a favorite dining spot in the downtown area for years and a very sad day when they closed. After his time there, Fayad went on to Daphne’s (another Greek/Mediterranean eatery) and then some fast food restaurants. It was in fast food where he gained a lot of his managerial experience, working his way up to the district manager level where he was overseeing 14 locations! He left the food industry for a short time and tried his hand at something different, but has always been drawn back to the hustle and bustle of the restaurant world. As it turns out, 6 • WILSONVILLE LIVING MAGAZINE • JUNE 2021

First and foremost, as you may have guessed, are the gyros. These are his best selling & most popular items. Given the name of the restaurant, it doesn’t take a huge leap of faith to believe that, but even if you’re no stranger to mediterranean cuisine, these gyros may surprise you. Everything Fayad makes is authentic. These are his recipes, made with his own proprietary blend of spices. It’s all fresh and it’s all made from scratch - even his hummus, Baba Ganoush, and Tabbouleh. When I say that this is “lighter” food perfect for summer, I’m referring to the fact that they use lots of vegetables and the freshest of ingredients - not the size of the meals. Order a gyro, and you’ll understand what I mean. The portions are exceedingly generous, and you’ll be glad of that fact once you taste it! If a deliciously jam-packed gyro sounds like a bit too much for you, there are plenty of other options to choose from too. Fayad said that he’s been getting


terrific responses on his Falafel (made completely from scratch, not a mix!), his Lamb Shank entree, his Kabobs, and his various bowls. One bowl in particular that’s been getting rave reviews is the

Mr. Gyros Goddess Bulgur Bowl. This one is going to be one of his signature dishes, and is a composition of bulgur, salad, hummus, Feta Cheese, Tzatziki, and chickpeas. This dish, along with many others on the menu, is vegetarian, so for those who have dietary restrictions, this is a terrific place to find a variety of alternatives that fit your specific needs.

Having just opened less than two months ago, Fayad is still fine tuning the menu and he’s adding new items all the time. Some items that he plans to offer very soon (if he hasn’t already by the time you read this) are Cheese Pie, Zaater Pie, and Spanakopita. And of course, he makes all of his own desserts from scratch, including Baklava! Everything is authentic, fresh, and handmade. You can’t lose, no matter what you order on the menu, though it could be argued that these are the best gyros in Oregon! Fayad is grateful to be a part of the Wilsonville community. To Tan or Not To Tan

pring is here and summer is around the corner! That means more exposed skin and maybe you start to think about getting a nice tan. For the last couple of decades we have known about the harmful effects of tanning both outside and inside using tanning beds, but why is it so harmful? The sun has two types of UV rays: UVA and UVB. The UVB rays from the sun are those tanning rays which you love to bask in when the sun comes out. But did you know that the UVA rays, the other type of light emitted from the sun, penetrates clouds and windows and this is the type of light ray that causes skin aging and even skin cancer? This is why wearing sunscreen on any exposed skin every single day is so important, even on cloudy rainy days. The light from the sun alters our skin cell DNA which can eventually lead to skin cancer. Some tanning beds are like light rays on steroids and are even more dangerous than laying outside on a sunny day. So steer clear of traditional tanning and choose a good for you self tanner. There have been many advances in self tanners recently. Self tanners can give you that glowing skin you crave without the harmful effects from the sun. Never tried a self tanner before? Consider trying the Express Bronzing Mist from St. Tropez. With this self tanner, you get to choose how dark

you tan and it’s quick. Exfoliation is always a great tip to remember before self tanning, especially rough areas like elbows and ankles. To apply self tanner, first spray onto a Tanning Mit Applicator (FYI - these are amazing), rub it into your skin, and simply shower off after your desired level of tan: 1 hour for Light, 2 hours for Medium, and 3 hours for Dark. ProTip #1: Apply lightly to areas that are prone to dryness, like ankles, elbows, knees and hands. Depending on how dark you self tan, you can expect it to last from a couple days up to a week. ProTip #2: Moisturize daily with body lotion to keep your tan looking great for as long as possible. Think the chemicals in self tanners might be worse than the light rays themselves? Think again. Choose a self tanner like the Express Bronzing Mist that uses 100% natural DHA to add color to the skin and you’re good to go!

Q

uality products, quality people: that’s the recipe for success according to founder, President and CEO of Rocky Mountain Chocolate Factory, Frank Crail. And it’s really just as simple as that, isn’t it? Without a strong commitment to these 2 key elements, a business can’t thrive. In particular, as a high-end confectionery and chocolate company, the product has to be of a consistently superior quality, and when it comes to Rocky Mountain Chocolate, that is what you get every time. The factory typically produces somewhere in the vicinity of 300 various chocolate candies and other confectionery products developed primarily by their master candy maker. From there, the treats are packaged and loaded into refrigerated trucks to maintain freshness before being delivered to their retail locations. At the local level, individual stores choose the factory-made chocolates they want to stock and make additional treats of their own. That brings us to our local franchise at the Woodburn Premium Outlets, which is one of only 5 locations in all of Oregon. Amanda Keeling has owned and operated the location since 2014, and is incredibly enthusiastic about her business. She actually began her journey right out of college when she and her boyfriend, Andre

Cintron, attended a special entrepreneurial program sponsored by Rocky Mountain Chocolate Factory. After competing against other applicants and completing the program, she and Andre were awarded an internship with the company. The first 9 months were a whirlwind of excitement and on-thejob training at a location in their home state of Nebraska. Once they’d mastered every aspect of the business there, the next step was running their own location. Their timing was fortuitous, as the previous owner of the Woodburn location was preparing for retirement and had just put it up for sale. In May of 2015, Amanda and Andre took possession and their location is now consistently ranked in the top 20% of all U.S. locations for annual sales! Amanda truly loves this company, the business model, and their products, especially those made right there in the store. With this franchise, each location has the freedom to prepare their own varieties of fresh caramel and candy apples, fudge, ice cream, chocolate items and more. And it’s all done in full view of the customers so they can observe the magic! Part of what makes RMCF so unique is the balance they strike between traditional methods and contemporary presentation. It’s not just a shop to visit, it’s a shop to experience! Their recently redesigned contemporary retail space prominently displays their kitchens, so you get dessert and a show! While perusing the numerous cases full of goodies, watch them work using traditional hand-forged copper kettles over gas-fired stoves, and the cooling the fudge on

It was held outside on the patio at the beautiful brand new Hilton Garden Inn in Wilsonville. The mediterranean themed appetizers were delicious. MEET THE ARTIST

DICK EATON By Dennis McNabb, Actuve Media Contributing Writer

W

hat is the mark of a true artist? At what point along an artist’s journey do we consider them masters of their craft versus a student or hobbyist? Ironically, it’s often the most authentic of artists who will afford themselves the least amount of credit for their accomplishments. Case in point, Lake Oswego artist and overall renaissance man, Richard (Dick) Eaton. Although he’s been honing his craft for nearly twenty years now, he sincerely feels like it’s only his most recent work of the last year or so that has reached a level matching his passion. Dick is one of the most genuine people you could meet. This is a man committed, whether it’s through his art or his work as an executive leadership coach, to living with authenticity. It takes constant vigilance and practice, but he is absolutely doing what he was put on this earth to do. Modest and unassuming, inquisitive and insightful; he’s a spiritual man, and the process of creating art, for him, is a key aspect to his spiritual journey. In many ways, it is how he discovers and defines himself. This is the power of art in its truest form. It’s an expression of self; a way of sharing our unique view of the world with others. Dick has always embraced his creative side. As a young man, his initial forays were concentrated more in the realm of ceramics. He worked on mastering those skills through high school and college, but stepped away from it when he became a parent. Like for so many of us, 22 • WILSONVILLE LIVING MAGAZINE • JUNE 2021

getting married, having a family, and having a fulltime job often necessarily takes precedence over creative endeavors. It wasn’t long though, before he began to notice the void that left in his life. He was grateful to be a husband and father, and to this day, he maintains that his (full grown) kids are his highest priority and greatest achievement in life, but he couldn’t deny his growing discontent over the loss of a creative outlet. That was when he discovered an advertisement for a painting class led by none other than Michael Dowling (a renown artist, professor at Boston University, and a man who has helped thousands heal through art with his non-profit Medicine Wheel Productions). Dick was skeptical at first. He’d never worked with paints prior to taking the class, but he fell in love with the process, and simultaneously developed a long-term friendship with Michael besides. Ultimately, Dick studied under Michael for a full ten years, carving out time from his busy schedule every Wednesday from 102. That was his island oasis; his meditative and creative escape. Still, Dick feels like his skill level is only just beginning to match his degree of passion, and this is where some of that authenticity really shines through. For the average, if untrained eye, his paintings are absolutely beautiful, expressive, impressionistic; I would hang any of them on my wall and display them proudly. But for Dick, as is the case with so many artists constantly striving to achieve perfection (or close to it), it has taken all these years of dedicated practice to reach


the point where he actually likes his pieces more often than not. His work is primarily of the Plein Air style (French meaning “outdoors”) which was popularized in the 19th Century and focuses on open air, outdoor subjects painted in the outdoors. Often they feature gorgeous, sweeping landscapes that transport you to another place. Far more challenging in many ways than studio work, Plein Air requires dedication to a communal relationship with nature. Weather, wildlife, quick-drying acrylic paints, and an ever-changing source of light provide constant hurdles to contend with, but Dick welcomes that challenge.

It has all been a part of his journey, his transformation, his transcendence. The form requires a certain relinquishment of control; since you’re under a constant time crunch, you have to learn to express yourself in the moment, then let it go and move on - something he’s really struggled with over the years. In fact, his old mentor Michael often told him, “don’t tame your paintings!” and he feels like he is finally starting to fully realize that philosophy.

to admire his work. She was so moved by it, and their conversation, that she divulged why the whole group was there. It was for her daughter’s baptism, and she wished to purchase his painting to commemorate the occasion. She now owns that painting. Out of all the stories of Dick’s work and the accolades he’s received at this exhibit or that, this poignant tale of human connection is one that resonates the most with him. This is why he does what he does.

Recently, Dick had his first piece shown at a commercial gallery in Oregon. It was the 8th Annual Living Mark Exhibition at Verum Ultimum Art Gallery in Portland, and his painting was chosen from hundreds of submissions as one of only 30 pieces displayed for the exhibit. He has also shown several pieces for the gallery at the Lake Oswego Arts Council, as well as the Oregon Society of Artists and has been awarded multiple times, including Best in Show in 2019!

Dick is an incredibly accomplished artist, and you should absolutely seek out his work, but more importantly, he is an incredibly accomplished man. Painting is his hobby, his meditation, but he does all of this while simultaneously running his own company, Leapfrog Innovations. He coaches top executives (incidentally, if you check out his Linked-In account: www.linkedin.com/in/ dickeaton, you will see that he is amazing at that as well), and he has a genuine and profound interest in people. He’s one of those guys that you could spend the whole afternoon with, enjoying his warmth, camaraderie, and insight, and then go home feeling like a better person. We certainly need more people like Dick in this world!

Perhaps the best way to sum up Dick as an artist is to share a story about a woman who purchased one of his paintings: He was at George Rogers Park in Lake Oswego along the Willamette River, working on one of his plein air paintings of the landscape there, when a procession of people walked by. One of them was a woman who stopped

Grilled Huli Huli Chicken Thighs

June means that perfect grilling weather has finally arrived, so bust out that bag of charcoal or make sure the propane tank is filled - it’s time to turn up the heat with this tangy Hawaiian grilled chicken recipe! It’s so easy and delicious, you may find yourself making it again and again this summer. INGREDIENTS

1 cup packed brown sugar 3/4 cup ketchup 3/4 cup reduced-sodium soy sauce 1/3 cup sherry or chicken broth 2-1/2 teaspoons minced fresh ginger root 1-1/2 teaspoons minced garlic 24 boneless skinless chicken thighs (about 6 pounds) DIRECTIONS

1. In a small bowl, mix the first 6 ingredients. Reserve 1-1/3 cups for basting; cover and refrigerate. 2. Divide remaining marinade between 2 large shallow dishes. Add 12 chicken thighs to each; turn to coat. Refrigerate, covered, for 8 hours or overnight. 3. Drain chicken, discarding marinade. 4. Grill chicken, covered, on an oiled rack over medium heat for 6-8 minutes on each side or until a thermometer reads 170°; baste occasionally with reserved marinade during the last 5 minutes. *recipe reprinted from tasteofhome.com

Celebrate National Rose Month In Portland

J

une has been recognized as National Rose Month since 1959, when it was part of an effort to designate the rose as our national flower. The latter event didn’t actually occur until President Reagan made it official in 1986, but for over 6 decades now the month of June has been widely and formally recognized as the perfect time to enjoy the beauty of roses. As all Portland-metro area residents know, there is nowhere better in the country to celebrate National Rose Month than in the City of Roses! The incredible Rose Festival would, in normal years, be the most iconic way to do so, but in 2020 and 2021 celebrations were canceled due to public health restrictions. Don’t let that stop you from getting out and smelling the beautiful flowers, though! Here are the best places to go for optimal rose viewing (and sniffing) around the city this month: The Portland International Rose Test Garden - As anyone who has ever visited will know, this is the place to go for all things roses. The garden features more than 650 varieties and over 10,000 individual rose bushes, making it the largest public rose garden in the entire country. The garden serves as a testing ground for new rose varieties, and in its earliest days roses were sent from around the world to Portland for testing, and in the hopes of preserving them from the ravages of World War I. 28 • WILSONVILLE LIVING MAGAZINE • JUNE 2021

Situated in Washington Park in the West Hills of Portland, the garden features stunning views of the city and admission is free. That means it’s a very popular place to visit, especially in June and throughout the summer, and parking can be extremely limited. It’s recommended to visit early in the day to avoid peak crowds, and once you’re in the park you can use a free seasonal shuttle to explore more of the park. See ExploreWashingtonPark.org for more information. Peninsula Park Rose Garden - Peninsula Park, located in North Portland, was actually home to the city’s very first rose garden. The garden was established in 1913 and was the original location of the annual rose show, before festivities were moved to Washington Park in 1917. The Peninsula Park Garden, though smaller than the Test Garden, remains a stunning place to visit and enjoy not only the blooming flowers, but also the ornamental fountain, street lamps, brick walkways, and music pavilion. The gazebo-like structure was designated a Portland Historic Landmark in 1973 and is the last of its kind in the city. The park is often reserved for weddings, so keep that in mind when visiting! Ladd Circle Park & Rose Gardens - Located on the East side of the Willamette between Hawthorne Blvd and Division Street, the Ladd Circle Rose Garden is a small but wonderful place to drink in the beauty of early summer in Portland. Named for Portland settler, business tycoon, and mayor William Sargent Ladd, the formal landscape of the park was designed in 1909 by Park Superintendent Emanuel Mische. It features 4 diamond shaped rose gardens, containing over 3,000 roses and 60 different varieties in total. Pittock Mansion - Returning to the West Hills, the jaw-dropping Pittock Mansion is worth touring in its own right, but if you don’t have the time or simply can’t bear to be indoors on a glorious early summer day, be sure to at least walk through the gardens and take in the amazing views. You’ll also find 100 different species of roses to enjoy as you stroll. W

elcome to our monthly installment of expert real estate advice, brought to you courtesy of our good friends Jaimy and Sherine Beltran at Beltran Properties Group at eXp Realty. It’s been quite a year already. As we’ve mentioned multiple times over the past several months, the market is still hot, hot, hot, and with no end in sight! Our beautiful state is still attracting buyers from all over the world and our builders still can’t keep up with the demand. What that means for sellers is that you’re most likely going to be able to sell your property quickly and for top dollar (most recent stats reflect that sellers are getting on average 105.6% of list price for their homes). If you have any inclination to do so, this is the perfect time to sell. On the flip side, it’s also a great time to buy given that interest rates are still extremely low. While the real estate market typically exhibits a seasonal ebb and flow (it usually slows down in the winter months and speeds up in the spring), this past year has been flowing like a raging river, all the way through!

In the last few months, Sherine, Jaimy, and the whole team at Beltran Properties have been sharing with us the many tools they have at their disposal to navigate these uncharted waters. In speaking this month with Sherine and Director of Sales, Mike Rohrig, it seems that there is a new trend emerging, a trend that’s being referred to as the “great migration.” Ironically, although we’re still seeing record low inventory numbers (and still dropping!), we are also simultaneously seeing a large number of people leaving the city, and in fact, leaving Oregon. Mike posited that due to COVID, people are adjusting their priorities. Sherine agreed, stating that what they are seeing is a lot of people taking action. They’re not waiting around those extra years to retire. They’re doing it now. Similarly, with many organizations moving to work-from-home models, a lot of people are finding those close-to-work-butnoisy-and-cramped city condos less appealing. Parents are working from home. Kids are schooling from home. People are having to adjust to working and living daily in close quarters, and as a result there are vast numbers moving to the suburbs. The mortality check that our current worldwide pandemic has forced upon us has apparently resulted in the majority of us, in essence, seizing the day. Good for us! What this means in terms of the real estate market is that there is yet another shift occurring. We’ve been witness already to the incredible resilience and adaptability of the Beltran Team, but they


never stop! They just keep adjusting their business model to accommodate new challenges, and in the face of adversity they keep getting stronger! The fact of the matter is that there are no curveballs that have yet put them off their game. One of the key elements to their continued success has been their decision to move to a virtual brokerage. That really opened things up for them and expanded their network to reach all the way across the country. In a time now where vast numbers are moving to the suburbs or even out of state, the Beltran Team is set up to seamlessly assist clients in every possible way even across state lines!
